Queremos apoyar su difusión entre nuestros pasajeros, entregándoles información para que conozcan y disfruten de este siempre atractivo mundo. el éxito de la reconocida carta de vinos a bordo de LAn ‒seleccionada especialmente por nuestro Master sommelier‒ es el mejor reflejo del interés que este tema tiene para los pasajeros de Premium Business.

Los invito a viajar a un mundo de colores, aromas y sabores que encontramos en seis magníficos viñedos situados en Chile, Argentina y Francia, y que hemos seleccionado cuidadosamente para ustedes.
Desde la precordillera de Los Andes (el piemonte andino) nos llega Los Lingues Carménère Gran Reserva 2008 Colchagua, de Viña Casa silva (Chile), un referente de esta cepa emblemática, pleno de aromas frutales silvestres y textura aterciopelada.
De la Provincia de salta (Argentina), el Colomé Malbec Estate 2007 es un vino de gran factura, personal y único, con la particularidad de provenir de uno de los viñedos más altos del mundo (2.500 m).
Por otra parte, en pleno Valle de san Antonio (Chile), en viñedos situados en el pueblito de Lo Abarca a sólo cuatro kilómetros del océano Pacífico, Viña Casa Marín nos deleita con este Sauvignon Blanc Laurel Vineyard 2009, un vino aromático, casi yodado, intenso y vibrante.
Al sur de Mendoza, en el Valle de Uco, la Bodega Salentein nos presenta este Chardonnay 2009 muy aromático, equilibrado, fresco y vivaz.
Y para terminar, del valle chileno de Colchagua, surge el Montes M 2006 de Viña Montes, un ensamblaje que nace en las escarpadas laderas de Apalta (45º): elegante, estructurado y con gran fineza; uno de los grandes vinos de Chile.

The 2007 Colomé Malbec Estate from Argentina’s salta province is a unique wine made some 8,200 feet above sea level at one of the world’s highest-altitude vineyards.
situated just two and a half miles from the Pacific Ocean in the tiny town of Lo Abarca, Viña Casa Marín (san Antonio Valley, Chile) delights with its aromatic, nearly iodized, intense and vibrant 2009 Sauvignon Blanc Laurel Vineyard.

incline levemente la copa y enfréntela contra un fondo blanco.
Brillo
Puede ser brillante/cristalino, luminoso y limpio, hasta velado, opaco o de considerable turbidez.
Tono
en el caso de los blancos: tonos amarillo pálido pajizo o verdoso indican un vino joven. Matices ocre y anaranjado señalan que el vino es más viejo o de cosecha tardía.
Color
en los tintos el rojo es el color base. si se aprecian ribetes bien azulados indica que es un vino joven o bien conservado, especialmente de determinados cepajes como syrah, Cabernet Franc, Carménère,
• Temperatura ideal para consumir los vinos:- Blancos ligeros, de 6ºC a 8ºC. - Tintos tánicos y robustos, 18ºC.
• Nunca entibie o enfríe una botella de vino bruscamente, utilice agua fría o agua tibia.
• No lave las copas con de-tergente, aplique agua bien caliente y un buen secado.
• En las copas diseñadas para vino servir máximo hasta la mitad.

• The ideal temperatures for serving wines are: - Light whites: 43-46ºF.- Tannic and robust reds: 64ºF.
• Never heat or cool a bottle of wine abruptly. Use cold or warm water to adjust the temperature.
• Do not wash wine glasses with detergent. Clean them with very hot water and dry them carefully.
• Glasses designed for serving wine should not be filled more than half way.
Malbec. Con el pasar de los años los vinos derivan hacia tonos de rojo sangre, luego rojo rubí o burdeos, eso es porque coincide con el momento de redondez y equilibrio que alcanzan algunos grandes tintos. Y si aparecen matices anaranjados, teja, ladrillo y finalmente marrón-ámbar es porque es un tinto bien añejo (y a veces nada de bueno).
Intensidad
La intensidad del color equivale a la cantidad de pigmentos colorantes existentes en el vino. Hay profundos, de media y de baja intensidad (como los Pinto noir), de acuerdo al tiempo de maceración de los hollejos de la uva en el mosto. A mayor contacto, más color.

Brightness
wines range from brilliant/crystalline, luminous and clean to foggy, opaque and quite cloudy.
Tone
in the case of whites, pale straw or greenish yellows suggest that a wine is young. Ochre and orange shades appear when a wine is older or made from late-harvest grapes.
Color
Red is, of course, the base color for red wines. if you notice very bluish edges, it means that the wine is young or well preserved, particularly in the case of varietals like syrah, Cabernet Franc,
Carménère and Malbec. Over time, wines tend to evolve towards blood-red tones and then ruby red or maroon because color coincides with that moment of roundness and equilibrium that some great reds achieve. Finally, shades of orange, brick red or maroon/amber mean that the wine is very aged (and this is not necessarily a good thing).
Intensity
The intensity of the color depends on the quantity of pigment in the wine. This ranges from low intensity (like a Pinot noir) to medium and high intensity depending how long the grape skins are macerated in the must. The longer the contact, the deeper the color.

La risa en Cecilia Torres es un bien abundante. Menuda, de bajo perfil, es capaz de inundar un salón repleto de gente sólo con su energía movediza y contagiosa. Formada bajo la disciplina del genio loco ignacio Recabarren, hoy pilar enológico en Concha y Toro, Cecilia es una de las enólogas ancla de la tradicional viña chilena santa Rita.
Tan coherente y fiel ha sido con el proyecto, que su trayectoria tam-bién lleva el hábito de la estabilidad. “nacida y criada” en la bodega, como ella misma dice, lleva 30 años en ella. Y de aquí nadie la mueve. “He crecido y envejecido junto con las parras. Hemos evolucionado jun-tas”, reflexiona. Y es que ha tenido la suerte de tener siempre desafíos, la rutina no existe para ella. Por el contrario, los estímulos la han hecho ganar varias veces premios como la enóloga del año, al igual que sus vinos, distinguidos dentro de los mejores de Chile gracias a esa mezcla de potencia y elegancia, tan francesa y, en un punto, tan suya.

This tiny, unassuming woman is generous with her laughter and able to captivate a room full of people with her contagious energy. Trained by eccentric genius ignacio Recaberren, who is today the enological pillar of Concha y Toro, Cecilia Torres is one of the top enologists at the traditional Chilean winery Viña santa Rita.
Torres’ dedication and faithfulness to this project has lent stability to her entire career. she was “born and raised” at the winery and has spent 30 years there. And she has no intention of ever leaving. “i grew up with these vines. we have evolved together,” she muses. Torres has faced challenge after challenge, but far from being a setback, this stimulating environment has helped her win several awards, including enologist of the Year. Like her wines, Torres is considered to be among Chile’s best, thanks to her unique blend of strength and elegance.

A las mujeres inteligentes se les teme y quiere por partes iguales.
Pero la enóloga argentina susana Balbo supo cambiar la fórmula a su favor. Amor y temor dejaron de ser injustamente equivalentes cuando Balbo demostró que esto de hacer vinos no es cuestión de género. Fue la primera enóloga argentina en ser llamada a asesorar una bodega del Viejo Mundo, y también en quien ni-colás Catena confió para el diseño del ambicioso proyecto Catena Zapata.

smart women are both loved and feared, but Argentinean enologist susana Balbo has used this stereotype to her advantage, proving that making wine is not a matter of gender. she was the first enologist in Argentina called to advise an Old world winery and was entrusted by nicolás Catena with the design of the ambitious Catena Zapata project.
when her colleagues were looking for even more proof of her mastery, Balbo opened up a whole new world for Argentinean wine, positioning the Torrontés grape alongside Malbec and rescuing forgotten varietals like Bonarda. she is currently the director of wines of Argentina and runs Dominio del Plata winery with her husband, Pedro Marchevsky. The talented duo is responsible for the impressive portfolio that includes the Crios line and the more complex BenMarco, susana Balbo and Virtuoso wines.

Cordones montañosos, laberintos de cactus, más de dos mil metros sobre el nivel del mar. Trescientos –y a veces más– días de sol al año. Calor. Mucho calor. Condiciones que dibujan la zona argentina de salta, donde Cafayate es la región más importante. Aquí, en el no-roeste argentino, madura con gracia la fragante cepa Torrontés, que da origen a vinos blancos de intenso aroma floral y sabor frutal. Pero también crecen con éxito otras como Malbec, Tannat, Tempranillo o syrah. La altura, el clima seco, la alta oscilación térmica entre día-noche y esos rayos impíos que ayudan al desarrollo de una uva más intensa sedujeron a connotadas bodegas para instalarse y ser abrazadas por el valle.

Argentina’s salta Province and Cafayete, its most important wine region, are the site of glorious mountain ranges, labyrinths of cacti perched over 6,500 feet above sea level, three hundred – and sometimes more – sunny days a year and heat, a lot of heat. These conditions allow the fragrant Torrontés grape to ripen and give life to intensely floral and fruity white wines. Malbec, Tannat, Tempranillo and syrah are also grown successfully here in the northwestern part of the country. The altitude, dry climate, sharp temperature variation between day and night and those brilliant rays of sunshine develop more intense grapes and have convinced renowned winemakers to set up shop in the valley’s embrace.

Todo parece haber sido registrado en lengua diaguita, el pueblo indígena que dominó el Limarí antes de los españoles. Tanto los vinos como los piscos que aquí se producen tienen ese matiz. en las etiquetas, en los nombres, en el concepto. situado al norte de Chile, el valle se reco-noce por su versatilidad. sus suelos por lo general aportan un trazo salino marcado y exquisito, y su clima permite la elabo-ración tanto de blancos como de tintos. Los Chardonnay más cercanos a la costa han dado que hablar, y algunos tintos, como los complejos syrah, han logrado desarrollar una personalidad única. Tantos ingredientes hicieron que muchos apostaran por el vino. Y el calendario les está dando la razón.

everything here seems to be written in diaguita, the language spoken by the indigenous community that dominated Limarí before the arrival of the spanish. This cultural heritage is reflected in the labels, names and concepts behind the wines and piscos produced in this northern valley. The soil of Limarí contributes a marked and exquisite trace of saline to the white and red wines that are a testament to the area’s versatility. The reputation of its coastal Chardonnays and the unique complexity of its syrahs have led many people take a chance on wines from Limarí, and time has proven them right.

He has over 3,600 followers on Twitter – without really making an effort, because he could have more – and his independent monthly publication The Wine Advocate can spell success or failure for the thousands of wines that enter the market each year.with a thumbs up or thumbs down, Parker can change the direction and future of a winery, though he uses points for his ratings rather than medals. if a wine gets 80 points, it’s considered mediocre; 85 means reasonable and even good; over 90 is very good; and 95 is exceptional. wines with scores close to 100 mean that heaven is just around the corner. este tártaro piratea algo de los mejores tártaros que me ha tocado probar. Un día decidí prepararlo en mi casa, fui eligiendo los ingredientes y combinaciones que más me gustaban y aquí está.
Compre salmón fresco y de bonito color, según la cantidad de gente que vaya a comer (con medio filete grande comen bien 4 personas). Corte el pescado en cua-draditos pequeños y reserve. Pique un cebollín (verdeo) completo, la parte blanca en rodajas delgadas y la parte verde en tajaditas de medio centímetro. Corte en mini cuadraditos un trozo de jengibre fresco (la cantidad de-pende de cuánto le guste, pues cuando es mucho puede ser un poco picante). Vaya mezclando los ingredientes en un bol grande, para que los sabores se combinen. Pele y pique en cuadraditos pequeños una palta (aguacate) madura y firme (pero no pasada, pues echa a perder el tártaro). Añada al resto. Agregue sésamo tostado a gusto (si lo puede tostar en el momento, mejor). Aliñe con salsa de soya, limón, aceite de oliva o de sésamo. Pruebe la sal, porque a veces es suficiente con la soya. Agregue un poco de pimienta recién molida y, si le gus-ta, espolvoree un buen merkén encima antes de servir. se puede presentar en pequeños timbales individuales como entrada o servir como aperitivo, acompañado de pan pumpernickel.

Buen equipo / A Perfect Match
This recipe borrows a little something from each of the best tartares that i’ve tried. i decided to make it at home one day using my favorite ingredients and combinations.
Buy fresh salmon with good color. The amount will depend on the number of diners (half of a large fillet will be enough for four). Cut the fish into small pieces and set aside. Chop up a green onion, slicing the white part into thin rounds and the green part into half-centimeter lengths. Mince a piece of fresh ginger (the amount depends on how much you like – if you add a lot, the dish may be a little spicy). Mix the ingredients in a large bowl and let the flavors mingle.Peel a ripe but firm avocado and cut it into small pieces and add to the other ingredients. note that the avocado must not be overripe —if it is too soft, it may ruin the texture of the tartare. Add toasted sesame seeds to taste. (ideally, you should toast the sesame seeds yourself right before adding them.)season with soy sauce, lemon juice and olive or sesame oil. Taste before adding salt (sometimes the soy sauce is enough). Add a bit of freshly ground pepper and, if you like, sprinkle a good-quality merquén (smoked, ground red chili) on top just before serving.This dish can be served as starter in small, individual bowls or presented as an appetizer with pumpernickel bread.

Lo primero es hacer la salsa, y la gracia es que el sabor sea equilibrado. necesitamos espinacas y albahaca. Blanquee la espinaca pasándola por agua hirviendo unos minutos. en una sartén, saltee un poco de cebolla picada junto a las hojas de albahaca previamente lavadas y escurridas. La proporción debiera ser mitad albahaca y mitad espinaca. Licue en la juguera o licuadora espinaca y albahaca hasta que quede una pasta, y agregue un trozo de buen queso fresco (no quesillo). siga licuando y después vacíe esta salsa en una olla para calentarla y probar la sazón: agregue sal y pimienta a gusto, junto con un chorro de crema o leche evaporada hasta lograr la consistencia deseada. Añada queso parmesano rallado a gusto. Mientras tanto, eche a cocer en agua hirviendo su pasta favorita y, cuando esté lista, escurra y sirva con esta salsa bien caliente.

start with equal amounts of spinach and basil. Blanch the spinach: place it in boiling water for a few moments, then plunge it briefly into ice water to prevent overcooking. wash and dry the basil leaves, then sauté them with a bit of chopped onion. Place equal amounts of spinach and basil in a blender or food processor and blend to a paste. Add a piece of high-quality, fresh cheese (not low fat) and continue to blend. Pour the sauce into a pot and heat on medium, stirring constantly. season to taste with salt and pepper and add a stream of cream or evaporated milk to the mixture as you warm the sauce until you get the desired consistency. Add grated Parmesan cheese to taste. serve very warm on your favorite pasta.
