Campaign financed with the aid of the European Union
Prince de Bretagne is the collective brand for the fruit andvegetable producers based around the north coast of Brittany.Founded in 1970, it is used by producers from six Breton
cooperatives: Sica at Saint-Pol-de-Léon, Socoprim, la Bretonneand Coopagri-Bretagne in the Finistère region, Union descooperatives de Paimpol et de Tréguier in the Côtes d’Armorand Terres de St-Malo in the Ille-et-Vilaine region. As vegetableproduction has developed, these cooperatives have come togetherat the heart of Cerafel, first as an Economic Committee and, since2008, as a regional association of organisations for producers of arange of products. This association guarantees the brand, the res-pect for specifications, the placing on the market of our produceand establishing joint efforts in research and crop trials.
Prince de Bretagne was created by vegetable producers who wan-ted a strong brand that was synonymous with quality and whichwould become recognised throughout the chain, right through toconsumers. From the early days of television advertising focusingon a cavalier through to the recent construction of a racing trima-ran in the colours of the brand, Prince de Bretagne reflects theconvictions of its producers.
Coupled with this determination is the opportunity provided byBrittany’s exceptional growing conditions. Throughout the yearBrittany benefits from a temperate oceanic climate which meansfrosts are rare in winter and summer temperatures are rarely toohot. From the edge of the sea and up to 15km inland, the sunshine,gentle climate and the quality of the soil are perfect for vegetableproduction.
Today nearly 2,500 growers produce more than 600,000 tonnes offresh vegetables per year, growing more than 40 types of vegeta-bles over some 40,000 hectares of land. Most of the harvesting ismanual and the majority of Prince de Bretagne produce is packeddirectly in the field before being shipped to 30 countries.

The auction: a unique sales systemThe auction was set up in 1961 and the system continues to ope-rate in the same way today. The vegetables available each dayare divided into homogenous lots and offered for sale to private,independent trading companies called ‘Prince de Bretagne ship-pers’. Each lot is offered at an initial starting price, whichreduces if no bids are received. The first to ‘press’ the buttonbuys the lot. The shippers are Prince de Bretagne’s real salesforce (see www.prince-de-bretagne.com for the list). They arein contact with all the distribution and sales networks for vege-tables and can be specialised by product and/or by country.
‘Upstream’ scientific and technical integrationTo ensure their independence, Prince de Bretagne producershave also created a scientific and technical environment whichallows them to innovate (Organisation Bretonne de Sélection:for the creation of new vegetable varieties), to conductresearch (Végénov–BBV: a biotechnology laboratory for plants),and to conduct trials (CATE and SECL trial stations). On top ofthis, they have added ISFFEL (Institut supérieur de formationen fruits et légumes), which trains future produce departmentmanagers and logistics staff.
Traceability, quality, innovation…A daily challenge
Prince de Bretagne has moved on from the notion of ‘product
quality’ through to ‘system quality’ and has implemented nume-rous improvement programmes based around five themes:
• Traceability: each box is identified and can be traced rightback to the field.
• Monitoring quality schemes: Coco de Paimpol beans weregranted AOC recognition in 1998, followed by Roscoff onionsin 2009. A request has been submitted for an STG (a guaranteeof a traditional speciality) for shallots.
• Research on the taste and agronomic qualities of pro-duce: in association with Végénov – BBV, the majority of newvegetable varieties are tested for their organoleptic qualities.
• Improvement of growing practices: to ensure complete res-pect for the environment and better economic efficacity onthe farm.
• Implementation of quality certifications in response to thedemands of our European clients (AgriConfiance, GlobalGap,Nurture).
Defending fresh tasteThe new Prince de Bretagne motto ‘defending fresh taste’ wasnot chosen by chance. It reminds us that the brand sells onlyfresh fruit and vegetables and that, more than ever, it is vitalto maintain the authentic taste of produce. This motto is linked with a new image reflecting our terroir, asword symbolising a Prince, defending our region and ourbrand values.

Each year,nearly 2,000 days of various in-store promotions are conductedin Europe. Over the past 40 years, Prince de Bretagne produ-cers have invested annually in ambitious communi-cation plans. Alongside these ‘classic’communication plans, Prince de Bretagne has crea-ted a real splash with the construction of a racingtrimaran proudly carrying the brand’s colours.
At the end of 2008, Prince de Bretagne producers took the decisionto begin the construction of a 50 foot trimaran called
‘Légumes Prince de Bretagne’.There are many links between those who work the land and thosewho work at sea: teamwork, stamina, respect for and coping with the
weather conditions…Not forgetting ofcourse that it is thanks to the influenceof the sea that Prince de Bretagne pro-ducers are able to produce vegetablespractically all year long.So many elements which, when added tothe public’s passion for sailing, convin-ced Prince de Bretagne to launch intothis adventure. A five-year racing pro-gramme has been scheduled, includinga transatlantic race each year (theJacques Vabre, Route du Rhum, QuébecSaint-Malo) as well as shorter coastalregattas.

Prince de Bretagne produ-cers grow two types of arti-chokes, green globes andPetit Violets. Available fromthe spring until the firstfrosts, these two types ofartichoke are distinguishedmainly by their size, colourand different flavours.

Originating in the Mediterranean region, globeartichokes have been grown in Brittany since1810. Prince de Bretagne sells two types ofglobe artichokes: the Castel and Camus. Both wooden crate and cardboard box formats
work well with these types of artichokes.Crates and boxes are covered with a plasticfilm, which maintains the freshness of the arti-chokes as well as protecting them fromdamage.

Petit Violet artichokes can be distinguishedfrom the globe varieties by their colour andsmall size. Although Petit Violet artichokes aretraditionally eaten in Mediterranean coun-tries, their qualities are becoming increasinglyrecognised and appreciated across northernEurope.Prince de Bretagne offers Petit Violets in two
formats: per head or in bunches,called a poivrade. The poi-vrade comprises five heads
of Petit Violet. The heads areharvested before maturity, which
means the choke has not formed and they canbe eaten raw or cooked. Bunches are mainlymade up of heads size 44 and 54.

Nutritional informationArtichokes are very low in calories, contain Vitamin B9and are a rich source of fibre. They stimulate the diges-tive system and are well known for their beneficialeffects on the liver and secretion of bile.
Consumer informationAppearance (Castel and Camus) : unmarked and a uni-form good green colour, the artichoke should be heavyand short-leaved.Appearance Petit Violet : firm, unmarked and tightlyclosed head with very dense and slightly prickly leaves.Storage : Placing the stems in water (like cut flowers)extends the period they can be kept. They can also bestored in the vegetable drawer in the refrigerator forseveral days as long as they are first covered in plasticfilm to prevent them drying out. Once cooked, arti-chokes should be eaten within 24 hours.Preparation (globe varieties) : break off the stem byhand to remove the strands found around the bottom ofthe artichoke. Cooking a whole head will take from 12minutes (microwave) to 30 minutes (in boiling water).
Preparation (Petit Violets) : cut off the stem and theupper third of the head. Remove the outer leaves, kee-ping only the heart. Petit Violet artichokes can be eatencooked (ensure they are cooked in water to which lemonhas been added, to stop oxidation) or raw, cut into stripsand served with a nicely seasoned sauce.
Information for retailersStorage : in cool conditions and away from lightOn-shelf presentation: a vegetable that dries out easily.To retain their freshness and protect them from suddentemperature changes, spray with water or cover with adamp cloth at the end of the day.

With 30,000 tonnes produced eachyear, Brittany is the leading pro-duction region for Traditionalshallots in Europe (representingabout 80% of overall French pro-duction). Traditional shallots areshallots planted and harvested byhand and one bulb multiplies toprovide about 10 bulbs.
Two types of shallots can befound in the Prince de Bretagnerange, long and semi-long.Packed by Prince de Bretagneshippers, the range of formats ishighly diverse, ranging from a250g string bag to a 20kg sack;Prince de Bretagne Traditionalshallots are also offered in plaits.

Originating in Asia, shii-také mushrooms have been grown in Brittany since 1988. The second most commonly grownmushroom in the world, it is considered one of the most fra-grant. It is rich in Vitamin B and potassium, and can be usedin numerous dishes.
Prince de Bretagne shii-také mushroomsare grown in special chambers wherethe temperature, humidity and lightlevels are carefully controlled. Grownon straw beds, they are sized andchecked by hand before being stored ina coldstore ready for shipment. Princede Bretagne shii-také mushrooms areavailable all year round and are packedin cardboard boxes or wooden crates.
Shii-take mushroomsTipLess fragile than other mushrooms, Shii-také mushroomscan be stored in a paper bag in the refrigerator.
Nutritional information25kcal per 100g, rich in B vitamins as well as potassiumand phosphorus.
Consumer informationAppearance: the tops of Shii-také mushrooms areusually of several shades of brown.Storage: they keep well in the vegetable drawer of therefrigerator.
Preparation: they stand up well to cooking and there-fore can be used in numerous ways: fricassees, kebabs,omelettes, as an accompaniment, on their own ormixed. It is an ideal ingredient for Asiatic dishes.

hand which helps preserve these qualities. Brit-tany pink garlic is available from September toMarch and in various formats: plaits, bag orbaskets.
Nutritional informationPink garlic is known for its nutritio-nal and medicinal virtues. It has apositive effect on cholesterol andhas anti-allergenic properties.

Cucumbers: Grown under cover, Prince de Bre-tagne classic long cucumbers are carefully har-vested and hand-picked directly on the farm.
Courgettes: Prince de Bretagne courgettes aregrown under cover from June to July and inopen fields from July to the beginning of
November. A fine distinction between the sizes (14-17 and 17-21cm) is offered for long courgettes, allo-wing for range segmentation and an offer which
is closely tailored to customer requests. Thecourgette range has been widened still further
with a round courgette which is perfect for stuffing.

The commitment to organics was stillin its early stages when, nevertheless,some of Prince de Bretagne's produ-cers came together with the aim ofdeveloping their production methodsand creating the Prince de Bretagneorganic committee.
Today, 50 farms produce more than10,000 tonnes of organic vegetableseach year, with a range of around 30
differentproducts. Since 2010,all of our organicproduction has beenmarketed under the'Prince de Bretagne OrganicVegetables' brand and, in response tothe demand from all sales channels,from traditional outlets to supermar-kets, we market our organic vegeta-bles either 'au naturel' (packeddirectly by the producers in thefield), or individually packed andlabelled.
