The Concept1
THE NAME: Fish N Beer
FOUNDED: October 2016
THE CONCEPT: A dinner-only, casual restaurant with a serious approach to all things
seafood and beer.
Our approach is simple...let the fish and beer be the star. We ship
the highest quality seafood direct from both coasts to our kitchen,
developing the menu around what is most fresh at that time. We
work with our friends in the local cheese, bakery, and farming
industry to create seasonal starters and side dishes that are great
for grazing. Our chefs focus on three different cooking styles: pan-
roasted, fried, and our house specialty, wood-grilled.
Our certified beer specialist shares the same passion for our beer selection. We have 16 beers on tap to
showcase the flavor profiles that enhance our fish. Things change in the beer world as often as they do
in the ocean, so don’t expect to see the same lineup week to week. We also craft a mean cocktail and
provide a small but well-balanced wine list featuring our local favorites, IMT and Scarpetta. We like to
keep it unassuming, yet creative–our focus is on the fish. And beer.
The Design: Chef Kevin’s version of a modern day seafood joint that doesn’t look or feel like a “seafood
joint.” Warm and rustic meets modern day industrial. The 50 seat casual, cozy and approachable
Oysterette is right at home in the RINO neighborhood.

Kevin Morrison’s chef-owned and operated
restaurants focus on traditional dishes
with a modern twist. Whether it’s Mexican
street tacos at his Tacos, Tequila, Whiskey
restaurants, the almighty torta at Poco
Torteria, or seafood at his oysterette Fish
N Beer, Morrison puts a modern twist on
the cuisine and serves it in a lively and
cozy setting. Morrison has won awards
such as Top New restaurant in Colorado,
voted as one of the Top restaurants in the
United States by Bon Appetit, Huffington
Post, Men’s Journal and other publications.
Morrison has been invited to cook at the
James Beard House on several occasions.
