Pollock Parmesan Hoagie• 26264 Pollock Bites• Shredded Mozzarella• Marinara Sauce - warm• 6” Hoagie Roll• Italian Seasoning

Cook Pollock bites according to instructions on package. Place 8 cooked Pollock Bites in a sliced hoagie roll. Spoon 3 oz of warm marinara sauce over the bites. Sprinkle ½ oz shredded mozzarella across the top of the marinara sauce. Place subs upright in a hotel pan side by side and cook in a 375°F convection oven just long enough to melt the cheese. Sprinkle with Italian seasoning.

Serve with a cucumber and tomato salad

Cucumber & Tomato Salad• Cucumbers: Peeled, Seeded, Chopped

into ¼” chunks• Cherry Tomatoes: sliced in half from

top to bottom• Red Onion: Sliced thin• Olive Oil, light drizzle to coat (you can also sub

Italian dressing for the olive oil)• Salt & Pepper to taste

“Loaded” Potato Crusted Nuggets with Buttered Corn on the Cobb• 06551C Potato Pollock Nuggets• Light Sour Cream• Crumbled Bacon • Shredded cheese blend• Chopped Chives

Cook nuggets according to instructions on package. Arrange 4 nuggets closely together on the tray. Top with a 1 oz. dollop of light sour cream, a sprinkle of chopped bacon (1-2 oz), shredded cheese (.5 oz) and chopped green onion or chives to garnish. Serve with a warm buttered corn cobbette.

Vegetable Slaw• 20 lbs Cole Slaw Mix (red and green

cabbage, carrots) • 8 ea Thinly Sliced Green Peppers • 2 qt Chopped Kale (stems removed and

chopped bite size)• 1 qt Chopped Parsley• 1 qt Thinly Sliced Red Onion • 2 qts Dried Cranberries

Dress lightly with standard Cole slaw dressing

Southwest Glazed Pollock Taco Salad• 1089308 Southwest Pollock Portion• Flour Tortillas• Lettuce, chopped• Tomatoes, chopped• Black Bean & Corn Salsa

Cook portions according to instructions on package. Bake tortillas flat on a sheet pan at 350°F for approx 6 min or until slightly crisp. Arrange as follows: Tortilla, 1c Chopped lettuce, ½c Chopped Tomatoes, ½c Black Bean & Corn Salsa, ¼c Shredded Cheese, 1 portion Southwest Pollock (chopped up and served on top).

Black Bean & Corn Salsa• #10 Black Beans, canned, drained• #10 Corn Niblets, canned, drained (If

frozen; defrosted, drained)• 1 gal Salsa, (your preference) approx.

Blend all ingredients well. Season with ¼ c Ground Cumin and ½ c Chili PowderSalt and pepper to taste.

Asian Style Pollock Taco• 26264 Pollock Bites• Flour Tortillas• Asian Slaw• Sriracha Lime Mayo

Cook Pollock bites according to instructions on package. In one tortilla place ¼c of Asian slaw. Add in 4 cooked Pollock bites. Top with a drizzle of Sriracha Lime Sauce.2 tacos per serving. Asian Slaw• 4 qt Cole Slaw Mix (Cabbage

& Carrots) • 1 qt Bean Sprouts• 1 c Cilantro, chopped• 1 qt Red Bell Peppers, thinly sliced• 1 c Green Onion

Combine Asian Slaw with desired amount of dressing.

Asian Slaw Dressing• 2c Light Soy sauce • 1 tbl Ginger – freshly grated• ½ c Honey • 2 tbl Garlic - minced• ¾ c Rice Vinegar or White Vinegar • ½ c Water • 2 tsp White Pepper

Blend all ingredients well and taste. Adjust accordingly.

Creamy Sriracha Lime Sauce• ¾ c Sriracha Sauce • 2 c Mayo • 2 tbl Rice Vinegar or White Vinegar • ½ c Lime Juice • ½ c Honey • Salt & Pepper to taste

Fiesta Pollock Wrap• 06436 Fiesta Pollock - Cooked

per instructions• Lettuce, shredded• Tomato, sliced• Red Onion, sliced thin• Flat bread (lavasch) or Wrap bread• Avocado Mayo (Combine 4 ripe Avocados,

1/3 c Lime Juice and 1c Mayo and blend in a Food Processor until smooth, add salt & pepper to taste)

Assemble: Across the bottom width of the wrap spread out shredded lettuce in a 3” wide band. Cut one portion of fiesta fish down the middle. Place across lettuce and top with sliced tomatoes & red onion. Spread the remaining wrap with a thin layer of Avocado Mayo. Wrap tightly and cut in half on a bias.

Zucchini Chips• 4 Zucchini – sliced into 1/8” rounds• Olive Oil• Salt & Pepper• 2 c Panko Bread Crumbs • 1 c Parmesan Cheese, grated • 2 tsp Dried Oregano • 1 tbl Garlic Powder • Cooking Spray

Preheat convection oven to 400*F, blower on Low if applicable. Line your baking sheets with foil; lightly spray with cooking spray and set aside. In a large mixing bowl, combine zucchini slices, olive oil, salt and pepper; mix until well combined. In a separate bowl, combine Panko crumbs, Parmesan cheese, Oregano, and Garlic Powder. Dip slices of zucchini in cheese mixture and coat on both sides, pressing on the coating to stick. Place the zucchini slices in a single layer on the previously prepared baking sheets.Lightly spray each slice with cooking spray. This will help with achieving a crunchier texture. Bake for 10 minutes; rotate pan and continue to bake for 8 to 10 minutes, or until chips are golden brown.

Remove from oven and cool.
