Level two in Food Safety has been developed for the Food Business Operator in any type of food business that has a legal obligation to ensure that staff are supervised and instructed and/or trained in food hygiene. It is also suited to people who need to enter food premises as part of their work, e.g. Equipment maintenance engineers, off-site business owners/managers and delivery personnel. This is an accredited course. What can you expect to learn? Legislation Food Safety Hazards Temperature Control Refrigeration, Chilling and Cold Holding Cooking, Hot Holding and Reheating Contamination Food Handling Principles of Safe Food Storage Cleaning Food Premises and Equipment Monitoring controls, corrective actions and methods of reporting are examined as part of a food safety management system. The syllabus has also been updated to reflect the latest changes to legislation and includes the problems that arise from allergen contamination. How is it assessed? The award is delivered over one day and is assessed by a multiple-choice examination: 30 questions to be answered in 40 minutes.
