Wholesome and heart-healthy, Gordon Signature™ Fully Cooked Veal Masterpieces are inspired by the most popular recipes from around the world. Naturally low in fat, veal is an excellent source of protein and a good source of niacin, zinc, and B vitamins, and our various cuts are easy to craft into delicious and stunning meals.

All Gordon Signature™ veal calves are raised in Canada under strict conditions, where they are supervised by a team of veterinarians and quality control personnel that qualify each individual calf for our brand. These gourmet selections are packed in high-temperature vacuum bags; just immerse the sealed bag in boiling water for 30 minutes and it is ready to serve.

Milk-fed calves are fed a nutritionally complete milk supplement until they reach 20–22 weeks. These calves have never been fed with any type of grain. The meat colour is ivory or creamy pink, with a firm, fine, and velvety appearance. These cuts are ideal for mildly flavoured recipes that require delicate meat.

Grain-fed calves are raised on a diet of 100% Canadian grains. The meat is darker in colour, and some additional marbling and fat may be apparent. These cuts are ideal for grilling, and for use in dishes with dark and intense sauces.

preparation instructionsStove top: place the sealed bag in boiling water at 95°C/203°F for 30–35 minutes for an internal temperature of 60°C/140°F. remove the bag and open carefully with scissors. use caution while handling and opening hot bag.

Conventional oven: preheat oven to 150°C/300°F. Open the bag with scissors, and empty contents into an oven-safe dish. Cover with foil and heat until the internal temperature of the product reaches 60°C/140°F. use caution while handling and opening hot bag.

Microwave oven (1500 watts): 250 g portions only. place portion on microwaveable dish and heat for two minutes for an internal temperature of 60°C/140°F. Because all microwave ovens vary in power, these instructions are a guideline only.
