Honoring Martin Luther King “It’s not how long a man lives, but how well he uses the time allotted him.” Born in Atlanta, Georgia on January 15, 1929, Martin Luther King, Jr. accomplished much in his 39 years: African-American civil rights leader, minister, advocate of nonviolence, and recipient of the Nobel Peace Prize in 1964. King was assassinated in Memphis, Tennessee on April 4, 1968. After his death many states and territories observed his birthday as a holiday. In 1983 the Congress approved a bill to make Martin Luther King’s birthday a national holiday to be observed the third Monday in January. Baked Potato Soup •2 tablespoons butter •1/2 medium size onion, chopped •1/2 cup chopped celery •2 garlic cloves, crushed •2 cups chicken broth •3 cups mashed potatoes, (leftovers ?) •4 ounces bacon, cooked and crumbled, about 4 slices •1 cup fat-free half-and-half or milk •1/2 teaspoon pepper •6-8 ounces shredded cheddar cheese, (1 1/2 -2 cups) •salt, if needed, to taste (optional) In a large pot; heat butter; add onions, celery and garlic. Sauté until tender. Add the broth to the pot and bring just to a boil. Stir in the mashed potatoes, cooked crumbled bacon, fat free half and half (or milk) and pepper. Bring to just a gentle simmer. Reduce heat to low and stir in the cheese. Stir until cheese is melted and heated through. Do NOT allow to boil. Add salt if needed, to taste. Snow Flake Cocoa This is an easy and delicious cocoa you can make in your slow cooker. • 2 cups whipping cream • 6 cups milk • 1 teaspoon vanilla • 1 (12 ounce) package white chocolate chips • Whipped cream • Candy canes Stir together the whipping cream, milk, vanilla, and white chocolate chips in a slow cooker. Cover and cook on low for 2 to 2 1/2 hours, stirring occasionally, until mixture is hot and chocolate chips are melted. Stir again before serving. Garnish with whipped cream and candy canes, as desired.
