So, what I’m doing...I’m cooking for eight people aboard a 1925schooner in St. Croix. I’m working with an extremely limited budget,and I consider spices to be something of an investment. When I
arrived on the boat, there were spices, but they were mostly quiteold, which means that you need to use about a handful when a pinchwould sufce with fresher spices.
I make a lot of curries, chili, and other heavily seasoned dishes, partlybecause such meals are delicious, and partly because it’s’ a way ofdressing up really cheap ingredients into something more interesting.
A few 89 cent cans of beans and tomatoes, with enough seasoning,can be a delicious, lling chili, and a head of cauliower, a few cansof diced tomatoes, and an appropriate blend of spices, can be adelicious aloo gobi. A wide variety is key. In the long run, a week onground turkey and chicken breasts is well worth it, considering howmuch better the food will be in the future.
So now, I have new spices! I got to go to a whole different store thisweek, and I spent an entire day’s food budget on spices. I couldn’thelp it; I’ve been without so many of them for so long, and am runningout of others, and they were all there, and, and...and that’s why nomeat got bought this week. It would take a stronger man than I topass up bulk turmeric. Or cloves, since for months now I’ve beensubstituting allspice and hope. The saddest part was all the spices
I couldn’t afford. I kept picking up this container of garam masala,looking around guiltily, and putting it back on the shelf. And saffron.
Don’t even get me started on saffron.There was this little test-tubey bottle of it, with a cool looking cork,and I knew I couldn’t afford it, but I had to make a great physical effortto put it down and walk away. █
