This is a remake of a classic creamy ranch dressing. We make it delightfully tangy and lactose-free with Green Valley Creamery Lactose-Free Kefir and Sour Cream.

INSTRUCTIONS1. In a medium bowl, combine all ingredients except kefir and blend well with a whisk or fork.2. Slowly pour in kefir until you reach desired consistency. 3. Fluffiest Blueberry Pancakes25 minutes Servings: 4

Weekend brunch just isn’t complete without classic, homemade pancakes. We recreated this breakfast favorite by replacing buttermilk with our lactose-free kefir for flu�er pancakes, and we added frozen blueberries for a tasty boost of antioxidants.

INSTRUCTIONS1. Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl. Add the kefir, butter, and eggs and whisk everything together just until well combined (lumps are fine).2. Keep the blueberries frozen until the pan is hot and add to the batter just before you’re ready to pour it in the pan. 3. Heat a large non-stick skillet on medium-low. Once warm, add one tablespoon of oil. Ladle 1/3 cup of batter into the skillet. 4. Flip pancakes once bubbles rise to the surface and the bottoms are golden brown, after about 2-4 minutes. Cook until both sides are lightly browned. 5. Top with syrup, lactose-free butter and enjoy!

Crispy Fried Chicken35 minutes Servings: 4

We know better than to mess with this classic so we created a recipe that was lactose-free and still achieved the crispy and juicy perfection of buttermilk fried chicken. Simply marinate the chicken in lactose-free kefir instead of buttermilk, and the meat will be tender and flavorful while maintaining a delicious crunch on the outside.

INSTRUCTIONS1. Place chicken pieces in a large bowl and toss them with kefir, 2 tablespoons salt, and a grind of black pepper. Cover and marinate for at least an hour or up to a day. 2. Set a rack on a baking sheet or tray. Combine flour, 1 tablespoon salt and 2 teaspoons pepper in a bowl large enough to accommodate the flour and the pieces of chicken. 3. Pour oil into a large, heavy-bottomed cast-iron skillet with high sides and a lid, to a depth of a couple inches. Heat oil over medium-high heat to 350 degrees. 3. Toss the chicken pieces in the bowl filled with the flour mixture and coat well. Shake o� excess flour and fry the pieces of chicken skin-side down, in batches so as not to crowd the pan, for about 5 to 10 minutes, covered by the lid. 4. Remove the lid, turn over the chicken pieces, and cook 5 to 10 minutes more, uncovered, until cooked through and a deep golden brown. When golden brown, remove to the rack to drain and rest.
