Cooking on the barbecue in the garden is one of our favourite things to do in the summer - it’s such a quick and easy way to cook and is ideal even for a weekday dinner.

Success is often just about having a good marinade where you literally combine a few tasty ingredients, add your meat and stick it in the fridge overnight ready for the next day. As all of the preparation has been done in advance, all you have to do for the perfect barbecue is pop it on the grill, mix up a delicious salad, cut up some crusty bread to serve and get ready to impress your guests!”

Playing your partThere is no need to make expensive changes when trying to reduce your carbon footprint. Doing lots of little things can make a noticeable difference and help you save a few pennies along the way.

Shut that door!Always close doors and windows and ensure that your loft is well insulated to stop valuable heat from escaping.

Bright ideasTry using energy-saving rather than standard light bulbs. They are a little more expensive but last longer and use up to 75% less energy, saving you money in the long run. And don’t forget to turn the lights off when you leave a room!

Unplug it!Switch off at the wall or unplug all electrical appliances that you are not using. Even using the ‘standby’ mode on most appliances still uses energy.

Use cold waterObviously not in the shower ... but wherever possible! Heating water is an expensive business and not always necessary.

Invite your family and friends overCooking for large groups is more energy effi cient, so why not invite the family round to reduce your carbon footprint and spend some quality time with loved ones at the same time.

Get ActiveTry walking or cycling rather than driving. It is healthier, cheaper and will greatly reduce your carbon footprint.

The BSI Kitemark Energy Reduction Verifi cation (ERV) scheme has been developed to offer consumers and organisations a way to verify and certify reductions in CO2 emissions. The scheme has been approved as part of the Government’s Carbon Reduction Commitment Energy Effi ciency scheme (CRC).

Our Kitemark ERV certifi cation re-assures our customers that we are taking environmental action in a way that can be guaranteed by an independent body.

There are numerous ways in which we have managed to reduce our carbon footprint. We have installed Smart

Meters which provide us with an accurate picture of how much energy we are consuming.

We’ve also introduced newer, more effi cient chiller and freezer cabinets to our stores, and have appointed internal auditors who are sent to high energy consumption stores to identify and rectify problems with energy usage.

Being aware on a daily basis of our actual energy consumption means that it remains at the forefront of our minds and helps us to implement systems that can reduce our carbon footprint and ensure that we really are on the way to a better tomorrow.

SERVES 4• 2 courgettes, sliced into wide strips• 1 aubergine, peeled and sliced into wide strips• 1 red pepper, sliced into wide strips• 1 yellow pepper, sliced into wide strips• 1 red onion, cut into thin wedges• Primadonna extra virgin olive oil • 4 Rivercote baguette rolls, defrosted• 1 garlic clove, peeled and cut in half• Kania sea salt and black pepper

For the dressing• 160g tomatoes, chopped

and seeds removed• 2 tbsp fresh basil, chopped• Kania sea salt and black pepper• 3 tbsp Primadonna extra virgin olive oil

1. Brush all the veg with olive oil, season with salt and pepper, then place carefully onto the barbecue. 2. Leave for 2-3 minutes on each side until you get nice chargrilled lines then remove to a bowl. The veg can be cooked and left to stand for a while – in fact this will intensify the flavour.3. Take each baguette and split in half lengthways. Rub the garlic over each piece, brush with a little olive oil then barbecue until you get nice chargrilled lines on each side. Keep warm. 4. For the dressing, chop up the tomatoes, add a little sea salt, a good grind of black pepper and stir in the basil and olive oil. 5. Spread the dressing onto each slice of baguette roll and generously pile on the chargrilled veg.

SERVES 4• 2 aubergines, cut on a slant approx. 2cm thick• 2 romero peppers, halved lengthways

and seeds removed• 8 tbsp Primadonna extra virgin olive oil • 200g Sofra Greek-style salad cheese• 2 tbsp fresh mint, chopped• Kania black pepper

1. Toss the aubergine slices and pepper halves in 4 tablespoons of the olive oil and season well.2. Crumble the salad cheese into bite-sized pieces and place in a medium-sized bowl with the remaining olive oil and chopped mint. Season well with black pepper and toss again to coat the salad cheese in the oil mixture. Set to one side in a cool place for 2 hours to allow the flavours to develop.3. Cook the aubergines and peppers on a medium hot barbecue for approx. 8-10 minutes each side or until softened and lightly charred.4. Arrange the cooked aubergines and peppers on a serving plate. Scatter over the marinated salad cheese with all of it’s oil. Try serving with toasted pitta breads, houmous and olives.

1. Preheat the oven to 200oC, gas mark 6. Place the parboiled potatoes in a roasting tin and toss with two tablespoons of olive oil. Season and roast in the oven for 15-20 minutes or until browned.2. Combine all the dressing ingredients in a bowl, season to taste and set to one side.3. Season the beef with plenty of black pepper and sprinkle over the Worcester sauce and remaining olive oil. Cook on a hot barbecue for approx. 3 minutes each side (for a steak that is medium rare) or cook to your liking. Set to one side to rest for at least 5 minutes before slicing.4. To serve, toss the roasted potatoes and all their oil with the sugar snap peas and lambs lettuce. Divide between four serving plates and scatter over the beetroot wedges. 5. Slice the rump steak into thick slices on a slant and lay the slices over each salad. Finally, top the beef with a dollop of the horseradish dressing and serve at once.

1. Good barbecuing is all about preparation. Make salads, marinate the meat, have your ingredients ready on trays and get a table set up outside before you start grilling.2. To truly master the barbecue, you’ll need the right tools for the job. Big tongs for turning, a large metal spatula for flipping, a small brush for glazes and the all important kitchen roll. When buying new tools, check that the metal parts are stainless steel and the handle is long and made of either thermoplastic or wood.3. Try new recipes and experiment. Revive old family BBQ favourites by adding new flavours and spices like lemon juice, paprika or cumin. If you are feeling a little uninspired, have a flick through this magazine – there is sure to be something to whet your appetite.4. Ketchup isn’t a dirty word. This versatile condiment makes a wonderful base for creating your own marinades and sauces. My Orange-Marinated Loin of Pork with a Sticky Glaze on page 22 is a great example.5. A clean grill is essential – you won’t get as many flare-ups and it won’t taint the overall flavour of your food. When you know how, cleaning the grill is easy. The trick is to clean the barbecue whilst it’s still warm – the leftover food residue will turn to ash and then you can scrape it off with a metal spatula or wire brush.

1. There are many types of outdoor barbecues on the market. Some people prefer electric or gas-fired grills, others like a kettle-style grill with wheels. In my opinion, for real, smoky barbecue flavours, a wood or charcoal grill is best.2. For a charcoal barbecue, light it up at least 30-40 minutes before cooking. A simple tip to know when the barbecue is hot enough is to wait for the coals to turn white. Only then should you put your food onto the grill to cook. If you put it on too soon when the coals are still red, you’ll end up with burnt but raw food!3. If using charcoal or wood, keep thin cuts of meat such as kebabs and fish approximately 5cm away from the coals. For thicker cuts such as steaks, which need to cook for longer, try to keep them around 15cm away from the coals. If your food has browned thoroughly, move it to a less hot part of the grill (usually around the outside edges) to finish cooking without burning.4. Don’t be tempted to prod or prick the food whilst it’s cooking – this will release precious juices, cause flare ups and the food to dry out. 5. Don’t leave raw meat or fish in the hot sun whilst waiting for space on the barbecue. Try to keep it in the fridge or in a cool box. If you need to thaw out meat, do so overnight or all day in the fridge.

MAKES 6 KEBABS• 480g Strathvale

fresh British pork loin steaks, each cut into 6 equal chunks

• 1 large red pepper, halved, deseeded & cut into 9 equal chunks

• 1 large yellow pepper, halved, deseeded & cut into 9 equal chunks

• 1 tbsp Primadonna extra virgin olive oil

• 6 small bamboo skewers, soaked for 30 minutes in cold water

For the paste• 2.5cm piece of ginger,

peeled & roughly chopped• 2 large cloves of garlic,

peeled & roughly chopped• 2 tbsp Nostia tomato

purée• 2 red chillies, deseeded &

roughly chopped• 2 tsp Kania paprika

• 1 pinch Cordelia granulated sugar

• 100ml Eridanous Greek-style creamy yogurt

• Kania sea salt

For the sambal• 1 cucumber, halved,

deseeded & finely chopped

• 200g bag radishes, finely sliced

• 1 red onion, finely chopped

Tikka-style Pork Kebabs with Salad Sambal1. Place the pork pieces in a large bowl and set to one side. 2. In a small processor, whizz together all the paste ingredients and season. Stir into the pork and, if time permits, leave to marinate in the fridge for 1-2 hours.3. Take a soaked skewer and thread with a piece of pepper then pork. Repeat until all 6 kebabs are complete with 4 pieces of pork and 3 pieces of pepper. Make sure when skewering the kebabs that you don’t pack them too tightly as this will not allow them to cook through evenly. 4. Place the kebabs on the barbecue, drizzle with a little olive oil and cook for approx. 18-20 minutes, turning every now and then until cooked through and lightly charred. 5. Meanwhile, toss all the salad sambal ingredients together and pile into a serving dish.6. Arrange the kebabs on a serving plate or board and lightly sprinkle with a little sea salt. Serve warm with the salad sambal and a pile of warm naan breads.
