1. Look for a variation of pricing for add-ons, special preparations, substitutions, etc.

2. Include a few “economy” dishes and a few “specialty” (expensive) items.

3. Consider offering dishes for vegetarians, vegans, kids, seniors, diabetics, etc.

4. Think about happy hour specials, seniors, military personnel and other groups. Maybe discounts on certain dishes at certain times.
