TIPS FOR A TASTY LAMB ROAST:

1. Place the joint uncovered on a wire rack in a roasting tin ensuring any fat is on the top. This allows the juices to run down and baste the joint naturally.

2. Add garlic gloves and fresh fragrant rosemary to add some fantastic flavour.3. Or for something a bit different you could stuff with tinned anchovies and butter instead.4. Once cooked, allow the joint to rest for 5-10 minutes after cooking to let the meat fibres relax and juices distribute evenly so the joint is moist and easy to carve.

THIS EASTER we’re getting creative with a combination of tempting dessert products. Start with crumbly, individual Pidy pastry cases, made from a traditional French recipe. Then fill with a choice of creamy Macphie fillings, in popular flavours such as Créme Brûlée, Sicilian Lemon and Chocolate Pot. Free from artificial colours & flavours, these delicious Macphie puddings are also gluten free and when added to the Pidy cases are ideal for preparing in advance. To finish off with a little magic & premium taste, add Callebaut chocolate pencils or other toppings such as frosted lemon slices & raspberries.
