The Debut of Kerry Hotels

Kerry Hotels, the second upscale brand by

Shangri-La Hotels and Resorts, launched

its first property in February 2011 with

Kerry Hotel, Pudong, Shanghai. The

second property, Kerry Hotel, Beijing,

opened in the last quarter of 2011.

Hotel Overview

Soaring 31 storeys over the new Kerry Parkside

complex in the heart of Pudong, Kerry Hotel,

Pudong, Shanghai offers 574 guestrooms and

suites, three restaurants, a lounge and a craft

brewery, a 24-hour business centre equipped

with serviced offices and meeting rooms, the

city’s largest sports club with a wellness day

spa and indoor children’s playground, as well

as Shanghai’s largest portfolio of banqueting

and conference venues, including the city’s

largest pillar-free ballroom.

Guestrooms and Suites

Guestrooms at Kerry Hotel, Pudong,

Shanghai range in size from 42 to 168

square metres (452 to 1,808 square feet),

with sweeping views of Century Park or the

city. Sleek and contemporary furnishings

provide optimum comfort for work,

relaxation or socialising. Custom-designed

in-room consoles with high stools and build-

in minibars with complimentary craft beer,

beverages and snacks on arrival, 40-inch

flat-screen televisions, iPod docking stations and complimentary broadband and

wireless Internet access are standard. Sliding wall panels partition the guestrooms,

leading to separate bath and shower facilities.

The hotel’s guestrooms are divided into five main categories:

All suites have a separate living room

Dining and Entertainment

Kerry Hotel, Pudong, Shanghai introduces one of Shanghai’s most innovative dining

and entertainment concepts, an integrated three-in-one designer showcase developed

by boutique design consultancy Stickman Tribe – The COOK, The MEAT and The

BREW. Rounding out the hotel’s dining and entertainment options are The COOK

Lounge, which serves refreshments and premium teas by day and speciality cocktails

at night, and Blossoms, an elegant collection of private dining rooms, specialising in

authentic Cantonese cuisine prepared by a Hong Kong chef.

The COOK

The COOK, the main restaurant with 13

live show kitchens and a gourmet

delicatessen has seating for 365 people,

including an outdoor patio. Offering a

feast for the senses in à la carte and à la

buffet, the speciality chefs at The COOK

follow the philosophy of uncomplicated,

home-made preparation accentuating the

flavours of fresh, organic ingredients. In

addition, a gourmet merchandising deli

and shop showcases a range of The

COOK private- label signature spices, herbs, dried fruits, nuts, oils and crisps, along

with gourmet goods from around the world.

Friendly, warm and personal customer service offer a comfortable, welcoming

atmosphere for guests to relax and savour life’s simple pleasures: eating, drinking and

sharing. The culinary experience offers a global snapshot of cuisines ranging from

Chinese wok and steam baskets to an Asian noodle station and the Japanese sushi,

sashimi and yakitori kitchen. An orchard deli and butchers’ block, an Asian barbecue

station, a coffee counter and beverage bar, the patisserie, the wine cellar and cheese

vault round out the culinary smorgasbord. All kitchens similarly focus on meticulously

sourced ingredients supplied by local Shanghai growers and overseas artisanal

producers to ensure quality.

Organic Vertical Salad Bar: Features a vertical wall

displaying fresh organic produce by Shanghainese farmers

and accoutrements for guests to create their own salad

creations.

Western Kitchen: Pasta Kitchen & Butcher’s Block: Includes a selection of pastas and

features a daily homemade specialty prepared and served a la minute, Western soups

such as traditional New England seafood chowder and a daily chef’s special.

eye, rack of lamb and pork ribs, as well as oven-roasted or grilled seafood and poultry

will be available to order in or take away. In addition, a selection of small plates and

sides such as carpaccio, garlic spinach and grilled asparagus, are on offer.

Japanese Grill, Tempura and Sushi/Sashimi

Kitchen: The COOK’s Japanese kitchen

benefits from seafood being delivered

directly from China’s coastal areas of Dalian

and Qingdao as well as from Australia.

Freshly prepared sushi and sashimi, from a

experienced culinary team, will be available

to order by the piece or from a selection of

platters made for sharing.

Wok & Steam Basket Kitchen: Asian and local Chinese favourites are made-to-order

and delivered piping hot from the Chinese kitchen’s wok and griddle. Traditional

steamed classics such as Shanghai’s famous xiaolongbao (pork dumplings) as well as

oversized steamed buns with honey roasted pork, take centre stage.

Asian BBQ Kitchen: Featuring a selection of Asian BBQ favorites including Chinese

and Southeast Asian specialties. Guests can enjoy Canton-style roast duck or

Malaysian chicken wings or satays with authentic peanut sauce and Filipino lechon

(roast pork).

Asian Noodle Shop: A team of Malaysian hawker chefs,

fresh off the boisterous streets of Kuching, Sarawak,

bring originality, colour and lots of spice to the Asian

Noodle kitchen. Armed with generations-old family

recipes, these chefs have their own unique style of

noodle cooking and preparation, mixing and matching

flavours and spices. For guests seeking authentic street

food flavours in a luxe setting, classics such as seafood laksa (curry) and Sarawak

kolomee (dry-tossed noodles) are a must.

Indian Kitchen: Led by Chef Amar Singh Panwar, a 20-year veteran, the Indian

Kitchen presents authentic North Indian cuisine specialities, including Tandoori

Lamb Chop, Lamb Shish Kebab and Butter Chicken. Using the traditional tandoori

cooking method, guests no longer need to travel far for the real taste of India.

Thai Kitchen: Led by Chef Damrongsak Khammongkhon who has worked in Japan,

Bangkok and China, the Thai Kitchen features authentic Thai dishes with a hint of

Chiang Mai. Sample the ever-popular Papaya salad, Massaman Beef Curry and Thai

Fish Cakes - you will be transported back to the Land of Smiles right here in The

COOK.

Orchard Deli and Cupcake Counter: For the businessman on the go, the housewife in

a hurry, or families and couples picnicking at Century Park across the street from the

hotel, the Orchard Deli and Cupcake Counter offers a selection of take away

sandwiches, salads and cupcakes.

Patisserie: Guests can indulge their sweet tooth on the wide selection of homemade

chocolate goodies, candies, cupcakes, pralines and confectionery, as well as enjoy

freshly baked pastries and breads, all created in-house by the hotel’s French executive

pastry chef Francois Pietri and his team.

Wine Cellar & Cheese Vault: An extensive selection of Old

World and New World wines are displayed and stored in

proper cooling conditions in the Wine Cellar, with the

hotel’s resident sommelier on hand to assist and advise

guests with their choices. Adjacent to the Wine Cellar is an

Enomatic wine machine, offering flexibility with different

12 different wines by the glass. Wine accessories such as

decanters and glassware are available for sale.

Flanking the Wine Cellar is the Cheese Vault, featuring over

50 types of artisan cheese from France and other countries, expertly curated to pair

with wine for an after-dinner cutting board or to take away. In addition to cheeses,

the vault will also offer platters of cured meats, terrines and olives.

Coffee Bar: The enticing smell of freshly roasted coffee

hovers in the air as a Petroncini Impianti coffee roaster from

Italy provides guests with a unique way to experience their

coffee. Favourites such as espresso and cappuccino as well as

frozen coffee concoctions are available for drinking on-site or

for take-away from this boutique coffee bar, all created under

the watchful eye of the chief barista and her team. Freshly

roasted coffee beans as well as tumblers, mugs and other

accessories for the coffee addict will also be available for

sale.

Beverage Bar: A refuge for the health-conscious, the

Beverage Bar offers freshly squeezed juices and

smoothies from organic fruits and ingredients made to

order. A total of six signature health blends, such as

Rejuvenator, Detox and Antioxidant, will be available.

In the evenings, the bar will feature an array of

organic spice and fruit-infused cocktails including

ingredients such as chili peppers, pomegranate and

plums, using recipes from the hotel’s own beverage

team.

Food Hall: The COOK’s Food Hall is a gourmet merchandising deli and shop

showcasing more than 20 signature items from The COOK’s own kitchens and a

range of The COOK private-label signature spices, herbs, dried fruits, nuts, oils and

crisps. Guests can browse over 100 gourmet goods carefully curated from around the

world. Foodies will rejoice over such varied delicacies as Mediterranean olive oils,

Belgian waffles, Spanish black pig acorn-fed Iberian ham and Jack Daniel’s

chocolate-coated bourbon-infused pouches.

The COOK’s interior showcases a bold mix of

traditional and modern materials and finishes, such as

handwritten menus on rustic wooden blackboards,

Corian marble counter tops mixed with rustic crate-

stamped timber drop ceilings and custom-designed tiles.

All design elements blend together to produce an

eclectic lifestyle theme that reflects a bustling deli-style

marketplace in contemporary Shanghai.

Industrial-size wooden timber doors slide open to reveal a universe of various

culinary worlds and experiences under a single space. High, uneven ceilings with

distressed wooden beams and pipes, slate-grey granite stone floors and wraparound

glass windows provide expansive views of the Kerry Parkside courtyard, bringing in

natural light. These design elements frame a spacious marketplace intermittently

punctuated by kitchen islands, food and merchandising columns and shelving. Groups

of seating scattered at various heights allow ease of communal dining and socializing.

Visual display counters and shelves of gourmet merchandise and foodstuffs allow

guests to wander through, touch the products while the open theatre kitchens make

interaction easy between guests and chefs.

The COOK is open daily from 6:30 a.m. to 10:30 p.m. and serves a daily buffet

breakfast from 6:30 a.m. to 10:30 a.m.

The BREW

A craft brewery with its own signature beers

created by the resident brew master, a first for a

five-star hotel in Shanghai, The BREW is a

lively, contemporary bar with pub-style

favourite dishes, live music entertainment and

seating for 195 people, including an outdoor

patio. Beer connoisseurs or novices may enjoy

lunch at The BREW or unwind after a hard

day’s work, listening to live music

entertainment, watching sports television broadcasts, or simply relax on the patio,

taking in views of Century Park. Six handcrafted beers and one cider represent the tip

of a vast selection of beverages on offer.

Dugite Vanilla Stout:

With 5% alcohol content, the seductive black nature of the dugite is expressed in this

delicately brewed venom. A lengthened aging process adds to the liquid’s allure.

Imported Belgian biscuit malts blended with vanilla pods deliver a smooth, full

bodied, creamy vanilla flavor to delight the senses.

White Ant:

Gold Medal Winner, WIT (Belgian Wheat)

Category, 2012 Beerfest Asia Also known as “The Queen Brew” and with

4.5% alcohol, this beer’s name reflects the avant-

garde persona it possesses, while also pertaining

to the mysterious white hue the brew refracts

when served in the presence of light. Concocted

with the finest wheat and barley and spiced with

coriander and mandarin, the aroma of the spice mixture is implicitly present. The

Queen is usually served in a tall glass, so drinkers can marvel at her splendour and

gaze lovingly at her pale hue.

Indian Pale Ale:

Bronze Medal Winner, Indian Pale Ale Category, 2012 Beerfest Asia

A classic Pale Ale characterised by intense hop bitterness and moderate alcohol

content (5.2%), typical of a big English Ale, cementing itself as an anchor brew. The

deep seductive shade of bronze is sourced from the flowery hop aromas of ripe stone

fruit.

Pils:

Gold Medal Winner, Pilsner Category, 2012 Beerfest Asia

Silver Medal Winner, New Zealand International Brewers Award 2012

Brewed with precision and golden straw in colour with a grassy noble hop aroma

combining with a toasted malt character, Pils is very well attenuated. With moderate

alcohol volume (4.9%), it finishes long and dry with a little detectable sweetness.

Skinny Green:

Bronze Medal Winner, Lager Category, 2012 Beerfest Asia

Skinny Green is characterised by extremely high degree of attenuation and dryness,

resulting in a slightly higher level of alcohol (4.5%) but with 75% less sugar

compared to regular beers. It is light amber in colour, light in body and high in

carbonation. Low carb beers have a tendency to be watery in consistency and lacking

in flavour; Skinny Green is curvy in all the right places.

Razorback Cider:

With 4.5% alcohol, this cider’s artisan appeal is strengthened due to the partnering

with a local organic wheat farmer. Razorback is a true blend of community-farmed

produce crafted to create a truly delicious brew style. Locally sourced peaches are

roasted to caramelize; apples are crushed for its sweet juice. Described by the brew

master as “boutique at its best”.

Mash (seasonal beer):

The BREW celebrates each brewing season by hand-crafting and naming a new beer

using seasonal ingredients; available for a limited period only.

Evoking industrial chic, The BREW’s interiors

revolve around the “flying brewery,” custom designed

and built three-storey stainless steel vats used for

brewing and storing its signature brews. Forming a

dramatic visual centrepiece and framing the brewery’s

steel vats in the background is an eye-catching, multi-

tiered steel and glass chandelier over the centre of the

bar that conveniently doubles as a beer pint glass rack.

The BREW is open daily from 11:00 a.m. until 2:00 a.m.

The MEAT

The MEAT, a contemporary steakhouse and

specialty grill with seating for 112 people, including

The Master’s Table, a private dining room

accommodating 14, was born from the very idea

that a steakhouse should revolve around the meat

served. Solidly backing up this idea is the

restaurant’s menu, with the largest selection of fine

steak and beef available in Shanghai displayed in a

dedicated meat “Ageing Room”, presided over by the restaurant’s house butcher.

Natural flavours abide at The MEAT. Simple presentation

and preparation of quality Australian Angus beef sourced

direct from farm to table define The MEAT’s dining

experience. A must-try is the “Ningaloo Tomahawk”, a 1.8

kilogram hunk of prime rib good for four persons, brought

table-side and expertly carved, its juicy chunks served right in

front of diners by the chef. Along with an extensive selection

of New and Old World wines, The MEAT also offers a wide

variety premium grilled items: fresh seafood, organic poultry

and vegetables, pork and lamb, accompanied by signature

side dishes and sauces, as well as “gourmet comfort food”.

Let’s just say, macaroni and cheese will never be the same again.

Diners at The MEAT are greeted by the

theatrically lit “Ageing Room” window

dominating the restaurant entrance. Whilst

waiting for their dinner companions, guests may

relax with a drink on pony hair and leather

armchairs near a fireplace flanked by hand-

carved wooden bullhorns. A scarlet-hued

vertebrae-inspired light fixture stretches down

the expanse of the restaurant and makes a

dramatic visual centrepiece to the restaurant and

counterpoint to the gleaming tops of The BREW’s glass-encased brewery vats below.

The MEAT is open nightly from 5:30 p.m. until 10:00 p.m.

The BLOCK

The BLOCK – Butcher Shop at Kerry Hotel is adjacent to The MEAT, with direct

access from the Kerry Parkside shopping mall. The butcher shop is not only an

extension of The MEAT, which has established a reputation for its meat in the past

two years, but it now offers the local community the hotel’s meat and seafood quality

to take home. The mission of The BLOCK is to uphold the high quality food standard

at a reasonable price and it will offer a selection of beef, pork, lamb and fresh seafood.

The BLOCK operates seven days a week, from 10 a.m. to 7 p.m.

Blossoms

Comprising of a collection of four elegantly

designed private dining rooms, Blossoms is

positioned to offer a Chinese fine dining

experience, ideal for business entertaining or for

exclusive celebrations. Private dining room

butlers deliver unobtrusive, efficient and gracious

service whilst authentic Cantonese cuisine is

prepared by a Hong Kong chef.

Guests may select from a range of set menus for convenience or, if they wish,

bespoke menus can be tailored according to their requirements, along with

recommendations from the Hong Kong chef de cuisine. Wine pairings, with

recommendations from the hotel’s resident sommelier, are available as an option. Old

and New World wines selected by the sommelier are available, along with a range of

cognacs, brandy and whiskies. Blossoms also offers premium baijiu (traditional

Chinese grain spirits) and yellow rice wines.

Designed by Bali-based hospitality interior

specialists ARA Design, the interior of Blossoms’

four private dining rooms take its inspiration from

four flowers, namely, Plum Blossom, Orchid,

Chrysanthemum and Bamboo, also referred to in

ancient Chinese tradition as the “Four Gentlemen.”

It was believed that these flowers possessed

qualities similar to those found in men with

virtuous reputations.

A wall of gold-dipped ceramic tiles welcome guests to the main entrance corridor of

Blossoms, leading to the four dining rooms. All dining rooms are equipped with

private sitting areas; two come with its own private washrooms and lavatories. Hand-

painted wall panellings, furnishing fabrics and carpets evoke the floral freshness of

spring: pale shades of mauves and plums, delicate yellows, pinks and greens. Crystal

chandeliers add a regal touch to various Chinese objets d’art and paintings in the

rooms.

The Plum Blossom and Orchid Rooms measure 61 and 65

square metres (656 and 699 square feet), respectively, and can

each comfortably accommodate 60 people for dining; the rooms

can also be interconnected for larger parties. At 45 square metres

(484 square feet), the Chrysanthemum sits 20 while the Bamboo

Room, with an area of 75 square metres (807 square feet), can

accommodate 60 people. Overall, Blossoms can accommodate

up to 200 people. Audio-visual equipment can be arranged in

any of the rooms, should guests require.

Blossoms is open daily for lunch and dinner by prior reservation only.

The COOK Lounge

By day, The COOK Lounge is a cozy, elegant sanctuary seating up to 91 people, ideal

for lingering over a refreshing cup of premium Chinese tea or stimulating specialty

coffees, as well as for indulging in pastries and Afternoon Tea sets. In the evenings,

The COOK Lounge transforms into a more

sophisticated venue, accented by sensual music

and a bar menu of spice and fruit-infused

cocktails and samplers from The COOK's

Cheese Vault & Wine Cellar.

Petri and his team complement the range of

premium Chinese and international teas and

freshly roasted specialty coffees on offer at The COOK Lounge. In addition, a

selection of mix and match “small plates” from The COOK’s kitchens as well as

samplers from the Cheese Vault are available, making an ideal pairing with wine or

with any of The COOK Lounge’s specialty cocktails.

Bali-based ARA Design were inspired by the fluid shape of the ellipse for The COOK

Lounge’s interiors, with slatted timbers allowing guests to peek into The COOK and

vice versa. The ellipse also provides the illusion of a “cocooned” space within the

lounge, softening the visual path from the Hotel Lobby through to The COOK.

Forming another ellipse is the beverage bar straddling both The COOK Lounge and

The COOK, with each elliptical half serving each outlet. Within the lounge, Chinese-

accented art and Ming Dynasty-inspired furnishings in soft, pastel shades combine in

a contemporized interpretation of a Chinese tea house.

The COOK Lounge is open daily from 8:00 a.m. until 1:00 a.m.

Sports, Wellness and Adventure

Spanning 6,000 square metres (64,583 square feet) over three levels, Kerry Sports,

which includes the Adventure Zone and Spa, is Shanghai’s largest fitness and

recreation destination, designed as a springboard for an active and healthy lifestyle for

the entire family.

Kerry Sports

With 10-metre (32 feet) high floor-to-ceiling

glass windows overlooking Century Park,

surrounding villas and the financial district’s

skyline in the distance, Kerry Sports

provides an overwhelming feeling of space.

Operating round-the-clock, the gymnasium

spans four activity zones comprising more

than 80 pieces of state-of-the-art exercise

equipment: the “Iron Man”, Cardio, Personal

Training and Strength Circuit Training.

Aimed at endurance building, the “Iron Man” zone allows

prospective triathletes to complete their training needs in one

place – a first for a sports club in Shanghai. Along with

spinning bicycles and treadmills with personal television

screens and iPod charging docks, the zone introduces a first in

Asia: the Vasa kayak and swim trainer bench, which simulates

swimming while providing resistance normally provided by

water.

The Cardio zone features more than 40 Star

Trac cardio machines, including the latest-

model treadmills, bicycles, rowers and cross-

trainers, while Strength Circuit Training

provides a full body work-out within 30

minutes with weight resistant machines and

ten TRX suspension fitness trainers. The

Personal Training Zone, including a body

combat zone, is ideal for one-on-one

customised training with Kerry Sports’

certified personal trainers.

Four exercise studios measuring in size from 50 to 140 square metres (538 to 1,506

square feet), allow for classes in aerobics, yoga (including hot yoga), spinning, with a

total of 19 stationary bicycles and Pilates, with eight Reformer beds.

Additional recreation facilities at Kerry Sports include an indoor heated 25-metre (82

feet) swimming pool, a vitality pool equipped with massage jets and a children’s

splash pool, all in a glass-walled enclosure overlooking a 700-square metre (7,534

square feet) outdoor rooftop garden, with a jogging track. A tennis court, basketball

court and a children’s playground with a mini-climbing wall round out the Kerry

Sports’ recreation facilities.

For relaxation, heated loungers with personal television screens are available in the

wellness lounge, as are Jacuzzis, scented steam rooms and saunas in the locker room

areas.

The gymnasium at Kerry Sports is open 24 hours; the swimming pool, tennis courts

and basketball courts are open daily from 6:00 a.m. until 11:00 p.m.

Spa

The Spa offers a pro-active and multi-disciplinary

approach to holistic wellbeing with physiotherapy,

restorative massage, skincare and body treatments

inspired by Wudang Wushu (Chinese martial arts)

and natural skin care.

Ancient Wushu masters used holistic arts to

maintain balance and harness powerful energies to

preserve the vitality of body and mind. These

practices serve the physical needs required for self defense and optimum health and

offer the potential for connecting with unlimited energy.

Each Signature Wushu Body Wisdom treatment

is inspired by a wealth of knowledge by

practitioners of Wushu martial arts. Each

restorative Body Wisdom treatment is preceded

by guided stretching, conscious breathing

exercises and includes movements to open the

meridians for vigour and vitality. Pure, natural

skincare prescriptions facials boost balance and

purify the complexion against the rigours of

urban living. In addition, classical massage therapies to cultivate optimal restorative

benefits, such as Tuina, Sports, Aroma massage, Hot stone massage, Reflexology and

Rescue Release, are all offered at the Spa.

Spa guests arrive in an airy yet intimate circular reception area; the circle being the

perfect shape to symbolise wholeness and oneness to mirror the ethos of the Spa and

its treatments. Nine treatment rooms, two devoted to physiotherapy and one designed

for couples’ treatments, range in size from 12 to 30 square metres (129 to 322 square

feet). All rooms come equipped with showers and changing facilities, and are bathed

in a contemporary light silver palette warmed by walnut timber paneling. The Spa

The Spa is open daily from 11 a.m. until 12 midnight.

Adventure Zone

Designed to appeal to children’s fantasies, the Adventure Zone is

a 700-square metre (7,534 square feet) children's indoor

playground and recreation centre. Three slides, namely, the

Hyperglide Astra slide, the Double Drop slide and the tri-level

Demon Drop slide, are its main attractions. The Adventure Zone

slides and age-appropriate “play zones”, were designed and built

by UK-based Taylor Made, a leading manufacturer of children’s

play equipment.

Three festive-themed party rooms overlooking the slides,

called “Jingle Jungle”, “Pirate Ship” and “Circus

Circus”, range in size from 23 to 65 square metres (269

to 699 square feet), come with appropriately festive

décor and are ideal for birthday celebrations.

The Adventure Zone is open from 10:00 a.m. until 9:00

p.m. Mondays to Fridays and from 9:00 a.m. until 10:00

p.m. Saturdays to Sundays.

Banqueting and Conference Venues

Kerry Hotel, Pudong, Shanghai unveils the largest and most flexible portfolio of hotel

meeting and banqueting facilities in the city, with more than 7,300 square metres

(78,576 square feet) of space spanning a total of 26 multi-purpose function rooms and

two ballrooms. Refreshing outdoor alternatives include the 195-square metre (2,098

square feet) Balcony Garden on level three, overlooking the vibrant courtyard of the

Kerry Parkside complex; and the 700-square metre (7,534 square feet) Rooftop

Garden on level five, with lush views of Century Park. With the Shanghai New

International Expo Centre (SNIEC), Shanghai’s largest trade exhibition venue offering

more than 300,000 square metres (3,229,173 square feet) of space adjacent to the Kerry

Parkside complex and directly connected to the hotel via a covered walkway and

footbridge, the hotel’s facilities are designed to capitalise on the proximity.

From complicated global conventions to high-

powered boardroom meetings and grand

celebrations, the hotel’s Events Management

team collaborates closely with experienced

culinary professionals and a well-trained

banquet services team to ensure no detail is

spared in executing successful events for

guests. Meetings and event organisers benefit

from a dedicated events manager, a meetings

The banqueting and conference venues of Kerry Hotel,

Pudong, Shanghai evoke a welcoming and gracious

atmosphere. Conceptualised by Bali-based ARA

Design, focal points of its décor include a myriad of

chandeliers in various shapes and designs, translucent

flower petal-shaped chandeliers greeting guests

ascending on the Level 3 escalators to abstract 18-metre

(59 feet) long depictions of “ghost dragon” chandeliers

adorning the foyer area of the Grand Shanghai

Ballroom. Most striking are chandeliers resembling

dynamic clusters of swimming goldfish in the Grand

Shanghai Ballroom.

Whilst subtle hints of luxurious Asian influences

are everywhere, from various Chinese objets d’art

and furniture accent pieces, a sense of ease and

comfort prevails. Wall panellings flow, from

“Bedazzle”, a custom-designed paneling comprised

of hand-picked glass beads distressed with silver

leaf accents, to the two Ballrooms’ leather-

embossed wooden doors, and natural matte elm

burl timber paneling adjoining with light-hued

marble on the walls and ceilings.

Grand Shanghai Ballroom and Pudong Ballroom

Dominating the hotel’s third floor are two

ballrooms, the Grand Shanghai Ballroom and the

Pudong Ballroom, which can be interconnected.

Inspired by the Chinese philosophical belief in

the duality of human nature, the “yin and yang”,

the Grand Shanghai Ballroom and Pudong

Ballroom are designed to allow a harmonious

flow of events through the space, with each

venue retaining its own distinctive ambience.

Nine chandeliers created out of nearly 6,000 individual pieces of imported Czech

“Lasfite” hand-blown crystal, depicting clusters of darting and swimming goldfish,

light up the expanse of the Grand Shanghai Ballroom, offering a subtle feminine

touch. The Pudong Ballroom’s glass rods, a total of 3,000 pieces individually hand-

blown, convey a more sturdy elegance and have a light masculine appeal.

The Grand Shanghai Ballroom, at 2,230 square metres (24,003 square feet) and a

ceiling soaring up to 9 metres (29 feet), is the city’s largest hotel-based pillar-free

ballroom, with a pre-function foyer area offering natural daylight. The Ballroom is

pillar-free can accommodate more than 2,800 people theatre style and 1,600 guests

for banquets.

For flexibility, the Grand Shanghai Ballroom can be divisible into three sections. The

Ballroom is equipped with built-in LCD (liquid crystal display) projectors and a total of

five motorised wide screens. A heavy-duty lift, with a height of 2.4 metres (7.8 feet),

width of 2.5 metres (8.2 feet), depth of 5.5 metres (18 feet) and a maximum capacity

of 8 tonnes, strong enough to ferry an automobile from the hotel’s loading bay in the

basement up to the Ballroom on Level 3, is ideal for transporting heavy equipment to

the Ballroom, easily transforming it into an automobile showroom for model launches,

if required.

The Grand Shanghai Ballroom is adjacent to the Grand Shanghai Ballroom Foyer,

which can be used as a pre-function area and partitioned into two, with one section

leading to the outdoor Balcony Garden. It is also interconnected to the 1,018-square

metre (10,957 square feet) Pudong Ballroom by an 8-metre (26 feet) walkway, which

can be opened to optimise traffic flow between the hotel’s two largest ballrooms.

The Pudong Ballroom is adjacent to the Pudong Ballroom Foyer and can be

subdivided into seven sections. Each section has its own separate entrance.

Kerry Personalities

Peter Clarke, General Manager

In 2009, Peter joined Shangri-la Hotels and Resorts as hotel manager at the Shangri-La

Hotel, Shanghai in Pudong. While there, he spearheaded extensive preparation for

Shanghai’s 2010 World Expo, hosting over 50 state guests at the hotel. After

graduating in hospitality management in Ireland, Peter began his first managerial

position at the front desk of an international hotel in San Francisco, California. This

mapped his journey within the hospitality industry where his experience spanned across

5-star luxury hotel brands. While steadily rising through the ranks, Peter’s career

brought him from London, the United States, Indonesia, Thailand, China and Hungary.

Peter returned to China for his second stint in Shanghai in 2009 with the Shangri-La

group. A native of Ireland and citizen of the United States, Peter is joined in Shanghai

by his wife Mary and their two sons Aiden (6 years) and Liam (11 years). Outside of

the hotel, the self-proclaimed wanderlust counts cooking, playing the guitar, cycling as

his favorite pass times, besides spending time hanging out with his boys.

Otto Goh, Executive Chef

Originally from Malaysia, Chef Otto Goh is a 20-year culinary veteran with Shangri-

La Hotels and Resorts. A graduate of Professional Culinary Arts from the Stamford

Culinary School in Singapore, he began his career at Shangri-La Hotel, Kuala

Lumpur in 1993. Prior to joining Kerry Hotel, Pudong, Shanghai, Otto served as

executive chef at Shangri-La Hotel, Wenzhou, starting from the hotel’s pre-opening

period. No stranger to Shanghai, Chef Otto had previously worked at Pudong

Shangri-La Shanghai before moving on to Wenzhou.

Leon Mickelson, Brew Master, The BREW

A certified brew master from the UK’s Institute of Brewing and Distilling (the

world’s leading brewing institution), Leon Mickelson has been brewing for almost 17

years. Starting out in his native New Zealand, where he first discovered his passion

for premium beer and began learning how to brew, he then moved to Australia,

capitalising on more in-depth brewing opportunities and continuing to expand his

knowledge. While working in the UK, he added the study of cider making to his

credentials. His award-winning craft beers have been acclaimed over the years with a

total of 14 medals by the New Zealand International Brewing Awards, for whom he

eventually served as a judge. Leon has also been recognised by the Australasian

International Beer Awards, the brewing industry’s most prestigious award-giving

body in Australia and New Zealand. His relentless attention to detail while using

time-honoured brewing methods, combined with his passion for quality beer and

cider, ignite his performance as a brew master.

François Pietri, Executive Pastry Chef

Originally from Antibes in southern France, Chef François Pietri has worked side-by-

side with master chefs at Michelin-starred restaurants across Europe. Before joining

Kerry Hotel, Pudong, Shanghai, Chef François worked in Monaco, the United

Kingdom and most recently, Russia, leading a large pastry kitchen team as executive

pastry chef for one of Moscow’s leading five star hotels. New to both Shanghai and

the Shangri-La hotel group, Chef François is finding inspiration for his pastry

creations from his stimulating new environments.

Andrew West, Director of Sports and Recreation

Hailing from Australia, Andrew has a wealth of experience in Asia and Europe,

including two years as manager of Kerry Sports in Beijing. He has been with the

Shangri-La group since 2005, and his most recent position was Director of Sports and

Recreation at the Aberdeen Marina Club in Hong Kong. He has worked in France,

Malaysia, and the United Kingdom, and studied in England and Australia. In his rare

moments outside of the gym, Andrew enjoys playing guitar and golf.

Kerry Parkside and the Community

Kerry Hotel, Pudong, Shanghai provides seamless access to multi-brand shops and

boutiques, dining and entertainment facilities within the Kerry Parkside shopping

mall as well as to the office tower and Residences at Kerry Parkside, a service

apartment tower. The Shanghai New International Expo Centre (SNIEC), the city’s

largest trade exhibition venue with more than 300,000 square metres of space

(3,229,173 square feet), connects directly to the complex via an enclosed footbridge

and walkway. Across the street from Kerry Parkside lies Shanghai’s largest public

gardens and the city’s “green lung”, Century Park, providing 140 hectares.

The Kerry Parkside complex’s own underground subway station is a strategic artery

connecting the new landmark to the rest of the Shanghai metropolis. With the

Maglev express train station a seven-minute ride away from the hotel, guests can

arrive at Pudong International Airport and be whisked off to their rooms for check-in

within 15 minutes; the hotel offers a complimentary shuttle service to and from the

Maglev train station. Alternatively, Pudong International Airport can be reached in

approximately 30 minutes via the airport expressway.

From its traditional origins as a vast farmland, Pudong, on the eastern banks of the

Huangpu River, has emerged as China’s financial and commercial hub and one of the

fastest developing districts in Shanghai today. From the distinctive skyscraper-dotted

skyline of the Lujiazui financial district overlooking the Huangpu, Pudong sprawls

towards Century Park and its surrounding communities of trade and export processing

sightseeing attractions such as the Shanghai Science and Technology Museum,
