10 RECIPE IDEAS TO CREATE A VEGETARIAN MAIN MEAL

Quorn Sausages skewered with peppers, onions & cherry tomatoes in a tangy lemon & mango glaze.

HINTS & TIPS They are equally good roasted in the oven 200°C / Gas Mark 6 for 10-12 minutes. Serve with a crisp green salad and sweet potato wedges.

Keep it fresh and healthy with a flavourful Buddah bowl. To make the skewers, place the Quorn Fillets and pineapples onto soaked wooden skewers. Place the skewers on to a pre-heated gas or charcoal BBQ, drizzle over the peri peri sauce and cook for 12-15 minutes, turning occasionally to ensure an even cook. Once cooked, remove the fillets and pineapple from the skewers. Slice the fillets diagonally and roughly chop the pineapple. To make the salad, take a large bowl and mix together the quinoa, lettuce, red cabbage, red pepper, carrot and spring onions. Divide the salad between four serving bowls and top in Buddha bowl style with the BBQ’d fillets, grilled pineapple, edamame beans, cucumber ribbons and radishes. Garnish with the coriander, red chilli, sesame seeds, crushed peanuts and lime wedges. Drizzle with the remaining peri peri sauce to serve.

Succulent Quorn Nuggets served with earthy roasted root vegetables on a bed of spinach, with sweet edamame beans and a tomato dipping sauce.

HINTS & TIPS Try roasting other vegetables such as beetroot and butternut squash
