What is the Junior Livestock and Dairy Auction? The Junior Livestock and Dairy Aucon is an annual aucon held on Saturday of the Jefferson County Fair. Jefferson County 4-H and FFA exhibitors spend several months selecng, feeding, grooming and training their steers, lambs, hogs and dairy animals in preparaon for the Jefferson County Fair. Aſter showing their animals earlier in the Fair week, exhibitors have the opportunity to sell one animal at the Junior Livestock & Dairy Aucon. All animals sold meet quality grade and weight requirements (or in the case of dairy animals, have been selected for their outstanding characteriscs) determined by the industry and the Meat Animal Project (MAP) Commiee. In addion, exhibitors are required to complete an annual educaon and cerficaon program called Youth for the Quality Care of Animals which focuses on food safety, animal well-being and character awareness. The program is accurate, current and relevant to the needs of the animal industry and shows and is appropriate for youth. Bidders (local businesses, individuals, etc.) can buy these animals or make a monetary donaon to not only recognize exhibitors’ hard work, but to also support local agriculture and promote their business. Note: When you make a purchase as part of the Dairy Honors/Miss Q Dairy Aucon you are donang to the youth member and will receive a special dairy-related item. What is the Junior Livestock and Dairy Auction?The Junior Livestock and Dairy Auction is an annual auction held on Saturday of the Jefferson County Fair. Jefferson County 4-H and FFA exhibitors spend several months selecting, feeding, grooming and training their steers, lambs, hogs and dairy animals in preparation for the Jefferson County Fair. After showing their animals earlier in the Fair week, exhibitors have the opportunity to sell one animal at the Junior Livestock & Dairy Auction.

All animals sold meet quality grade and weight requirements (or in the case of dairy animals, have been selected for their outstanding characteristics) determined by the industry and the Meat Animal Project (MAP) Committee. In addition, exhibitors are required to complete an annual education and certification program called Youth for the Quality Care of Animals which focuses on food safety, animal well-being and character awareness. How Do I Participate?

Before the sale:• If you are contacted by a local exhibitor and fill out a buyer card, you will receive two fair tickets and two

lunch tickets for a buyers’ lunch.• If you are not contacted by a local exhibitor, but would like to attend the sale as a buyer, please contact

the MAP Committee.

Day of the sale: • Register.• Pick up your buyer sign and sale program.• Join us for a complimentary buyers’ luncheon.

At the sale:• Bid in terms of price per pound (or per lot in the Milk Quality or Dairy Honors Auction).• Buyers may take a photo with the exhibitor and animal immediately following the purchase.• If you purchase an animal, visit the checkout area for invoicing and payment.

What Happens After Purchasing?When you purchase a steer, lamb or hog you have three options:

1. Buy the animal outright. Purchase the animal for the gavel price times the weight of the animal. The MAP Committee arranges for your animal to go to a local processing plant of your choice: Country Meat Cutters, Detjens Northern Trails Meats & Country Market, Johnstown Food Center, Pernat Premium Meats, Rivers Edge Meat Market, Sorgs Quality Meats & Sausages or Wilson Farm Meats. Animals that are purchased outright will have a processing fee.

2. Bid for an “Over Market Bonus.” In the sale catalog, there is a market price for each steer, lamb, or hog. “Over Market Bonus” is the gavel price minus the market price. This is the donation that you would make to the youth. The youth retains ownership of the animal.

Example: 1,000 lb. steer at $1.10/lb. gavel price and $1.00/lb. market price $1.10/lb. gavel price minus $1.00/lb. market price = $.10/lb. $.10/lb. x 1,000 lb. steer = $100 paid by buyer

3. Show rights. Some exhibitors may ask buyers for “show rights” to exhibit their meat animals at the Wisconsin State Fair or another show as designated by the youth. The project member will work with the buyer to determine the final destination of the animal. If the animal is in the Governor’s Auction at State Fair, the market price from the Jefferson County sale is returned to the buyer.

Cash, checks and credit cards are accepted for payment.

A 110 lb. lamb will provide approximately:

Chops 11 lbs.

Legs 11 lbs.

Shoulder 13 lbs.

Lesser Cuts 10 lbs.

TOTAL 45 lbs.

Processing charge (slaughter, cutting, wrapping, freezing, etc.) is approximately $65.

PORK

A 230 lb. hog will provide approximately:

Ham 32 lbs.

Bacon 25 lbs.

Chops 24 lbs.

Shoulder Cut 28 lbs.

Spareribs 6 lbs.

Sausage 26 lbs.

Misc. Cuts 30 lbs.

TOTAL 161 lbs.
