INGREDIENTS1 cup all purpose flour1 pinch salt2 egg1 cup mixed fruits1 teaspoon powdered cinnamon3 drops strawberry essence2 tablespoon melted butter1 1/4 teaspoon baking powder1/4 teaspoon baking soda

1/3 cup powdered sugar

1/2 cup grated carrot3 drops orange essence1 tablespoon vinegar3 tablespoon waterMETHODStep 1Grease a 7-inch baking tin with melted butter and lightly dust with refined flour.Step 2Sift the refined flour, baking powder, salt and bakingsoda together. Keep aside.Step 3Beat the eggs with sugar till creamy.Step 4Fold in the flour mixture, a little at a time, adding 1 to3 tablespoons of water, if necessary, to obtain a droppingconsistency.Step 5Stir in the mixed fruits, grated carrots, cinnamon powder, orange essence and strawberry essence.Step 6Add the vinegar just before transferring the mixture tothe prepared tin.Step 7Bake at 200 degree Celsius for about 35 minutes or

Date and apple cakes with caramel sauce

Ingredients135g 3/4 cup dried dates, pitted250ml 1 cup water

1 teaspoon bicarbonate of soda1/4 cup solid coconut oil1/3 cup coconut sugar1 1/2 cups white spelt flour, sieved2 eggs, at room temperature1 Granny Smith apple, coarsely grated1 1/2 teaspoons baking powder1 teaspoon ground cinnamon

3/4 teaspoon cornflour, 1/3 cup reduced-fat milk

1 teaspoon vanilla extract, Pinch sea salt flakesMethod :Step 1Preheat oven to 180C/160C fan forced. Grease six 185ml(3/4 cup) Texas muffin pans. Put dates and water in asaucepan and bring to boil over medium heat. Simmer,stirring, for 2 minutes. Remove from heat. Stir in bicarb.Set aside for 10 minutes to cool.Step 2Meanwhile, use electric beaters to beat coconut oil and 2tbs of the sugar until pale and creamy. Add 1 tbs of theflour and 1 egg. Beat to combine. Repeat with 1 tbs flourand 1 egg. Stir in apple and half the remaining flour. Addbaking powder, cinnamon, date mixture and remainingflour. Stir until just combined.Step 3Divide among pans. Bake for 20-25 minutes or until askewer inserted into the centre comes out clean. Cool inpan for 5 minutes. Transfer to a wire rack to cool for 5minutes.Step 4Meanwhile, place cornflour and remaining sugar insaucepan. Whisk in milk, vanilla and salt. Bring to a simmer over low heat, stirring constantly. Cook, stirringconstantly, for 1 minute or until mixture boils and thickens.Cool sauce for 2 minutes. Pour over cakes.
