1.1 DESCRIPCIÓN

La máquina descrita en este manual es una embutidora de carne con funcionamiento hidráulico, fabricada en acero inoxidable apto para productos alimentarios.

Es una máquina silenciosa, sólo se oye un ligero ruido cuando el motor eléctrico se pone en funcionamiento y cuando la presión sube debido a que el émbolo ha llegado a su posición máxima o mínima.

1.1 DESCRIPTION

The machine described in this manual is a hydraulically operated meat stuffi ng machine made in stainless steel suitable for food products.

It is a silent machine, with only a slight noise being heard when the electric motor is switched on and when the pressure rises due to the plunger rea-ching its maximum or minimum position.

1.2 PALANCA RODILLERA

La palanca rodillera dispone de 3 posibles posiciones:

Posición “0” o Posición de reposo:Posición de reposo: posición en la que la palanca no funciona.

Posición “1” o Posición de subida:Posición que permite la subida del émbolo mediante la pre-sión de la palanca de manera continua.

Posición “2” o Posición de bajada:Posición que permite la bajada automática del émbolo.

2.1 DESCARGA Y TRANSPORTE

Una vez recibida la máquina, verifi car el estado del embalaje y notifi car a Dielta&Gesame, cualquier anomalía detectada.

Descargar y transportar la máquina, aún embalada y colocada sobre el palet, hasta su emplazamiento fi nal utilizando transpaleta o carretilla elevadora (ver Fig.1).

Sacar las grapas que sujetan la parte inferior de la caja al palet con una desgrapadora, nunca manualmente, y retirar el embalaje de la máquina levantando la caja (ver Fig.2)

Cortar los fl ejes que sujetan la máquina al palet y fi nalmente, quitar el plástico retractilado que protege la máquina.

2.1 UNLOAD AND TRANSPORT

Upon receipt of the machine, check the condition of the packaging and notify Dielta&Gesame if any anomaly is detected.

Unload and transport the machine, still packed and on the pallet, to its fi nal location using a pallet truck or forklift truck (see Fig. 1).

Remove the staples that hold the bottom of the box to the pallet with a staple remover (never manually) and remove the machine from the packaging by lifting the box off (see Fig. 2).

Cut the straps holding the machine to the pallet and, lastly, remove the shrink plastic that protects the machine.

2.2 INSTALACIÓN EN EL LUGAR DE TRABAJO

La máquina debe instalarse sobre una superfi cie plana y sólida, que no resbale. Debe tener sufi ciente espacio libre a su alrededor para que pueda trabajar sin obstáculos.

Debe haber un nivel de iluminación adecuado, de 30 a 60 lux.

Debe reunir las condiciones higiénicas establecidas en la normativa vigente.

2.2 INSTALLATION IN THE WORKING AREA

The machine must be installed on a fl at and solid non-slip surface.

There must be enough free space around the machine for work to be carried out unhindered.

There must be an adequate lighting level, from 30 to 60 lux.

It must meet the hygiene conditions laid down in the regulations in force.

2.3. WIRING CONNECTION

The electrical connection must be performed by qualifi ed electrical personnel.

Check that the mains voltage matches the supplied machine - a vol-tage which is indicated on the machine’s nameplate.

The base of the socket must always be earthed and be located at a height of between 60 and 90 cm from the fl oor, in a visible place so that the operator can see that the machine is unplugged from the mains when performing operations that involve some risk (cleaning, maintenance, assembly, etc.).

Do not plug in the machine if the mains cable or the socket base is damaged. In this case, notify the person in immediate charge.

Connect the machine to the mains supply, properly protected accor-ding to current regulations, by referring to the wiring diagram.

2.3 CONEXIÓN ELÉCTRICA

La conexión eléctrica debe realizarla personal eléctrico cualifi cado.

Verifi car que la tensión de la red coincida con la de la máquina sumi-nistrada, tensión que aparece indicada en la placa de características de la máquina.

La base del enchufe debe tener siempre toma de tierra y quedar si-tuado a una altura entre 60 y 90 cm. del suelo, en lugar visible para que el operario pueda comprobar que la máquina está desenchufada de la red cuando se realizan operaciones que entrañen algún riesgo (limpieza, mantenimiento, montaje,...).

No enchufar la máquina si se observa que el cable de red o la base del enchufe están dañados. En este caso, avisar al responsable in-mediato.

Conectar la máquina a la línea general, debidamente protegida según normativa vigente, consultando el esquema eléctrico.

Utilización de la embutidora Use of the fi ller

3.1 SISTEMA DE TRABAJO

- Abrir la tapa superior porta-embudos, desenroscando las dos em-puñaduras de apertura/cierre.

- Llenar el depósito con la carne picada a embutir; se puede llenar hasta cualquier altura, a decisión del cliente.

- Se recomienda presionar ligeramente la carne para que no queden bolsas de aire.

- Cerrar la tapa por las dos empuñaduras.

- Elegir el embudo adecuado, según el diámetro de embutido de-seado.

- Colocar la tripa adecuada al embutido a realizar.

- Regular la velocidad de salida de la carne a través del regulador de presión.

- Regulador de presión. Más presión implica más velocidad y vice-versa.

- Para poder embutir, el operario debe colocarse en la parte delantera de la embutidora y sujetar la tripa colocada en el embudo con las dos manos.

- Presionar la palanca rodillera con la pierna, de manera continua. De esta manera, sube el émbolo de empuje de la carne (Posición 1, Pág. 9).

- Para parar la máquina, dejar de presionar sobre la palanca rodillera, que retorna automáticamente a su posición de reposo. Esta acción para el motor, dejando de embutir (Posición 0, Pág. 9).

- Realizar las operaciones descritas hasta el vaciado del depósito, momento en el que aumenta el ruido de la máquina y deja de salir carne por el embudo. En este momento, el émbolo de empuje se encuentra en la posición máxima, parte superior del depósito.

3 UTILIZACIÓN DE LA EMBUTIDORAUTILIZACIÓN DE LA EMBUTIDORA 3 USE OF THE FILLERUSE OF THE FILLER3.1 OPERATING SYSTEM

- Open the top funnel-holding cover by unscrewing the two opening/closing knobs.

- Fill the container with the minced meat to be used for stuffi ng. It can be fi lled up to any height, depending on the customer’s requirements.

- It is advisable to press the meat slightly to ensure there are no pockets of air remaining.

- Close the cover using the two knobs.

- Choose the most suitable funnel, depending on the diameter of sausage desired.

- Fit the most suitable casing for the sausage to be made.

- Control the output speed of the meat by means of the pressure regulator.

– Pressure regulator. Greater pressure means higher speed and vice versa.

-To be able to stuff, the operator must adopt a position in front of the stuffi ng machine and hold the casing fi tted to the funnel with both hands.

- Press the knee lever continuously with the leg. This will cause the meat pushing plunger to rise (Position 1, Pag. 9).

-To stop the machine, press the knee lever, which automatically re-turns to its resting position. This action halts the motor, stopping the stuffi ng (Position 0, Pag. 9)

-Carry out the operations described until the container is empty - a moment when the noise of the machine increase and meat stops emerging from the funnel. At this moment, the pushing plunger is at its maximum position, at the top of the container.

3.2 EXTRACTION KEY TO DISASSEMBLE AND ASSEM-BLE PISTON.

- Extractor spanner with 2 positions:

- Position 1: For assembling/dismantling the plunger securing bolt (Fig.1).

-Position 2: For extracting the plunger (Fig. 2).

3.3 FILLING THE MEAT CONTAINER

To be able to fi ll the meat container, the plunger must be lowered to its lowest position (bottom of the container). To do so, follow the steps described below:

- Pull the knee lever out.This action allows the plunger to return automatically to its lowest position (bottom of the container) (Position 2, Pag. 9).

- Lastly, place the knee lever in the resting position.This prevents a rise in pressure in the hydraulic unit (Position 0, Pag. 9).

3.2 LLAVE EXTRACTORA CON DOS POSICIONES PARA EL DESMONTAJE/MONTAJE DEL ÉMBOLO

Llave extractora con 2 posiciones:

- Posición 1: Montaje/desmontaje del tornillo de sujeción del ém-bolo (Fig.1).

- Posición 2: Para extracción del émbolo (Fig.2).

3.3 LLENADO DEL DEPÓSITO DE CARNE

Para poder llenar de nuevo de carne el depósito, se debe bajar el émbolo hasta su posición inferior (fondo del depósito). Para ello, seguir los siguientes pasos:

- Tirar la palanca rodillera hacia fuera.Esta acción permite que el émbolo vuelva automáticamente a su po-sición inferior (fondo del depósito) (Posición 2, Pág. 9).

- Finalmente, situar la palanca rodillera en posición de reposo.Con ello se evita una subida de la presión del grupo hidráulico (Po-sición 0, Pág. 9).

Disconnect from the mains before starting the cleaning operation.

All parts of the machine that are in contact with the meat must be cleaned after each use.

Remove the parts in contact with meat for cleaning. The rest of the machine shall be cleaned with a damp cloth, never with cleaning systems or substances that can damage the electrical components.

4.1 DISMANTLING THE PUSHING PLUNGER

- Open the funnel-holding cover.

- Raise the piston to its maximum position (top of the meat container) by pressing on the knee lever.

-Loosen and remove the plunger bolt with the extraction spanner included, while keeping the knee lever pressed.

- Remove the plunger from inside the container by reversing the po-sition of the extraction spanner (see Fig. 1-2, Pag. 14).

- Clean the parts with water and a neutral soap:

- The bottom of the funnel-holding cover.

- The pushing plunger and bolt.

- The meat container.

- The dirty funnels.

- The plunger seal and cover seal.

- Rinse them suffi ciently with water.

- Re-assemble the parts.

LIMPIEZA DIARIALIMPIEZA DIARIA 4 DAILY CLEANINGDAILY CLEANING

Desconectar de la red antes de comenzar la operación de limpieza.

Debe de limpiarse después de cada utilización, todas las partes de la máquina en contacto con la carne.

Desmontar las partes en contacto con la carne para efec-tuar la limpieza. El resto de la máquina debe limpiarse con un trapo húmedo, nunca con sistemas de limpieza o sustancias que puedan dañar la parte eléctrica.

4.1 DESMONTAJE DEL ÉMBOLO DE EMPUJE

- Abrir la tapa porta embudos.

- Subir el pistón a su posición máxima (parte superior del depósito de carne), presionando sobre la palanca rodillera.

- Afl ojar y sacar el tornillo del émbolo con la llave extractora incluida, mientras se mantiene presionada la palanca rodillera.

- Sacar el émbolo del interior del depósito invirtiendo la posición de la llave extractora (Ver Fig. 1-2, Pág. 14)

- Limpiar las piezas con agua y jabón neutro:

- Parte inferior de la tapa porta embudos.

- Émbolo de empuje y tornillo.

- Depósito de carne.

- Embudos sucios.

- Junta del émbolo y junta de la tapa.

- Aclararlas sufi cientemente con agua.

- Volver a montar las piezas.

4.2 FITTING THE PUSHING PLUNGER

- Place the plunger on the piston, checking that it is completely ho-rizontal.

- Press the knee lever to be able to secure the bolt.

- Secure the bolt using the extractor spanner until it is level with the plunger.

4.3 CLEANING THE SEALS IN CONTACT WITH THE MEAT

Clean these two seals on a daily basis:

- Funnel-holding cover seal.

- Pushing plunger seal.

To clean them, proceed as follows:

- Carefully remove the seal from the plunger, using the fi ngers or a non-metal tool that will not cut. The cover seal can be removed without diffi culty.

- Clean the seals with a cloth moistened in water and neutral soap.

- Rinse them with plenty of water.

- Brush them with edible oil.

- Lastly, refi t them in position.

4.2 MONTAJE DEL ÉMBOLO DE EMPUJE

- Situar el émbolo en el pistón, verifi cando que quede completamen-te horizontal.

- Presionar la palanca rodillera para poder fi jar el tornillo

- Fijar el tornillo mediante la llave extractora hasta que quede éste quede a nivel del émbolo.

4.3 LIMPIEZA DE LAS JUNTAS EN CONTACTO CON LA CARNE

Realizar una limpieza diaria de estas dos juntas:

- Junta de la tapa porta-embudos.

- Junta del émbolo de empuje.

Para su limpieza, proceder como sigue:

- Retire la junta del émbolo con cuidado,con los dedos ouna herramientano metálicay nocortante. La junta de la tapa se ex-trae sin ninguna difi cultad.

- Limpiar las juntas con un trapo humedecido en agua y jabón neutro.

- Aclararlas con agua abundante.

- Untarlas con aceite comestible

- Finalmente, volverlas a colocar en su posición.

5.1 GENERAL MAINTENANCE

At regular intervals, qualifi ed technical staff should:

- Check the internal condition of the machine.

- Check the condition of the accessories, particularly:

- The cover seal.

- The plunger seal.

- Check the operation of the machine.

5.2 HYDRAULIC MAINTENANCE

Renew the hydraulic fl uid and fi lter after 2,000 hours of operation. This is an operation that should be performed by a qualifi ed tech-nician.

5.2.1 DRAINING THE HYDRAULIC FLUID RESERVOIR

The steps to follow are set out below:

- Disconnect the machine from the power supply.

-Place a container with capacity of 17-20 litres, low enough so that it fi ts under the machine.

- Tilt the machine to remove the cap.

- Leave the machine in resting mode so that all the fl uid can drain into the container.

- Once the reservoir has drained, tilt the machine again to refi t the cap.

5.1 MANTENIMIENTO GENERAL

Periódicamente, personal técnico califi cado debe:

- Verifi car el estado exterior de la máquina.

- Controlar el estado de los accesorios, en especial:

- Junta de la tapa

- Junta del émbolo

- Verifi car el funcionamiento de la máquina.

5.2 MANTENIMIENTO HIDRÁULICO

Sustituir el aceite hidráulico y su fi ltro después de 2000 horas de trabajo, operación que debe ser realizada por un técnico califi cado.

5.2.1 VACIADO DEL DEPÓSITO HIDRÁULICO

Los pasos a seguir son los siguientes:

- Desconectar la máquina de la corriente eléctrica.

- Colocar un recipiente con capacidad para 17-20 litros, sufi -cientemente bajo para que quepa debajo de la máquina.

- Inclinar la máquina para sacar el tapón.

- Dejar la máquina en reposo para que todo el aceite caiga dentro del recipiente.

- Una vez el depósito vaciado, inclinar la máquina otra vez para volver a colocar el tapón.

5.2.2 FILLING THE HYDRAULIC FLUID RESERVOIR

The specifi cations for the hydraulic fl uid are the following:

Quantity of fl uid: 15 litres

Recommended hydraulic fl uid HLP 46 - CEPSA

To fi ll the hydraulic fl uid reservoir:

- Remove the cap from the top of the machine casing.

- Fit a funnel into the hole and fi ll the reservoir with 15 litres of fl uid.

- Lastly, refi t the cap.

5.2.3 RENEWING THE PUMP SUCTION FILTER

The specifi cations for the fi lter are the following:

5 litres submerged suction fi lter, 3/8” thread and 125 microns

The suction fi lter should be renewed with the hydraulic fl uid reservoir empty.

To renew it, follow the steps set out below:

- Open the machine’s side cover.

-Remove the cover from the hydraulic fl uid reservoir by unscrewing the 8 M6 bolts which secure it to the reservoir.

-Remove the hydraulic fl uid reservoir together with the motor and the pump, which are attached to it.

- Remove the suction fi lter that is connected to one side of the pump.

- Fit the new fi lter, by connecting it to the pump.

- Lastly, refi t the hydraulic fl uid reservoir cover by screwing in the 8 bolts which were removed earlier.

5.2.2 LLENADO DEL DEPÓSITO HIDRÁULICO

Las especifi caciones del aceite hidráulico son las siguientes:

Cantidad de aceite: 15 litros

Aceite hidráulico recomendado: HLP 46 - CEPSA

Para llenar el depósito hidráulico:

- Sacar el tapón de la parte superior de la envolvente de la máquina.

- Colocar un embudo en el agujero y llenar el depósito con 15 litros de aceite.

- Finalmente, volver a colocar el tapón.

5.2.3 SUSTITUCIÓN DEL FILTRO DE ASPIRACIÓN DE LA BOMBA

Las especifi caciones del fi ltro son:

Filtro de aspiración sumergido de 5 litros, rosca 3/8” y 125 micras

El fi ltro de aspiración debe sustituirse con el depósito de aceite hidráulico vacio.

Para su sustitución, proceder siguiendo los siguientes pasos:

- Abrir la tapa lateral de la máquina.

- Sacar la tapa del depósito hidráulico desenroscando los 8 tornillos de M6 que la sujetan al depósito.

- Sacar la tapa del depósito hidráulico junto con el mo-tor y la bomba, que van sujetos a ella.

- Sacar el fi ltro de aspiración que va conectado a un lado de la bomba.

- Colocar el nuevo fi ltro, conectándolo a la bomba.

- Finalmente, colocar la tapa del depósito hidráulico atornillando los 8 tornillos sacados.

La verifi cación del sentido de giro del motor debe realizarse por personal eléctrico califi -cado.Los pasos a seguir para la verifi cación del sentido de giro son los siguientes:

- Situar el regulador de presión en la posición máxima.- Pulsar la palanca rodillera para hacer subir el émbolo.- Si el pistón no sube, cambiar las conexiones para invertir el sentido de giro del motor.- Para cambiar las conexiones, ver manual de instrucciones del motor.

The turning direction of the motor must be checked by qualifi ed electrical staff. The steps to follow to check the turning direction are the following:

- Set the pressure regulator to the maximum position.- Press the knee lever to raise the plunger.- If the piston does not rise, swap over the connections to reverse the motor’s turning direction.- To swap over the connections, see the motor’s instruction manual.
