HISTORY OF THE AMARILLA DE RONDA ¨LA ORGANIC¨

More than 200 years ago, a religious community of people from Ronda (Andalucía) started to produce an olive oil using the fruit of century old olive trees. The oil from these groves, called LA Amarilla de Ronda , situated only a few kilometres from one of the most beautiful and emblematic cities of Andalusía and Spain, has always been famous among the locals for being an oil of exceptional and unique quality.

The Gomez de Baeza family, proprietors of the LA Amarilla estate, decided to continue the tradition of the nuns and to commence the production and commercialization of the best

organic olive oil from Andalusia.

Sales gradually increased and the production of LA Amarilla became insufficient. LA Organic therefore took as a development basis the system of ¨Pagos Asociados ¨ (copying the model used in the wine world). Abiding by this system a form of production is guaranteed not only to accord with demand, but also under the quality standards required by LA Organic.

LA Organic and the shareholders of the sector: José Cano (Canoliva), Francisco Serrano from Almazaras de la Subbética, César Colliga and Maximiliano Arteaga, some of the biggest olive oil Experts in Spain, are in charge of producing the different LA Organic olive oil blends by supervising the olive groves in order to produce excepcional extra virgin organic olive oils.

Michel Rolland, one of the great oenologists of the world, participates in LA Organic not only as a shareholder but also as a consulter of the final blends of olive oils. He is adapting his nearly 40-year experience in the world of wine to the world of olive oil.

Philippe Starck is an internationally acclaimed French creator, designer and architect. He is the Artistic Director and has created the image of La Organic oils and other products.

PHILOSOPHY OF THE AMARILLA DE RONDA ¨LA ORGANIC¨

All our olive groves are found in Andalusia, the area where the best Spanish olive oils are produced.

All our varieties of olives can be traced directly back to the same source of origin.

Traceability

The olives collected must be at a maximum distance of one hour from their correspondent mill to guarantee the immediate grinding of the fruit.

Proximity to the mills

Each year it is decided, among the varieties we cultivate under our Payment scheme, which are the best with which to make the specific mix for each one of our products.

Early harvest

Small groves

We currently count with 56 olive groves that cover a total of approximately 654 hectares in 5 provinces of Andalucía. These olive groves once incorporated into the project are supervised and controlled by LA Organic.

Control

Our olive groves are mainly represented by small farms between 1 and 25 hectares.

Cold extraction

We guarantee that all our olives are cold pressed at a maximum temperature of 24°C.

Organic

Our olives are cultivated using traditional farming methods and are 100% pesticide free. All our oils and mills are certified by CAAE.

The organic extra virgin olive oils produced by LA Organic come from the best crops of the Payments associated to the LA Company. The “Pagos Asociados” are mostly small crops (sometimes as small as 1 to 3 hectares). They represent the historical starting point for the smallholding form of Olive Oil harvest.

LA ORIGINAL These were the first LA Organic olive oils, Philippe Starck created the packaging, based on the traditional cans, seeing as it is the best way in which to preserve olive oil. It could be compared to a ¨reserva¨/vintage in the world of wine. It´s a delicate extra virgin olive oil with an intensity from smooth to medium. It possesses tones of green leaf, grass, apple, banana and nuts, with balanced and perceptible sensations in the mouth. Ideal in use as a dressing and raw, for consumers who love intermediate sensorial profiles. There are two varieties: Delicate and Intense.

LA ORGANIC ORIGINAL INTENSE Smooth and agreeable in texture, this oil combines an intriguing flavor of walnuts with aromatic touches of tomato leaf, apple, green banana and acerola peel, enhanced by a deep, pleasurable aftertaste. It has an agile and energetic palate, with tones of green tomato, apple and walnut. The plainly Spanish character comes from its fleshiness and agreeable aftertaste.
