Holiday Shortbread Cookies

Shirley’s Christmas TreeCoffee Cake

Christmas Tree Brownie Pops

1 pound (4 sticks)unsalted butter

28 ounces semisweet chocolatechips, divided

6 ounces unsweetenedchocolate, chopped(or Baker’s chocolate squares)

6 large eggs3 tbsps instantcoffee granules

2 tbsps pure vanilla extract2¼ cups sugar1¼ cups all-purpose flour, divided1 tbsp baking powder1 tsp salt

Cream cheese frostingMini candy canes, the straightsides broken offAssorted sprinkles & minicandies, for decorating

1. Preheat oven to 350°F. Generouslybutter and flour a rimmed12x18x1-inch baking sheet.

2. In the top of a double broiler (orin a large, heat-safe bowl set overa pot of simmering water), melttogether the butter, 16 ounces ofchocolate chips, and unsweetenedchocolate, stirring until smooth. Setaside to slightly cool.

3. In a large bowl, blend togethereggs, instant coffee granules,vanilla, and sugar. Slowly andgradually stir the warm butter/chocolate mixture into the eggmixture.

4. In a medium bowl, whisk together1 cup flour, baking powder, andsalt. Blend into chocolate mixtureuntil just combined. In a smallbowl, toss remaining 12 ounceschocolate chips with remaining 1/4cup flour. Stir into chocolate batterand spread into prepared sheetpan.

5. Bake for 20 minutes, then rap thebaking sheet against the ovenshelf or counter to remove anytrapped air bubbles. Bake for 15more minutes or until a toothpickcomes out clean, taking carenot to overbake. Allow to coolcompletely.

6. Once brownies are cool, cut intoChristmas tree-shaped triangles.Use a thin metal spatula to removefrom cookie sheet onto a platter.

7. To decorate, insert a straight pieceof mini candy cane into the base ofeach tree.

8. Scoop cream cheese frosting (oryour favorite frosting) into a gallon-sized freezer baggie. Push frostinginto a corner of the bag and cutoff a 1/2-inch piece to create ahole. Use as a piping bag to pipefrosting onto each brownie. Placebrownie upside down, start atlong, flat side, and pipe frostingback and forth going down thebrownie, all the way to the tip(where the star would go).

9. Use a variety of sprinkles, leftovercrushed candy canes, and smallcandies to decorate the trees.Store refrigerated in a tightlyco ico ico ico ico i

1. Line a baking sheet withparchment paper. Combine alldry ingredients, add butter andblend with a pastry blender, fork(or electric mixer) until thoroughlymixed and a fine crumbly texture.

2. Turn onto a floured surface andknead for about 3 minutes. Rollout to a 9” circle, approximately1/2“ in thickness.

3. Cut shapes with a small upturnedglass or cookie cutter.

4. Poke top of cookies with a forkseveral times and sprinkle surfacelightly with granulated sugar.

5. Place cookie sheet in fridge for 25minutes then place in a preheated300 degree oven on middle rack.Bake until just beginning to turn apale, golden brown (approximately10-12 minutes).

6. Remove from oven andimmediately place cookies on arack to cool. If more than onebaking sheet is required, cook eachsheet separately to ensure evencooking. Cookies can be stored atroom temperature for up to1 month or frozen.

Speculaas Skillet Cookie

1½ cups flour¼ cup packed brown sugar/ cup + 1 tsp butter

Pinch of salt2 tbsps pumpkin spice (or

speculaas spices; see below)1-2 tbsps cold water (if needed)Optional: Vanilla ice cream

to serve.

1. Mix all of the ingredients togetherin a large bowl until you have adough. Add the water if necessaryif it seems to dry.

2. Wrap the dough in plastic film andleave to rest in the fridge for 1 hour.

3. Preheat oven to 350 F.4. Take the dough out of the fridge

and roll out slightly.5. Transfer to a lightly greased oven

proof skillet. And press to flattenso that it covers the bottom of theskillet.

6. Use the blunt side of a knife tomake a pattern.

7. Bake for 30-35 minutes.8. Cut into parts and serve. (Optional:

1 cup chilled orange juice1 cup chilled apple juice2 cups chilled lemonade1 cup of ginger beer

4 strawberries, roughlychopped

1 tbsp chopped fresh mintleaves + a few whole sprigsfor garnish. (A slice of starfruit makes it shine!)

1 cup of ice* To make this punch alcoholic –

add 3 oz of vodka

Cream together:1 cup soft butter½ cup white sugar½ cup brown sugar1 egg yolk1 cup of unbleached white flour1 tsp almond extract

1. After well mixed together spreadthe batter evenly on a cookie sheetlined with parchment paper orgreased with butter.

2. Bake for 20 minutes at 325 F(watch to make sure corners orends are not burning, turn downtemp if that is happening).

3. Melt 12 oz of semi sweet bakerschocolate.

4. When the cake layer is done,remove from oven and pour thechocolate over the cake evenlywhile still warm.

5. Spread 1 cup of toasted slivered orsliced almonds then refrigerate foran hour or more.

6. After fully cooled, cut into squaresand take off cookie sheet and storein container in fridge.

Scout groups enjoy a long traditionin the area, having been on the NorthShore for more than 80 years.

One of those groups, the branch knownas 1st West Vancouver Scouts, wasorganized in 1927 and held weeklymeetings at a local church. Eighty-eight years later, that group is stillgoing strong. Chris Nemeth is a West*+$#"1/:8 !+! '4" (863 7"3 2$/",/:!with the group when his son joinedScouts. His son is now in his 30s and isa Scout leader, and Nemeth continuesto be involved. He is now a member ofthe Scout’s annual Christmas tree salecommittee.

The 1st West Vancouver group is one ofmany local Scout groups participatingin the West Vancouver sale, whichNemeth says involves about half of allthe groups on the North Shore.

development over the years, Park Royal has continuedto maintain a space for the Scouts tree sale. Last yearit was held at the old White Spot location, but thisyear has been moved to the corner of Clyde Avenueand Taylor Way.

Putting together the annual fundraiser takes a lotof work and a lot of volunteers. A team of about 15adult volunteers starts working on planning and earlylogistics for the sale in July. All the trees sold at the lotare grown in B.C.

Scout leaders and parent volunteers then help setup the lot, including the trees, fencing and a trailer.47#AC 5)) E$#ACE. 7#&E 8%" FBG:E 8FIE 6?I C# 9+.participate in the sale.

Scheduling all those kids and parents can be quite atask, admits Nemeth.

@G#' EC8GC C# 6%BED. CDI #!IG8CB#% BE 8 :#C #H (#G=.he notes, but it’s worth it because the tree sale is theScout group’s largest fundraiser each year.

The money raised from the tree sale is used to supportvarious Scouting programs, including renting spaces

“One thing I like is that we can support local treegrowers. We get to know them and they’re familyoperations and they’re not making a lot of money butthey’re able to keep their land as agricultural. Theother thing is seeing so many people that used to bein Scouts coming down to buy trees. That’s fun,” saysNemeth, adding there are a couple of members oftheir group helping out with the sale who are in their3)E %#( 8%" 6GEC EC8GCI" EI::B%F CDI CGIIE (DI% CDI&were 10-year-old Scouts.

Nemeth says he has also noticed an increase in thepast couple of years of families who are new to Canada7A&B%F CDIBG 6GEC /DGBEC'8E CGII I?IG* 2I'ICD E8&Eit’s nice to see their excitement and to help explain thetradition to them.

Although the Scouts who participate in the sale don’treceive any special training for it, the experiencedones show the newer ones the ropes, and Nemeth sayshe thinks the Scouts learn about communication bybeing a part of the sale.

“I think they learn how to deal with people a little bit,”he adds.

8 oz cream cheese, light4 oz crumbled feta cheese¼ cup chives, chopped/ cup pomegranate seeds4 whole wheat tortillas

1. In a medium bowl, stir togethercream cheese, feta, chives andpomegranate seeds.

2. Divide mixture into quarters andspread evenly over each tortilla.

3. Roll each tortilla tightly in plasticwrap.

4. Refrigerate for 1 hr.

5. Slice each tortilla into 12 pinwheelsbefore serving

cream butter1 cup buttermilk

1. Preheat the oven to 450 degrees Fand grab a large ungreased cookiesheet.

2. In a large bowl, whisk together theflour, baking powder, baking soda,and salt.

3. Cut the butter into the dryingredients using a pastry blenderuntil the mixture resembles coarsebreadcrumbs.

4. Pour in the buttermilk.5. Mix with a wooden spoon until

most of the dry ingredients havebecome moistened. You want the

batter to be moist and sticky, butnot too smooth.

6. Using a tsp, scoop up a heapingspoon full and use a second spoonto scrape the batter onto thecookie sheet.

7. Place the drop biscuits about 1-1/2inches apart.

8. Bake for about 12 minutes, untilthe biscuit bottoms are a golden-brown.Serve hot!

“This recipe was one my motherpassed down to me as a familytradition. It is a super easy one-step meal that we all enjoyed onthe eve of Christmas.”

500g ground beef1 medium onion, chopped

1-2 Tbsp olive oil3 Bavarian smokies, diced

1.5 cups frozen hash brownsor diced cooked potatoes(leftovers)

1 tin mushroom soup1 tin cream of celery soup

Pepper (generous)Grated cheese (or somethingcrunchy) for topping

1. Saute onions in olive oil then addground beef and cook until nolonger pink.

2. Add sausage, potatoes andpepper and cook 5 minutes,stirring often.

3. Add soups to pan and mixthoroughly; you may need to addmilk or water (your preference)to thin out but not too much, it’smeant to be eaten with a fork, nota spoon!). Heat through.

4. Ready to eat at this point, but isbetter if you pour mixture into acasserole dish, top with cheese orsomething crunchy and bake at350 F for ½ hour. Serves 4.
