Her favorite subjects in school are English, History and Economics. Laurie participates in the Choir, on the Washington DC Youth Tour Winners 2017 Emilie Hopkinson Blue Ridge HS Emilie enjoys photography, drawing, chess, reading, playing the violin or flute, learning martial arts and writing. Her extracurricular activities include Tae Kwon Do, Chess, Orchestra, National Honor Society, Art, Photography, Spanish, Future Business Leaders of America and unicycling. With all of that, Emilie still finds time to participate as a volunteer at the Love Kitchen and at the school. She participates with a group working on a greenhouse from which all proceeds will go to the Love Kitchen. Emilie has received 4.0 grade point average awards, placed in the top five at chess tournaments, has a black belt in Tae Kwon Do and has held many leadership positions in clubs she participates in. Her favorite subjects are Math, Science, English, Orchestra and Spanish and she plans to become a neurosurgeon because of her fascination with the brain. Jeremy Batson Mogollan HS Jeremy enjoys participating on the Robotics team, playing the trumpet and singing in the school and his church choir. He is involved in the National Honor Society, is President of the Robotics Club, has been to the Robotics Championship and participates in the Boy Scouts of America. Jeremy is very active in church and boy scouting service projects, has been the senior patrol leader and is currently serving as crew captain in his Boy Scout group. His favorite subjects in school are Math and Science. Jeremy has earned the President’s Award for Academic Excellence and strives to maintain straight A’s in all of his classes. Future plans for Jeremy include attending Arizona State University Polytechnic Campus for a career as a Robotics Engineer. Mylea McBride Round Valley HS Mylea enjoys showing livestock, rodeo, lifting weights and reading. Her favorite subjects in school are Agriculture, Biology, English, American History and Chemistry. Mylea’s civic involvement activities include working as a volunteer at the Living Hope Women’s Center, with the Round Valley Boy’s and Girl’s Club Gymnastics and Special Olympics. Mylea is the social chair for Teens Opposed to Harmful Choices, participates on the Varsity Softball Team, and is a member of Future Farmers of America and the 4-H President. She has received awards including Academic Excellence in English and Spanish 2 and First Place District Livestock Evaluator. Mylea’s goal is attend the University of Arizona and pursue a Master’s Degree in Agricultural Education. Members in good standing with NEC have the right to seek election to the Board of Directors. While serving on a board is certainly not for everyone, it is healthy for any cooperative to have an engaged membership with a portion of the members interested in serving in a leadership role.

At NEC, we are governed by a board of 8 (eight) directors, elected by the membership, that provides strategic direction and guidance to ensure we continue to serve the interests of you, the member-owner.

While democracy itself is an imperfect system, it remains the best way to ensure the maximum number of voices is heard. Democracy cannot and should not be taken for granted.

NEC’s mission to provide safe, reliable and cost effective electric service has been achieved. Now, as the electric utility industry enters an era of change, when people have more choices for the way they receive electric service, it is critically important that we hear your voices. Remember to close your fireplace damper (unless a fire is burning). Keeping the damper open is like leaving a window wide open during the winter, allowing warm air to escape through the chimney.

If your dishwasher does not have an automatic air-dry switch, turn off the dishwasher after the final rinse and prop the door open slightly so the dishes will dry faster. Recipes1. Bring 2 cups lightly salted water to a boil in a covered 2 quart saucepan.

Add the rice, stir, and reduce heat to low. Cover the pan and simmer until rice is tender.

2. Meanwhile, melt the butter in a 4 1/2 quart Dutch oven or soup pot over medium heat. Finely chop the onion and add them to the pot. Cut the chicken into bite sized pieces and add to the pot. Raise heat to medium-high. Cook, stirring, until the chicken is almost cooked through, about 4 minutes.

3. Meanwhile, cut the sausage link in half lengthwise. Slice both halves into roughly 1/4 inch pieces. Add the sausage to the pot and continue to cook, stirring from time to time, while you stem, seed, and cut the bell pepper into bite-sized pieces. Add the broth to the pot, raise the heat to high, and add the bell pepper. Cover the pot and bring the soup to a boil. Add the Cajun seasoning. Re-cover the pot, reduce the heat to medium, and cook at a moderate boil until the bell pepper is tender about 3 minutes.

4. In a small jar, mix the flour with 3 tablespoons of cold water until there is no lumps. Gradually add the flour mixture to the soup stirring constantly until thick. Serve with rice.

Bacon Tomato Pepperoni Pasta Salad1 c mayonaise2 Tbsp lemon juice 2 tsp parsley 1 Tbsp basil (fresh is best but dried works well too) 1 tsp crushed red chili peppers 1 Tbsp sugar 1 chicken bouillon cube (ground up) 10-12 slice bacon, cooked and chopped

4 stalk(s) green onions, sliced (op-tional)4 oz pepperoni slices, cut in halves and quarters 2 oz Parmesan cheese 1 roma tomato, sliced into pieces 1 pkg bow tie or rotini pasta, cooked, drained and rinsed in cold water 1 can artichoke hearts (optional) chopped parsley

1. Combine mayo, lemon juice, sugar, bouillon, parsley, basil and crushed red pepper in small bowl. Set aside.

2. In large bowl combine bacon, green onions, pepperoni slices, parmesan cheese, tomato and cooled pasta and artichoke hearts. Stir in the mayo sauce mixture until well mixed. Cover and refrigerate at least an hour to let season-ings and pasta mixture blend before serving.

3. Make it Greek, by sprinkling feta cheese and kalamata olive slices on top.

1. Preheat oven to 350 degrees. Stir together sugars in a large bowl.Add Flour and Nutmeg, whisking until blended. Cut butter into flour Mixture with a pastry blender or fork until crumbly. Remove and reserve, 1/2 cup crumb mixture.

2. Combine buttermilk, vanilla, baking powder, baking soda, and salt; whisk in egg. Pour over crumb mixture in large bowl; stir with a fork until dry ingredients are moistened.

3. Spoon batter evenly into a greased jumbo muffin pan, filling 4 muffin cups with batter. Fill 2 Empty cups halfway with water. Sprinkle reserved crumb mixture evenly over batter, pressing Lightly into batter. Bake at 350 degrees for 28 to 30 minutes or until a wooden pick inserted inCenter comes out clean. Cool in pan on a wire rack 10 minutes; remove cakes from pan, and Let cool completely on wire rack. (157339)
