Every child is different. Often children develop skills in typical ways but at a slower rate than other kids. Sometimes children have specific difficulties because they learn in a different way, which requires a different type or intensity of instruction. If you have concerns about your child’s speech and/or language development, a pediatric speech therapist can work with you to evaluate your child’s skills in variety of areas. Contact us at 603.595.3076 for guidance on:

Pediatric Speech Therapy Services typically include:· Evaluations· Direct therapy in an outpatient setting· Consultations that include development and support of parent training and in-home programs

What’s Cooking?

TIPS:

• Whenever possible, use low-sodium ingredients. If you’re interested in learning more about low-sodium foods, see page 8 and schedule a Low-Sodium Diet Shopping Tour at Hannaford!

• For lower fat and sodium content, leave out the pancetta.

• To make a vegetarian version, use vegetable stock and omit the pancetta.

• If you prefer not to cook with wine, simply substitute with a rice wine vinegar or apple cider vinegar.

Winter Minestrone & Garlic BruschettaGood-quality olive oil4 ounces (½-inch) diced pancetta1½ cups chopped yellow onions2 cups (½-inch) diced carrots (3 carrots)2 cups (½-inch) diced celery (3 stalks)2½ cups (½-inch) diced peeled butternut squash1½ tablespoons minced garlic (4 cloves)2 teaspoons chopped fresh thyme leaves26 ounces canned or boxed chopped tomatoes 6 - 8 cups chicken stock, preferably homemade1 bay leafKosher salt and freshly ground black pepper1 (15-ounce) can cannellini beans, drained and rinsed2 cups cooked small pasta, such as tubetti8 - 10 ounces fresh baby spinach leaves½ cup dry white wine2 tablespoons store-bought pestoGarlic bruschetta - See recipe below Serve with freshly grated Parmesan cheese

PreparationHeat 2 tablespoons of olive oil over medium heat in a large, heavy pot or Dutch oven. Add pancetta and cook over medium-low heat for 6 - 8 minutes, stirring occasionally and until lightly browned. Add onions, carrots, celery, squash, garlic and thyme and cook over medium heat, stirring occasionally, for 8 - 10 minutes, until vegetables begin to soften.

Add tomatoes, 6 cups of the chicken stock, bay leaf, 1 tablespoon salt and 1½ teaspoons pepper to the pot. Bring to a boil, lower heat and simmer uncovered for 30 minutes, until vegetables are tender.

Discard bay leaf. Add the beans and cooked pasta and heat through. The soup should be quite thick. If it’s too thick, add more chicken stock. Before serving, reheat the soup, add the spinach and toss (like a salad) with 2 big spoons. Cook until the leaves are wilted. Stir in white wine and pesto. Add salt to taste. Serve in large shallow bowls with bruschetta on top. Sprinkle with Parmesan cheese, drizzle with olive oil and serve hot. Enjoy!

PreparationPreheat the oven to 425 degrees. Slice the baguette at a 45-degree angle in 1½-inch-thick slices. Brush both sides of the bread with olive oil and bake for 6 minutes and until lightly toasted. Take the slices out of the oven and rub the surface of each one with cut clove of garlic.

Q: What do you find most rewarding about working in community health?

A: I enjoy spending time with community members at our classes and events. My work educates and empowers people, but more importantly, it brings them together. Many of our class participants consider each other family, and on more than one occasion I’ve witnessed them supporting one another in a time of need. We have a beautiful, growing community and I love being a part of it!

Q: What is your go-to healthy snack?

A: An apple or banana with any kind of nut butter.

Q: How do you relax?

A: Time to relax is hard to come by for a working mom! I best relax in a quiet space, simply spending time by myself. I also like visiting with close friends. Catching up on each other’s lives and laughing our way through the tough stuff. It’s true, what they say...laughter really is the best medicine!

Q: Do you have a favorite way to exercise?

A: I like to walk our dog, practice yoga, swim and have dance parties in the kitchen with my kids.

Q: Are you currently reading anything special?

A: I’ve just started reading Kindling the Native Spirit: Sacred Practices for Everyday Life by Denise Linn. I also read lots of children’s books – the classics.

Q: If you could spend time with a celebrity who would it be?

A: Ellen DeGeneres. She’s inspiring, positive and never fails to make me laugh!

Q: If you could sit on a bench and visit with anyone, living or deceased, for just an hour, who would it be?

A: My grandparents and my cousin, Adam. They all passed away when I was younger. It would be interesting to chat with them now that I’m an adult – to share memories, ask questions and have them meet my husband and two children.

Q: What’s your idea of a perfect day?

A: For me the perfect day would include being outside with family and friends. I wouldn’t do anything extravagant...just breathe the air, run around with the kids, eat good food, listen to music and enjoy each other’s company without distractions. Oh, and we wouldn’t have a use for cell phones, because we’d all be together!

Q: How can the community connect with you?

A: I hope that people will feel free to introduce themselves at one of our St. Joseph Hospi-tal Community Health events and classes, or drop me a line at [email protected].

Mindful Moment: Morning Cup of Peace

Start your morning with a cup of peace, gratitude

and mindfulness. As you hold your favorite coffee or

tea, take a moment to read this passage to yourself,

focusing only on its words and your senses:

My mug feels secure and warm in my hands. Its

familiar aroma and color comfort me. Steam rises

from my cup, warming my body like a soft blanket.

I breathe in the goodness of this cup. I exhale

gratitude for this moment.

Ladies’ Night Out! Women’s Health Open House

Thursday May 17th 5:30 - 8:00pm

You can’t pour from an empty pitcher. Women are caregivers by nature. For a woman to be a good daughter, partner, mother, friend, coworker, etc., she must first take time to care for herself. This event is an evening of pampering, self-care tips, education, discussion, sampling and – most important – fun! It will help you “fill your pitcher.” Chat with clinical staff from different hospital departments, tour the Breast Care Center – even meet local business owners who have donated their time to pamper you.
