    1.2.3 C ph Mt (Coffe Excelsa).

    Ngun gc x Ubagui Chari x bin h SAT sa mc Sahara gi l C ph Sari. Hm lng cafein trong ht l 1,02% - 1,15%.

    1.3.1 Cu to qu c ph.

    Qu c ph gm nhng thnh phn sau (i t v vo nhn)

    Lp v qu: l lp v ngoi cng, mm mng, c mu xanh hoc . V c ph ch mm hn c ph vi v c ph mt.

    Lp v tht : nm di lp v qu. V tht c ph ch mm, cha nhiu cht ngt, d xay xt hn. V tht ca ph mt cng v dy hn.

    Lp v tru : cng, nhiu cht x bao bc xung quanh nhn. V tru c ph ch mng v d p v hn v tru ca c ph mt v c ph vi.

    1.3.3 Thnh phn ha hc ca lp nht ( theo % cht kh)

    Pha di lp v l lp nht, gm nhng t bo mm khng c cafein, tanin, c nhiu ng v pectin. pH ca lp nht ty theo chn ca qu, thng t 5,6 5,7 c i khi 6,4. Trong lp nht c bit c men pectaza phn gii pectin trong qu trnh ln men.

    2.1 KIM TRA NGUYN LIU. - Nhng yu cu c bn ca nguyn liu cn ch bin thc phm c m bo

    cht lng thc phm nh sau: Nguyn liu khng c mi v khc nh hng n tnh cm quan ca thc

    phm. Nguyn liu khng c du hiu bin i cht lng nh hng cht lng

    ngi tiu dng.

    Nguyn liu khng cha cht c hi cho ngi tiu dng. Nguyn liu phi c thnh phn ha hc l thuc tnh ca chng v thnh phn

    dinh dng ph hp. Nguyn liu m bo nhu cu v sinh gy nh hng xu n sc khe ngi

    tiu dng. - V vy, nguyn liu thc phm ng vai tr rt ln trong vic m bo cht lng

    2.1.2.1 Nguyn tc: tp cht c xc nh bng cch quan st v chn ( khng dng dng c quang hc).

    2.1.2.2 Tin hnh th: Cn 100g c ph bt dn u trn mt phng nhn, quan st, nht tp cht ri cn.

    2.1.2.3 Tnh ton kt qu: T l tp cht (Y) c tnh bng phn trm theo cng thc sau:

    2.1.3 Kim tra m ca c ph nhn. (theo TCVN 6537 99)

    2.1.3.1 Nguyn tc:

    Sy phn mu th nhit 1300C 20C,di p sut kh quyn, lm hai giai on v c thi gian ngh gia nhm phn chia ng u li m trong ht.

    Kt qu thu c nh vy sau khi hiu chnh c coi nh l ph hp vi quy nh ca phng php chun TCVN 6537 99.

    2.1.3.2 Thit b v dng c.

    - L t bng in nhit c nh c thng gi hu hiu v c th iu chnh c sao cho nhit khng kh v nhit ca cc ngn ng mu th l 1300C +/- 20C vng ln cn mu th. L c kh nng t nng khi bt l nhit 1300C, c th t li nhit ny trong thi gian di 45 pht (tt nht l di 30 pht) sau khi cho lng mu ti a vo c th sy kh cng mt lc.

    2.1.3.3 Cch tin hnh.

    - Cn a c np y su kh chnh xc n 0,002g. Ly khong 5g c ph nhn t mu th nghim theo qui nh trong TCVN 6539 90. Dn u phn mu th ny thnh mt lp n cc ht trn y a. Nu phn mu th cha tp cht nng (inh, , mnh g vn), th b phn mu th ny v ly phn mu th chnh xc n 0,002g.

    Giai on th nht trong l: np a trong l, iu chnh nhit 1300C 20C, t a ng phn mu th (b) ln np. Sau thi gian 6gi +15 pht ly a ra, y np li v vo bnh ht m. Sau khi lm ngui n nhit mi trng (t 30 pht n 40 pht sau khi t vo bnh ht m), cn a cn y kn chnh xc n 0,002g. sau khi cn, t li a trong t ht m t nht l 15gi.

    Giai on th hai trong l: t li a vo l nhit 1300C 200C trong 4 gi +15 pht, trong cng cc iu kin nh qui nh trong giai on th nht trong l. Ly ra v ngui n nhit mi trng trong bnh ht m v cn li.

    - S ln xc nh : Tin hnh t nht l hai ln xc nh trn cng mu th.

    2.1.3.4 Biu th kt qu.

    - Phng php tnh v cng thc.

    Giai on th nht trong l : hao ht khi lng trong qu trnh sy kh ln u trong l, P1, tnh bng gam trn 100g mu th ban u, c tnh theo cng thc.

    Trong :

    m0 khi lng ban u ca phn th. Tnh bng gam.

    m1 khi lng ca phn th sau giai on sy th nht 6 gi trong l, tnh bng gam.

    Giai on th hai trong l : hao ht khi lng trong giai on sy (6 gi + 4 gi) trong l, P2, tnh bng gam trn 100g mu ban u theo cng thc :

    2.1.4.1 Nguyn tc : t v nung mu th, sau xc nh phn cn li.

    2.1.4.2 Dng c v ha cht: - Chn nung bng s c ng knh ming trn l 5 6 cm cao 2cm. - L nung iu khin c nhit , c nhit t 500 n 10000C. - Ong ong 10 ml. - Giy lc mn khng tro. - Bnh ht m. - T sy. - Bp in c li Aximng. - Cn phn tch c chnh xc 0,1 mg. - Axit clohydric, nng 10%. - Bc nitral. - Nc ct. - Phu thy tinh.

    2.1.4.3 Tin hnh th. Cn 5g c ph mu cho vo chn s bit khi lng, dn u mu trn y chn

    v t nh trn bp in cho n khi mu chy ht. Chuyn chn s vo t trong l nung nhit 550 n 6000C trong 2 gi 30 pht, n khi mu c tro ha hon ton, c mu trng hoc mu xm.     3.3.2 Tin hnh th.

    4.1 KIM TRA PH GIA THC PHM.

    Kim tra ph gia thc phm l cng vic rt quan trng, c ch ti theo : quy nh danh mc cc cht ph gia c php s dng trong thc phm ban hnh km theo quyt nh 3742/2001/Q-BYT ngy 31/8/2001 ca b y t.

    4.2 PHA TRN, NG GI, NHP KHO BO QUN.

    - Pha trn : mc ch cho c ph thnh phm c u v ng tiu chun ca nh nc quy nh. Khi pha trn cn ch v ngoi hnh, hng v, mu sc v kch thc ph hp vi tiu chun quy nh. C th pha trn bng my mc hoc th cng.

    - ng gi : vic ng gi cng phi dng theo tiu chun quy nh : TCVN 1297 72. Bao bng Polythylen trong hoc ph mt lp kim loi mng & bao gai ngoi. Bao b khng c mi l : thm hoc hi. Cng vic khu bao bng my hoc bng tay phi ng theo TCVN 1297 72. Vic ghi nhn hiu cng vy.

    - Nhp kho bo qun : C ph sau khi ng gi cn nhp kho ngay bo qun ng theo iu kin quy nh ca quy trnh. Trnh c ph ht m hng cht lng sn phm.

    4.3 KIM TRA THIT B V V SINH. - V sinh trong sn xut l 1 tiu chun ln cn t c: my mc & thit b cn

    sch s, cc phng tin phi l thp khng r v tiu chun v sinh trong sn xut phi nghim ngt. Chng hn nh vic ng gi sn phm phi thc hin trong bung khng kh c Azt, carbonic bt ha tan khi b oxy ha v nm mc.
