SunshineCherryandStrawberrypreservesUseequalweightofsugarandfruit.Putfruitinthepreservingkettleinlayers,sprinklingsugaroverlayers.Thefruitandthesugarshouldnotbemorethan4inchesdeep.Placethekettleonthestoveandheatslowlytotheboilingpoint.Whenitbeginstoboil,skimcarefully.Boiltenminutes,countingfromthetimethefruitbeginstobubble.Pourthecookedfruitintoplatters,havingitabout2or3inchesdeep.Placetheplattersinasunnywindowinanunusedroomfor3to4days,orputfruitinashallowpan,coverwithasheetofglassandsetoutofdoorsinasunnyplace.Thefruitwillgrowplumpandthesyrupwillthickenalmosttoajelly.Putthepreserves,cold,intojarsorglasses.Note!Ifcherriesareused,andnotseeded,add1or2tablespoonswatertoeachlayerofsugar.
