Quinoa Mango Salad with Honey Yogurt Dressing Serves 8

Quinoa1 quart + 3 ½ cups water3 ½ cups quinoa, rinsed and drainedIn stockpot over high heat, bring water to a boil. Add quinoa. Stir. Reduce heat. Simmer until just tender, 8-10 minutes. Chill.

Dressing1 ¼ cup plain non-fat yogurt3 tablespoons honey3 tablespoons lime juice¼ tsp curry powderCombine dressing ingredients. Whisk until well blended.

Fruits & Veggies3 cups mangoes, pitted, peeled and diced ½ inch½ cup dried cranberries½ cup green scallion, trimmed, sliced diagonally, ¼” 2 Tbsp fresh jalapeno pepper, seeded, diced, ¼”

Greens Mix2 quarts fresh baby spinach 2 quarts spring lettuce mixCombine ingredients. Toss to mix.

Topping½ cup sliced toasted almondsIn bowl, combine dressing, chilled quinoa, mango, cranberries, scallion and jalapeno. Toss to coat.

For each serving:Place 2 cups greens mix on serving plate. Place 1/8 of the quinoa mixture on greens mix. Top with 1 tablespoon toasted almonds. Serve immediately.
