Introduction
We strive to bring to y ou the best of classic, authentic North Indian cuisine, preserving a legacy that started almost a century ago in a modest restaurant in Peshawar (then a part of the undivided British India). “Dary aganj” was conceived to celebrate the undy ing spirit of entrepreneurship and the legacy of Kundan Lal Jaggi , the inventor of the iconic Butter Chicken and Dal Makhani at the fabled Delhi restaurant that went on to start the revolution of fine Tandoori cuisine and one of the best dining establishments in a resurgent, independent India .
Dary aganj is an attempt to preserve the old world traditions of cooking and producing robust flavors created with the finest quality ingredients, brought to y ou through closely guarded recipes passed down from generation to generation to ensure a best in class dining experience reminiscent of a by gone era .
The cuisine further evolved post independence when the pioneer, Kundan Lal Jaggi moved to Delhi and set up one of Independent
Daryaganj.
The story of modern Tandoori cuisine began way back in the early twentieth century british India, in a modest restaurant at Peshawar, (now Pakistan ).

Kundan Lal Jaggi went on to create legendary dishes like Butter Chicken and Dal Makhani at this restaurant in Daryaganj.
This restaurant became a favorite with many prominent personalities the world over and became a must visit destination for all food lovers.
Kundan Lal Jaggi eventually shared this deep knowledge of the cuisine with his family.
“Daryaganj” the restaurant is an attempt to preserve the original recipes and build on the inventive spirit of the pioneer.

Tandoori ChickenAlmost a century ago in 1920, there was a restaurant owned by Mokha Singh in Peshawar in Pre - Partition India, a gentleman came to the restaurant and asked for a light chicken dish as he was ill, at that time the trend was to serve Mughal influenced curries made with rich dry fruits and clarified butter. The restaurant hence created for the first time in history, a dish that we know as Tandoori Chicken. It was also the first time that the tandoor was used by someone to make a meat dish instead of traditional breads.

Kundan Lal Jaggi owned his own poultry farm for maintaining the best quality chicken to be served at his restaurant which was supposed to be of a smaller in size and not more than 750 grams to maintain the juiciness and flavour.

Butter ChickenThis dish was made “By Chance” in the year 1947. One fine night few minutes before calling it a day for the restaurant Kundan Lal Jaggi had a truckload of refugees come in who were hungry and wanted to have a meal. In the kitchen there wasn’t enough food left but a few portions of tandoori chicken. Kundan Lal Jaggi came up with the idea to mix the leftover tandoori chicken in a gravy, made of tomatoes, butter and cream to make sure it is sufficient for everyone. The same old recipe from the year 1947, has been adapted at “The Daryaganj Restaurant”.

Dal MakhaniThere was a regular customer at Kundan Lal Jaggi’s restaurant who was a big food lover, he suggested to the owners to make a version of urad dal with their signature makhani sauce to give a choice to vegetarians. That is how Dal Makhani was invented.
Prime Minister Nehru was so much in awe of the food at Kundan Lal Jaggi’s Restaurant that he made him his official caterer and he used to serve the food cooked by his team to all the visiting dignitaries for official banquets. A permanent tandoor was setup at the Prime Minister’s official residence

As Kundan Lal Jaggi decided to start a small eatery serving tandoori food at the locality of Daryaganj he had an issue, there was no tandoor available in New Delhi as no one had ever used it till now, Luckily he found a man who had just migrated from Peshawar and used to set up tandoors for a living there

When Khrushchev was the leader of the then USSR, food used to be flown from Kundan Lal Jaggi’s restaurant for official banquets in Moscow. Once at Khrushchev’s request. Kundan Lal Jaggi also set up a pop-up of his restaurant in 1963 at the international trade fair in Moscow.
