Luckily, I'm a 'glass half full' kind of woman- so I tend to bend, dip, roll and sway withthe world as it seems to carelessly spin

Steven and Autumn Adams were

thrilled with the turnout of hundredsof happy friends, business associates,restaurateurs, valued diners andmedia to usher in their newbeginning - all over again.

These two definitely know how tothrow a fabulous party - and all in agood cause - to raise much neededmoney for the Flood Relief effort.

Bodaciouseffervescentand everywhere There’s no denying as Helen Flanagan discovered, thatEmily Jade O’Keeffe, a radio jock,television presenter, inveterateblogger, marriage celebrant, MC andmore, lives up to her nickname.

Emily Jade, EJ or Emily Everywhere as she’s known to many,

has theatre in her blood. Her mum sang, played guitar and

piano, dad sang badly but performed brilliantly in

musicals, one of her grandfathers was an award-winning actor,

the other a talented musician and with young energetic parents

who ferried her from piano, singing, dancing and gymnastics to

public speaking, eisteddfods and performances, it didn’t take

long before she was stage-struck.

“The whole family was involved in the theatrical and dramatic

society as a way of making friends whenever we moved to

around part of the country,” recalls Emily Jade who was born in

Gatton with the family finally settling in Tasmania when she was

15. “Mum would make costumes, dad would take on lead roles

and my four boisterous brothers and I would be munchkins

orphans or whatever roles were needed.

“I just loved performing in front of anyone who would watch

and my grandparents were not immune to the odd impromptu

dance performance which I would choreograph with my girl

cousins. Grandad would give us $2 per performance each which

we thought was unreal until one Sunday when we made up

about five dance routines and made him sit through them all,

until he finally said he’d run out of money, or was that just an

excuse.”

After whetting her radio appetite at high school, Emily Jade

studied performing arts at the University of Tasmania, worked at

the local community radio station which

paved the way for her first full time paid

radio position.

“I felt plucky and decided to present a

proposal to the local commercial radio

station for my own night time show,

bringing my own sponsors and prizes. They

accepted and I started straight away. That was a

few months before I graduated from Uni so I

couldn’t believe my luck although it was six nights

a week for little money, but I had a foot in the door.”

Tassie was also where she was

given her first break in

television - a weather

presenter.

Emily Jade returned to

Queensland and after radio

stints in Toowoomba,

Townsville and at Hot Tomato

on the Gold Coast, Nova 106.9

in Brisbane beckoned, however

three months before Emily Jade

was to be married she was

served a bitter blow. Her

contract was terminated after

four years. “I was devastated

but took it in my stride, rang

the opposition Triple M and

asked for work – anything. Little

did I know Sami Lukas was

moving to Sydney and they

had the best position.

Jade was told about an

audition for a children’s

show on Channel 9.

“’You have great teeth’,

a tipsy girl said to me.

‘You should be in TV

not radio’. I decided

to turn up the next

day and got the role.

“When that

wrapped, I was out in

the cold again. It was

not until my blog at

the Courier Mail was

gaining popularity and

after giving myself the

quirky pseudonym of

Emily Everywhere,

(thanks Eddie), that the

producers of Mornings

with Kerri-Anne asked me to be

the Queensland reporter. Four years later I still love

being involved with a great show.”

Emily Jade a Scorpio, married her childhood sweetheart at 22

and says her biggest regret when the marriage collapsed was

that she’d turned down an evening with Robbie Williams. “I was

with some listeners at the sound check of his concert and his

minder gave me Robbie’s hotel room number and that he’d

requested I meet him after the show.”

She met Gerard Murtagh, an exporter of meat bi-products to

Japan, at a charity sports lunch she was hosting and when his bid

for a date with her was unsuccessful he rang the radio station. “I

couldn’t remember him, turned him down, then we bumped into

each other. The rest as they say is history. It was love at second

sight for me and love at first sight for him.

“He proposed four years, one dog and a big mortgage later at

Burleigh Heads, saying he was meeting clients at Oscars for

dinner, but took a detour as we’d arrived early. He’d made a slide

show of our life together set to our favourite song and we sat on

the cliff and watched it together. At the end it said ‘will you be my

wife’ I said yes and we were married a year later on New Years Eve

in 40 degree heat at St Marys Church in Brisbane with a reception

at the River Life Centre. I don’t remember much of the wedding

because I was so nervous yet happy but beforehand I couldn’t

stop crying. Mum gave me one of my grandfather’s Vallium pills

to calm me down so my mascara wouldn’t run. Friends said I

looked so serene, but really I was spaced out! I did stop crying

though.”

Emily Jade and Gerard are passionate about Brisbane and in

particular Camp Hill where they’ve bought three houses. “Our

third was a knockdown and at the moment we are building a

new house on the block,” explains Emily Jade who admits they

are very partial to Vietnamese take-away in West End, jogging

around the city, catching the latest movie and spending time with

friends trying to out-cook each other. “We’re so excited about our

dream house and creating something amazing together.

Hopefully we’ll create something amazing together in the form of

a human soon too. For now though my baby is Libby the RSPCA

rescued Bichon. She’s white fluffy, neurotic and follows me

everywhere.

The cheeky, fun, dynamic, often irreverent and always

charismatic Emily Jade certainly has a big thirst for life. Added

strings to her bow are MC and marriage celebrant, the latter

simply borne out of a love of weddings. “I have been a bridesmaid

seven times and married to the same person three times. So you

could say it is an addiction, although the three weddings to my

husband could be construed as research. We did the big wedding

for family in the white dress and in a church followed by a large

reception, and while on holidays in Bali decided to have a Bali

Blessing ceremony plus on our one year anniversary renewed our

vows in Vegas with an Elvis impersonator. So I can give my clients

real advice on what style of wedding would suit them, from

traditional and personal to fun.”

Numerous childhood and teen idols have crossed Emily Jade’s

path but only several have hit the high notes. “I was a huge Guns

and Roses fan and last year I got to meet Slash and play and sing

Sweet Child of Mine to him on a toy guitar,” confesses Emily Jade

about the embarrassing moment. “Hours later he recognised me

across the room and yelled out that I was awesome on the

ukulele. Sometimes you have to embarrass yourself to stand out

and let’s face it you only live once. However it was when I met U2

I realised I’d made it. I was 17, had lined up for hours outside a

stadium just to get near the front of the stage to catch a glimpse

of them. Now at 34 I still can’t believe I was flown to Melbourne,

put up in a nice hotel and escorted by their PA to meet them back

stage. I would have pinched myself hard to wake up from

dreaming if the ridiculous high heels I was wearing weren’t

already doing that to me.”

Country roads weTroy Cassar-Daley’s love of country music

is only surpassed as Helen Flanagan found out,by his utmost devotion for wife Laurel Edwards.

Fans will tell you Troy Cassar-Daley is a fantastic guy, great entertainer, brilliant

guitarist and the most amazing vocalist. With 21 Golden Guitars, four ARIAs plus

other industry awards and accolades galore, there’s no denying he’s at the top

of the Australian country music scene and has a reputation amongst his

Australian music industry peers as being one of the most respected

singer/songwriters in country music.

But where did it all begin? At school in Grafton, shy Troy made friends easily and in an effort

to keep up with his older cousins, the 10-year old took guitar lessons with Leonie Hayes who

instilled in him confidence to sing in front of his class and at local concerts. He’d thought being

a cook on a station in the bush had appeal but with encouragement from his family and his

year eight English teacher Troy began to appreciate the written word, a trait that translated

into poetry and song writing.

“My career was always going to be a slow burn but meeting my girl Laurel helped motivate

me to get more serious with music,” recalls Troy who was playing in a covers band when Laurel

organized the big-wigs from Sony music to check him out. “A month later after the Tamworth

Country Music Festival, I had an offer from boss Denis Handlin who gave me the big break. He

remains a great friend today.” Beyond the Dancing was his first album, first Aria award and first

Golden Guitar. “The big thrill for me was having it presented by Slim Dusty.”

Laurel Edwards grew up in Balmoral and from a tender age was singing and performing plus

listening to her two older sister’s recordings of the Eagles, Pink Floyd, Barbara Streisand, Neil

Young and Fleetwood Mac. That was until aged 8 when she received a transistor radio, ‘glued’

it to her ear and with hairbrush in hand bopped to Olivia Newton John, Anne Murray and Rita

Coolidge and other tops of the pops on 4IP and 4BK. Her first public appearance at the Warana

Festival was frightening but she was hooked

Her first television appearance was on Channel 7’s Telethon, Jamie Dunn became her

mentor after hearing her sing on Wombat and the teenager was given her first big break as

host of the Channel 9 kids show ‘OK – Only for Kids’ on Saturday mornings. When OK finished,

other gigs popped up and in ’92 she auditioned for the 4KQ Breaky Show and for the last 14

years she has been a presenter on The Great South East on Channel 7.

The first night Troy and Laurel met she was devastated he’d neglected to take her contact

details. After tracking him down and on their first date, an album launch, they clicked despite

Laurel constantly pushing his hand off her butt. Troy takes up the story: “When the beautiful

brunette and I first met at the Gympie Muster in 1993 we struck a chord that is still ringing

today. Through the years we have sung at the beach, on my Mum’s veranda, around our kitchen

table and all over the place. continues next page.....

butchers in Lowood for theWickman family whose 4

year old, Jesse was washedaway. We sang a few songsand it was very difficult but

it really hit home that wehad lost nothing compared

to most.”

“We started doing a few shows together with my Blue

Healer band and loved every minute of it.

“The proposal believe it or not was back stage at the

Gympie Muster. Talk about continuity! Laurel was ironing my

shirt and I fell to my knee in the dust and said ‘will you marry

me?’ She said ‘yes’, then I went to ask my future father-in-law

for permission.”

“Troy proposed at the Muster in practically the same spot

where we met,” recalls Laurel who has never ironed Troy’s

shirts since. “It wasn’t very romantic as we were standing in

the dust in a makeshift tarp tent but it meant a lot to us.

“The wedding day was humble, the reception beautiful and

the highlight of the speeches was my father-in-law Ray in

front of my Aboriginal family from Grafton and Laurel’s family

and friends,” says Troy with a grin. “He said there was going to

be an issue of colour. Everyone sighed, the room was still as he

said ‘so when it comes to the state of origin there will be

maroon AND blue’. Everyone laughed then cried as he went

on to say he’d played a lot of football with many blokes in

different coloured jerseys but it was the character and heart

on the inside of the jersey that counts. What a great speech.”

“The 1996 wedding was a very carefree wonderful day,”

describes Laurel. “My sister made my gown, mum the cake

and family and friends helped set up of the reception. We

married at the very pretty St. Mary’s at Kangaroo Point and the

honeymoon went from a luxurious week at Hayman Island

then a great week camping in the back of Troy’s EH Holden

station wagon.”

Family help continued when children came along and

Laurel was on the breakfast radio and Troy was on tour as his

career was taking off.

“Our kids are our world that's for sure,” proud dad Troy says

referring to Clay 13 and Jem 10. “Being a parent is not a job, it's

a privilege. They are great young people, very caring and

respectful.”

Troy is understandably besotted with every facet of country

music. “I love every part of my job from writing, recording and

playing live as it’s always full of surprises to meeting so many

great people along the way,” Troy, who hopes to visit Ireland

one day, also Italy and his father’s birth place in Malta, remarks.

“Regarding awards, the Golden Guitars are a

part of our foundation so they are very

cherished although all awards are

appreciated that's for sure. And the recent

four shows with Kenny Rogers, the last one

at the Opera House were just amazing. Such

a responsive crowd, incredible sound and

something I’ll never forget.”

For Laurel and Troy there are many high

points to living in Brisbane however there

was a testy time earlier this year. “Any spare

weekends we escape town and head to the

farm at Fernvale, where we often have

family and friends come and stay, eat, drink

and jam on the verandah until wee hours,”

says Laurel who admits that living in

cosmopolitan Bulimba ticks all the right

boxes when it comes to the best Peking

Duck pancakes in the world at Billy Wongs

in Cannon Hill, Thai at Pochanna in Bulimba

and for a rib eye on the bone it’s Oxford

“During the floods we couldn’t get to the

farm as the roads were cut off so we gave a

hand to people in our local area. But when

we finally got through to the farm it was

overwhelming. Everything was covered in

mud. The river had burst its banks and was

into the second level. By day three I became

quite emotional after sifting through

memorabilia such as photos. Troy put the call out and friends

came from everywhere and pitched in. Two weeks after we

had a little fundraiser at the local butchers in Lowood for the

Wickman family whose 4 year old, Jesse was washed away. We

sang a few songs and it was very difficult but it really hit home

that we had lost nothing compared to most.”

Whilst plans were being hatched for the family to head to

Nashville for a two-month stint with Troy song writing and

working with some of America’s best country music stars,

Laurel continuing her 4KQ radio gig and Clay and Jem

attending middle school, Troy toured his beloved NSW North

Coast of NSW.

“I wanted to pay homage to my beloved home area in song

as so many of my tunes over the years have drawn inspiration

from this area with stories of small towns, old fisherman, love

and hardship. It’s not just a show but a journey for me and the

listener and the stories will be the glue holding it all together.

“The tour will be followed with two rare shows at Nambour

and Kedron Wavell with Laurel and me doing it all again

playing some great old songs as well as our own originals with

a wonderful band.

“To share a common love of music is rare in a marriage and

to also do it professionally means it’s a perfect match for me,”

enthuses Troy who envisages growing old with Laurel with

lots of laughter, travel, fishing, grandkids and a big garden.

How did you come to write your new Australian musical Pyjamas inParadise?

I was in New York and went to see Grease yet again - mainly becauseBrooke Shields was in it and I wanted to see what she was like on stage –and as I was walking down Broadway I began to think how there had neverbeen an Australian teenage musical like Grease, Where the Boys Are, HappyDays … that style of show that was set in the '50s. It was no good doing ahigh school musical because it had been done. Then I began to think toback in the '50s and '60s for me and it was when Surfers Paradise was reallyjust starting up and there was no such thing as the Gold Coast really. Thehighrise thing hadn't even started then. I have a friend called Peter Pinnefrom Melbourne who had just retired from a production in South Americaand he had written quite a few small scale musicals and he was in Miamiand I was in LA so I asked him if he'd like to work on the show with me. Wewrote it in 2005 and it sat in a draw for a while but now it's all happening. Inthis industry you just need to be patient.Did you draw inspiration from your own trips to Surfers Paradise in thatera?

I came up at that time when I was about 18 and there were just hotelsalong the coast and we thought it was terribly glamorous – they had justbuilt the Broadbeach Hotel, you had to have a swimsuit made by PaulaStafford… we thought it was all extremely exotic. It was a much moreinnocent age too – we never saw any drugs, it was very good natured andthere was no violence. It was a pretty sober age where you could have agood time without writing yourself off and being drugged out of your head.This is a horrible age all based on liquor and getting as plastered as you canand belting up anyone you don't like the look of which was unheard of. Ithink it's past redemption and part of the culture now so this is a musicalthat memorialises an Australia that really doesn't exist anymore.How did you create the music for the show?

So we developed Pyjamas in Paradise from there using iconic hit songsfrom the '50s and '60s era and original songs as well. Peter and myself wrotethe original lyrics and we also had Ashley Irwin involved. He's an Australianarranger composer living in LA and has just done arranging and conductingfor the new Clint Eastwood movie Hereafter. He's won several Emmy awardsfor his arrangements and he's a wonderful talent so it is in every way an allAustralian musical.Do you have any plans to slow down and retire any time soon?

I have no intention of ever retiring - I'm not even remotely interested in

the word. The other day Broadway director , playwright and screenwriterArthur Laurents who wrote Westside Story the movie, The Way We Were andmany stage and movie hits, died at age 93 and he was still working onprojects when he died. And Mr Broadway, George Abbott, was 102 and stilldirecting a play he'd written when he was 99 - I should be so lucky!Where are you based these days?

When I did The Mike Walsh Show for many years on TV and other shows Iused to travel around the world endlessly and it was in about 1989 I decidedI was sick of all the flights and I went to live in LA and ended up being therefor 17 years. I went everywhere - covered 23 Oscars, umpteen Emmy Awards,Tony Awards, and lived in planes. After all that travel two things came out ofthat. Firstly, I'm a wonderful packer and secondly, I like staying at home now.Someone asked me if I was going to cover the latest royal wedding and Ilaughed and told them that I'd been there, done that. I moved back toAustralia about four years ago and basically home for me is now a wonderfulhouse in Melbourne surrounded by parks and gardens where I live with myfour little chihuahuas. They take me for a walk every day! I've never lived inthe 'burbs before but I love this place and I have lots of friends here. Will you be flying in to the Gold Coast for the Arts Centre's openingnight of your show?

Oh yes - I'll be up there in August for rehearsals first and then for openingnight I'll be sitting in the back row like I normally do for all my first shows. Ialways sit in the back row where you can see the audience and watch if youreally start getting that reaction and you can think to yourself, 'Wow, they likeit!'. Plus if it were a dud everyone would be looking at me if I was down thefront so I figure up the back I can make a quick escape … luckily that hasn'tbeen necessary yet. I love opening night because one of the most excitingthings with this business is you write the script, which is just words on paper,then there's the casting, then watching it come to life in the rehearsal roomand it's hard work. So when you see something coming together on thestage on opening night and you get the audience reaction and theyactually find it funny, it's wonderful.

Winning the Best French Wine Book,being saluted by France’s finestchampagne houses and so much more areall in a day’s work for Bernadette O’Shea.

Champagne consultant and former florist BernadetteO’Shea feels blessed. Her career began at 17 with a glassof Moét et Chandon and every month thereafter she

splurged on a bottle from a different champagne house,teaching herself the differences, making copious notes along theway.

Today the “Queen of Bubbles” as she’s been referred to byFrédéric Heidsieck of the House of Roederer, has a full-time jobtalking, teaching, giving lectures, writing, hosting dinner andcocktail parties, advising chefs on matching champagne and ofcourse sipping the euphoric drop. “The universal toast speaksevery language. It celebrates joy, happiness, friendship – all thegreat moments in life. The moment you even watch it beingopened and poured lifts your heart. If you drink champagne, allyou want to do is sit and dream or go make love.”

In 1984 she won the coveted Vin du Champagne award andspent a month in France’s Champagne region. “Champagnechanged my life. I decided to be a missionary for champagne, toconvert the world to it. And did you know champagne is goodfor motion sickness, respiratory ailments and the brain, plus youdon’t get hangovers with real champagne.”

In 1992 Bernadette received the equivalent of a knighthood,the Chevalier de l’ordre du Merite Agricole. She considers it hergreatest honour. “And to think a French ship sailed into Brisbaneso I could be knighted on French soil.”

It’s a remarkable journey given Bernadette grew up in a largeCatholic family of non-drinkers, yet has retained her unwaveringfaith and along the way developed an extraordinary sensoryability which transcends taste and smell.

Throughout her career, Bernadette has collected valuable and

interesting information, created many special occasions,travelled annually to her spiritual home of Champagne to visitchampenois friends and conducted an incredible amount ofresearch which, after five years evolved into the very luxe tomeChampagne and Chandeliers - Grand Dining Celebrations. “It’s an amazing accolade. To be recognized as “best in theworld” in my category is a great honour, and this section hasnever been won by an Australian before. So it is a first and I amvery proud to see Australia up there on the world stage.

“The organisers search the world looking for worthy books,mine was brought to their attention and I was invited to enter.There are many food and wine categories – with more food thanwine sections plus the awards are unique - benefiting from aworldwide competition with 154 countries participating. For the2010 awards 53 countries were represented with wine anddrinks books.

“Champagne and Chandeliers has been translated into Frenchand hopefully will now be sought after by a French publishingcompany. If this happens I’m hoping for a trip to France for thelaunch.”

Bernadette, who received a certificate stating “Best in theWorld” French Wine Book Gourmand World Awards and ofcourse all the glory that goes with it, lives in Brisbane’s Wilston,and ‘converses’ in French with cattle dog Meunier named afterthe three grapes used to make champagne. She has beenprivileged to visit the champagne houses often drinkingastounding vintages. “An 1892 moved me to tears. I didn’t thinkanything could be so perfect.

“My favourite year is 1964 and I’ve got a couple of bottles. I callthem my babies. They call out when I go to the cellar: Pick me!Release me! All the beautiful bubbles waiting for the cork topop,” Bernadette says with a big sigh.

Taste of GreeceIt’s all about good food, good wine and great company when mother and son duo, Lyndeyand Blair Milan embark on an epic journey of Greece’s Peloponnese, seeking tantalizingfood, antiquities and a big slice of adventure.

This series follows one of Australia’s most recognised food and wine personalities, Lyndey

Milan and her actor/voice-over artist son, Blair as they tour Greece’s fascinating Peloponnese

with a film crew seeking culinary delights, exploring ancient sites and immersing themselves

they meet along the way – a charming yet eclectic mix of home cooks,

winemakers, producers, chefs and restaurateurs. While the cuisine of the Peloponnese has

a starring role, the historic heart of Greece is not overlooked as ancient sites are explored

with an adventurous edge, full of humour and insight.

In each episode Lyndey cooks with a local in a restaurant or private home or creates her

own version of a Greek recipe while Blair takes on the more strenuous challenges thrown up

by the landscape and traditions, such as bungy jumping in the Corinthian canal and wake

boarding in the Aegean Sea.

It’s not everyday that you aregiven the opportunity to

literally sit at the feet of oneof the world’s most famouschefs, as Kaylene Murray

discovered.

Three Michelin star chef Heston Blumenthal, famed for hisextraordinarily innovative cooking style, as well as hisworld-famous restaurant The Fat Duck in Bray, Berkshire,

was on the Gold Coast recently to share his passion for creativityat a once-in-a-lifetime event at Sanctuary Cove.

Like a modern day magician set loose in a kitchen, HestonBlumenthal has made quite a name for himself by blowingthings up - as well as reducing, foaming, freezing, deconstructingand reconstructing what most of us see as every day food. Hiscreativity offers a new realm of delicious cuisine whereboundaries simply do not exist.

The culinary genius, notorious for his ‘hard to imagine’ dishessuch as ‘The Sound of the Sea’ featuring edible sand, bacon andegg ice-cream and snail porridge,was guest of honour at aConversation with Heston Blumenthal - an exclusive weekendevent that offered participants an insight into his uniquephilosophies and intriguing way of looking at food and cooking.

Heston was quite at home on the Gold Coast (possiblybecause it was a wet weekend), casually dressed and sitting on astool in the luxury, waterfront home at Sanctuary Cove, whereguests were invited to sit in the living room, sip a glass of wineand listen as he relayed his tales of wonderment and invention.

As he explained “Food is such a major part of our lives and isintegral to our memories and experiences at all ages, “it's not justabout cooking, it's about using all your senses to create thatperfect dining experience.”

“Eating is the only thing we do that involves all our senses.”Heston said

It would be hard to find a true foodie who hasn’t beenmesmerised by his creativity and boundless energy (not tomention his caste iron stomach) - as he has explored the worldfar and wide for ingredients that do justice to his themeddinners viewed by millions on his TV show Heston’s Feasts.

I did say to Heston that I would fly half way round the worldfor a chance to be at one of those dinners. Hopefully he tooknote!

Guests were extremely surprised to find out that Heston didn’treally have any interest in cooking as a child.

Unlike the young enigmas involved with Junior Masterchef,Heston didn’t follow his mother around the kitchen hoping towhip up a soufflé or bake the family roast.

Heston says it came on a bit later - and it was the science sideof it that captured his attention. Like all little boys he wanted tosee how and why things happened. Never mind the

consequences!“Don’t tell me that I can’t do something - I need to see why I

can’t - what happens.” he saidThus over time, his passion for alchemy and cooking

experiments was created and is still being nurtured in his‘culinary playground’- the kitchen.

Heston happily answered questions at the end of his'conversation', with the guests and provided the commentary forthe film of some of his finer multi-sensory creations.

The only problem was that although we sniffed the aromassprayed in the room and tasted a few flavours meant to trick oursenses - we didn't get to try any of Heston's culinary treats.

Although plates of delicious treats (not Heston's) were dottedaround the room, not one person dared break the spell byindulging. Heston had the floor and in his quiet, calm andpersonal way - he kept everyone fascinated to the last minute.

If he wasn’t whisked away by his manager to get ready for thatnight’s dinner, I think he would quite happily have kept talkingabout food well into the night.

Max is always striving to ensure that hisdiners are wined and dined to the best of hisability - meaning that all his dishes areprepared with love and care.

So, as we dined on a cool autumn night, wetried several items from the extensive menu;entrees of fresh whiting fillets coated inparmesan and parsley then panfried; thecarrot and pear soup with crumbled bluecheese and toasted almonds was exceptional;and the anatra di bosco was a tantalising dishof roasted duck breast served with a Pekingflavour sherry and mushroom cream sauce.Our choices for mains included the traditionalscaloppine al limone, which offered tenderveal medallions with a sauce of white wine,lemon, garlic and e. v. olive oil; as well as Max'snew autumn/winter menu addition, succulentslow cooked rabbit that had been soaked inmilk for 24 hours before cooking down inonions and secrets ingredients, till it literallyfell off the bones, and was then foldedthrough handmade pappardelle pasta. Yum.

Fish Fillet with Orange GingerHollandaise with chargrilled orange,

Serves 4Ingredients:2 egg yolks2 tbs water220 g butter, melted1 tbs lemon juiceJuice of 1/2 orange1/4 tsp of fresh ginger, grated2 tbs grated orange rind3 tbs olive oil4 fresh white fillets (approx 200g each)2 bunches asparagus400 gm baby potatoes1 tbs butter1 clove of garlic, crushed1 tbs finely chopped parsley1 tbs capers

Method:1. Orange Hollandaise: Put the egg yolks

and water into a glass bowl set over a panof simmering water, making sure the baseof the bowl is not touching the water.Whisk until the mixture has doubled insize and is thick and creamy.

Remove the bowl from the heat andgradually whisk in the melted butter tothicken more.

Whisk in the lemon juice, orange juiceand ginger. Keep warm over the pan ofwarm water while the fish is cooking.

2. Cut asparagus in half lengthwise andboil, steam or microwave asparagus untiltender; drain.

3. Garlic and parley potatoes: Placepotatoes with a pinch of salt in a saucepanof cold water. Bring to the boil. Cook until

tender, then drain. Cool and cut in half.Heat one tablespoon of butter in a fryingpan, add potatoes. Cook for 6-8 mins oruntil crisp and golden. Add crushed garlicand parsley, salt and pepper to taste andcoat potatoes.

4. Chargrilled Orange: Thickly sliceorange and chargrill on the griddle untilgolden brown on both sides.

5. Heat the olive oil in a frying pan andcook the fish fillets for 3-4 minutes oneach side, until golden and cooked.

6. Serve the fish fillets on asparaguswith the garlic and parsley tossedpotatoes and orange ginger hollandaisewith capers. Place a chargrilled orangeslice on the fish and sprinkle extra orangerind over the fish.

Serves: 6Ingredients:2 sheets of ready made shortcrust

pastry150 gm of dark chocolate, melted440 gm can condensed milk2 tablespoons golden syrup30 grams butter2 1/2 tbs orange rind, finely grated1 orange, sliced 1-2mm thick 3/4 cup castor sugar1 cinnamon stick6 cardamom pods1/2 tsp ground cardamom1/4 cup fresh orange juice1/2 tbs orange rind, finely grated

Method:1. Preheat oven to 180°C. Line a

rectangular 10cm x 33cm loose-bottomed

tart pan with baking paper, line with readymade shortcrust pastry. Pick the base ofthe pastry and bake in the oven for 20minutes or until cooked, then cool.

2. Melt the chocolate in a heatproofmicrowave dish. Microwave uncovered,stirring every 30 seconds or until smooth.Coat the bottom of the cooked pastryshell with the melted chocolate.

3. Caramel: Place the condensed milk,golden syrup and butter into a saucepan,stir over low heat until caramel hasthickened, bring slowly to boil, removefrom heat and add 2 tablespoons orangerind and stir. Cool then spread thechocolate base with the caramel andreturn to the oven for a further 10 minutes.

4. Candied Orange: Blanch orange slicesin boiling water for 2 minutes, then drain.Combine castor sugar with 1/2 cup water

in a pan with cinnamon and cardamompods tied in muslin. Bring to a simmer overmedium heat, stirring to dissolve sugar,then add Aussie orange slices. Cook for 10-15 minutes until white pith lookstranslucent. Drain then dry on a wire rackfor 30 minutes. Retain the syrup

5. Spiced Orange Sauce: Using theretained syrup, add the groundcardamom, add 1/4 cup of orange juiceand 1/4 cup of castor sugar over mediumheat, stirring to dissolve the sugar. Cook,stirring for 2-3 minutes, or until sugar hasdissolved. Boil without stirring until slightlythick and golden. Add 1/2 tablespoonorange rind.

6. Place the candied orange slices onthe caramel and pour over the spicedorange sauce, then serve.

When queried about his life-changing decision to leave Ristorante

Fellini on the Gold Coast, where he has spent nearly 20 years of his

life as co-owner/co-chef, Tony explained that he was ready for the

next big step in his journey through life.

With the mentoring and encouragement of older brother and renowned

Sydney chef/restaurateur, Armando Percuoco, Tony and his business partner

and fiance, Gordana Slavic have created a dynamic venue that more than

delivers on its promise to bring true Italian food to Brisbane.

From your initial entrance through the huge timber doors of the

restaurant that once housed Belle Epoque in the Emporium Centre at

Fortitude Valley, diners are taken back in time to a traditional Italian

brasserie, boasting an atmosphere oozing Italian style and a 'familia'

ambience,

The huge dining area offers private and public dining spaces separated by

large dark timber columns and subtle lighting; the floors feature black and

white mosaic tiles, tables are swathed in crisp white tablecloths and the

extensive bar area is dominated by a magnificent hand beaten pewter bar

with backlighted shelves of cosmopolitan delights.

Tony Percuoco is a hands-on restaurateur, and you will often see him

exiting the bustling kitchen to visit diners at their tables to ensure that

everything is to their liking. Of course, there really isn't any real need - other

than Tony's passion and need to know that diners are happy and satiated by

their dining experience at Tartufo. The restaurant runs smoothly and

efficiently at all times.

Taking care of the diners and ensuring their every need is met are

Gordana and maitre d 'with the most' Jeffrey Cheng, as well as their expert

team of waitstaff.

In the kitchen Tony is ably assisted by head chef Shane Vievers, and a team

of food professionals - all eager to give diners a real taste of Italy

The menu is diverse but we found the degustation menu offers diners the

perfect way to taste and understand Tony's food philosophy. By leaving the

choices in his hands, you can sit back, relax and enjoy his selection of smaller

dishes - each more irresistible than the last.

There is also the option to include perfectly matched wines with each

course, which we find a wonderful idea.

Our experience included Capesante alla griglia seared scallops on

cauliflower puree, served on grilled beetroot with beetroot and parsley oil

and micro herbs, presented with a Henske 2008 Louis Semillon.

Then followed a ripe fig wrapped in pancetta, oven-baked and served

with a silky smooth gorgonzola cream sauce, and matched with a Stonier

Chardonnay.

Pappardelle al sugo di coniglio is a handmade pappardelle served with a

rabbit ragout finished with pecorino romano and freshly cracked black

pepper.

One of the restaurant's main course dishes, Porchetta contadina, Kingaroy

belly pork filled with lardo colonnata style, sage, rosemary and garlic served

with cavolo nero, hot mustard fruits and pan juices has diners venturing

great distances to savour.

And in deference to Manu Feildel and Pete Evans (My Kitchen Rules) - our

compliments to the kitchen, as all the dishes were seasoned perfectly.

Tartufo's wine lists are extensive featuring new and old world wines and

Australian greats, and the attentive staff are always eager to assist with the

choice of perfect wine to match your menu selections.

The dessert list is tempting - vanilla bean panna cotta served with a mint

and citrus salad and white chocolate shavings; tartina di fichi, hand-made

tart filled with local figs and frangipane served with a port and fig syrup and

vanilla bean ice cream; and Tony's famous semifreddo alle prugne, full of

Strega soaked prunes and pistachio nuts lasciviously drizzled with spiced

orange syrup.

For dessert, we chose to share was an Italian sticky chocolate fondant with

marscarpone, fresh raspberries and chocolate sauce, with a Pedro Xemenez

sherry. So chocolatey - so decadent - so delicious.

We definitely suggest you make a booking, as this restaurant has quickly

become a firm favourite with both local and destination diners.

Patricia Urquiola, a Spanish architect based in Milan, is known for heroriginal designs of objects and furniture which she produces for majorinternational companies. As in architecture which complements its

Jurgen Schirmacher has been practicing as aprofessional interior designer for almost 23 years,and has completed projects at home and abroad. He

is a member of the "Design Institute Australia".

Son of internationally renowned architect Hans J.Schirmacher, Jurgen initially studied architecture beforechanging course and completing an Advanced Diploma inInterior Design in 1987. Whilst still a student, he designedand manufactured a stainless steel coffee set, which wenton to win several awards. As there was a gap in the localmarket for innovative yet classically inspired lamps andfurniture, he became involved in the design andmanufacture of a range of up-market lamps, furniture andobjects d' art whilst continuing with his interior designwork.

Jurgen's design philosophy includes a legacy of strictdiscipline, which is evident in all of his completed work. Hehas always believed in a hands-on approach and hasrenovated and restored several historical houses, oftendoing a lot of the physical work himself, from tiling andcabinetwork, to paint techniques, plumbing and evenlandscaping. He has also designed, documented andproject-managed the construction of several houses overthe years, although the mainstay of his work remainsinterior design. This hands-on approach has enabled himto work closely with most of the trades and to “speak” theirlanguage as it were.

Purchasing or building a house is one of the biggestinvestments that people will make in their lifetime.Renovating and restoring a property is equally daunting,but at the end of the day adds value to the house if it is welldesigned and professionally implemented. It makes sensetherefore to plan each and every detail meticulously,

setting out a time frame for budget and implementation.Jurgen always advises his clients to develop a “Master

Plan” of how they would like to enjoy their house and thelifestyle it offers in the years to come. He then works“backwards” in the planning, so that each step ofadditions, renovations & changes moves towards the endgoal. His motto has always been to do things right the firsttime so as to avoid changes as these can be very costly.

All the houses that he has worked on have seen adramatic increase in value once completed. One project -a historic farmhouse that Jurgen tastefully renovated andrestored over a period of 7 years - increased in value by 780%.

No job is too big or small. All projects, and clients receivethe same depth of commitment, passion, responsibilityand individuality. Each valued client has different needsand enjoys a different lifestyle, and it is for this reason thatJurgen blends into his interiors a mix of both classical andcontemporary elements that create a timeless appeal.

A successful project is a reflection of the people who liveand work in it. Lifestyles, moods and needs must beconsidered, and it is the task of an interior designer tointerpret these needs and transform them into a workingreality.

Tesla electric car proves the futu

finally here...

One of the first, the Detroit Electric was an early 20th Century electric car,perhaps the most popular in history. The Anderson Electric CarCompany started building the cars under the Detroit Electric brand over

100 years ago.The Detroit Electric was a production model with 5 forward gears and 3

reverse, - steering was by a single lever. On the Gold Coast, the now defunct Giltraps Motor Museum at Kirra had a

1914 model Detroit complete with flower vases. In 1978 I was in the process ofproducing a brochure for the museum, when we cruised along in the Detroitsilently up the road to our photo location and back, the range was obviouslylimited, which we can only assume is the reason it has taken a 100 years (the firstelectric car was built in around 1890’s or so) to now become commercially viable,or is there some other devious reason petrol companies and governments withall their revenue creating taxes have slowed the progress?

In the meantime there is a lot of activity at the big end of town to get newmodels out, including Land Rover, Jaguar, Toyota and many more.

Jaguar have just announced theirs with a very limited 50klm all electric rangeand a price tag of over a million dollars,. Another company that has done all thework and sold more than 1600 cars worldwide, is possibly the only real totallyelectric alternative, the US company Tesla.

With exhilarating performanceand a range of 400 kilometres ata cost of around $9 in power, TomMurray found this electric car tobe a real option.

The Tesla, bearing a little resemblance to the Lotus Elise is

understandable as it is built on a lengthened and widened

chassis, and utilises the windscreen and steering column

dash and a couple of knobs, but that’s it - the rest is all Tesla -

with every panel newly designed and created in carbon fibre.

The power source is essentially 1600 computer batteries with

an expected 8-9 years life span, so running costs are kept to a

minimum.

A quick trip around Brisbane’s Portside area certainly

received some second looks, as we silently whisked by.

Pedestrians can be a hazard so a heightened driver awareness is

required as you silently approach, apart from that it’s all go.

So the drill is, after sliding in to the snug cabin, which is

comfortable once in with plenty of leg room available. The cabin

is essentially no different to any other car apart from not having

a gear stick... just 4 push buttons on a centre consul, a big D

button for is for GO... just press this and accelerate away. Full

neck snapping acceleration requires an extra selection on the

LCD screen, which also gives you all the info required on power

Jaguar gears up production forthe C-X75 electric supercar

Jaguar has announced it will launch the C-X75 concept car as an exclusivehybrid supercar.

"People expect Jaguar to be innovators that is when Jaguar is at its best," saidAdrian Hallmark, the Jaguar brand director.

"The C-X75 received an incredible reception as a concept car. We've beenbuilding on that momentum and there is a clear business case for this exclusivehalo model. No other vehicle will better signify Jaguar's renewed confidence andexcellence in technological innovation than this."

The C-X75 will be developed in association with Williams F1, which willprovide its engineering expertise in areas including aerodynamics, carboncomposite manufacture and hybrid technologies.

It will come with a relatively small petrol engine, with two powerful electricmotors with 4WD, and is expected to do 0-100 kmph in less than three seconds,with an all-electric range in excess of 50 km. It will mix internal combustion withelectric motors to achieve supercar performance, with less than 99g/km CO2emissions.

The C-X75 will be true-to-concept, lightweight, all carbon-fibre chassis.Only 250 examples will be built, each costing between A$1,000,0000 to

$1,300,000 in Britain depending on market and local taxes.

Performance wise it is truly amazing, the power is instant with no tricky

procedures - just plant the accelerator, it’s faster than most ‘super cars’ for

less than half the price, handling is as you would expect with a low slung

sports machine, fast and precise, steering was maybe a little heavier than

expected but gave a solid confident feel with the road, with nothing but the

wind and road noise to hear it is virtually silent.

Braking is another interesting feature, as you lift off the accelerator the

Regenerative Braking Energy gives the batteries a charge, the electric motor

inertia essentially stops the car on it’s own, with minium brake pedal needed.

performance and reliability in everyday use - albeit in conditions we don’t

experience every day – but the knowledge we could should we choose to.
