.Good Filling to Spread on Crisp Toast-. ed Accessories.

Toasted Crackers, spread with a n1ixture made from hard-boiled eggs are nice to serve with oyster or clam coclrtall, ot· with a plain salad. Toast square or oblong crackers, and while warm spread lightly with butter. For the filling take five hard-boiled eggs, one tablespoonful grated cheese, half a teaspoonful lll'epared mustard, table· spoonful butter, salt and pepper, one tablespoonful sugar, a little celery salt, four tablespoonfuls vinegar, one· thit·d of a cup of cream: Mix the eggs into a paste with an the ingredients except the vinegar and cream. Into the cream stir two well-beaten eggs: let vinegar come to a boil in a granite; 1Jan; stir in the cream and eggs and then paste; coolr until it thicltens. '\Vhen cool, if too thick, add cream and vinegar, if too thin add fine cracker ·crumbs.

Take <l.own the curtains, shake and brush well, getting ·out all the dust from the gathers, fiutini, etc. Prepare a quantity of· good wheat bran, put it into a large pan and place before a . fire to d;ry, stirring with the bands fre· quently. · Afterward, if the curtains are of sillr, mix with the bran an ounce or more of finely powdered !ndi· go blue. Provide several pieces of clean flannel. Spread the curtains, a piece at. a time, on the to.ble and sprlnltle with b;rari, a handful at a time. Next, with a t.it of flannel, rub the bran round and round on the ma· terial, letting it .rest before brushing off. As you proc..ed talte ciean bran and flannel, and the cu~tains wlll be· come much brightened and improved in appearance, says Woman's Life.

Remove the asparagus gently with a wooden ladle; put i-nto the jars, the tips, in orderly array, uppermost; fill with boil· ing salt water and seal.

Gravy for Roasts and Fowls, , Put the roasts in the pan free from

seasoning and flour. When sufficient. ly cooked pour off every particle o1 grease from the pan, and tub two tablespoons of fiour into the brown substance jeft in bottom of pan; pour over this one pint of cold water; put over the fi1;e and cook until it thick­ens, stirring constantly to prevent lumping. Season with salt and pepper and strain into gravy boat. For cliick· en gravy a half cup of·rich cream is a great addition. Gravies made thus are free from grease, which is so harmful to delicate stomll.chs.

Egg Salad Dressing.· One egg well beaten~ add table·

spoon of flour, teaspoon of. prepared mustard; one-half cup of sugar, tea­spoon of salt, and pepper, if desired. Beat all thoroUghly, then add .one cup of cider vinegar. Boil-stir constant· Jy, or cook in double boiler-till thick atld add heaping tablespoon. of butter:

The new Boatd of Trustees of the New York Life Insurance' Company, chosen by the policyholders. under the Armstrong laws, has taken charge of the company's affairs ·and has begun the worlt of reorganization.

In choosing the principal officers c~ the company, the Board lias adhered to the idea that a life insurance com­pany should be managed by life in· surance men. The new president is Darwin P. Kingsley, a college bred man of goocl New England stoclc, who bas been in the company's service in a variety of capacities for a period of nearly twenty years. In the parlance of life insurance, he "began with the rate book" and has advanced ste1> by step up to his present position.

The first vice president of the com­pany is 'l'homas A. Buclmer, who has served the company for more than a quarter of a. cen~ury,-indeed has. never had any other business connec­tion.

Associated with these men are others long trained in the company's ~ervice, each an expert in his own de· partment of worlt. ·wm. ··E. Illgersoll, who has for many years had charge of the company's great business in Europe, is one of the second vice pres· !dents, and will continue at the head of the company's office in Paris.

Rufus W. Weeks, who has been in the company's service for nearly forty years, ranlts next to Mr. Bucltner as vice president, and continuous as chief actuary of the company.

The policyholders have expressed !:heir belief in this company in no un­certain terms. The upheaval in llfe in· surance within the last two years has resulted in a great deal of misunder­standing and policyholders, alarmed on matters wltlch were not very clear to them, have been disposed to give up their contracts at a heavy sacrifice. This has not been true in the New York Life to any great ettent. The com· pany bad $21000,000,000 insurance on lts boolts when the life insurance in· vestigation began, and while the laws of the State of New York now do not permit any company to write over U50,000,000 a year (which is about one-half the New York Life formerly did), the company's outstanding busi· ness still exceeds $2,000,000,000. •

members of the executive and sub­committees having in charge the mat­ter or preparing for the inauguration of Captain George Curry as governor of New Mexico upon his arrival in Santa Fe in July,

Plans for the inaugural ceremonies were informally discussed. It was decided that the chah·men of the sev­eral sub·committees should get their committees together and outline their part of the work so as to be in a position to report progress at the next general meeting to be called by the chairman of the executive com­mittee.

Messrs. West and Holt, owners of the "Three Bar Ranch" in souther~ Colorado, left Albuquerque the first of the weelt with a number of cow boys in charge of 2,000 head of cattle which they are driving overland 'to Colorado for pasturing. The cattle were t·ounded up near Deming. The party' expects to mal;:e fifteen miles a day and at this mte will reach its destination in about thirty days, bat· ring unusual delays and accidents.

At a public meeting held at Las Vegas it was decided to at once cant· mence experiments in the raising of sugar beets in order'to settle tlie ques­tion in regard to securing a sugar beet factory for the Meadow City. Fifty acres will at once be planted in sugar beets and when the cl'op matures the beets will be shipped to the factory of the Holly Sugar Company at Swink, Colorado, where they will be ground up and tested by the "factory so as to determine the quality of the beets. Moyer, vs. Lizzie Dailey and Albert G. Adams, to recover $2,000 for the non-accounting of certain promissory notes,

Territory Wins Cases, Tierra Amarilla, N. M.-In the large

number of tax suits brought by. Dis· trict Attorney Alexander Read against delinquent property owners in Rio Ar· riba county, which came up for li'ear• ing at this term of court, judgment was rendered in favor of the territory in a majority of the cases, while many were dismissed at the instance of the district attorney as the taxes sued for had already been paid over to the county. The remainder of the cases 'Were continued until next term in or· der that service might be had 1>n the defendants. The amount of tax judg· ments rendered 'Will amount to several thousands of dollars.

By "pitching out" is meant a ball thrown ou.t of reach of the batter, so'

.that the catcher may have a clear and quick throw to second if a runner on first starts to steal.

If the pitclier is wise he generally .has an idea when the runner is going ,to attempt a steal. He figures what his club could do in case a runner was :on first, and acts accordingly. The catcher is also watching, and when he thinks the runner is to start he sig­nals for a "pitch out."

The pitcher then throws the ball w.ide of tho plate and to the catcher's right, so ·that he can make a quick and accurate throw. Many runners are cut down in this way,

1 '· If the play fails and the runner :doesn't start, it Is tried again. Fre· quently pitchers get three balls on ·them in this way, and then cann'ot get the next one over, and the batter wallts. Such a failure is often er· roneously interpreted by the spectator as meaning that the pitcher purposely gave the batter a base on balls. A clever base runner can often aid the batter in getting to first on balls by making the pitcher believe the thing to do Is to pitch out.

The fact that foul balls are so fre• quently hit when a runner starts to steal second . has prompted several fans to make .. inquiry as to whether for tills there is a scientific reason. rrhere is. Often you see a runner start for second, and just as he is about to reach the bag safely the bat· ter will foul off the ball and the run• ner has to return to first. All around tM stand you hear grunts of dlsap• proval lilre this: "Chump! What did he want to hit at It for? He had the base stolen sure!" You all have heard it.

Baseball science and experience teach that a batter should always hit at the ball when a steal of second is attempted, and, moreover, he should try to hit the ball. If he misses thEJ base runner wlll naturall have a bet• ter opportunity of being safe, as the swing wlll confuse the catcher. But the main object is for the batter to hit the ball,

When a runner starts for second either the second baseman or the shortstop is going to cover the bag, and the· other may talte a chance on backing him up. This wlll leave twa positloos practically uncovered, or rather, there will be two holes in the infield, and if the batter can pokl!! a ball through so much the better. In• stead of a stolen base the former base runner will have gone to third and the batter will be on first. ·

If the batter does not succeed in hitting the ball the runner wm .have that much better chance of getting the base. So you see the plan works to advantage both way.s. If the batter waited, the runner might be thrown out, and neither would be any better o:tr.

'J'o the as­tonishment of everybody, the umpire called tt a "strike," and Kane threw the ball over to first, and Wiltse was out. That is the first time on 'record th;.;.t a third baseman ever got an as• ·stst on a strike out.
