Independent franchisee puts heavyemphasis on customer service

GENEVA – At first glance,the phone repair area of Gene-va’s uBreakiFix store is akinto a dentist’s work space. Ona recent Thursday, curly bluewires descended over three ofthe store’s repair techniciansat work. They were hunchedover tiny gadgets and tools,occasionally using magnifyingglasses to repair the minus-cule and delicate details with-in different electronic devices.

Store manager and repairtechnician Brian Good ac-knowledged some of the sil-ver tools hanging above himwere, in fact, originally madefor dentists. Repair technicianShirlee Morlan noted repairwork is done through the pro-cess of trial and error as newtypes of technology come out.

The store uBreakiFix re-pairs electronics, includingsmartphones, tablets, gameconsoles, music-playing devic-es, computers and laptops. JeffSchwartz, owner of the Genevastore, is the first franchise own-er who isn’t a part of uBreaki-Fix’s internal corporate opera-tion, which started in 1999.

“Two years in a row, mykids broke their phone screens,and there was a uBreakiFix inNaperville that I heard about,”Schwartz said. “I was lookingfor something new to do. I wastired of the corporate lifestyle,so I decided to do something onmy own and [the store] lookedlike a perfect fit.”

After previous jobs at HPand Allstate, Schwartz wasprepared to meld his corporatebackground with the newly ac-quired franchising duties. Thestore opened in the GenevaCommons in October.

Eight months later, thestore’s staff expanded from

two employees to five after re-ceiving larger amounts of cus-tomers. Schwartz said they’vealso accumulated repeat cus-tomers.

“[We’ll] have a half-hourwhere nobody comes in, andthen all of a sudden [we’ve] gotthree or four people coming inat once,” Morlan said.

The store provides a pricerange of $50 to $400 for repairs,in addition to a free diagno-sis customers receive beforedeciding whether they wanttheir device repaired. A 90-daywarranty also is offered.

Maintaining an environ-ment of friendly customer ser-vice is important to Schwartzand his employees, who caterto ages ranging from mid-dle-schoolers to senior citi-zens.

“Customers are our mainfocus, and we only hire peo-ple who are really customerfriendly,” Schwartz said. “Cus-tomer service skills can’t re-ally be taught, so personalityis key and after that, we canteach [employees] the techni-cal information.”

Employees need to balanceconsistent attention to cus-tomer service with the repair

work side of their job.“For most jobs, it’s not dif-

ficult to stop in the middle andgo wait on a customer,” Mor-lan said.

Schwartz occasionally doesrepairs but mainly focuses onbringing in business. He saidhis newest customer is St.Charles School District 303’siPad repairs.

The store’s main entry areais simple – with chairs, a TVand a play area for kids. Backin the repair work space aremultiple buckets of electronicparts lining the walls.

Good said dust, water dam-age and lead are the hardestthings to work around duringrepairs.

“It takes an incredibleamount of patience and de-sire to wonder through,” Goodsaid. “We signed up for that.”

Looking forward, Schwartzsaid he’s thinking of openingup another franchise or ex-panding the one he currentlyowns.

“Overall, it’s a very positiveexperience,” Schwartz said. “Ican genuinely say I love com-ing to work every day, whichis something I never used tosay.”

Because cataracts are the world’s leading cause

of blindness and affect nearly 22 million Americans

aged 40 years and older, there is a great deal of

curiosity as to why and how they form. The most

recent research on the matter shows that one of the

crystallin proteins in the eye lens may be primarily

responsible. Of the three water-soluble proteins

found in the eye, two help form the structure of

the lens. The third crystallin protein helps keep the

other two from clumping together and forming a

cataract (clouding of the eye lens). According

to researchers, there is a finite number of these

“helper” proteins, and when they are gone, the lens

is more vulnerable to cataract formation.

P.S. The information about cataract formation

discussed above may someday lead to new

preventive treatments.

Geneva OKs contract tobuild third parking tier

GENEVA – Geneva alder-men approved a constructionagreement July 7 for buildingthe third level of the ThirdStreet Commuter ParkingDeck, which will provide anadditional 180 parking spac-es.

First at a special commit-tee of the whole meeting, al-dermen unanimously recom-mended approval of a $4.48million construction agree-ment with Walsh Construc-tion Company of Chicago, thenthey took final action at theregularly scheduled city coun-cil meeting that followed.

Most of the cost is beingfunded by a grant from Metra,officials said.

“We have waited a long,

long, long time for this,” May-or Kevin Burns said.

“We should acknowledgeour good friend [state] Rep.Tim Schmitz [R-Batavia], ourgood friend former mayor DonDeWitte of St. Charles whoserved on the RTA board andothers helped us, lobbied forthis,” Burns said. “I would, ofcourse, be remiss if I didn’talso recognize our city admin-istrator, Mary McKittrick,who spent countless hours onthe phone and sending emailsasking, ‘What the heck is go-ing on?’”

The city has been workingwith Metra, the RTA and Illi-nois Department of Transpor-tation to secure grant fundingfor the third level of the exist-ing parking deck, which has360 spaces, officials said.

The grant agreement was

first approved by the citycouncil in June 2011. Walshwas the only bid received Jan.14 for the project, officialssaid.

Metra, the RTA and IDOTalso approved Walsh for theproject, according to the biddocuments.

The project’s funding hasbeen in the city’s budget forfour years, officials said.

City administrators saidthey will work to get tem-porary parking for parkingdeck commuters, PACE shut-tle service from a temporarylot at First Baptist Churchon South Street. Officialssaid they also would workon logistics related to theconstruction, as well as com-municating with commuters,downtown businesses, visi-

tors and residents.

GENEVA – Drew Freedlund,an 8-year-old Batavia resident,emerged as the winner June28 in the Geneva All AmericanSoap Box Derby event in down-town Geneva. Stan Iglehart, therace’s organizer, said Freed-lund emerged from a field of 14racers to prevail.

The victory includes a tripto Akron, Ohio, for the worldchampionship Saturday, July26. Freedlund will competethere against more than 450

others in the event. The June28 event was in the local stockdivision.

This is the second year thesoap box race has taken placein Geneva. This past year,Freedlund competed and fin-ished fourth and also won thesportsmanship award, accord-ing to a release.

Also at the recent event,Matthew Ostrowski earnedthe sportsman award. GraceMeshenky was named themost knowledgeable driver.Alex Svoboda was the rookieof the year. And Gianluca Tra-

versa was the runner-up.Iglehart said plans call for a

third year of competition.“We do definitely plan on do-

ing it again,” he said. “I thoughtthe race went really well.”

Iglehart said there were10 new competitors this year,which he thought was a posi-tive. Freedlund was amongthose who took part in thispast year’s race, and Iglehartsaid Freedlund went undefeat-ed throughout the entire day.Iglehart said the race winnerparticipated in 16 events the

past year.

It’s hard to believe balletwasn’t always easy for KatieBehrens, the coordinator ofthe Geneva Park District’sSunset Dance Academy.

Behrens actually waskicked out of her first dancelesson at age 3 because shewould rather roll around onthe floor than perform pliesand pirouettes. It wasn’t untilsix years later she was rein-troduced to dance. This time,she fell in love.

Under the instruction ofprofessional dancers, she soonwas performing alongsidecollege students in NorthernIllinois University’s “Nut-cracker” party scene.

When her parents pur-chased DanceScape studioafter its owner had passedaway, dance became Beh-rens’s life. She lived at thestudio, dancing 15 hours aweek. Eventually, she en-rolled in Chicago Academy forthe Arts, commuting by train

for morning academics and

afternoon dance classes. After

high school, she completed a

Bachelor of Arts in Dance at

NIU, with a focus in ballet and

modern techniques. While she

had been teaching at her par-

ents’ studio since the age of 15,

Behrens decided to search for

new opportunities after gradu-

ation in 2002.

“I no longer wanted to

be the owners’ daughter,”

Behrens said, “It was time

to spread my wings. [Geneva

Park District] called me back,

and here I am.”

“Miss Katie,” her days beginearly with Tiny Toes andMommy & Me classes and endin the evening with classes forolder dancers, some of whichshe has known since theywere 2 ½ years old.

“Kids come in at differentlevels with varying sensoryand motor skills, so to seetheir progression and how thedevelop, that’s really reward-ing,” Behrens said. “Childrenlearn in a variety of ways, anddance incorporates all of them– visual, kinesthetic, verbal,auditory.”

“I see our oldest girlslearning responsibility, timemanagement and account-ability,” Behrens said. “Theylearn how to take constructivecriticism. Audition skills helpthem later in life with first im-pressions and job interviews.”

The recreational programputs children first, with afford-able, syllabus-based classes forall ages and skill levels in bal-

let, hip-hop, jazz, tap, musicaltheater, lyrical and more. Itsgoal is to foster a love of dancewith the hopes participantswill continue to dance. ManySunset dancers move on tomake high school dance teamsand win state titles.

Behrens also has furtherdeveloped the Sunset DanceCompany program, whichallows dedicated dancers theopportunity to study dance ata higher level of expectation.This “no-cut” company learnschallenging choreography toperform at local communityevents and dance competi-tions.

“Competitions aren’tabout the big shiny trophiesbut about the experience ofperforming for hundreds ona stage under professionallighting,” Behrens said. “Thecompany girls work as a team,and they become a family.”

Sunset Dance Company2014-15 season begins in the

fall with auditions Sunday,Aug. 17. The “no-cut” audi-tions are open to dancers ofall experience levels, ages 5and older. Animal shelter setfor major renovation

ST. CHARLES TOWNSHIP– Step into the Anderson An-imal Shelter in St. CharlesTownship, and the 40-year-oldbuilding virtually rocks fromall the barking.

Volunteers and staff June 27were introducing cats and dogsto families for possible adop-tion in a small, crowded foyerat the facility near South Elgin.The barking comes thunderingfrom a hallway where the dogsare in kennels. Outside, theparking area was full, and vis-itors were putting their cars onthe side of the driveway.

But new times are com-ing to the shelter, said exec-utive director Beth Drake,as a $660,000 renovation proj-ect will begin this fall. It willtransform the facility, so itwill meet new models of ani-mal welfare care, as well asexpand the parking area and

update its aging plumbing.The shelter is looking for as

many as 100 volunteer familieswilling to foster 130 cats and40 dogs for one to two monthsduring the renovation, Drakesaid. Food and veterinary care

Some animals will bemoved to a satellite location– still to be determined – soadoptions can continue whilethe shelter is closed for reno-vation, she said.

“The transition to a shel-ter environment can be verystressful for dogs and for cats,”Drake said. “Oftentimes, it canbe very helpful to engage fos-ter homes and get the animalsout of our facility so that theycan learn manners and workon potty training and thosekinds of things. Regardless ofhow wonderful a shelter is, itis an inherently stressful placeto be.”

The caging areas need toupdated to be in line with re-search and advances in ani-mal welfare and housing shesaid. For example, cats cur-rently are housed in small,stainless-steel cages and dogsin chain-link kennels – nei-ther is ideal for them, Drakesaid.

Instead, adoptable catswould be housed with othercats in colonies or large “kit-ty condos” with perching andsleeping ledges, while adopt-able dogs would be housed insmall rooms instead of in ken-nels, she said.

After Drake became direc-tor on May 14, she said theyimplemented a variety of ac-tivities – such as dog playgroups – to increase the adapt-ability of their shelter animalsin advance of its redesign.Dogs who play well with eachother are allowed to interactwith each other under supervi-

sion, allowing them to expendenergy and have positive so-cialization.

“Housing dogs in kennelsin shelter away from otherdogs – near other dogs but notallowing them to interact withother dogs – is very detrimen-tal to the health of these dogs,”Drake said.

“Over time, they lose thatability to read each other’sbehavior, and it’s extremelystressful,” Drake said. “Andif we send them home with afamily, they’ve got these dogsthat have no idea how to in-teract with other dogs, andoftentimes they can becomeaggressive and display reallyinappropriate behaviors.”

Playgroups, implementedjust within the past month,have made a difference for theanimals, she said.

“But in the end, they still goback into inappropriate cages,and we have to address thisproblem,” Drake said.

Marco and Patricia Mus-carello, on behalf of the Ivarand Ruth Animal Anti-Cruel-ty foundation, have provided$200,000 toward the renovationproject and another $200,000for another area of work,Drake said.

Although the renovationwill proceed starting Sept. 1,the shelter still needs to raiseat least $400,000 to cover thecost, Drake said.

‘Unknown Soldier’ gettingnew home in Pingree Grove

“The Unknown Soldier”is leaving Custom Furniturein St. Charles because of thestore’s closing after 75 years.Wyman “Clint” Carey boughtthe wooden soldier and is mov-ing it to his barn in PingreeGrove.

The owners of Custom Fur-niture, Richard and CarolynPakan, are closing the store be-cause they said they have de-cided to retire. Carolyn Pakansaid she thinks the residentsof St. Charles will be “dev-astated” the wooden soldieris leaving. She said it was a“landmark” and people wouldstop in the middle of Route 25to take a picture of it.

Andrew Pakan, father ofRichard Pakan and originalowner of Custom Furniture,found fallen 100-year-old oaktrees on his property, saidstore manager John Pakan,son of Richard and Carolyn Pa-kan. In honor of the upcomingU.S. bicentennial, he decidedto craft a Revolutionary Warsoldier out of the wood, JohnPakan said. He completed thesoldier on July 3, 1976, just intime for the bicentennial. Hededicated the structure to un-known soldiers who died inthe Revolutionary War andwere never properly docu-mented, John Pakan said.

To complete the structure,Andrew Pakan needed to raisethe soldier’s head and place iton top of its body. Instead ofhiring a crane, he did it him-self using a rusted tractor,John Pakan said. The headof the soldier was placed on abucket on top of the tractor,and the tractor started wa-vering back and forth. “Mydad thought he was going todie,” said John Pakan. Thehead was so heavy it almostflipped over the whole tractor,he said.

The soldier is 18 feet high,and just its head weighs 650pounds, states the store’s web-site, www.customfurn.com.

Carey, former president ofPingree Grove, had driven bythe soldier many times, andhis wife, Brook, saw a news-paper article about the store

closing and the soldier need-ing a new home. Carey said hedidn’t want to see the soldiergo into decay. He runs smallbusinesses on his barn prop-erty in the Heritage District ofPingree Grove, so he thoughthis barn property on ReinkingRoad in Pingree Grove wouldbe a good new home for the sol-dier, he said.

According to Carolyn Pa-kan, Carey was one of severalpotential buyers of the soldier.She said she and her husbandare “thrilled” to sell it to Car-ey because they feel he willlovingly and responsibly takecare of the soldier, adding ittakes a lot of work to keep upand it has been repainted nu-merous times.

Carey said late this pastmonth he has some friendswho restore barns and workwith big pieces of timber, andthey will work on transport-ing the soldier. They will erectscaffolding around the woodensoldier and take it down pieceby piece, he said. The pieces

then will be driven in a truckto the destination, Carolyn Pa-kan said.

The transportation workwill start in the next couple ofweeks, Carey had said in lateJune.

Restoring the soldier willtake a lot of work, Carey said.Carey is thinking about set-ting up a kickstart campaignto help fund the restoration.The work involves not onlytaking the soldier apart pieceby piece but also rebuildingand re-carving some parts, hesaid. Carey has hired carpen-ters in the winter to make surethe structure is solid and willlast at least another 40 years,he said, adding the Pakans“know that it’ll be well takencare of.”

Carey plans to unveil thewooden soldier to the PingreeGrove community next springwhen it is restored.

“We’re going to be real-ly proud to give it our newhome,” Carey said. “It will be-

come part of this town.”

State Sen. Jim Oberweis,R-Sugar Grove, Republicannominee for U.S. Senate, re-leased a state-ment July 1c h a l l e n g i n gi n c u m b e n tU.S. Sen. DickDurbin to sev-en statewidedebates.

The debateswould be cen-tered around job creation,the Internal Revenue Servicescandal and campaign mon-ey donated by a firm chargedwith sexual harassment, ac-cording to a news release.

Oberweis said Durbin is a“career politician” who doesnot understand how to createjobs because he does not have

private sectorexperience.

“I bel ieveour country isbetter servedwhen we havecitizen legis-lators ratherthan career leg-islators,” Ober-weis said.

He also said Durbin’s“failed policies” have “severe-ly hurt” the country. Oberweissaid a simpler tax code and de-creasing regulation, which is“piled on excessively,” wouldhelp businesses in Illinois.

Durbin spokesman RonHolmes said Durbin alwayshas debated challengers andboth sides would work towarda process for future debates.Holmes said Durbin contin-ually has fought for the mid-dle class and would support

an increase in the minimumwage. While Oberweis seesan increase in the minimumwage as a “job killer,” Holmessaid, Durbin supports an in-crease and views the decisionas an “issue of fairness.”

Holmes also called Ober-weis’s campaign shift from“ducking” debates to seekingconfrontation an “interestingdynamic.” He also pointed outOberweis’s campaign spokes-man, Dan Curry, worked forthe primary opponent, Repub-lican Doug Truax.

In the news release, Ober-weis requested three of theseven debates be held outsideof Chicago. One of the debateswould be co-hosted by a lib-eral organization and oneco-hosted by a conservativeorganization to allow for a di-verse set of questions, accord-

ing to the release.

GENEVA – After 23 yearsas a judge in Kane County, F.Keith Brown is ready to stepdown from the bench.

“ I t ’ s t i m efor some newchallenges,” the57-year-old said.

Brown’s re-tirement fromhis circuit judgepost with the16th JudicialCircuit was ef-fective July 5.

Days prior,on the morning of June 30, hehad two meetings and one de-cision left, as well as the taskof cleaning out his office inCourtroom 340 in the KaneCounty Courthouse.

The downtown Genevacourtroom, which he firsttoured as a sixth-grader, wasthe site of such milestones ashis swearing-in ceremony andhis first jury trial as a judge – acase involving a Class X felo-ny, Brown said.

Like the other judges ofCourtroom 340 before him,Brown has left his mark on thebench: His name is etched inthe drawer for the two blocksof time he served in the court-room.

“I always thought that waskind of cool,” he said.

Brown’s judicial careerstarted in July 1991 with anappointment to associate

judge, which he served as thepresiding judge of the trafficand family divisions. He alsopresided over such mattersas DUI, mental health, smallclaims, juveniles, paternity,domestic violence and childsupport matters.

He was elected as a circuitjudge in 1996.

Brown said he likely willbe remembered most as chiefjudge, a title he held from 2008to 2012. His accomplishmentsduring his time include es-tablishing the Kane CountyBranch Court in St. Charles,starting the process of upgrad-ing the court case managementsystem and creating ways toget more probation fees paid,he said.

Brown is leaving with plansto stay involved with the coun-ty’s Judicial/Public SafetyStrategic Planning and Tech-nology Commission, which hechairs, and the regret of leav-ing Kane County without anAfrican-American judge, hesaid.

Brown, an African-Ameri-can, said when he was a prac-ticing lawyer, he representeda client who didn’t feel he wasgetting a trial before his peers.The jury members, prosecu-tors, bailiffs and all but onesecurity member were white,he said.

“Minorities were appearingin court but had no other role,”Brown said.

Brown was the first Afri-can-American judge in the

16th Judicial Circuit, he said.He said he aimed to bringgreater diversity to the bench,which includes women andHispanics.

Brown’s final days as judgeincluded a retirement recep-tion, as well as drop-ins by fel-low judges.

“It’s been an emotionalweek for me,” he said beforehis last official day.

But he has accomplishedabout everything he wantedto accomplish as a judge, hasmaxed out his pension anddoesn’t want to be defined justas a judge, he said.

He is looking forward to do-ing mediation and arbitrationwork for Chicago-based ADRSystems, traveling, pursuingphilanthropic work and spend-ing time with his two grand-children, he said.

Brown’s retirement couldlead to one fewer judge in the16th Judicial Circuit becauseof a provision in the law whichlimited the 16th Circuit toKane County and moved Ken-dall and DeKalb to the 23rdJudicial Circuit, Kane Coun-ty Court Administrator DougNaughton said. He said the lawstates the first resident circuitjudge in Kane County to retirewould result in the transfer ofthat position to the 23rd Judi-cial Circuit.

Chief Judge Judith Braw-ka intends to ask the IllinoisSupreme Court to authorize anew associate judge, Naugh-

When chefs and leaders in the beer andwine industry aren’t slaving away in theirown kitchens, breweries or cellars, theytoo venture into the vast dining scene ofKane County, acquiring their own lists ofgastronomical haunts and culinary hotspots.

Niche executive chef Chris Ayukawaof St. Charles said the best way to discoverwhere to eat and drink in the area is byword of mouth.

“It’s probably easy for people who workin the restaurant industry because beingaround food and being around service ...everyone has a heightened sense of thosequalities,” said Ayukawa, who createdNiche’s new menu after taking the helmof the Geneva-based fine-dining establish-ment in April. “If you have friends whowork in the [restaurant] industry, listen tothem.”

The Berkshire Pork Cheek and GrilledLamb Chops rank among his favorite dish-es on the menu he created, but Ayukawa– a self-proclaimed addict of Geneva-basedJosef’s Elegante Meats & Deli sub sand-wiches – said when he gets a rare reprievefrom working in his own kitchen, he likesto take his wife to Bien Trucha in Geneva.

“Everything on [Bien Trucha’s] menuis amazing,” Ayukawa said. “They liketo play with flavors, and the drinks arealways clever.”

If Ayukawa isn’t grabbing a shot ofwhiskey and a cold PBR after his shift atNiche, he said – on occasion – he’ll end upwith his line cooks at The House Pub in St.Charles.

“All the cooks that work here aredefinitely beer geeks for sure ... [The HousePub] has an excellent selection of beer,great live music and a nice atmosphere;in general that suites people of our ilk,”Ayukawa said.

Another brew-savvy patron is Bataviaresident Tom Korder, the brewmaster ofPenrose Brewing Company. Korder hasa decade-worth of experience in the beer

industry, and when he isn’t sipping hisfavored Proto Gradus – a Belgian-inspiredsingle ale – at his Geneva taproom, he’susually at one of his favorite Genevarestaurants: A Toda Madre, Nobel Houseor Preservation Bread and Wine.

Nobel House – which uses Penrose’sProto Gradus in its Beer Mussels withFries – has a solid craft beer selection,knowledgeable staff and “they do a greatjob with their outlook on food with beer,”Korder said.

He cited Off Color Brewing’s Trou-blesome gose, a top-fermented beer thatoriginated in Goslar, Germany, as anotherfavorite craft beer, which is available atBinny’s and Nobel House.

Roberto Avila, owner and executivechef of Altiro Latin Fusion in Geneva,started his career in the restaurant indus-try as a dish washer, having since heldnearly every imaginable restaurant job inroughly 11-area eateries.

When he’s not indulging in his restau-rant’s Altiro tacos – pan-seared tilapiawith mango salsa, pico-cucumber, arugula,chipotle aioli and Altiro vinegreta – PrinceEdward Island Mussels (Al Mejillon) orAl Atun – a pink peppercorn, yellowfinahi tuna dish – Avila enjoys Italian farefrom St. Charles-based ZaZa’s Trattoria orFrancesca’s by the River for their food andservice.

“For me, it’s very important that [arestaurant] is taking care of you,” Avi-la said in regard to what makes him arestaurant repeat customer. “I don’t likewhen people rush me. ... The food is veryimportant, too.”

Also a fan of Altiro’s Latin-infused offer-ings and margaritas is Geneva-based ChezMoi Café and Catering executive chef andowner Beth Cull, a Le Cordon Bleu-trainedchef, who specializes in French fare, suchas freshly-made quiches and – one of her

favorite dishes – the traditionally-FrenchCroque Madame, a ham-and-cheese sand-wich topped with a fried egg.

A St. Charles resident and marriedmother of two, Cull said she generally likesto cook for her children at home but enjoyskeeping a low profile by dining in localpubs while out for dinner in the area.

“My husband and I are really low-keypeople; we’re not fancy so we tend to go tothe pubs,” Cull said, adding that she enjoysthe Gaelic Grilled Tilapia with white-winecaper sauce, roasted potatoes and sautéedspinach at McNally’s Traditional Irish Pubin St. Charles. “I just love that fish, and Ihaven’t been disappointed yet.”

Of vino connoisseurs and those justgetting their tastebuds wet in the world ofwine, Aurora-resident Mark Czubak, thesommelier and beverage manager of Atwa-ter’s at Herrington Inn and Spa in Geneva,said, “The best way to know if a wine listis good or not is to ask questions about it,and see if anyone there actually knows

anything about it.”Atwater’s and Niche are the places for

wine, Czubak said, adding that The TurfRoom in North Aurora and Wildwood inGeneva also have strong wine lists.

Currently, Czubak’s favorite Atwater’swine is the Schäfer-Fröhlich 2012 pinotnoir blanc de noir rosé from Nahe, Germa-ny. But, his go-to, everday, affordable wineis the Emile Beyer pinot blanc. The EmileBeyer comes from Czubak’s favorite regionfor wine – Alsace, France – which he said isa key element in maneuvering a wine list.

“Pay attention to where the wine isfrom,” Czubak said. “A lot of people payattention to the grape too much. What willreally allow you to explore more is to payattention to also where [the grape] is from.”

Though the places frequented by localchefs, a brewer and somm may differ, onething remained a constant between the fiveof them: Service, quality and consistencytops the list in creating an ideal diningexperience in Kane County.

Orion Stang did everything possi-ble to become a winemaker.

Stang, now the owner of DiléctaWines, began his journey throughwine at an early age. What startedwith family picnics in Paso Roblesand Santa Barbara County, California,eventually led him to Italy, then backhome to work domestically in high-end restaurants. Eventually, he wouldtake classes at the Culinary Instituteof America.

But it was a chance walk into a newwinery on Anderson Road in PasoRobles, California, that led to the op-portunity for which he’d long wanted.

Winemaker spotlightStang fell for Rhone Varietals.Syrah, grenache and mourvèdre

are the wines on which he humblyhoned his craft.

“When I walked into Booker, theyweren’t even open yet,” said Stangwhen he walked into the AndersonRoad winery. “They had an assistantwinemaker, so I started in the tastingroom. I started to show up on my daysoff. I was willing to work for free, anddid so. For six months I farmed, drove

the tractor and learned a lot. Thefarming and winemaking aspect wasreally beneficial. I absorbed every-thing I could.”

Gradually, Stang moved from thetasting room to the vineyard. He even-tually became a salaried employee asassistant winemaker before he set outon his own in 2011.

He produced his first vintageat Herman Story Wines, where hecontinued to develop his winemakingskills.

“At Booker I met a lot of goodcontacts,” Stang said. “Russell P. fromHerman Story was one of them. He hasan interesting winemaking style. He’snot very worried about sorting fruit.They are in and out. He has 200 plasticbins lined up and all these differentfermenters. How he keeps track ofeverything is amazing, it’s wild.

“At Booker there are 12 guyssorting. We’d pull every stem and leaf.

There would be bare grapes that looklike a blueberry. In my wines I willdo some sorting at the winery. But, Idon’t think it makes that big of a dif-ference. The stems add some complex-ity, actually.”

With just over 200 cases made froma ton of syrah from Caliza and AltaColina Vineyards and a ton of gren-ache from Live Oak Vineyards, Stangstarted small and began his endeavorto make small lots of wine with per-sonal attention.

said. “It is fruit forward but hasluscious tannins that really rounds itout.”

ST. CHARLES – Not eventhe Cubs’ 106-year World Se-ries championship droughtcan keep longtime friends andCubs fans Scott Comperdaand Frank Pavlek down. Forthem, a picture hanging inthe Avenue Two Barber Shopin downtown St. Charles saysit all.

Posted on the back wall ofPavlek’s barber station sitsa sketched picture of a manin a Chicago Cubs hat with abeard, seemingly looking forcomfort. Behind his sunkeneyes lies a story of 106 yearsworth of Cubs misery.

The picture’s story beganwhen Pavlek attended a partyabout 20 years ago and sketchartist V. “Jim” Roseili drewthe picture, giving it to Pav-

lek. Pavlek then posted thepicture to his work stationwall. Comperda, a customerand friend of Pavlek’s since1974, gave Pavlek an ideafor the picture, suggesting

he elongate the picture bysketching a copy of the beardand attaching a long strand ofthe “beard” (laminated paper)in which he inscribed everyyear the Cubs have not wonthe World Series since the lasttitle in 1908.

“It’s an illustration of thefutility of the Cubs,” Comper-da said. “Anybody can look ata certain year, and reflect onhow long it’s been since theylast won it.”

For either new or return-ing customers, the picture isa natural source of conversa-tion, and depending on whichChicago baseball team onesupports, it could bring eithertears or jeers.

Memories of the 1984 NLChampionship Series loss tothe San Diego Padres and the2003 NLCS collapse against theFlorida Marlins are just two

of many instances through-out Cubs history that the pic-ture signifies. It is a painfulreminder for some AvenueTwo customers, including St.Charles resident and loyalCubs fan Chris Gibson, whohas had Pavlek cut his hair for26 years. Since his first haircutas an infant, Gibson has sat inPavlek’s chair and watchedthe beard “grow” year-after-year.

“The look on [the subject’s]face says it all,” he said. “Oneday we’ll get to tear that thingdown.”

While it remains to beseen if the Cubs will returnto the World Series any timesoon, there is no shortage ofoptimism inside the shop,especially with the Cubs’ as-cending minor league systemearning rave reviews.

“I predict the Cubs will

win the World Series in 2016or 2017,” Comperda said. “It’sgonna happen, and when itdoes, there will be a celebra-tion.”

If the Cubs ever break thedrought, there is a “specialidea” Comperda has in mindbut hasn’t finalized it yet. He’skicking around potentiallymaking the picture into somesort of shrine or special dis-play, although he has ruled outthe destroying of the picture,similar to what transpired atHarry Caray’s Restaurant inwhich the “Bartman ball” wasblown up for a charity event.

Until further notice, view-ing the picture serves as a po-tentially cathartic experiencefor some Cubs fans.

“I look at life like it’s half-full. When it comes to theCubs, it’s half-empty,” Com-

perda joked.

Pursuant to section 5/11-74.4-4.2 of the Tax IncrementAllocation Redevelopment Act (65 ILCS 5/11-74.4-4.1 et seq.)(the "Act"), the City of Geneva (the "City") is required toestablish an Interested Parties Registry ("Registry") for each TaxIncrement Financing ("TIF") Redevelopment Project Area createdpursuant to the Act, whether existing as of the date of this noticeor hereinafter established. The City has adopted an Ordinanceauthorizing the establishment of such registries by the City Clerk("Clerk") and adopting registration rules for such registries. Thepurpose of this notice is to inform interested parties of theregistries and registration rules and to invite interested parties toparticipate in the Registry of a Redevelopment Project Area(s) inthe City.

If the Clerk determines that a registrant's registrationform is incomplete or does not comply with the registration rulesadopted by the City, the Clerk will give written notice to theregistrant specifying the defects. The registrant will be entitled tocorrect any defects and resubmit a new Registration Form. AnInterested Party's registration will remain effective for a periodof three years. The Registry will be available for public inspection at the officeof the Clerk during normal business hours. The Registry willinclude the name, address and telephone number of eachInterested Party or, in the case of an organization, a contactperson for each Interested Party.
