METHOD:

Preheat the oven to 180°C (350°F).

In a bowl, mix the yogurt with the spices mix. You can add a little bit of lemon juice if you would like.

MEATBALLSWITH BULGUR & MINTDIFFICULTY: SERVES: 2

100 gr. bulgur

1 bell pepper, 10 gr. Mediterranean spices mix (garlic, black pepper, paprika, cumin, salt oregano, basil)

20 gr. fresh mint, juice of 1 lemon

10 pcs. meatballs

60 gr. tzatziki, lemon zest

METHOD:

Cook the bulgur at a medium sized pot with 300 gr. of water and a pinch of salt. When it is at a boiling level, lower the heat and let it simmer for 6-8 min. until the groats are soft and all the water is absorbed. When it is ready, stir it with a fork and leave it in a cool place.

Preheat the oven to 220°C (428°F). Slice the peppers into small pieces and put them on a greaseproof paper in a tray for the oven. Glaze with olive oil and sprinkle with the spices mix. Roast in the oven for 8-10 min., mixing them regularly until golden. Remove the peppers from the oven and leave them in a cool place.

Chop the fresh mint and mix it in a bowl with the lemon juice and 3 tablespoons of olive oil. Add salt and pepper to taste and leave it on the side.

Reduce the oven temperature to 180°C (350°F). Drizzle a large oven pan with olive oil and roast the meatballs for 12-14 min., rotating them halfway.

Distribute the bulgur in the serving plates and sprinkle with oil. Add the roasted peppers and the meatballs on top. Serve with tzatziki and lemon zest on the side.

METHOD:

Leave the meat patties outside the fridge until they reach room temperature, meanwhile heat the grill to 180°C (350°F) and slice the burger buns in half.

As soon as the grill is hot, roast the bacon and the burgers on high heat for 3-5 min. on each side. Transfer them to a plate when they are ready and wipe off the grill.

On the same grill, sprinkle some olive oil and toast the inside of burger buns for 1 minute maximum then transfer them to a cutting board.

Set up the burgers by putting the meat patties, the cheese, the bacon, the caramelized onions and the BBQ sauce inside the buns.

METHOD:

Heat the olive oil in a pan over medium to high heat. Chop the garlic and the onion and sauté them with the minced meat.

As soon as the minced meat is ready (approximately 5 min.), add the spice mix with the tomato paste and sauté well (approximately 2 min.).

Add the red wine, the tomato sauce and the chicken broth to the mix. Simmer for 20 min. on medium heat until the sauce thickens.

Meanwhile, boil the rigatoni for 10-15 min.

Drain the rigatoni and serve immediately with the bolognese, topping it up with the grated cheese.

METHOD:

Crush the pepper in a zip lock bag using a rolling pin or a heavy pan.

Leave the steaks outside the fridge until they reach room temperature and dry them with paper towel. Heat a pan on high temperature with olive oil and add salt and pepper to the steaks. Roast them for 3-6 min. on each side according to your liking. Remove from fire and let it rest aside for 4 min.

Chop the garlic, then sprinkle the same pan with olive oil and sauté the chopped garlic and the pepper for about 2 min. Add the beef sauce, the mustard and 10 gr. of water. By scratching the bottom of the pan with a spatula, remove all the brown stuck pieces. Let it simmer for 2 min. on low heat. Remove the mix from fire, add the butter and when it is completely melted, add the cream and stir well. Add salt and pepper to taste. Finish your steaks in a 180°C (356°F) pre-heated oven for 2-3 min. Remove from the oven and let it rest aside for 4 min more.

Peel and slice the potatoes in your preferred shape, wash and dry them well. Pre-fry at 150°C (302°F) for 8 min. and finish the frying at 185°C (365°F) foran additional 5-8 min. or until they are crispy and golden. Drain, add salt and serve alongside the steaks and the lemon mayonnaise.
