Trends in Cake Crafting™

• Pattern fills have evolved into a dominant design element across industries, from fashion to home décor. This trend can now be applied to cake and confectionery decorating.

• Cake decorators have been using supplies available to the craft industry for years. Craft industry manufacturers are now developing more tools specific to cake decorating, opening the door to even more possibilities.

• With the release of Lucks Edible Image® Designer Prints™ decorations in 2007, decorators began to incorporate prints into their cake and confectionery designs in exciting new ways. Three years later, this trend is exploding in the form of Cake Crafting™.

Roll out your fondant or gumpaste product.

b. Spray with water and remove puddles with a food grade paintbrush.

Peel Edible Image® Designer Prints™ decoration from the backing sheet.

Starting at the center and working toward the edges, gently tap and smooth the image onto the fondant.

Trim the white edges from the strips using an X-Acto knife and ruler.

Moisten your fondant in one of three ways: a. Apply water, simple syrup or piping gel with a damp paper towel.

c. Use a food grade paintbrush to apply water, simple syrup or piping gel.

Use the paper backing sheet as a guide to support the Designer Prints™ decoration as you place the image on the moistened fondant.

Use your cutting tools to create unique designer shapes.

Line up strips on your moistened fondant like wallpaper, so the pattern is continuous.

1 To create the black and white flower, first roll out white fondant and cut a disc approximately 3 ½” in diameter. This can be allowed to dry either curved (as on the side of a 10” styrofoam dummy) or flat and will be the base of your flower. A curved disc will conform to the curve in your 10” round cake.

2 Next, roll out more fondant, enough to apply four to six Classic Lace Designer Prints™ decorations.

3 With three to four sizes of leaf cutters, cut enough petals of each size to create a ring of each (between 20-25 of the larger sizes and 10-15 of the smaller sizes).

4 While still pliant, curl the base of each petal around a tapered tool of some kind, like the end of a paintbrush, or by hand. The resulting petals will be slightly tubular at the base, resembling a small calla lily.

5 When the disc and petals are dry, use royal icing to attach the first (outermost) ring of petals. Use the largest petal size and allow them to overlay the disc’s edge by about ¾”. Repeat the next two rings with successively smaller petals, leaving the center of the circle empty. Let the royal icing dry.

6 When you are ready to apply the flower—before or after delivery—align the flower on the 10” tier evenly between the horizontal ribbons (edible Black Shimmer Ribbons™ decorations used on this cake) with a thin layer of buttercream. Use the empty center of the flower as a place to press the flower down without damaging the petals. Then fill in the center using icing and the remaining small petals.

1 Print and cut out the birdhouse and bird patterns (available at www.lucks.com) or create your own.

2 Start with the bird house. Using your paper pattern as a guide, estimate how much fondant will be needed for the front panel and roll out enough white fondant to accommodate that panel.

3 Apply the Designer Prints™ decorations. The strips will need to be tiled like wall paper for full coverage. See page 3 for instructions on tiling Designer Prints™ decorations. The front panel will require three 5” long strips to be tiled.

4 Using your paper pattern as a guide, cut out the panel.

5 With a round cutter, cut the birdhouse opening while the fondant is still pliable. The hole for the bird rest can be cut with a larger size plain round tube to best fit your wooden dowel size.

6 Repeat the process outlined in steps 2-4 for all panels of the bird house, bird and flower petals.

• Use the striped pattern from the Pinkalicious Designer Prints™ decorations for the front, back and side panels, the brown polka dot pattern for the roof panels and flower petals and the white polka dot pattern for the bird.

• Cut the birdhouse panels with a kitchen knife. Cut the flowers and the bird with an X-Acto knife.

• The flower petals are cut freehand.

7 Let all birdhouse panels dry individually, and then glue pieces together with royal icing and let dry propped onto a structure, like the box shown here.

1 Print and cut out the pinwheel pattern (available at www.lucks.com) or create your own.

2 To create the pinwheels, start by mixing three small batches of fondant using Lucks Orange Liquid Airbrush Color for one, Lucks Yellow Liquid Airbrush Color for another and a scant amount of Lucks Red Liquid Airbrush Color to create the rose pink for the last.

3 To make the most efficient use of both your fondant and Designer Prints™ sheets, determine what size squares your pinwheels will start as. Pre-cut correlating, slightly oversized squares in all the patterns in the Summer Variety Designer Prints™ sheets while still on their backing. Roll out one color of fondant at a time, applying a variety of patterned squares to each.

4 Cut pinwheel squares from fondant with Designer Prints™ decorations applied. Use a knife or square cutters (can use straight edged or scalloped cutters).

5 Make diagonal cuts in each corner of each square, about halfway in to the center point.

6 Fold one edge of each split corner in to the center, and repeat with each corner. Let dry overnight.

7 When you are ready to finish the cake, pipe pinwheel stems and attach pinwheels to their respective stems with icing.

1 Print and cut out the kite pattern (available at www.lucks.com) or create your own.

2 Start with the clouds. Roll out white fondant and cut a variety of forms, either freehand with an X-Acto knife or with specialty cutters. Allow to dry overnight on a curved surface, such as the side of a 4” or 5” styrofoam dummy.

3 For the kite, roll out a piece of white fondant slightly larger than the paper pattern. Tile the striped pattern from the Sunny Paisley Variety Designer Prints™ decorations on your fondant (see page 3 for more information on tiling).

4 With your cutting tool and using your pattern as a guide, cut the precise kite form and allow to dry.

5 When the clouds are dry, spray the concave side of each with Lucks Pearl Shimmer Airbrush Color and allow to dry. Turn over and repeat this process on the convex side of each. Let dry.

6 Roll out more fondant and apply one sheet (or part of a sheet) of the paisley pattern from the Sunny Paisley Designer Prints™ decorations. Use a small flower cutter to cut out approximately 15-20 paisley flowers.

7 Arrange dried clouds in concentric layers on the top of the cake. Depending on their form, i.e., how evenly the bottom of the clouds rest upon the cake top, they may need to be supported with rolled balls of white fondant, or they may be attached with icing.

1 Prepare the tail feather medallions first. Roll out fondant and cut between 20-25 small circles. Cut a narrow wedge from each with an X-Acto knife. Coat all circles with Lucks Purple Shimmer Airbrush Color, and allow to dry.

2 After icing the cake, use a paintbrush or a Wooden Rose Stick to loosely scribe where you would like the full tail feather train to fall down the sides of the entire cake.

3 Take three sheets of the paisley and two of the floral pattern from the Aqua Paisley Tall Variety Designer Prints™ decorations, and spray lightly with a coat of Lucks Turquoise Shimmer Airbrush Color. Let dry for 5-10 minutes.

4 Roll out some fondant and apply the Designer Prints™. Cut between 16-20 feathers in the floral pattern and 22-27 feathers in the paisley pattern. This can be done by hand or with a leaf or paisley cutter, approximately 3” tall. Cut out a few smaller feathers (about 1” tall) to have on hand, should you find any gaps which might need to be filled.

5 Starting from the base, apply the floral pattern feathers up the scribed line to outline the tail. Use 8-10 floral pattern feathers on each side. The feathers should overlap top to bottom and should come all the way up over the top of the cake. This is where it will eventually meet with the body of the peacock.

6 Starting from the base, fill in the tail with the paisley feathers (save two for the bird’s wings). The feathers should overlap side to side and top to bottom. Fill in any gaps with the extra small feathers.

7 When all the paisley feathers have been applied, attach one purple medallion to the wide part of each feather with a small dab of icing.

1 To prepare the stylized flowers, mix a portion of fondant with Lucks Lavender Liquid Airbrush Color. Roll out and cut several discs in a range of sizes to accommodate all the sizes of flowers you wish to construct (1 ¼” to 2 ½”).

2 Use the remaining lavender fondant to create a fantasy stamen for each flower, by rolling a ball scaled in size to each flower, then using the back (or front, depending on stamen size) of a #8 or #10 decorating tube to make a small circular impression on the front of each ball. Use a ball tool or the end of a paint brush to create an impression in the stamen’s center.

3 Roll out some white fondant (about 10” by 11”) and apply four strips of Groovy Designer Prints™ decorations. Cut stylized petals in different size triangles with a knife or specialty cutters. Use a circle cutter to slightly arc the wider edge of each petal. Let all fondant pieces dry.

4 When fondant pieces are dry, assemble flowers by overlapping petals and affixing them to the discs with royal icing.

5 For the centers of the larger flowers — as well as the entirety of the smaller, filler flowers — fold strips of Turquoise and Lime Green Edible Image® Shimmer Ribbons™ decorations in a circular formation, as you would a fan. Attach to discs with royal icing and finish with stamen.

6 Let all flowers dry overnight before applying them to the finished cake.

Edible Image® Designs Applied to Fondant Type Product

Use this method to apply prints to your preferred medium. Perfect for creating structural decorations that dry hard or will be formed into shapes.

• Apply Edible Image® designs to your fondant, gumpaste or sugarpaste product (see page 3 for application instructions).

• Allow your product to rest for at least 30 minutes prior to cutting so it fully adheres.

Edible Image® Designs Cut Independently

Use this method to cut the Edible Image® designs directly. Perfect for applying flat designs that will meld into icing or fondant type products.

• Peel the Edible Image® design off of the backing sheet and place on your Cricut Cake™ mat that has been prepared with shortening.

• Change pressure setting to low or medium pressure.

• Handle images with care, especially if small details have been cut.

Helpful Tips• Use the “material saver” button to get

the most cuts out of each sheet.• If working with narrow strips, place your

material two or three inches over from the side of the mat. This will fool the machine into thinking your material is the minimum 3” width.

• To maximize Edible Image® designs, cut the image to the approximate size needed before removing from the backing sheet using an X-Acto knife.

1 Roll out a 12” by 10” fondant sheet and apply three turquoise polka dot strips from the Polka Dot Variety Designer Prints™ decorations. See page 3 for instructions. Tip: one strip will cut about five 1 ½” monogram letters. The strips will not need to be tiled for this application; apply them in tight rows.

2 Create the letters by using a Cricut Cake™ system. Use the Cricut Cake™ Elegant Cakes cartridge plain font shadow and shift <Border15> for the letter “B”. Be sure to realign your cutting needle for each Designer Prints™ decoration.

3 If you use fondant, allow the letters to dry overnight. Sugarpaste will dry quickly and allow you to stand up letters right away if desired.

1 Roll out a 5” by 6” fondant sheet and apply one blue polka dot sheet from the Spring Variety Designer Prints™ sheets. See page 3 for application instructions.

Tip: With an X-Acto knife, cut the Designer Prints™ sheet on the backing to the needed size prior to applying the sheet to fondant.

2 Create the cutouts by using a Cricut Cake™ system. Cut out one 5” owl (shift+<Owl>) using the Cricut™ Storybook cartridge. Let dry overnight.

3 Tile two pink strips from the Polka Dot Variety Designer Prints™ decorations onto fondant. Cut out a variety of four-petaled flowers, ranging in size from ¾” to 2” (shift+<Flower6>), using the Cricut Cake™ Cake Basics cartridge. Let dry overnight in a flower or cup former to give dimension.

4 To create the branches, melt dark chocolate dipping chocolate or candy melts using your preferred method. Fill a pastry parchment with chocolate, and then cut an opening about ¼” wide. Pipe a variety of branch lengths (about 3” to 4”) on a piece of parchment and allow to solidify.

5 Fill another pastry parchment with melted chocolate, but this time cut a hole about 1/8” wide. Use this chocolate to attach branches to cake and flowers to branches. You will need to hold the pieces in place for a few seconds while the chocolate sets.

1 Place a sheet of Polka Dot Designer Prints™ decorations onto a slightly greased Cricut Cake™ mat.

2 Set the Cricut Cake™ pressure to low and speed to min and cut the desired number and sizes of pattern, using the Cricut™ Storybook cartridge. Use shadow and shift <BigSwirl>. Be sure to realign your cutting needle for each Designer Prints™ decoration.

1 Roll out a 12” by 10” fondant sheet and apply three strips of the zebra pattern from the Safari Tall Variety Designer Prints™ decorations. See page 3 for application instructions.

2 Create the cutouts by using a Cricut Cake™ system. To maximize your output, cut your large pieces aligned to the start of a strip and then fill in the gaps with varying sizes of flowers. For your flowers and numbers, prepare a day ahead and allow these to dry overnight so they will hold their shapes on the cake.

• Use the Cricut Cake™ Elegant Cakes cartridge plain font shadow and shift <Accent1> for the number one and plain font shadow and shift <Accent5> for the number six.• Use Cricut Cake™ Cake Basics cartridge, font shadow and shift <Border5> for the word “Sweet” and plain shadow blackout <Border11> for the hearts.• Use Cricut Cake™ Cake Basics cartridge plain shadow blackout or plain base <Flower1> for the two style flowers.

3 Apply the cutout decorations to your prepared cake by moistening the back of the pieces with plain water and pressing firmly against the pink fondant on your cake.

4 Support the “16” on the top of the cake by using popsicle sticks or cakeball sticks to hold numbers upright.

Airbrush Application Instructions

• Leaving the Print-Ons® sheet on the backing paper, place on a sheet pan to avoid overspray. Evenly airbrush the entire sheet with Lucks Shimmer Airbrush Color. Allow sheets to dry for at least one hour.

• Slightly grease your Cricut Cake™ mat, and peel the airbrushed Print-Ons® sheet from the backing paper. Position it on your mat. Tip: use the backing paper over the top of the sheet to smooth and firmly press it to the cake cutting mat.

3 When you apply the small flowers to the cake, use a fondant ball tool to indent the center of each small flower.

Helpful Tip

• The shortening on your Cricut Cake™ mat will keep the shimmered Print-Ons® sheets moist and will also help apply pieces onto cake. If the shimmered Print-Ons® sheets will not be used within 24 hours, be sure to return them to the metalized bag to protect them from drying out.

1 Prepare edible Black Shimmer Ribbons™ filigree strips. Using a papercrafting edge punch (Martha Stewart Crafts™ Modern Garland punch shown), punch design in one edge of one strip. Reverse strip and punch design on the other edge. Each 4” cake will require approximately 1 1/3 strips for wrapping.

Tip: If you are planning a great number of cakes, be sure to keep all prepared Edible Image® Shimmer Ribbons™ decorations protected from the air to avoid drying.

2 Prepare Black Shimmer Ribbons™ cake base strips by cutting each Shimmer Ribbons™ decoration in half, lengthwise. Again, each cake will require approximately 1 1/3 strips for wrapping.

3 Ribbon filigree and base wrap should be applied with clear potable alcohol or lemon juice; use an airbrush or a paintbrush to apply alcohol. Apply filigree and base ribbon while alcohol is still damp. Repeat this step with each cake until complete.

1 To create the fodant curls, apply Crazy Dots Designer Prints™ for chocolate to a rolled out sheet of chocolate fondant, that has been slightly moistened.

2 Cut ¼” to ½” strips, and then curl around a straw or dowels. Slide off and set aside on parchment paper to dry before using.

3 Wrap Designer Prints™ for chocolate around the side of your cheesecake to finish. Do not add water. Cheesecake has enough moisture for the Designer Prints™ decorations to adhere.

1 Apply Floral Splendor Designer Prints™ for chocolate to a rolled out sheet of chocolate fondant that has been slightly moistened.

2 Cut the fondant into wedges as shown.

3 Use the same triangle shapes shown on the macaroons to make cones or flowerettes, and fill with a dollop of mousse or buttercream.
