I started making BBQ sauce many years ago with my mother's very simple, 3-ingredient recipe. Over the years, I have worked at adding to and taking away from that core recipe to make what I'm selling today. When I started in 2011 at this market, I had only my original sauce. Today I offer 4 different flavors; original, mild, chipotle and blueberry. Each customer has their favorite and I love to hear their stories of how they like to use JT's Sweet BBQ Sauce. It’s officially strawberry season! Some vendors will have ber-ries to purchase at the market starting this week. Beck’s Elk River Greenhouse & Vegetable Farm also has a pick-your-own strawberry patch that is now open for picking! Talk to Barb Beck at her booth for more details.

Ingredients

4 cups lettuce, chopped

1 cup beans, pulled pork, or ground beef

2 small tomatoes, chopped

½ cup corn, canned or fresh

2-3 scallions, finely chopped

1 cup tortilla chips, roughly crushed

sharp cheddar or queso fresco, for sprinkling

Dressing

¼ cup sour cream or yogurt

juice of one lime

salt and pepper

Mix up the dressing and taste it. Adjust the salt, pepper, and lime to your liking. Mix the other ingredients in a large bowl. Pour the dressing over just before serving and toss to coat the salad evenly. Eat immediately, may-be with a few extra tortilla chips on the side.

Maple Salad Dressing Courtesy of Heidi Barthel of Barthel’s River Road Gold

1/4 cup vegetable oil

1/4 cup of mayonnaise

1/4 cup pure maple syrup

3 tbsp. white wine vinegar

2 tsp. sugar

Mix all ingredients together and chill. Pour over your favorite fruit or leaf salad. (Mayonnaise can be substituted with yogurt.
