Quick & Easy Recipe: GOLDEN CARROT COINS From the kitchen of Gretchen Voyle, MSUE Peel & slice carrots into circular disks. Cook by roasting, boiling or microwaving until tender. Melt a bit of butter with a tablespoon or so of brown sugar and a splash of orange juice, creating a glaze for the carrots. Coat carrots with glaze and enjoy - what a sweet treat!
