18th IUFoST World Congress of Food Science and Technology

Summary Report

Representatives from more than 90 countries participated in the 2016 IUFoST World Congress of Food Science and Technology. Over 80 keynote plenary and keynote sessions speakers discussed issues/challenges and interests in theme areas, and more than 250 scientific, industry and policy experts spoke. The programme focused on themes including food innovation, nutrition and health, future food, food sustainability and food safety. Hot topics sessions identified new and emerging trends in important food sectors such as meat, dairy, seafood and consumer foods. Communications around policy in national, regional and international government, between industry and academia and with the consumer were a focal point.

A full schedule of pre-Congress workshops and committee meetings was open to all IUFoST Adhering Bodies, Committee members, Regional Groups, Fellows and Congress attendees: Aflatoxin Management Workshop; Food Chemistry Division meeting; Distance Assisted Training programme meeting; Fresh Produce, Religious, Ethnic and Ethical Working Group meetings; Early Career Scientists/Young Scientists session; Regional Consultation for the Global Food Safety Curricula Initiative.

The Inaugural Global Food Summit attracted attendees from government, industry and academia to address key areas affecting global food security and the actions needed to address them. Government, non-governmental organisations and scienists across the spectrum addressed the global issues of sustainability and food security and agreed that inter-disciplinary work and consultations are necessary to ensure progress that will have a lasting impact.

The Food Industry Forum, award ceremonies, competitions, poster exhibits, exhibition hall and social events uniquely Irish completed the Congress programme and meeting of those involved with IUFoST's ongoing work in committees/taskforce and commissions.

HighlightsInaugural Global Food SummitIUFoST

convened the inaugural Global Food Summit, also hosted by the Institute of Food Science and Technology of Ireland, Teagasc (the Agriculture and Food Development Authority of Ireland), and the Food Safety Authority of Ireland, on August 21 in recognition of the critical role of science advisors and advisory committees associated with governmental authorities in

improving dialogue and collaboration between diverse stakeholders involved in addressing global food safety and security needs. Opened by the European Commissioner for Agriculture and Rural Development Philip Hogan, it brought together individuals who can affect strategic change to policies in key areas affecting food production and processing worldwide for three sessions and a high-level discussion:

- Session 1 speakers addressed international issues with cross-disciplinary approaches, with a particular example of developments in Ireland and China. Discussion highlighted the need for leadership from the scientific community and IUFoST to address the forthcoming challenges related to food security.- Session 2 focused on the current situation of global food science and technology in addressing the future food issues and identifying opportunities and risks.- Session 3 examined the plans of major developed and developing nations regarding food science and technology.

The high-level discussion addressed identifying agreed-upon actions and the future role of IUFoST in their implementation. Critical elements included a focus on Africa, the need to continue to raise the profile of food science and technology at the policy levels of governments, inter-disciplinary collaboration and the active engagement of food scientists and technologists. This Summit will be conducted during all future Congresses.

Lifetime Achievement Award

Dr. Daryl B. Lund was presented with the IUFoST Lifetime Achievement award during the opening ceremonies of the World Food Congress. The IUFoST Lifetime Achievement Award honours an individual for pre-eminence in and contributions to the field of food science and technology over his or her career. Recipients are recognized for their significant contributions to scientific knowledge with impact in areas such as food safety; food quality; human nutrition; product, process, package innovation; food security (availability, accessibility, affordability); consumer acceptability; communication of food science and technology regulations; or combinations of the above.

IUFoST Distinguished LectureThe link between the controversial concept of "ultra-processed" food and nutrition-related medical conditions was challenged by Distinguished Lecturer Professor Michael Gibney, Professor of Food and Health at University College, Dublin (UCD),

and Chair of the Irish Food Safety Authority (FSAI) in his Congress-opening keynote address. Sound nutrition science formed the basis of his lecture, during which he discussed the impact of nutritional requirements of both infants and the elderly on future food science and technology priorities. He also focused on myths relating to nutritional needs of the mainstream population in between these two categories

Professor Gibney joins an accomplished group of IUFoST Distinguished Lecturers, all world-renowned scientists in areas relevant to food science and technology invited to present the principal keynote lecture at each World Food Congress.

Food Security Interdisciplinary PanelBetween the 17th and 18th World Food Congresses, the panel adapted a food security framework into a more food systems approach. The 18th Congress featured four sessions and a concluding panel, which provided an overview of food systems and three main food system areas - production, processing and logistics and influencing demand - and greater emphasis on sustainability and health issues in food systems. They included more analysis and specific examples of actions by different actors in the food systems, and clearly demonstrating the need to consider and integrate drivers relevant to each step of current and emerging food chains. The panel presented highlights and potential future actions, which may include developing the contributions that food science and technology and associated sciences can make to future sustainable and healthy food systems and considering the implications for IUFoST and its national and regional members. A number of opportunities were identified and specific points noted related to sustainable and healthy food system transformation for future development.

IUFoST Education CommitteeFood Science and Technology Curricula Recognition: At the request of many National Adhering Bodies, this programme was initiated by FIFSTA from South East Asia. In collaboration with Adhering Bodies, assessments have been conducted in a number of countries, including in Singapore, Indonesia, Malaysia, Thailand, Vietnam, the Philippines, China, South Africa, and in Costa Rica. The Institutes were recognized in a ceremony during the Congress. The pace of these assessments, which include an "on-desk" assessment and a unique "on-site" assessment, cannot be increased significantly as IUFoST combines assessment visits with other areas of service to Adhering Bodies and regional groups.  All of the assessors from the International Academy of Food Science and Technology (IAFoST) and Adhering Bodies involved were thanked for their invaluable support in the success of the programme.

The secondmajor activity of the Education Committee is the Global Food Safety Curricula Initiative (GFSCI), which IUFoST was commissioned to lead by the World Bank, as part of the Global Food Safety Partnership Programme, in order to develop a core curriculum in food safety. To date, a consultation process involving government, academia and industry took place, surveys were distributed globally,  areas of core

competencies were identified, and core curricula working groups for each of these areas formed, tasked with developing syllabi. When completed, they will be reviewed and recommendations made for the curricula for the undergraduate and graduate levels. Regional consultations are being conducted to receive input to ensure this curriculum has global relevance. Consultations have taken place in Beijing, Ireland (during the World Food Congress) Dublin, which involved representatives from Europe, North America, Asia and Africa, and Colombia.

A new series of Food Safety Regulatory Workshops is ongoing. Piloted by Brazil, Indonesia and South Africa in 2015 and also presented in Kazakhstan, Indonesia, Vietnam, Chile and Kenya throughout 2016 and into early 2017, each workshop is a joint venture between IUFoST and the hosting Adhering Bodies. There are three workshops in the series, aimed at different audiences, Food Regulators, Health Professionals and Dietitians, and NGOs and Media, on topics identified through the national Adhering Body and with participation of IAFoST Fellows and Adhering Body experts.

International Academy of Food Science and Technology (IAFoST)The Academy assists and/or supports activities of IUFoST through its members, including attending many conferences for Adhering Bodies all over the world and participating in the Visiting Professors programme and workshops on the Food Safety curriculum. IUFoST and Fellows have a very close and satisfying collaboration with the Adhering Bodies.

Early Career Scientists and Young ScientistsThe Early Career Scientists designation was ratified by delegates during the previous Congress. All Young Scientist winners from IUFoST World Congresses from 2008

onwards were eligible for the Early Career Scientist Section of the Academy, dependent on the upper limit of age and were invited to send their updated CV with a recent reference to the Academy Executive Council. From the information provided, a jury of Fellows determined who should be invited to form the first class of Early Career Scientists in the Academy. From now on, there will be seven winners from every Congress who will automatically become Early Career Scientists. During the Congress, it was suggested that they should take two mentors to help them in career development for networking and contacts.

In a separate process, nine young scientists were chosen by an international jury to speak to the World Food Congress on their research findings:  Brunna Boaventura (Brazil); Azad Emin (Germany); Daming Fan (China); Delphine Huc-Mathis (France); Amanda Naaum (Canada); Anet Rezek Jambrak (Croatia); Ziyun Wu (Singapore); Xiaonan Lu (Canada); Eimear Shannon (Ireland) all were invited to address the world community of food science and technology assembled there. This experience has been a part of IUFoST World Congresses since 2006, demonstrating IUFoST's ongoing commitment to nurturing the next generation of food scientists.

A pre-Congress meeting was held with IUFoST representatives and the Early Career Scientists and Young scientists to introduce them to one another. They were asked to put the group together and report, which resulted in the transference of subjects and ideas for distribution, which resulted in subjects and ideas that were collected for distribution. A young scientist session on sustainability produced an active discussion.

Aflatoxin Working GroupIUFoST has gone on record twice, first with the Budapest Declaration, then the Cape Town Declaration, in support of using the power of food science and technology to help solve the problem of hunger, all forms of malnutrition and also food safety. The working group on Aflatoxins has developed a proposal that makes use the technology that has been endorsed by IARC as ready to implement. Technology in use in developed countries is not appropriate for developing countries. After two or three decades, the problem is still serious and manual visual sorting to help reduce aflatoxins in developing countries is being championed by the Aflatoxin working group.

ALACCTA (IUFoST Regional Group for Central and South America)This Congress featured the first ALACCTA session held at a Congress outside Latin America,  presenting concerns, trends, and discussions about institutions and scientific papers. An ALACCTA session is being planned for the next World Food Congress in India. ALACCTA is working closely with IUFoST on several projects, including Food Regulation workshops and a regional consultation of the Global Food Safety Curriculum Initiative (GFSCI) in Colombia for Latin America and the Caribbean.

ALACCTA produced the Montevideo Declaration addressing the problem of the misperception of processed foods widely discussed during the Congress. The region

is committed to addressing the issue, which was also addressed by the World Food Congress Distinguished Lecturer.

Other IUFoST Regional Groups that held their first sessions at an IUFoST Congress outside of their regions were FIFSTA representing the ASEAN, WAAFoST representing Western Africa, and MENAFoST representing the Middle East and North Africa.  All presented important perspectives on issues and strategies related to Food Science and Technology in their regions. 

The IUFoST regional grouping for Europe, EFFoST, presented numerous emerging issue sessions.

StudentCompetitionsAwards also were presented in two competitions aimed at food science students: the Food Science Students Fighting Hunger Product Development competition, open to undergraduate students, and the Food Safety Without Borders Graduate Student Paper competition. Students at both levels from around the world entered their unique products and research papers. Nine teams were chosen as finalists in the Food Science Fighting Hunger category, while six graduate student papers were selected for consideration by an international panel of experts.

Originated as part of IUFoST's aim to strengthen the role of food science and technology in securing the world's food supply and eliminating world hunger, both competitions demonstrated the talent, creativity and dedication of the next generation of food science and technology professionals.

Food Sustainability Idea/Concept Development CompetitionIUFoST considers sustainability issues for food and drinking water as one of the key topics of its current and future agenda.
