advertisement Rey Azteca has emerged out of the remains ofan abandoned Pizza Hut along York Road inWarminster, PA. In fact, from the inside, onewould hardly recognize that Rey Aztecapreviously served as the pizza chain. Quaint, retro tables and chairs fill the dining room whilethe adobe-style walls are warm and relaxing. The Mexican decorations are not overdone, with only a few zarapes and sombrerostastefully accenting the room.

The waitstaff has warm and easy-goingattitudes and their attentiveness will leave youfeeling well taken care of. However, if you’re

having trouble placing an order, there’s always the no-fail “order by number system” to make thingsa little easier.

The menu of Rey Azteca is extensive (translation: there’s something for everyone). Each diningexperience starts with freshly made tortilla chips served with a flavorful salsa. They’re so deliciousthat it’s easy to go through three servings.

Meal options include all of your Mexican favorites, such as burritos and fajitas and specialties suchas mole pablano ranchero (chicken breast topped with mole pablano sauce, served with rice,

ART

COMES

OUT

The 3rd Annual Art in the Open Brings Art into the Great Philadelphia Outdoors: Art in the Open (AiO) hits the streets again May 18th through the 20th. This citywide event celebrates art in an approachable way, demon-strating the relationship between artists and their environments.

Only in its third year, the event began on the banks of the Schuylkill River. Here a group of artists focused on rexaming the River, from the historic Water Works section to the natural expanse of Bartram’s Gardens.Once again this May the artists will take to the river’s edge. But this event isn’t just for those doing the plein air painting (or constructing, or molding, etc). The public is welcome to come interact with the artists. In conjuction with the outdoor art, there are several related art events scheduled during the weekend.

J’Eat Yet?Our Favorite Interpretations of Classic Philly Foods

Plate2Palate

Re-making some of our hometown classics has become a sport for local chefs and we love what they create, There’s something special about a city’s classic comfort food landing amidst a lavish dinner that puts a smile on our face. Here’s some that inspire a super-sized grin.

The Soft PretzelUnion Trust Steakhouse717 Chestnut StreetIt’s not that there’s anything exotic about the soft pretzel bites served right along side proper pum-pernikel and traditional dinner rolls in the bread course. We appreciate the nod to Philly foods, but these soft preztels are worth mentioning because of just how good they are. Soft and warm in the middle with a salty crunch on the exterior, they’re served with a zesty mustard that perfectly compli-ments. The setting is much better than a highway median as well.

The CheeseteakKing’s Oak1001 N 2nd StYes, we know some sort of cheesesteak hybrid is now an essential at any catered event in Philly. But King’s Oak sets there bite-sized steak sandwiches apart with a cheesesteak dumpling that balances the cheese, the steak and the onion perfectly. The seriously spiced ketchup sauce that’s paired with them gives these little appts personality. Our only issue? Craving just one more.

ScrappleSheppard Inn117 Frederick Street Hanover, PAIt might not be in the middle of town but Chef Andrew Little of Sheppard Mansion in Ha-nover, PA has been gaining national attention for his reinterpretations of classic PA Dutch cuisine. One of his signature dishes? Scrapple! But it’s not served all mushy with eggs on the side and maybe some maple syrup if you’re feeling frisky. No this scrapple is delicately prepared with a savory mix of baby arugala, strawberries and almonds. No shame in that dish!

The TastykakeAdsumWhen Adsum Chef Matt Levin made the leap of putting Kandy Kakes into a sandwich, it just seemed too inspired. There’s something about the right mix of sweet and savory and add a Philly icon like Tastykake to the mix and you know you have a hit. With the Kandy Kake Sliders, brisket was mar-ried with the chocolate and peanut butter we all know and love. Top that with American cheese and jam and we see a world of possibilities for the humble kake.

CENTER CITY FOODPetits Fours: Our Favorite Desserts to Indulge in this Spring

1. Brown Betty Dessert BoutiqueThe Lemon Cupcake or the Vanilla Cupcake? Lemon...Vanilla? This is the hardest decision to make at the NoLibs bakery that looks more like a gorgeous library than a place churning out baked goods. If the opulent setting isn’t enough, the decadent over-sized desserts should seal the deal. Moist, rich and definitely a meal in themselves, these mighty cupcakes make the perfect reward for all your dietary sacrifices. And with different flavors offered daily (Company’s Comin’ Coconut Poundcake with Coconut Frosting anyone?) there’s always a reason to pay a visit. 1030 N. 2nd St. www.brownbettydesserts.com 2. Sugar PhillyWhen you think crème brulée, you generally picture a delicate cream circle on a fancy white plate probably gar-nished delicately with fruit or ganache. But, the Vanilla Crème Brulée from the Sugar Philly lunch truck is more of a hearty working-class version. Flavored with Madagascar Vanilla Bean and that trademark crunchy caramelized sugar, this little bit of creamy heaven is served up in a no-frills scorched tin foil cup. http://www.sugarphillytruck.com3. Northportfishington CookiefactoryThis all-vegan bakery supplies a variety of cafes in the city. with non-dairy cookies and sweets. But it’s their Mocha Brownies that stole our hearts. Using Earth Balance as a butter sub-stitute, unbleached flour and choco-covered espresso beans, there’s nothing lacking in this deep, dark dessert. http://facebook.com/northportfishington4. TartesA short review for the teeny tiny Olde City bakery that serves up sweets through the front window. A unique treat: the pecan sweet potato tart. This little tart could be a new Southern clas-sic. 212 Arch Street 57

From begining to end, a trip to Turks & Caicos is sure be perfect. When you and that special someone tire of walking the immaculate white sand beaches, get another view of the island, by parasailing. Each day on the island offers so many wonderful options; stroll along Grace Bay or talk to your concierge and you can easily take a brief group tour. If you go through Sky Pilot Parasail you will spend about twenty minutes in the sky (tandem is an option) and its ony $75 per person. There have been rumors you can get it for $60 if you are really nice to Captain Jerry, but I’ll leave that up to you.

One way to get around the islands and avoid expensive cab rides is to rent a car or scooter. Because gas is over six dollars a gallon on this island, scooters may be your best bet. Check out Caicos Wheels, located on Grace Bay Road. This little rental shop has a

friendly staff who are there when you need them. Believe me, if your fan belt snaps on the side of Leeward Highway, you’ll be happy to know they will be there to pick you up (I should know!).

Fun Filled EveningsWhile you have the wheels,

take a drive out to the Havana Club, located at the Windsong Resort. With a different show every night of the week, Thursdays, Fri-days and Saturdays are the better nights, catering to a “mature” au-dience. You never know what the show will bring, but you can count on great service. The staff here is exceptionally friendly and want to make sure you have a great time!

Whether you’re staying at an all-inclusive, or providing your own food, Lemon Cafe is a must. The cucumber salad with pickled radish and fresh mint is delicious. If you like a tapas-style dinner, the

calamari is grilled to perfection and stuffed with harrissa spiced beef, olives and basmati rice. En-trees? Make room for the Chicken B’stilla, a sweet and savory entree consisting of braised chicken layered in flakey phyllo pastry with almonds and cinnamon. If you have any room left, don’t leave without tasting the chocolate pie. If you don’t know the meaning of flour-less, you will. If you’re on a budget, playing chef might not be practical, with tax on imported goods being so high there isn’t much of a savings. One inexpen-

OUR PICKS FOR THE BEST OUTDOOR SUMMER DINING

Philly is a long way from Berlin, but that hasn’t stopped the city from bringing Braveria to Broad Street. All around town beer gardens have sprouted up like the summer flowers. And we rejoice! Afterall, what better way to spend a balmy July evening out, than in a casual outdoor beer hall. It’s the perfect way to mix and mingle, especially when the bar scene becomes tiring.

Silk City DinerFor those looking for a local garden with a little more color, try Silk City’s outdoor arrange-ment of rainbow picnic tables scattered throughout the diner’s courtyard. Hop AngelWhile the beer garden might not be huge, it’s one of the few you’re going to find in NE Philly. And with the restaurant’s full menu of tradi-tional German offerings, it’s worth squeezing into. The atmosphere is classic Germany, right in the heart of Fox Chase, with the 300+ year old building and it’s alley garden. Beers on tap include Franziskaner Here Weisse, Long Trail Ale, Manayunk Black Eye PA, Spaten Lager, Troegs Dreamweaver and an array from good old Victory. hopangelbrauhaus.blogspot.com 7980 Oxford Ave.Fox Chase

Frankford HallStephen Starr might not be the first name that comes to mind when you think casual en masse beer garden dining, but the mogul has managed to pull off the authentic feel of a large scale garden, without preten-tious, but with a whole lot of fun. Admittingly, this spot had us at the pink pong tables. But there’s also other endearing features, like the giant pretzels with a supernaturally good cheese sauce, curry ketchup fries and, did we mention ping pong! This place is also designed for groups, with kegs available and attentive service for parties. When it comes to the actual beer, look for these selections on tap: Köstritzer Schwarzbier, Great Lakes Wright Pils, Franziskaner Hefeweizen, Victory, Yards, Stoudts and Paulaner’s Munich Lager. But just make sure you brush up on your bicep curls before you go, ‘cause these oversized beer mugs are a hefty lift.frankfordhall.com 1210 Frankford Ave

Morgan's PierMorgan’s Pier reminds us of Del Ave’s hayday as a nightlife destina-tion, think of it as the reincarnated older and wiser version of Cat-mandu or one of the other raucous clubs. Here you can still enjoy the breeze on the river, but instead of loud blaring club music, how about some pub food, laid back vibes and drafts on tap such as Flying Fish Farmhouse Summer Ale, Otter Creek Copper Ale, Goose Island Nut Brown, Sixpoint Bengali Tiger and Bell’s Two Hearted Ale. This spot is basically like one big old backyard party, complete with a self-de-scribed “foodie picnic menu” which includes items like Watermelon and Feta, Southern Fried Chicken Taco and...wait for it...BACON!!! just to snack on. But despite the fact that it’s a pedestrian hassle, dining alfresco is one of the simple pleasures of summer. The Parisian alfresco dining experience is alive and well here in Philly. What first started out as just a rundown of some of the best places to sit, nosh and people watch, morphed into a francophile’s delight. Afterall, what can be more French than sitting, staring at the passersby and enjoying scrumptious cheeses and breads while enjoying an evening breeze in the neighborhood. So here is our celebration of Center City’s best outdoor bistro options, bon appetite, just don’t forget to sunscreen!

ParcOkay okay, we know it’s obvi-ous BUT to not mention Parc in a convo on outdoor Philly dining would be near blasphemy! This is afterall the people watching

spot in Rittenhouse Square. We want to pull out a moleskin and pretend to be an expatriate in Paris as we chicly sip a Kir Royale. Oh kind squirrel server bring us another baguette (always warm and freshly made). The perfect lunchtime respite, dine on fresh seafood, charcuterie, chicken liver mousse or quiche, amongst the numerous finely executed French bistro fare. Qui qui c’est magnifique Monsieur Starr! 227 South 18th Street Philadelphia, PA 19103 parc-restaurant.com

Tulula’s GardenFrom people watching at it’s peak to the little hidden treasure of Washington Square. Tulula’s is the tops when you want out-door ambiance and romance. It’s beautifully tranquil garden setting isn’t stuffy but the food doesn’t ever take a back seat to the laid back feel. Stephen Starr once again gets another nod with this new Philly hot reservation spot. Try the Bee Keeper drink, it’s the perfect garden aperitif with honey lemonade, dark rum and a touch of ginger. Of course this garden begs for brunch to be enjoyed

amidst the flowers and quaint decor. Do yourself a favor and give in to its charm. From an unforget-table cheese plate with gluten-free rosemary bread to the ricotta doughnuts, blintzes and fresh berry plate, it’s not to be missed. Just be warned, the outdoor din-ing area does fill up and diners are sometimes resigned to the interior, although with food this good, we don’t feel their pain. 210 W Washington Sq tululasgarden.com

ZincThe chef is from France (bonjour Olivier Desaintmartin!), the bar has been exported from Paris (vintage 1919) and the food is as authentic as it gets. Dine outdoors on barrels, yes barrels that sturdily hold your plate d’fromage, glass of Chinon, or oysters with a Musca-det. What we like about this menu is that it is the same for brunch and dinner, so we can savor their delectable eggs Benedict as the sun goes down or snack on some hearty steak frites in morning. 246 S. 11th St. www.zincbarphilly.com

Beau MondeWould any discussion of French food be complete without a crep thrown in? But this is no obliga-tory mention, Beau Monde is the spot to go for the eggy goodness loaded with deliciousness that is the crepe. And although the lavishly decadent decor ala Moulin Rouge is not to be missed, when the weather’s warm the outdoor dining area is perfect, especially since it is gated off so there’s no worries of the passerby tripping over your purse or tipping your Perrier. And although the varie-ties and combinations of crepes you can create are near limitless, don’t forget to also partake of the aperitif menu complete with Campari, Lillet Rouge and Blonde and Pernod. What better way to make the lights dance around you than with a wee bit of absinthe, non? 624 South 6th Street creperie-beaumonde.com

Tired of the same scoops of ice cream and wa-ter ice this summer, we scoped out some spots with cool scoops that rise above just plain old vanilla and hot fudge. Leave your calorie counting and the door and don’t think about fitting into that swimsuit for a moment.

Max Brenner’s at 15th and Walnut Streets takes the cake for shall we say, experimental desserts. The chocolate-themed restaurant with a surprisingly well executed dinner menu offers a host of intriguing ice creams for dessert, like the Euphoria Peanut Butter Chocolate Fudge Brownie Sundae features peanut butter ice cream, dulce de leche ice cream, caramelized toffe bananas, pure milk chocolate chunks, wait there’s more, chocolate sauce, a warm the soul peanut butter sause, plus the fudge brownie and of course whipped cream. It’s served with extra peanut but-ter sauce which we won’t admit to drinking straight and a pure milk chocolate ganache. There’s also a scrumptious S’more dessert and a Berry Sorbet complete with macadamia nuts and caramelized rice krispies, but our favorite for the fun factor it brings has to be the Fantastic Popsicle Chocolate Fondue. A gorgeously pure vanilla ice cream popsicle comes ready for you to embellish as you wish with pure melted chocolate, crunchy chocolate wafer balls, candied hazle-nut crunchy bits (yes, that is their official name!) and infinite possibilities for customizable goodness. While you’re there, don’t forget to read Max’s homage to chocolate, it is a love story that will bring a tear to your eye and inspire just one more bite. www.maxbrenner.com/

Capogiro Gelato on 11 S. 20th Street may have a tiny physical footprint, but will leave a lasting impression on your tastebuds. Being named by National Geographic as one of the coolest places to eat ice cream is no surprise since the little Italian gelateria offers an international tour of flavors from the Mediterranean to the Far East, including Thai Coconut Milk, Pistachio, Lemon Opal Basil Sorbetto, Rosemary Honey Goat Milk, Mascarpone and Fig and Honey Cumin Gelato. The artisanal gelato is prepared fresh each morning in small batches, using seasonal local produce and locally-sourced grass-fed, hormone-free milk. Our favorite flavor is the Black Walnut which is a deep dark nutty flavor true to its name, rich and exotic, it’s the perfect escape smack dab in the middle of the city. www.capogirogelato.com

Old City Frozen Yogurt at 2nd and Market right in the heart of Old City beacons heat-weary workers and tourists alike with its self-serve yogurt oasis. Sure there are a flood of frozen yogurt shops which have cropped up in the city in the past few years, but with it’s neon decor, low-key atmo-sphere and toppings bar, OC Frozen Yogurt will always cool our hearts. The raspberry-pomegranate flavor is a must-try, it’s like a frozen jelly doughnut...only better! Coconut got recently thrown into the flavor options and it’s a worthy contender. Top your cake batter yogurt with gummie bears and peanuts, your cookies and cream with cereal and pretzels, it’s all about you here and whatever crazy cool concoction you can create. Oh and here’s your justification, the yogurt is of course, good for you, with probiotic live cultures and no corn syrup added. sweettartsmart.com

the less obvious details. The more planning you do before Baby, the less you'll have

to think about in those first few hectic weeks. Aside from all the physical prep work,

becoming mentally prepared for your new addition can benefit you later. Addressing

these topics now will save you from a lot of unexpected stress and conflict later on.

Money and Budget

"Incorporating a budget into the family finances should be a top priority for every

You mastered latching-on, can breastfeed while half-asleep and made it through many marathon feedings.Beyond the mechanics of breastfeeding, however, you might still be a little confused and intimidated by thesocial aspects. What do you do when the baby gets hungry while you’re shopping, at a family gathering or at arestaurant? Should you talk with your boss and co-workers when you begin pumping breast milk? How shouldyou respond to all of the questions and comments made by everyone from your mother-in-law to the lady behindyou in the checkout line?

Many times these delicate situations are not addressed when you are learning the basics of nursing. You may feelunprepared when an awkward situation occurs and you haven’t prepared a response. Using some basic“breastfeeding etiquette” can graciously navigate you through these tense situations.

Public Nursing

The first rule to adopt is to trust your own instincts. Do what makes you andyour baby feel the most comfortable. If you still are a bit unsure, these tipsmay help build your confidence and comfort.

Nursing in public can be a daunting task that discourages many women fromeven trying to breastfeed. “I used to be very nervous about breastfeeding inpublic,” says Heather Manning, a breastfeeding mother of two in De Soto,Iowa. “I would hide in the car or in a dressing room, anywhere away from public eyes.”

With a little practice, discreet breastfeeding in public can become second nature. Katy Lebbing, manager of LaLeche League’s Center for Breastfeeding Information, encourages mothers to learn basic breastfeeding

Playing in the Dirt: Gardening for KidsBy Jacqueline Rupp

From bare trees and gnarled sticks poking out of the hard grassless dirt burst forth an explosion of blooms and buds, bugs, and wildlife. This is the time when nature comes alive, awakened by the warm breezes, from its winter slumber. The outdoors becomes populated once again with gardeners planting and digging, pruning and trimming. Howappropriate that April should be National Gardening Month. Organized by the National Gardening Association (NGA),the program's goal is to "grow more gardeners," big and small. Gardening can be a great activity for children of all ages.It requires only a minimal investment but will entertain kids while educating them about the world around them.

There are many activities that you can enjoy with your children that involve gardening. Approach gardening as a treatfor the senses. As Barbara Richardson of the NGA's "Kids Gardening" department says, "You don't necessarily have toget them involved in doing garden chores, but definitely let them see how much enjoyment you get from your activitiesin the yard and outdoors. Encourage their opinions of a flower's fragrance, that shrub's placement, or the flavor of thecherry tomatoes, and they may come around to asking for their own garden bed to plant."

Other activities she suggests include taking a family trip to a local public garden, especially one that has special kidsevents, volunteering at a park, joining a community garden, planting vegetables to donate to a local food bank, orbrowsing through a farmers' market and speaking with local growers. Later you can cook up a meal with your kids usingthe market food.

Richardson adds, "Talk about the differences between food that's grown near home vs. that which is shipped from faraway." She also suggests unstructured explorations of the outdoors, looking, for example, at a bug's path or whichflowers a butterfly likes best. Kids can also make comparisons, like which leaves look similar, which plants grow in thesun, or which thrive in the shade.

Garden activities should be personalized to a child's developmental stage for safety and interest. For preschoolers, theNGA suggests keeping it simple: Pulling weeds, collecting seeds from fruits and veggies, and playing with the dirt. Themain focus at this stage should be on safety and accompanying little ones on their explorations. Teach kids at this ageabout their environment through simple stories. When they are a little older, the focus can shift to creating a place oftheir own in the garden, like a fort or special garden patch. School-aged children can begin their own garden, eitherindoors or out. As they grow, the garden can become more complex and elaborate using graph paper to plan thegarden, learning about different heights and sun needs.

When teaching children about gardening, Richardson encourages parents to teach ecologically responsible practices. She says "using 'quick-fix' solutions to pest, weed, and disease problems sends the wrong message to kids. That's notto say that people should just use organic pest control products instead of the standard poisons -- the idea is to createa healthy system that resists attack. It's also important to show children that a few pests aren't necessarily a threat tothe garden, that plants can tolerate a little bit of chewing and still produce a bountiful harvest." For more info on thistopic, go to Safe Solutions to Garden Challenges at www.kidsgardening.com......

So what are the best types of plants to begin with? You can easily buy annuals like marigolds and impatiens just aboutanywhere these days. They are hardy and work well both indoors and out, from seeds or already grown. To really grabyour kids' attention, go for the show stoppers -- plants with great big flowers, such as the sunflower, or easy-to-growtasty veggies, like cherry tomatoes.

The NGA also suggests the great "Atlantic Giant" pumpkin, bush cucumbers, unusual varieties like purple carrots, and"Easter Egg" radishes. Other interesting varieties include the "Mimosa Pudica.” When you touch it, the leaves close.Bleeding hearts are on the list too, since the flowers can be dissected to uncover a surprise. (Please note: Bleedingheart leaves and roots are poisonous.) For fragrance, the NGA suggests peonies, lilacs, lavender, and lemon balm. Toattract butterflies, go native and plant specimens that naturally grow in your area. The NGA also recommends parsley, dill, milkweed, and thistles.

For indoor planting, a good place to begin is with herbs, such as basil, rosemary, dill, and chives. Many garden storesnow sell kits containing everything you'll need. Kids' gardening tools are also easy to find, as well as specialtymerchandise, like kids' gardening gloves and hats. Go to the NGA's www.kidsgardening.com for more information ongardening with kids. Here you'll also find more recommendations, such as for aromatic night bloomers, and activities, like making and baking a compost "torte."

When out in the garden with kids, safety is always a prime concern for parents. To make sure your outdoor projects

The community health care model is a practical option for providing care tounderserved communities and is quickly growing in popularity as the industry searches for solutions to the health carecrisis. The mission of Community Health Center La Clinica is to provide high quality, effective and affordable healthcare to the community it serves in Southeastern Washington, no matter their economic status. This private, non-profitagency began offering services in 1982. Back then, they operated with two doctors, 13 employees, 3,000 square feet ofworking space and an operating budget of approximately $300,000. During this time, La Clinica serviced about 9,000patients. Today’s stats tell a different story, one of growth and strategic expansion.

Organization growth equals growing opportunities for care

Today, La Clinica is the largest federally qualified health center serving the Washington state area, with an operatingbudget of just under $15 million a year. La Clinica has branched out to offer services at multiple sites, employing 200full-time employees, with a provider group of approximately 25 members. The organization now offers numerousservices, including the following: family practice, internal medicine, pediatrics, obstetrics and gynecology, urgent care, dental and behavioral health and WIC services. Community Health Center La Clinica also offers a variety ofcommunity outreach services, like breastfeeding promotion, in-home lactation consulting, Medicaid referral andassistance with support services and charities for at-risk families. Carl I. Walters II took over the role of CEO in 2009.He says that the organization is now focusing its energies on stabilization so that it can take its services to the nextlevel. “We are focusing on stabilization of the infrastructure from human capital to our provider network group. Wealso want to strengthen the Health Center’s financial viability and launch a targeted and strategic marketing plandesigned to change how the community views the services we offer.” In addition to these goals, Community HealthCenter La Clinica is also aiming to become the employer of choice in the region for health care professionals and alignitself to be able to take advantage of strategic areas for growth.

Maximizing funding options

Community Health Center La Clinica’s leadership is focusing on sources of funding especially from grantopportunities. The organization recently received word from the federal government that it has been awarded a $7.5million HRSA Facility Improvement Program (FIP grant. Walters stated the organization plans to utilize this grant tobuild a new 30,000 square foot facility. The organization was awarded a $408,000 HRSA Increase Demand forServices Grant (IDS)in early 2009, which the clinic plans to use to expand its pediatric service line and rebuild theinternal medicine service line. Community Health Center La Clinica was also awarded a $1.1 million CapitalImprovement Grant (CIP) which enabled the non-profit to purchase a new practice management system and allocatefunds to purchase hysteroscope and ultrasound equipment, expand urgent care operations, add a new dental laboratory, upgrade the telephone system software and also upgrade the building security.

Creating the right environment for employees

Because Community Health Center La Clinica serves vulnerable members of the community, the organization takes itsrole in the region very seriously. “We are community stewards,” says Walters. “We serve the community and are herefor any family that wants to utilize our services. Our Health Center service area encompasses the entire Tri-Cities areasome 240,000 people and we are committed to provided the highest level of care in the most personalized, compassionate and professional manner.” Walters adds that the group is working hard to create an organizationalculture that is centered around shared mission, vision and values. The organization is offering multiple in-housecustomer service training modules and encourages its employees to engage in lifelong continuing educational

VOLUME 6, ISSUE 36 | NOVEMBER 16, 201015Human Collagen From Tobacco?By Jacqueline Rupp

The rows of sprouting green tobac-co plants growing in a greenhouse

aren’t in a southern U.S. state awaiting harvest and manufacture of cigarettes. This crop is being grown for an entire-ly different use. The expansive green-house in northern Israel is growing tobacco for the health care industry, a complete 180-degree turn for tobac-co’s sullied reputation as a carcinogen. Welcome to CollPlant’s human colla-gen production lab!

Collagen, of course, is a group of natu-rally occurring proteins which, normal-ly and naturally, are found exclusively in animals. In fact, we can go even fur-ther and say that collagen is found most commonly in the flesh and connective tissues of mammals. In humans it is the main component of connective tissue, and it makes up about 25% to 35% of the whole-body protein content. Colla-gen, in the form of elongated fibrils, is mostly found in fibrous tissues such as tendon, ligament, skin, cartilage, bone, blood vessels, the gut, and interverte-bral discs.

Focused on Collagen Production

CollPlant, established in 2004 as an incubator start-up company, has been working on a human collagen-produc-ing tobacco since its inception. It’s not easy. “The first challenge was to estab-lish plants that can produce collagen, which involve high-level genetic engi-neering work combined with classical plant genetics, agricultural and bio-chemistry,” explains CEO Yehiel Tal.

“Another challenge was to extract col-lagen from this new source. The plant

environment is very different from the animal bone, skin or tendon, therefore different extraction methods had to be developed.” Tal says that the puri-fication process also was a step that required the company to exercise some engineering expertise and in its six years of research and development the com-pany has automated the process, fine-tuning controls and mechanization.

Today, the company has branched out to work on the design, development and manufacture of biomaterials-based products for regenerative medicine, including scaffolds for soft and hard tissue repair for treating bone fractures, spinal fusion, and rotator cuff tears in addition to other injuries.

Benefits of a Novel Source

CollPlant has as Tal describes it, “devel-oped a technology platform for the pro-

duction of recombinant Type I human collagen in transgenic tobacco plants.”

Collagen has many applications within medicine, from being a major compo-nent in medical devices to supporting tissue regeneration. The biomaterial is used for dermal fillers, wound manage-ment and as a scaffolding in orthopedic procedures. “Collagen provides the most natural scaffold to support re-populating of damaged tissues with new cells lead-ing to tissue repair,” says Tal.

For instance, a study by William Rod-key, D.V.M., J. Richard Steadman, M.D., and Kenneth DeHaven, M.D., titled “Comparison of the Collagen Menis-cus Implant with Partial Meniscecto-my” showed that patients with chronic meniscal injury who received a collagen meniscus implant had better clinical outcomes than those treated with par-tial medial meniscectomy alone.

rowing adult stem cells hasn’t been a problem for many research groups, however keeping them alive long enough to see any benefits from their existencehas always been a sticking point. Now, scientists at the Ansary Stem Cell

Institute at Weill Cornell are unveiling exciting findings that offer promising evidence toback up the importance of the endothelial cells in building and sustaining adult stemcells.

Endothelial   cells,   that   is,   the   cells   that  make  up   the   innerlinings of blood vessels may be the key to creating a bounty ofviable adult stem cells.

So what’s so special about endothelial cells? It turns out it has a lot to do with the natureof these cells and their proximity to adult stem cells in the body. So, senior author of thestudy, Dr. Shahin Rafii, Arthur B. Belfer Professor in Genetic Medicine and co-director ofthe Ansary Stem Cell Institute and his team imagined that these endothelial cells mighthelp in nurturing adult stem cells in the body.

The group, using a mouse model, grew adult stem cells for several weeks and not onlydid the cells stay alive, but they grew in numbers to actually 400 times the originalamount. Tumor growth is always a concern, but this study showed that after a year, there were zero indications of any type of abnormal growth.

This study, which appears in the journal Cell Stem Cell, comes on the heels of Dr.Rafii’s past work which originally showed endothelial cells to be more than just deliverymen for vital nutrients. In that study, the team demonstrated that these special cells aid inthe growth of new stem cells.

Up to  now,  one hurdle has  been  that  adult  organs have fewstem cells, nowhere near the number needed for regeneration.Rai points out previous attempts at culturing stem cells used

Cue bluesy background saxophone. Fade in image of Chicago’s rough

and tumble streets: cars rolling by, steam spewing from manhole covers and rundown storefronts littering the landscape. Toss in some medical jargon and you’ve got yourself the makings for a primetime network drama.

Except this scene isn’t a Hollywood set and the characters are real people with real orthopedic problems. And that’s where this drama really begins.

Welcome to Dr. Daniel Ivankovich’s world. The orthopedic surgeon and team leader of “The Bone Squad” and founder of the Chicago Musculoskeletal Initiatives has made a career treating the uninsured of the Windy City.

Windy City Orthopedic Blues

Chicago’s health care problems are like those of many other U.S. cities. But the need for care extends beyond the stereotype most have of the unin-sured. Middle class and working class people comprise a big chunk of Chi-cago’s growing Medicaid population. Orthopedic-related problems are a major reason this population seeks care. “Back pain, obesity-related knee osteoarthritis in women, and alcohol and sickle-cell related hip osteonecrosis is quite common,” explains Ivankovich. “Pediatric and adult fractures are seen

in the clinics and ERs on a daily basis. Hip fractures are quite an epidemic in this community as well…And there are more gunshot-related injuries than I’d like to acknowledge. It’s very sad.”

But Ivankovich says it also puts ortho-pedics front and center in the deliv-ery of comprehensive musculoskeletal medicine, especially if you take into account diabetes and vascular-related wound issues and limb compromise. “Orthopedic issues are responsible for 20-45% of what many primary care providers are seeing in these com-munities.” Ivankovich adds that the biggest obstacles to orthopedic in his opinion are:

-ventative medicine

Failure to treat orthopedic problems early can have a snowball effect which not only hurts the patient but can have even larger consequences in the com-munity. For example, when an arthritic and painful knee deteriorates and pre-vents the patient from working their standard of living deteriorates. Among the Medicaid population, lack of care, poor diet and exercise increases the risk of a disability and ultimately becoming fully dependent on government for support. “When you’re handicapped

Look at any news headlines and you’ll usually find top stories about UShealthcare and the country’s military operations. But healthcare for the military is often an overlooked issue that onecompany, The Arora Group Inc. has dedicated itself to, with great success. Dr. Sudhir Arora, founder and president ofthe Maryland-based health care service company began the group after noticing a real demand for consistent qualitycare for military personnel and a dependable market that was willing to offer comparable compensation.

The Military Market

Today, The Arora Group is one of the nation’s premier professional health care service providers for the USgovernment. The group focuses on military healthcare, but also services various other government clients nationwide. With 900 health care professionals serving over 50 medical treatment facilities spanning 30 states and six regionaloffices, Arora has grown to be a nationwide presence for governmental health care. In fact, Arora has enjoyedsustained growth in each of its 20 years in business.

So how has Arora managed to remain in a growth mode for over two decades? Arora credits his company’s success tothe nature of government health care needs. “Military health care has special reasons for growth. All branches of themilitary lack the medical manpower within their ranks, so they need to outsource a significant portion of care. In thelast six years, due to overseas deployment, health care needs have risen. Even after the warrior returns home there isstill a great amount of care needed for traumatic brain injury and post traumatic stress disorder.” Arora says thatalthough the demand has increased for medical professionals, the number of those professionals in uniform hasdecreased dramatically because of the stress of wartime.

Arora says that he noticed a real opportunity within the military while he was in private practice some 25 years ago.“We chose to work with the military because while I was a practicing physician, I began wondering about the effect ofHMOs and Health Insurance companies at a time when the public was losing confidence in organized medicine. Withinthe military, there are no external pressures from insurance companies and the like. I entered the arena 20 years agoand have enjoyed it so much. At times we have had our hands so full that we’ve subcontracted part of our business tomeet the demand for our services.”

Arora adds that the Military Health System is an entirely different animal from the Civilian insurance companyproviders typically deal with. “The DoD is not looking at the same priorities as Health insurance companies. They arecoming from the perspective that the American soldiers, sailors, airmen and marines deserve the best.”

High Quality is a Necessity

But just because the needs exist, Arora still must offer the highest quality of care in order to capitalize from theopportunity. “Our level of dedication to American troops has made all the difference. It is what has made us the DoD’spreferred staffing choice.”

To maintain quality, Arora focuses on a management philosophy that emphasizes proactive improvement. “Large taskstypically fall into place, so we must always focus on taking care of the small tasks as well and never be complacent.”

Supplying Staff, Supporting the Future

As a private, relatively large company, Arora’s singular focus is on providing high quality medical professionals to itsclients. Arora health professionals work in facilities owned by the DoD and it is Arora’s responsibility to recruit andcredential them. Recruitment is therefore always a priority. “From our perspective, as private contractors, some

Sunscreen Snafoos (We ALL Do)It might be a surprise with all the attention given to sun safety over the past decade, but according to a new study from the American Academy of Dermatology, most of us are doing sun safety ALL WRONG. From NYC to the hot beaches of Miami, it seems we aren’t using a high enough SPF to protect ourselves accordingly. But it’s not just the SPF we have to watch out for. It looks like we need to revamp our whole approach to protecting our skin from the damaging rays of the sun. Here’s the top five mistakes to avoid:

Going Too Low SPF 15 is not enough. We will say it again. SPF 15 is not enough. Okay, we think you got it now. But don’t go to the other extreme either. It turns out the over-50 SPF are really just marketing hype

and don’t offer much more significant protection than your good old, middle of the road SPF 30. Let’s hear a big cheer for the big 30. That’s the number you are going to look for now at the drugstore or beach shop when it’s time to re-stock. Don’t forget to apply 30 minutes BEFORE the beach (or any other place where you’re getting sun exposure). This will allow not only time for the sunscreen to begin working, it will also avoid you being the ghostly apparition on the sand, don’t be that sunbather.

Bad Ingredients Not all sunscreens are created equal. Did you know, some even have ingredients that will exacerbate the sun’s rays. Look for a bottle labeled

broad spectrum that blocks both UVA and UVB rays. And avoid harmful chemicals. These aren’t just in the bargain knock-off variety either, just because it’s expensive, doesn’t mean the sunscreen is okay. A quarter of the sunscreens tested by the Environmental Working Group in a recent study came back having harmful chemicals in them. Another quarter had an ingredient that could raise your risk, it’s called retinyl palmitate and shouldn’t show up in your sunscreen of choice. Instead pick sunscreens that are mineral-based with ingredients like zinc oxide and titanium dioxide. These shouldn’t be too hard to find at the grocery or drug store these days.

Skimping on Your Parts We forget to blend foun-dation into our neck and we look like a clown, we forget to apply sunscreen to these hard to reach spots however and we risk a whole lot more. Don’t forget

these spots, people! Backs of hands, the chest, the neck and feet. Also invest in an spf lip balm, although it might seem like one more thing to carry, this is one of the most sus-ceptible places. Plus with the extra attention paid to these spots, you’ll avoid those awful brown age spots, so often seen in these places as we age.

Letting Your Eyes Go The majority of us don’t wear shades on the beach or at the pool and that’s a mistake say experts. Sun damage to eyes is the

leading cause of cataracts. Beside, we all look way cooler in a hot pair of sunglasses. And while you’re at it, pop on a hat, it protects the most vulnerable parts of the body, your face and neck.

Using a Shot Glass as a Guide Well anything that starts with a shot glass can’t be all bad we say, but then again....Anyway, the old standard was to squirt a shot glass amount out of a sunscreen bottle and

apply. Well being that all body types aren’t the same, that might leave a little kid covered and a tall man with just a light coating. Instead of volume, think coverage. You should look like a vanilla frosted birthday cake after the right sun-screen application. A visible layer is the new gold standard, so get frosting.

Healthy You

Spring in bloom might be a beautiful sight, but if you’re one of the 54 million allergy sufferers in the U.S., the spring can mean welcoming back some unwanted guests, like inflammed sinuses, irritated eyes and runny noses. Aside from having the over the coun-ter antihistamines at the ready, there are other things you can do to minimize your exposure to pesky pollen, mold and other seasonal allergens and their allergic effects.

Make sure it is an allergy. Your doctor can you give you a simple test to find out, but generally allergy symptoms don’t include a fever. Itching however is a major symptom of allergies. Avoid allergy triggers. If you have a pollen allergy, curb your outdoor morning activities. However, if mold is the culprit, stay inside in the late afternoon, when mold spore counts are at their peak.

For more allergy tips visit the asthma and allergy Foundation oF america at www.aaFa.org

Spring AllergiesOvercoming

Other ways to avoid pollen and mold: Keep your windows closed and wear a dust mask when doing yard work. Al-ways remember to change clothing and shower after extended time outside. Saline nose sprays work well at ridding the nose of allergens and eye drops can soothe watery irritated eyes.

Now we all know avoidance can only go so far. And with several medication options on the market, it’s easier than ever to find relief. Many allergy suf-ferers have found success with using their antihistimines proactively before they are exposed to triggers and suf-fering symptoms.

It may also be helpful to consider al-lergy shots for severe cases. These shots work to desensitize the body from the allergic triggers, but work over time, unlike over-the-counter meds.

A Collection of Beautiful Prints and Fabrics

Want your home to look like it was furnished bya professional designer? It doesn't take an artschool degree to plan out a beautiful layout, infact it all comes down to selecting andcoordinating the right fabrics and prints. Thereare many gorgeous fabrics and prints on themarket today, and you can include more thanjust one in a room. Mixing luxurious solid fabricswith fashionable prints is a great formula forstyle success.

When most people think of fabric prints, theyusually think of floral patterns first. That'sbecause floral patterns are probably one of themost popular patterns. Offering a timeless look, decorating with florals breathes a fresh, vibrant

impression into a room. There are many floral patterns to choose from, but the easiest to work withare generally those with the biggest prints. Although at first these might appear too bold, theirlarge graphics will keep the pattern from becoming too busy. A few floral pillows make the perfectaccent to a casual sofa, breakfast nook or guest bedroom.

Animal prints are also timelessly popular. Frombold and modern zebra prints to classicallyexotic tiger and cheetah designs, these printscan fit in with nearly any style or decor. Becausemost have neutral hues (cheetah for instanceconsists of browns and tans), these patterns areperfect for people who are unsure if patternfabrics are for them. A simple faux fur in ananimal print or upholstered chair can be just thething to bring a touch of sophistication to aroom. However, animal print can also be seen inlarger scale pieces, like cheetah chaise loungesor leopard Recamiers.

On the opposite end of the print spectrum, thereis the classically refined toile pattern. Full of pastoral scenes of ladies and lords, these printshearken back to the courtyards of France. Use these versatile fabrics in the kitchen, dining room oreven bathroom for a refined yet country look. Another similar pattern that is especially popularthese days is damask. With its regal look, these classical patterns are offered in a myriad of colors,

from traditional to trendy.

Now to balance out the mix of patterns, you'llneed to also incorporate solid colored fabrics.Microfiber offers multiple benefits, includingdurability, easy cleaning and color retention. With the smooth look of suede, this fabric is abudget friendly option, especially for families. For durability and style, nothing can compare toleather. Although it may be a significantinvestment, leather is an option that will lastfor many years. But if you're thinking thatleather might be too masculine or dark for yourliving spaces, take another look at today'sleather furnishings and you'll see a full colorpalette to choose from.

Looking for a fabric that is extremely comfortable and elegant? Then chenille is the perfect choice. With soft lines of textured fabric, chenille not only feels lavish, it also looks impeccable. Ultra Suedeis another luxurious option that offers a smooth feel that is perfect for modern tastes. It's clear that there are numerous options available when you're searching for the perfect fabric.

Whether it is a long puffy full skirt or an elegant wedding dresstrain with abundant decorative touches, there are some styles ofwedding dresses that never go out of fashion. But what if youdecided to make a bold choice and choose a modern style thatshows off your individuality and creativity? More and morebrides these days are doing just that. After attending weddingafter wedding, and paging through bridal magazine aftermagazine, many brides decide to think outside the box andchoose a nontraditional wedding dress.

Today's brides have more freedom to express their personal styleand are not letting convention get in the way of their dream dress.Be on the lookout for cutting-edge designers with beautiful, original ideas. Runway designs are grabbing the attention of

fashion-forward brides looking for a dress that stands out from the crowd. So ditch the pressure and start exploringall the possibilities there are in today's bridal fashions.

Short and Sweet

Who says a bride's dress has to include a long train. Isn't everyone expecting your dress to look like this anyway? Why not make a show-stopping appearance down the aisle in a fun and flirty short dress that embodies youthfulenergy and a daring spirit. A strapless silk satin short dress for example does not have to forget adornment, eventhough it is an above-the-knee dress. The decorative illusion hem might be adorned with crystal and pearl andembellished with AlenconLace and feathers. This ivory dress has the movement and energy reminiscent of a Jazz Age flapper, but with thesophistication of delicate lace touches.

For a more traditional look in a shorter, flirtier interpretation, try a silk and satin strapless short dress with spiltfront over-skirt. A dress such as this creates the illusion of a full wedding dress, with the casual charm of theknee-length hem. This particular design is available in ivory and petal (a very subtle light shade of pink). For thosebrides that dare to be different, the strapless silk taffeta cocktail dress might be just the look. Full of intricatedetail, this dress features a modern bubble skirt that plays up the 80s retro trend so popular right now.

Add an air of elegance

Veils have traditionally been demure features of a dress that covered a bride's face in yards of taffeta. Today, veilsand other accessories are transforming wedding dresses, with bold statements and stylish additions. Take forinstance the silk organza strapless slim gown embellished with embroidery, ribbon, Swarovski crystals, cut silkflowers and bows. This ivory dress features a floor-length veil that frames the face, but doesn't obscure it, whileadding decorative touches to the look courtesy of its intricate lace detail. The silk chiffon strapless slim gown withempire bodice and spilt front flowing skirt features a light and feathery ivory stole that's perfect for autumn or

Everyone knows that a man's watch is his mostimportant, and usually his only fashionaccessory. Most men consider their watch anextension of their personality; the foundationupon which their personal style is based. Aman's watch can say a lot of things about him.It can tell you if he is a man of leisure or action;whether he is a surfer or a golfer. And ask aman what brand watch he associates most withstyle and class, and the name "Invicta" is sureto be heard. Founded in 1837 in Switzerland,Invicta has created some of the most stylishwatches in the world, and continues to offer thetop line of quality to men and women acrossthe world.

Invicta provides men with a plethora of options when it comes to watch styles. One of their morepopular lines is the Russian Diver Collection, originally created to honor the 1959 watchcommissioned by the Russian Naval Fleet. This beautiful line of watches is uniquely oversized andcrafted of surgical stainless steel or titanium, distinguished as being Invicta's largest watches. TheRussian Diver Three-Dimensional Watch is the newest addition to this noble collection, and comesin the equally striking color options of black and silver-tone or blue and silver-tone. Notonly is the watch water resistant to 100 meters, but its dial has three unique sub-dials. A secondcounter rests at 3:00, a 1/10 second counter sits atop 6:00, and a minute counter is located at9:00. This watch is powered by a Swiss Ronda 5040.D Quartz movement.

Another fantastic timepiece from this collectionis the Russian Diver Akula Watch. Bold, Blooming Spring Fashion

This Spring/Summer fashion season is an exciting one, filled with plenty of new looks. Here’s just a sampling of what we found sprouting up this season. Clockwise, from right: Olde City’s Smak Parlor is “in the navy” with a ton of nautical looks. We especially dug the pin-up-inspired bags and maritine thigh-highs. Look for

polyester mod dresses to be a popular trend this year. The flat-tering cuts to these ulta-modern dresses mean they should be a go-to piece this sum-mer. (bottom page) Fabric Horse has been designing belt bags for sometime now, well tis’ their season. The modern-day fanny pack (yes we said it) are super-functional and now, chic. Neon shirts and pants are lining the shelves all over these days. And, finally, Smak Parlor shows off a few of the hottest colors for the season: coral, orange and pale pink.

Spring is here so I’m sure you are asking yourself, “How do I rev up my look for the upcoming season?” There are unhealthy answers like baking in the sun. But there are many products out there that are safe alternatives to the negative affects of UV exposure.

You can modernize your springtime glow with just a few new additions toyour arsenal to add seasonal style. These methods will also keep you from looking like an Umpa- Lumpa ora disco ball!

Pay close attention to your all over foundation shade, make sure it isthe right color and weight. In the bright sunlight, it is obvious when it’s wrong. Don’t try to cover your whole face with a darker shade to try to look tan. It just looks odd. Try Motives Custom Mineral liquid or powder Foundations

For lips, instead of lipstick, switch to a gloss over a liner that you completely fill your lips in with in a similar shade. The liner adds length to wear. It’s brighter, shinier and more youthful in the warm weather.

I’m going to talk about bronzer right now. This is very important! Anything labeled bronzer typically should really only be worn by medium skin tones. Do not cover your whole face withbronzer. Also, do not use bronzer with

sparkles in it. Noone’s skin sparkles except for the Cullen family. Apply it only where the sun would hit your face or where your skin would natu-rally be darker like your hairline on your forehead, down the front of your nose and the top of the cheekbones. You can also add it to your shouldersand clavicles. MAC Bronzing Powder in Golden is a great choice

If you are fair skinned, looking natu-ral and glowing for spring requires some thought.

Don’t use traditional bronzer. Use a powder foundation instead that is two shades darker than your own skin tone and only use it the way I in-structed above. Do not apply it toyour whole face! Use a white or off-white pearly, cream eye shadow or powder shadow on top of the areas you used the darker foundation shade.

Also you can add it near the tear duct of your eye and on the brow bone. It looks more natural and glowing and you can control the amount of high-light that you want! Get the look with Graftobian Makeup Luster cream or powder in Opal Ice or Shimmering Sand

If you have a darker skin tone, purchase a highlighter like Motives Liquid Gold. Use it at the top of the cheekbones, near the tear ducts, on the brow bones and down the bridgeof the nose. Blend! Also, either alone or on top of your lipstick, add Motives Lipstick in 24K. These two products will add a glow to your skin and it is just a little extra addition to your regular makeup routine!

Picking seasonal makeup colors is simple. Look at the shades you wear in the winter and just go a bit brighter and lighter!

For the body, keep moisturized! No one wants to see dry skin! There are moisturizers out there with shimmer to them. They are a fun way to draw attention to your legs and shoulders. It totally completes the look. Throw in some shine with Scott Barnes Body Bling in Platinum or Original

These quick and easy additions to your regular routine will give a you a fresh new look for the warm weather.
