Holiday 2015

In the wake of all the tragedies taking place at a seemingly increasing pace, we are ever more in need of a break, an escape, a moment to free ourselves of being bombarded with all the bad in the world, to recover and regain perspective.

What do you have in mind this holiday season?

Is it more time with friends and family, or a quiet getaway to the mountains or the beach?

Whatever it may be, take us along for a light review of the stuff we would love as gifts, some very well made silverware and hats, a festival you might want to join and a great recipe for the holidays from our new restaurant in Singapore.

Wishing for happiness and peace in the world,

“Master of the Chair”: that is how Danish furniture

designer Hans J. Wegner is known all over the

world. The CH24, popularly known as the Wishbone

chair, exemplifies this with excellence. Created

from pure natural materials, it is a brilliant

Sterling Jean Learning more about the story of Puiforcat, the history of being a silversmith for over 200 years, makes me think a lot about companies and how they grow and evolve over time. I am sure there must have been many ups and downs for the owners as there are in any business but what I find most fascinating is that 100 years after the founding of the company, one fourth generation descendant could come along and create a complete renaissance for the house.

PUIFORCAT BOUTIQUE3RD FLOOR, SIAM PARAGON+ 662.129.4577

PUIFORCAT.COM

It was not that he was not under any pressure as the first century of the company was already an illustrious one with works commissioned by royalty, including the replica of the famous “Anna of Austria” beaker that once belonged to the Queen of France, or the “Francois-Thomas Germain” tea and coffee set designed and created for Joseph I, the King of Portugal. It was already the leader in its field.

Jean Puiforcat led the company in the 1920’s and through his love and appreciation for the Art Deco movement created a lasting impression of simplicity and elegance that prevails to this day. His sketches are still being used to create and influence new designs after Hermès took the company under its wing in 1993.

–05–

Some delightful pieces from Jean that still look beautiful and relevant today are his clock which was initially released in very limited quantities in 1932. It comprises a constellation of 12 white marble cylinders embossed with hour digits distributed around a central stud holding the hands. Puiforcat is recreating this exquisite piece in a limited release of 50 numbered pieces. Equally stunning is the chess set by Jean Puiforcat from 1927 made of sterling silver, Ivory and Macassar Ebony. Each of the 32 pieces is individually crafted from the painstaking cliquete technique and combines rare and precious materials. Even the

Cannes flatware range from him in 1928 bears his mark of simple, classic elegance that shows the best possible quality in silversmithing.

What is lovely to see is that his influence and style have remained with the company and is perfectly aligned with that of its new owners. This is evidenced by the many new collections and products with new designers that are becoming the classics of tomorrow.

Wonderfruit Reverse graffiti (the practice of cleaning out stenciled letters) popping up around Bangkok could not be a more fitting way to announce the return of the Wonderfruit Festival, the 4-day music and art event happening in mid-December near Pattaya.

Following the successful premier last year, Wonderfruit - Asia’s first eco-friendly camping festival is presenting even more musical performances as well as culinary, art and wellness activities. From December 17th - 20th, guests can roam around the open fields of Siam Country, less than a 2-hour drive from Bangkok, enjoying music from world-famous bands, musicians and DJs, engaging in cultural workshops or participating in health sessions.

This year musical guests include legendary hip-hop artist Yasiin Bey aka Mos Def, R&B duo Rhye, Jon Hopkins x Chris Levine, The Faint and more. Each of the 4 stages is uniquely designed using WONDERFRUITFESTIVAL.COM

locally sourced materials. For instance, the Main Stage will be transformed by artist Joel Dean Stockdill into a sculptural paradise while the Solar Stage will be done by Los Angeles-based Vita Motus, renowed for their innovative stage designs for Coachella’s Do LaB stage and Boom Festival. The festival grounds will be further brought to life with incredible art installations that interact with the local ecology as well as Wonderfruit guests.

For culinary delights - Farm to Feasts, the award winning Chef Gaggan who is often named one of the best in Asia, will be joining the festival for the first time along with the ever popular Italian eatery Peppina and famous Thai restaurant, The Never Ending Summer, owned by noted architect Duangrit Bunnag who is also a guest speaker at a Wonderfruit workshop. The festival will bring many Thai street food favorites including Moo Ping Hea Owen who gained global fame for his grilled pork on a stick from chefs’ reviews around the world.

Yoga, meditation and massage treatments are offered in the Healing Village, curated by internationally-acclaimed designer Ou Baholyothin.

For those who want to spend a weekend with a group of friends or family, a variety of accommodation is available ranging from hotel packages to boutique and RV camping. Traveling with small kids? No problem. There will be lots of children activities and a professional nanny service for your convenience.

Produced by SCRATCH FIRST, a Thai-based social enterprise that constantly promotes social responsibility through their events, the Wonderfruit Festival has become the pioneer in Asia with the idea of cultivating creativity combined with its sustainable practices and forward-thinking offerings through music and art.

PP MøblerThe dream of making a chair based on themost simple and elegant shape of themall, the circle, was not realized until HansJ. Wegner turned 72. It was a great challengefor artisans at the PP Møbler’s workshopas its construction would push the limitsof the possible.

Consequently the Circle Chair turned outto be one of Wegner’s most characteristicdesigns and it still offers great comfortand flexibility. One of the many appealingfeatures of the Circle Chair is the fact thatdespite the size and comfort it is light andtransparent, very practical and easy tomove around. A terrific gift for the avidmodern mid-century collectors.

Matrice LampSaint-LouisIt was while looking at the huge supply ofmoulds in the Saint-Louis warehouse thatKiki van Eijk had one of her sure-fire flashesof inspiration. She felt the stirrings of anintense, carnivalesque idea. She would makea crystal lamp in the shape of a mould.Opening it up by hand would liberate thelight inside, softened by a Japanese paperscreen. And because she would be givingbirth to these new creations, she wouldcall the collection “Matrice”, French for“matrix”.

Minty Sky

JETBLUE.COM

When it comes to flying coast to coast in the States, especially during the busy holiday season, there is no better choice than the new Mint service from JetBlue.

Mint is the airline's refreshing take on a premium experience, not to be classified as business or first, as nothing does compare. It offers top-notch service, the best seating coupled with some very nice amenities.

Introduced in June 2014, JetBlue began the Mint service between New York's JFK and Los Angeles and San Francisco. Each flight has 16 lie-flat beds which are designed exclusively for JetBlue in partnership with Thompson Aero Seating. For the lucky few who book long enough in advance - 4 passengers to be exact, they will get to enjoy the Mint Suite, a completely separate single suite for extra privacy.

Once seated, the friendly crew members will serve you a delicious pre-departure drink called the refreshMINT, followed by an amuse-bouche after takeoff. JetBlue also partners with renowned restaurants and bakeries in New York to create special menus for in-flight meals. Mint passengers can choose five freshly prepared tapas-styled comfort foods with a twist from Saxon + Parole and artisanal desserts from Ma-Ze-Dahr Bakery and organic ice cream treats from Blue Marble. Fresh coffee from Brooklyn Roasting Company is served on board. You will also never get hungry as JetBlue offers ‘The Marketplace’ for all new Airbus A321s, a self-serve station fully stocked with snacks and drinks for passengers to enjoy at their convenience throughout the flight.

For entertainment, their 15" flat screen with over 100 channels of DIRECTTV programming and more than 100 channels of SiriusXM satellite radio makes passing the time much more pleasant. If you want to catch up with your work while in the air, their complimentary Fly-Fi, a superfast in-air Wi-Fi is very convenient.

To top off the Mint experience, passengers get a curated amenity kit filled with editor-approved beauty and grooming products from Birchbox. The items in the kits often change for men and women throughout the year. It’s always exciting to see what will be included in the next one.

Flying domestic in the States has always been a less than perfect experience but with Mint you will always feel the flight was a little too short.

Beginning March next year, JetBlue will introduce the Mint service to Boston, connecting the beantown to both LAX and SFO and will add more seasonal destinations in the Caribbean in the future.

A Man of Many Hats The idiom of someone ‘wearing many hats’ immediately comes to mind when I think of the accomplishments of the visual artist Eric Chan. Known throughout Asian art circles for his rich and multilayered canvases, his dream-like, ephemeral and romantic images allow him to display his well-honed techniques in the craft of painting. Malaysian-born Chan under-took his art studies in both Australia and Singapore, before finally setting up his studio in the latter country. His work can now be found in various private, corporate and public collections worldwide.

It is the ability of an artist to express themselves over various mediums that often highlights their true depth of talent. His own artistic playfulness is what finally led Chan to also express himself through the art of millinery, finally firing his self study into the complex and detailed construction methods used in the making of sculptural head-pieces. The human head as his blank canvas.

Chan’s early work included ravishing large canvases depicting nature, horticulture and flowers often abstracted as if mesmerizingly caught in a moment of frozen movement. The period following this saw him overlay-ing these images with meticulously illustrated classical figures or human forms. In his current work Chan further explores his sensuous and rich image-making whilst also moving towards purely abstract paintings, focusing on his own emotional response to form, colour, texture and proportion. It is no surprise, then, that these ideas are also explored in the crafting of his sculpturally beautiful head-pieces.

ARTIST / MILLINERMR. ERIC CHAN

ERICCHAN.NET

–21–

Chan chose to photograph the millinery pieces shown here on our pages, against a changing backdrop of his current works in progress. I was very excited to be present at this shoot seeing his latest artworks and millinery collection juxtaposed against each other under the changing light in his all-white Singapore studio.

Chan’s materials palette is as wide-ranging as is his approach to each individual design – often the form of the piece, he says, is born from the material or fabric itself – he seeks out his materials globally, whether it be a rare or vintage textile from Europe, a particular feather, bead, button or timber ribbon. His personal materials library is a testament to his obsession with seeking out the most interesting elements to form a piece. Whilst he uses the art of millinery to express his ideas as part of his own artist experi-mentation, Chan is often approached by private clients who have seen his work, to develop custom made pieces for them. No two are ever the same. Chan works with each client, focusing on their personality, mode of use, or a particular occasion for the piece to be worn. His opinion is that a head-piece can transform a moment and the wearer – whether it be for a special event in their life or simply popping out to the buy the morning groceries! “Why not make each day in our lives more special?” Chan states. I couldn’t agree more.

CLINTON ST. BAKING COMPANY COOKBOOK RECIPE COURTESY LITTLE, BROWN AND COMPANY

COPYRIGHT ©2010 BY DEDE LAHMAN AND NEIL KLEINBERG

Maple BourbonPecan Pie

–23–

This is our signature Thanksgiving pie —the perfect closureto your holiday feast. It’s surprisingly not gooey-sweet andhas an addictive chewy texture when cooled and rested. At our table, we serve it with vanilla ice cream, but I like itbest late at night, slightly chilled. The dough recipe makesenough for two pies. Double the filling recipe or freeze halfthe dough for another time.

Dough:2 ¼ cups All-Purpose flour, plus ¼ cup for rolling out the dough1 ¼ Sticks (20 Tablespoons) cold unsalted butter, cut into small cubes3 Tablespoons cold or room temperature vegetable shortening3 Tablespoons sugarPinch of Salt½ cup plus 2 Tablespoons cold whole milk

Filling:2 Cups pecan pieces1 Cup dark corn syrup¼ Cup maple syrup½ Cup sugar3 large eggs½ stick (4 Tablespoons) unsalted butter, melted4 Tablespoons Maker’s Mark or Jack Daniel’s bourbon1 Teaspoon vanilla extract

1. MAKE THE PASTRY DOUGH: With your hands, 2 forks, or a pastry blender, combine all ingredients except the milk into a mixing bowl, until the butter and shortening form pea-sized pieces. Add the milk and mix until incorporated and a dough forms. Do not overmix. Divide the dough in half and wrap each half in plastic wrap. Let half the dough rest for an hour in the refrigerator. Freeze the other half or chill it in the refrigerator if you plan to bake a second pie in just a few days.

2. MAKE THE FILLING: In a large bowl, whisk all the ingredients together until well combined. Set aside.

3. ASSEMBLE THE PIE: Preheat the oven to 325°F. Roll out the chilled dough on a lightly floured surface to form a circle that is 10 inches in diameter, ¼ inch thick. Line a 9-inch pie pan with the rolled-out dough. Crimp the edges of the crust.

4. Pour the filling into the pie shell.

5. Bake at 325°F for 30 minutes, then turn down the oven to 300°F. Bake for another 25 minutes, until the pie sets.

6. Cool and serve

Ironic TonicRE-THINKING THE GIN TONIC

Whilst we’re firm believers in the term “If it ain’t broke don’t fix it” sometimes it’s worth taking a fresh look at a true classic.

Look at something as though you’re a sparkling new-born, discovering something joyous for the first time! That’s exactly what we decided to do when we heard a rumor in drink circles. The concept involves dispensing with the trusty slice of lemon or lime in a gin and tonic and using, instead, wait for it, a slice of mango!

Apparently it all makes perfect sense, scientifically! We always take science seriously when it comes to a cocktail, no?

It seems that drinks scientist Mr. Bale, discovered that mango contains high levels of a compound called pinene.

Pinene mirrors flavours found in juniper [and we know that

juniper is the pivotal component of gin itself]. By combining the mango with gin a truly splendid taste sensation is created.

Having tried making a Mango Gin Tonic more than a few times now, we can share the following tips to roll one out at home in the tropics:

Add plenty of ice to a tall glass and into that add a slice of ripe mango [not overly ripe, but still firm].

Then pour in your favorite Gin [Gin Mare from Spain or Tanqueray Ten score well on our drinks trolley] in the proportion you prefer and top it with very cold Schweppes Tonic. Finish it with a dash of black pepper [yes, pepper] and there you go.
