I must say, I was more nervous than my daughter…did I prepare her well enough to answer all the questions, did we pack everything she needed, would she be too shy to par- ticipate to her potential, would she have fun? As a 5 year old she has just become eligible for 4-H activities, and as a brand new Cloverbud member, ignorance was bliss. For her, today’s Food Show event was a chance to bake and decorate some cupcakes, take them to a place where she could show them off, and then talk about them with some soon-to-be friends and adults, one of which would happen to be her judge. She was totally oblivious to what could have been a stressful situation. She had cooked her cup- cakes on Thursday, frosted and decorated them on Fri- day, and then woke early today to pack up not only her culinary treats, but also all the accompanying supplies for this public presentation: napkin, placemat, silverware/ place setting, and recipe card. Then off we went. Upon arrival, we checked in at the registration table and were told where to drop off our stuff. Once the wel- coming remarks had been made, I was asked to step away from my child, allowing her the opportunity to do everything on her own. She was quickly whisked away with all of the other Clover- bud members (ages 5 to 7) by one of the older 4-H’ers. This part did not concern me as she was in good hands. The older youth showed her where to set up her array, and she quickly went to work laying out the placemat and napkin, then setting up the silverware. She rummaged through the bag she had packed to find her plate, and then carefully selected the mouse-in-the-house cup- cake from her tray that had best survived the half hour trip from home to the school. Following the example set by the others; she then dug out the recipe card from her bag and finalized her display by placing it at the corner of her placemat. She was now ready to have the judge come admire her work. As I watched all this from afar, I couldn’t help but be proud of her. Though she is usually a shy child who clings to her parents for the first 20 minutes a new per- son is in the room, she somehow skipped this phase of the day, and seemed very comfortable with her surroundings. Surprisingly enough, the other six Clover- buds seated next to her were in much the same disposi- tion, quiet and confident (traits rarely seen in a group of youth this age). Throughout the day, I was continuously surprised by the kids who surrounded me. In speaking with one other mother, her 13 year old could not wait until she was eligible to compete at the highest level of this competi- tion: the Senior Cookoff. This is an event where the youth must not only develop a 6 to 8 course menu, which in- cludes a mixture of foods varying in colors and tex- tures they can cook (from scratch) and must know everything about, but they must also serve it properly to the judge, restaurant style. This includes bringing their own card table, chairs, cen- terpiece, dinnerware, table covering, and all of their menu dishes (hot and cold). At hearing this I couldn’t help but wonder: why would any- one want to do this? Being someone who views eating as mandatory, not enjoyable, and cooking as a require- ment not a pleasure, I spend as little time in the kitchen as possible, and can’t imagine why anyone would want to do this level of cooking, es- pecially for a competition. However, as a 4-H Alumnus, I realized the answer to my own question. Whether it is showing dairy cattle or cook- ing food, passion for what you love is enough to make you want to try anything, learn more as you go, and strive to be the best, both during competition and after. My hat goes off to all those young bakers and chefs that I met today who don’t shy away from the challenge of making homemade pasta, cream puffs, flan, ratatouille casserole, tiramisu, cheese- cake, cannoli, or blueberry streusel, for they are already handier in the kitchen than I! So, as my daughter con- tinues in her journey through 4-H, I can’t wait to see what kind of adventures she chooses to embark on, and how she handles them. Hopefully, the traits I saw in so many of the young people I met today will be present in her as she is enhanced through her experiences in this youth development pro- gram. May all of her future competitions meet her as an unruffled, confident partici- pant and may she continue to enjoy each of these expe- riences enough to leave her wanting to participant year after year. Today, for the first time, Iplayed the role of mother to a4-H’er competing at acounty-wide event. Cynthia Steil presents aprogram on Rufus Porter,Yankee Pioneer: a primitivepainter of the American land-scape and portraits and anamazing inventor. She willshow a DVD displaying his19th century wall murals in 5New Hampshire houses.

Largely self-taught,Porter developed more than200 mechanical inventionsincluding a revolving rifle,bought by Colt for $100 andturned into the colt revolver;

many creations to make lifeeasier for farmers; a steamcarriage for roads; and a fly-ing machine for aerial navi-gation to take people fromNew York to California for thegold rush in 1849. The latterwas successfully demon-strated, but failed because oflack of funds.

This ingenious and cre-ative man left a prosperousfamily farm in Boxford, MA toforge an amazing legacy ofartistic and scientific accom-

plishment in the era of innova-tion that marked the industrialrevolution. Porter created theScientific American, the NewYork Mechanic, and the Amer-ican Mechanic magazinesand was a progressive writeron religion and philosophy.

Steil shares a commonancestor with Porter. Shealso owns two of his portraitsof her ancestors.

This is turning out to be agreat winter for snowmobiles.We have a good base andthe trails are fantastic. Thegroomers are doing a greatjob keeping things smooth.We are still having someproblems with people thatare riding off our markedtrails and going into fieldsthat could cost the rest of usriders the loss of those trails.It is too bad that those cer-tain few have little respect tothe landowners that allow us

to use their land to enjoy ourpast time. We have asked forhelp to patrol our trails totake care of this problem.On February 20th, the Con-necticut Valley SnowmobileClub will be holding its radarrun in the Keith field acrossfrom Aldrich General Store.The event will start at 10:00AM and go till 2:00 PM.It will be $5.00 per run or 5runs for $20.00. This makesa fun day to get out and testyour sled to see how well it

really goes. There will alsobe an obstacle course forchildren 10 and younger.Food and drinks will be avail-able during this event.Updates on this and otherclub events can be found onthe club’s web site at ctval-leysnowmobileclub.com.We hope that everyone hasa safe snowmobile seasonand PLEASE remember toRESPECT the landownersas well as fellow snowmobileriders.

Dear Constituents,The pace is picking up!

In addition to being on twoStanding Committees, Sen-ate Finance and the Publicand Municipal Affairs, I justreceived assignments toserve on seven (7) statutoryand study committees whichinclude:• Cannon Mountain AdvisoryCommission• Commission to Study Busi-ness Taxes• Current Use Board• Health and Human Serv-ices Oversight Committee • Public Higher EducationStudy Committee• Public Water Access Advi-sory Board• State Retiree Health PlanCommissionIt is definitely a challenge

finding enough hours in theday to schedule in the meet-ings required for thesenewest boards, committees,and commissions along withcommittee work and sessiondays. I am, however, eagerto participate and find waysto do more with less andmake improvements.

As of the December 10deadline, 855 LegislativeService Requests (LSRs) hadbeen filed. I am the primesponsor of two bills, SB85 andSB155 and co-sponsor on 16other pieces of legislation. (Ifyou are interested in more de-tail on legislation that I or any-one else has filed, visitwww.gencourt.state.nh.usand look under the State Leg-islative Dashboard for 2011bill requests. Select the legis-lator you are interested in tosee what requests they havefiled.)

SB85, a bill relative tonaming a water body inMeredith after the late SenatorCarl Johnson and his wifeJeannette has been heard inthe Public and Municipal Af-fairs Committee and will bevoted on by the full Senate thiscoming week. This bill has bi-

partisan support and does nothave a fiscal note (FN) at-tached—which means there isno financial impact to the state.The water body is right in frontof the Johnson home and thesign that will be created and in-stalled is being paid forthrough private fundraising ef-forts. Senator Johnson was astrong advocate for the envi-ronment, supporting the lakes,the preservation of loons, andwas a well-respected, long-serving legislator.

My desire to help smallbusinesses prompted me tofile a second piece of legisla-tion, SB155, which is relativeto expense deductions forbusinesses. This bill allows abusiness organization toapply the current federal sec-tion 179 expense deductionamount in the calculation ofgross business profits beforenet operating loss and spe-cial deductions under thebusiness profits tax. The bot-tom line is that this bill makesNH tax code consistent withthe federal tax code. This bill,which will go before the Sen-ate House Ways & MeansCommittee, has not beenscheduled for a hearing yet.

As a member of the Sen-ate Finance Committee, Icontinue to receive briefingsfrom departments in stategovernment and meet individ-ually with agencies and or-ganizations. With the nearly$1 billion deficit we face andthe commitment to not dig ourstate deeper into a hole, weface some tough decisions onwhere to cut spending. I ex-pect that most every depart-ment and agency will be partof the painful path back to abalanced budget.

The biggest category ofgeneral fund spending is inHealth and Human Services(45% of the budget), a de-partment that provides im-portant services to ourneediest citizens via manysocial service organizations.

Just this past week I had theopportunity to talk with repre-sentatives from:

CADY, Inc. in Plymouth(Communities for Alcoholand Drug Free Youth) whichis a local coalition dedicatedto working with schools andcommunities to prevent andreduce youth alcohol, to-bacco, and other drug useand to promote healthy envi-ronments and promising fu-tures for area teens;

Children’s Shelter Careand Transitional Services inAntrim, Jefferson, and Brad-ford which provides servicesfor approximately 550 chil-dren/youth including assess-ment, counseling, education,and residential services; and

Lakes Region Commu-nity Services in Laconiawhich provides opportunitiesfor life experiences for per-sons with developmental dis-abilities and acquired braindisorders in all areas of com-munity life including employ-ment, housing, recreation,social relationships, andcommunity association.

During the campaign forState Senate, I made severalvisits to Glencliff Home(which serves NH’s develop-mentally disabled, and/ormentally ill population),toured the Grafton and Belk-nap County nursing homes,and visited the senior cen-ters in Meredith, Plymouth,and Haverhill. Shortly afterbecoming your State Sena-tor I toured the NH StateHospital in Concord. Everyone of these places has ex-cellent staff and providesquality services.

Even prior to becomingeducated about these socialservice organizations, I hadmy own first-hand experience,having worked as the Directorof Administration for OdysseyHouse, an adolescent resi-dential substance abusetreatment facility many yearsago. In the last couple years,I have also been a volunteerfor Community Caregivers (anon-profit organization gearedtoward assisting neighbors toremain living independently intheir homes for as long as ispossible).

These organizations andthe many others that the citi-zens of New Hampshire sup-port through tax dollars

provide important, beneficialservices. It will be a chal-lenge to figure out how tomove forward with cuts tospending and doing so in away that does the leastamount of harm. I am hope-ful that working together, wewill be able to find savings,streamline, and find creative

solutions to develop a bal-anced budget for the citizensof New Hampshire whilemaintaining vital services.

The work-shop will be held on Wednes-day, February 23 at 1:00pmat the UNH Cooperative Ex-tension Conference Room,Grafton County Complex,Route 10, North Haverhill.About 75% of all floweringplants need animals to movepollen grains from plant toplant for fertilization. Nativepollinators include bumblebees, butterflies, moths, bee-tles, flies, birds and bats.Learn to encourage nativepollinators to thrive in yourgarden or orchard.

source to food source andare attracted to a variety ofplant sizes, shapes and col-ors along the way. Butterfliesand moths prefer broad, flatflowers because it gives thema place to land and rest.Many plant varieties provideprotection and offer a placefor egg-laying and nesting.

It is now official. The Townof Haverhill has a new full timeRecreation Director. Sherri Sar-gent is the second person tohave a full time position lookingout for and coordinating therecreational needs of the resi-dents of Haverhill. Sherri hadthe “interim” portion of her titleremoved after going thru the in-terview process and winningthe permanent position.

Sherri took over as the in-terim Director last fall afterGlenn Hatch resigned. Sherrihad been a volunteer memberof the Recreation Commissionfor almost six years. During thattime she helped on many proj-ects and attended the monthlymeetings. Now she has takenon the challenge of seeing allthose programs thru.

When it comes to all thoseexisting programs, as well assome new ones on the agenda,Sherri is happy to point out thatthere are many more than justher to take care of those programs. The current youth basketball league is a prime ex-ample. About 66 young partici-pants are taking advantage ofthe program. And the teachingand coaching is being done byhigh school athletes under thedirection of long time adulthelpers Jim Kinder and Lorie-ann Noyes. This young group ofup and coming stars will per-form at the end of this monthduring the Cohase Lions ClubBasketball Tournament.

Also later this month will bethe Winterfest at Mt. Lakes. Thisevent now has several years ofhistory and is presented in co-operation with the Mt. LakesRecreation Department. It isplanned for Saturday, February26 from noon until 4 PM at theMonteau Hill in Mt. Lakes.

The all new Full Moon Fi-esta, cross country ski orsnowshoe event at Black-mount Country Club also in-volves the talents of others.This event does require partic-ipants to BYOS (bring yourown skis/snowshoes). It willtake place on Saturday, Feb-ruary 19th from 6-8 PM. It is

suggested that you bring ahead lamp in case the moonand tiki torches don’t light upenough.

Also in February will be thefirst night of another new event.The Let’s Go Ice Fishing courseis co-sponsored by the NH Fish& Game Department and in-cludes training and then practi-cal experience in this age oldpast time. Please note that thisevent does have a limited atten-dance, so call soon.

The Haverhill RecreationCommission (HRC) is the mainsponsor of these events, butwith the cooperation of others,

fees are either low or free andmost are designed to encour-age intergenerational participa-tion. That is the buzz phrase forSherri and the HRC. Gettingpeople from all ages involvedwith the recreational activitiesthat currently exist. Plus theopenness to look at new proj-ects and accept new volunteersto join the HRC or to simplyhelp out on a given project.

Other ongoing programssupported by HRC and nowbeing led by Sherri include theSenior Stretching and the chil-dren’s play time. Both takeplace at the JRM Building inNorth Haverhill. One participantrecently mentioned that Sherriis good at stretching more thanjust their bodies.

Sherri Sargent alsostretches herself with her homeobligations. They are namedJane, aged 10, Matthew at 9and Abigail now 7, plus hus-band Sergeant Bradford F. Sar-gent of the Hanover, NH PoliceDepartment. The family lives inHaverhill and Sherri and Bradhave been married for thirteenyears.

Regarding the upcomingsummer Sherri hopes to con-tinue many of the past projects.That will include the Concerts in

Railroad Park, starting in lateMay and the Paddle the Borderevent also in late May.

Of course one of the main-stays for HRC has been theHaverhill Area Recreation Pro-gram (HARP) This youth pro-gram starts just after the Fourthof July and offers weekly daycamps. The full schedule will beposted later as Sherri and theHRC members finalize thisyear’s agenda. Part of thatschedule is sure to be swim-ming at the A.P. Hill CommunityPool. There is some issue withthe pool this year as a leak hasbeen discovered and will needto be addressed before the realsummer season gets under-way. The current plan is to putrepairs out to bid in earlySpring hoping to take advan-

tage of some local expertise.There also may be some fundraising events to keep this im-portant asset of the town upand running.

There are also at least twonew programs for this summerin the planning stages. A kayakgroup has been proposed witha pair of town employees vol-unteering to lead the assem-bled group. Plus there is wordof a hiking group to be led byChairman of the Selectboard,Wayne Fortier. A third possibleevent will be a community car-nival. All of these events alsokeep in mind the low or no costfor admission that the HRCworks toward.

The HRC is moving for-ward smoothly with their newDirector.

First of all I want to thank the voters ofthe Town of Haverhill for the tremendousprivilege of serving as a member of theSelect Board over the last 3 years.

I kept all three of my fundamentalpromises;1. To do a lot of listening and speak my mindwhen needed.

2. To faithfully attend as many meetings aspossible. In spite of my many ‘hasty’commutes back from Hanover, I neveronce got a speeding ticket. This is NOTdue to any lack of diligence from theHaverhill Police Department! [ I wish toespecially thank the Board for adjustingthe start time of meetings to make myattendance as possible as it was.]

3.To serve the full 3-year term; which I havedone.Now I read with great interest that Wendy

Warcholik has applied for the candidacy ofthe open position. Her credentials are veryimpressive and she would be a valuableasset to the board.

Now I would like to tell you a bit more ofwhat I personally know about her.

Wendy and her husband did a lot of

research to find where in New England theywould want to relocate and raise theirdelightful family. They chose Haverhill,specifically Woodsville. That is a wonderfulcompliment to us; the citizens!

My wife and I have been in their homewhich they are lovingly restoring. I’m nottalking about vinyl siding and cheap cabinets.They have invested the ‘sweat equity’ toRESTORE their home into a model for NewEngland architecture and quality.

While Sue and Wendy talked aroundtheir dining room table about many familyissues and concerns, Scott shared with metheir passion and vision for working with thecommunity to help improve other distressedhouses so that families might purchase themand turn them into homes.

I am delighted to be their friend, neighborand I am especially pleased to wholeheartedlyendorse her candidacy for the Select Board.My hope is that the town of Haverhill willwelcome her passion, education and drive.

Oh, and BY THE WAY, Scott would makean excellent School Board member also!

Letter To The Editor

Peter,

First let me thank you for your service to the Town of Haverhill as a

member of the Selectboard for the past three years. Your contribution to the

Town has certainly been noticed and appreciated.

Stepping forward to serve on any board in any town is a large commitment

that not every citizen is willing, or able, to make. It most certainly takes a

certain type of person to be willing to take a chair at the table that makes so

many important decisions for the citizens of any community.

With that said I am happy to see that Wendy Warcholik is willing to step

up to the plate and be considered for this position. As has been the case in

many past years, it appears at this time that there will be only one name on

the ballot for this particular seat. Again, not everyone can, or should, hold

such an important position. However, it is always good to have some

competition and therefore some debate regarding the incoming candidates.

I also would like to thank the Good Ol’ Boys group that on February 7

provided a forum for Wendy to air her views and answer some questions. I

truely hope that she is able to continue the tradition of good reasonable

citizens sitting on the Haverhill selectboard.

I should also note that the two candidates for Haverhill Schoolboard had

an opportunity to speak at the Good Ol’ Boys meeting. Current member and

chairman of the schoolboard Phil Tucker gave an update of some of the

current issues and future plans. Also Scott Moody addressed those assembled

to give his thoughts and ideas if elected.

Both of these candidates are also running unopposed on the ballot. Voting

will take place on Tuesday, March 8. Town meeting will happen that evening

and the Annual School Meeting will take place on Thursday, March 17. Both

at the Haverhill Cooperative Middle School.

To The Editor:Bradford, VT seems to be a wealthy Town. Those of

us who receive Water & Sewer bills are donating $7 everythree months to go into a Bradford Water and Sewer sav-ings account. In 2010, the voters of Bradford passed a$1.055 million bond issue for a water system upgrade inthe Fairground Road area, installation of a 500,000 gallonstorage tank, replacement of 16,000 feet of water mainand some mechanical and electrical improvements to anexisting well pump station.

A majority of voters said "Yes" to this proposal. Wehave since learned that the anticipated Rural Develop-ment Agency (RDA) funding, in excess of $3 million, willnot be available. Never mind. The Bradford W&S Com-mission decided to add the new bond fee to our Water &Sewer bill effective July, 2010. That was 3 billing cyclesago. The bonds for this project have not been issued, andmay never be issued, since the monies requested byBradford exceed the entire amount allocated by RDA forthe state of Vermont.

In November, the W&S Commission voted to creditback the Bond Fees paid ($14/rate payer). But, in Janu-ary, they decided, with input from their engineering firm,to keep the money received and continue to collect evenmore. So far they’ve billed approximately $13,000, fromour wealthy Town for a project the voters have supported,but may not ever happen.

Put your monies in your own savings bank. Don't letthe Bradford Water and Sewer Commission collect moneyfrom you for a specific purpose yet turn around and holdit for some purpose you did NOT vote on.

My response to this note will be fairly short

and I hope to the point. Remember, those serv-

ing on these boards are elected by the voters.

With Town Meeting right around the corner, and

other local meetings to follow, now is a great

time to be heard. But at the same time, don’t for-

get about the monthly public meetings that all

hold. If you have a question - ask it. If you have

a complaint or compliment - voice it. If individ-

uals do not get involved the members of what-

ever board it may be, will not have all the

information necessary to make a decision.

Bottom line: get involved.

The monthly meeting ofthe Three Rivers Business As-sociation (3RBA) had plenty ofupcoming events discussed.First and foremost was the up-coming annual Bridal Show.This event will again this yearbe held at the historic AlumniHall on Court Street in Haver-hill Corner. The Hall has seena wonderful rebound in use-age after spending someyears in subpar condition. Lastyear’s Bridal Show had plentyof great compliments aboutthe atmosphere of the buildingas well as the variety and abil-ities of the various vendorswho were present. Admissionto this event is free and affordsbrides-to-be as well as otherswho may be planning upcom-ing social events the opportu-

nity to see a great selection ofthose who can accommodatethose needs. The show is tobe held on Sunday, February27th from noon until 3 PM.

Also on the agenda for3RBA was Mardi Gras.Though the celebration lastsfor some time in New Orleans,it is just a single fun day in thisarea. The day is also calledFat Tuesday and this year fallson March 8th. Several localmerchants will participate withspecials, bead giveaways,music or whatever else theymay come up with.

Also in mid-March will beSt. Patrick’s Day. Always onMarch 17th, this year that dateis a Thursday. Again there willbe plenty of special events invarious business locations.The main objective from themembers of 3RBA for this cel-ebration will be raising moneyfor their scholarship fund. Pastyears have seen varyingmeans for raising these funds.This year the Association ishoping for some creativemeans of adding to that fund.Early suggestions includemerchants donating a per-centage of sales or a setamount from each customeron St. Patrick’s Day. More de-tails on this event will be re-leased at a later time.

As always there is astanding invitation for all mem-bers and non-members to at-tend the monthly meeting. Thenext meeting will be onWednesday, March 8 at 8 AMat the Wells River SavingsBank. NORTH HAVERHILL, NH –James Henry Hood, 79, ofBirch Lane, died on Thurs-day, February 10, 2011 at hisresidence, surrounded by hisfamily, following a valiantfight with cancer.

He was born in Newbury,VT, October 26, 1931, theson of Harley and MargaretGrace (Minshull) Hood.

Jim attended NewburyHigh School. He served withthe U. S. Army during the Ko-rean Conflict from November1952 to September 1954and with U. S. Army Reserveuntil July 1961. He marriedPatricia Bailey on November25, 1954. Jim worked forChuck Elms on the ElmsDairy Farm in North Haverhilland later went to work for PatBoudreault Plumbing andHeating. Jim obtained hismaster licenses in theplumbing and electricalfields. He owned and oper-ated James Hood Inc., aplumbing and heating busi-ness in North Haverhill, forover 20 years. He and Patowned the Roller Rink inNorth Haverhill. After closingthe roller rink, he opened aplumbing supply store in thesame building, selling plumb-ing supplies and appliances.Jim also owned P & WBuilders, building homes inand around the North Haver-

hill area for many years. Jimretired in 1988.

Jim and Pat wintered inFlorida for more than 25years. He is a member of theNorth Haverhill UnitedMethodist Church. A formermember of the Cohase-Woodsville Lions Club, Little-ton Elks Lodge in Littleton,NH, and North Haverhill FireDepartment. Jim was a lifemember of the VFW Post #5245 of North Haverhill . Jimenjoyed bowling, oil painting,and motorcycles. He pur-chased his first HarleyDavidson 30 years ago andhe and Pat took many tripson their bike. He will bewarmly remembered as ahard worker and loving hus-band, father, grandfather,and great grandfather.

He was predeceased byhis sister, Margaret Colbethand a brother, RaymondHood.

Survivors include his wifeof 56 years, Patricia (Bailey)Hood of North Haverhill; twodaughters, Evelyn Boutinand husband Ted of NorthHaverhill and BarbaraDiDomenico and husbandMike of North Haverhill; 5grandchildren, Dan Boutinand his wife Melinda,Christina Hannett-Patoine,James Hannett and his wifeAngela, Joseph Dellinger,

and Michael DiDomenico; 2great grandchildren, KassidyPatione and Aliza Boutin; asister, Vi Hatch of NorthHaverhill; two brothers,Harley “Tink” Hood, Jr. andWilliam E. Hood both ofNewbury, VT; and severalnieces, nephews, andcousins.

There will be no callinghours.

A funeral service was onMonday, February 14, at 1PM at the Ricker FuneralHome, 1 Birch Street,Woodsville, NH, with PastorElizabeth Siwo-Okundi, fromthe Wells River Congrega-tional Church, UCC, officiat-ing.

As A Caregiver?

February, the traditionalmonth for lovers, is alsoAmerican Heart HealthMonth, once again remindingeveryone that the most im-portant heart to love is theone that beats within yourbody.

Heart attacks, the lead-ing cause of death in Amer-ica and major cause of heartrelated disabilities strike overone million Americans eachyear for the first time, withnearly half that number suf-fering a recurrence. Recentstatistics claim that aboutevery 25 seconds an Ameri-can has a heart attack andeach minute someone dies.

Factors contributing toheart disease bear repeatingand are especially importantas our population ages. Ifyou smoke, have high cho-lesterol, high blood pressure,diabetes, heart arrhythmia,heart failure, are obese, eatan unhealthy diet and aresedentary, you are at risk ofa heart attack.

IS THIS A HEART ATTACK?

Some heart attacks are sud-den with intense pain, butmost start with mild discom-fort and pain. Signs include:Chest discomfort in the cen-ter of the chest that feels likepressure, squeezing, full-ness or pain, lasting longerthan a few minutes, that cango away and return.

Pain or discomfort onone or both arms, back,neck, jaw or stomach.

Shortness of breath oc-curring with or without chestdiscomfort.

Breaking out in a coldsweat, nausea or lighthead-edness.

If you experience any ofthese symptoms call 9-1-1immediately. It could saveyour life.

WHAT ABOUT WOMEN?Recent studies prove

that women are as likely asmen to suffer heart attacks,but because their symptoms

differ, may not report it untiltoo late. While heart diseaseis generally perceived as anolder woman’s disease, sta-tistics show that it is the thirdleading cause of deathamong women ages 25-44years old.

Women, typically don’thave the same center chestpain or left arm pain that sig-nal a heart attack in men.They may complain to theirdoctors about unusual fa-tigue, not sleeping well,changes in appetite, coldsweats, nausea or indiges-tion. Studies tell us that forthis reason they are lesslikely to receive treatment.

WHAT CAN WE DO?To prevent first time and sub-sequent heart attacks:Stop smoking! If you can’t doit yourself, there are manyhelpful products on the mar-ket. Join a support groupwhere you’ll meet peoplewith the same addiction whocan help you quit.

Eat a heart healthy dietand watch your weight.You’ve heard this so oftenthat you might be tempted to“turn a deaf ear.” A healthydiet is one of the bestweapons you can put in yourheart healthy arsenal, and itdoes not have to be boring.Here are a few tips:

Choose lean meats andskinless poultry and preparethem without saturated fats.Dip chicken in egg white,then lightly coat in a combi-nation of granulated garlic,Italian seasoning, chives,and a dash of salt free chilipowder or salt free Cajunseasoning. Whir about one-half cup oatmeal in yourblender and add it to the sea-sonings. The oatmeal pro-vides a boost of healthy fiber,helps lower bad cholesterol,and cuts down on sodiumand calories found in com-mercial breadcrumbs. Placeone-tablespoon olive oil in abaking pan and “oven fry” at350° until chicken is fullycooked.

Eat fish at least twice aweek. Salmon, sardines andtuna contain Omega-3 fattyoils essential to a healthyheart.

Eat at least one meatlessmeal per week. Pasta withleftover vegetables, sprinkledwith a little Parmesancheese and seasoningsmakes a healthy meal.

Reduce intake of transfats by eliminating foods andbeverages high in sugar, salt,cholesterol, saturated fatsand hydrogenated vegetableoils.

Consume fat free or lowfat dairy products along witha variety of fruits and vegeta-bles.

Women should have justone alcoholic drink per day,while men can have two.

Reduce portion sizes bynot filling your plate brim-full.Eat slowly as it takes yourbrain about 20 minutes to no-tify your stomach that it isfull.

helping you live a hearthealthy life.

GET MOVING!Taking the benefits of ex-

ercise to heart can keep yourheart strong and increaseyour enjoyment of life. Exer-cise can be anything youenjoy and gets you moving.

For instance:Get your heart pumping

by taking a brisk walk aroundtown, your neighborhood oranywhere you’d like. Walkingis also a meditative exerciseand good for lowering yourblood pressure. Find one orseveral friends and walk to-gether three times a week.

When you can, take thestairs instead of an elevator.Park your car further awayfrom the store than usual,and walk to the entrance.

Find other ways to exer-cise. Your heart will love youfor it, and chances are you’lllive a longer, happier, health-ier life.

Preheat the oven to 400°F.Toss the potato, sweet potato, bell pepper, carrots, and 2 tablespoons of olive oil in a 13 by9 by 2-inch baking dish to coat. Sprinkle with salt and pepper and toss until coated. Spreadvegetables evenly over the bottom of the pan. Arrange the onion slices evenly over the vegetable mixture. Arrange the zucchini over theonion. Drizzle with 2 tablespoons of oil. Sprinkle with salt and pepper. Arrange the tomatoslices over the zucchini. Stir the Parmesan and bread crumbs in a small bowl to blend. Sprinkle the Parmesan breadcrumbs over the vegetables in the baking dish. Drizzle with the last tablespoon of olive oil. Bake uncovered until the vegetables are tender, and the topping is golden brown, about 40minutes.

I will be the first to admit that much of what Icook on a regular basis is not what one mightconsider especially “heart healthy.” Likemany people of my generation, I grew upconsuming unlimited quantities of butter,cream, and lots of red meat. In the past fewyears, however, I have tried to make a con-scious effort to initiate little changes towarda healthier diet, without compromising taste.Probably one of my favorite ingredient mod-ifications involves the inclusion of olive oil. Ihave never liked using margarine (which allexperts agree is REALLY bad for you,) but Ido love butter, and I have found that in manyrecipes, you can substitute half the butter forolive oil, or eliminate the butter altogether,without sacrificing taste.In honor of February being Heart HealthMonth, I’m featuring this very scrumptiouscasserole. My neighbor, Betty, who was ex-tremely diligent about eating a healthy diet,brought this to me one day. Now, I am a truecarnivore, but I was surprised to find that Ireally didn’t feel like I needed to eat meatwith this to be completely satiated. In thesummer, I make this with fresh tomatoes, butin the winter, I just drain off the liquid from a

can of diced tomatoes, and that tastes great,too. Nutritionist claim that eating meatlessmeals on a regular basis is a good idea, butwhether or not you decide to serve meat withthis, I think that eating this casserole is oneof the easiest ways to make your day a littleheart healthier!

Do you remember when?Every town had a drive inmovie, there were chickens inthe back yard even in the city,tooth paste came in metaltubes, Clorox in glass bottles,penny candy really cost apenny, Burma Shave signs

made everyone laugh as thedrove down the highway, LifeLook, and Colliers magazinesall cost a dime, Chef Boy-are-dee Spaghetti Dinners wereconsidered exotic, chairs andsofa were protected with anti-macassars, you watched DingDong School, all women andgirls wore dresses unless theywere horseback riding, thenthey wore jodhpurs, morningand evening papers werethrown on the lawn by theneighborhood delivery boy ifhis aim was good, otherwisethey landed on the roof, folkssat in rockers on the frontporch in the evening to watchthe neighbors walk by andvisit, the flag had 48 stars.

(Editor’s Note – Trendy Timeshad such an across-the-boardsuccess with our last car arti-cle, “The Rides Of My Life”,that we thought we’d try an-other, this one a drive-by viewof cars gone by.)

Remember the Mercury?Of course you do. Until recently,they were still making and sell-ing them – since 1939 whenthey came with a 95hp V8. Pro-duction stopped in the lastquarter of last year. Therewere a couple of years whenthe nameplate sold huge –1978 nearly 600,000 and againin 1993, nearly half-a-million –but as of 2009, sales haddropped to less than one hun-dred thousand, small numbersin a big business.

I began to watch Americancars around the age of 10 inKansas City, Missouri in themid-fifties – could not getenough. Still can’t. (Do youever watch theBARRETT/JACKSON classiccar auctions on the SpeedChannel? Those half-centuryold beauties take me back tomy young amazement on all 8cylinders). Those formativeyears proved a fortunate acci-dent of timing because mostcars had personality then,character – you could tell onefrom the other. Buicks showedoff frowning big-toothedchrome grilles, older Studebak-ers sported wrap-around rearwindows on some two-doormodels; the trunk looked likethe hood and you couldn’t tellby looking if it was coming orgoing. And who could forgetCaddy’s tail fins, for ten yearsbetween 1948 and 1958, remi-niscent of World War Two p-38fighter planes. I was drawnmainly to GM’s – Cadillac,Buick, Oldsmobile, Pontiac,Chevrolet, including the earliestCorvettes – they first appearedin 1953. I also inspected thor-

oughly any of the luxury boatsI came across – big heavy four-door sedans (some maroon,most grey or black) with fold-down armrests, electric clocks,footrests and cigarette lightersand reading lamps for BACKSEAT passengers, thick car-peting, luxury upholsterythroughout. I could tell youwhere the license plate lightswere located.

After WWII, Kansas Citywas a rude, crude hopping bigcity, sprawled out on bluffsabove the Missouri River, westclear across the state from St.Louis. Half-a-million people, atown suffused with cash frommeat-packing, railroads andlumber, all in the glad hands ofpeople who liked spending itand were good at it. Spent it onJazz music and drinking andgovernment corruption andprostitution and big steaks,huge mansions and municipalparks and fountains and thefanciest cars that Detroit built inthe 40’s and 50’s – Packard,Lincoln, Hudson, Imperial.

Only one nameplate fromthat list remains.

And there were Mercuries.My grandfather owned one, a1953 or ’54 Monterey, “little Lin-coln”, two-tone, dark-blue overlight blue, two door hardtop, air-conditioning, power steeringand brakes, lots of chrome in-side and out and slanting backtail lights, and of course, a bigV8 engine, the body threeinches longer and lower to theground than the Ford that year.It looked and felt expensive.That’s a mid-fifties Merc Lucyand Ricky are pulling “TheLong, Long Trailer” with in themovie of the same name.

Back in my boyhood, wetook trips in my Mom’s earlyfifty’s Chevys to A&W for frostycold real glass mugs of rootbeer on muggy hot KC sum-mer nights, on our way to drive-in movies. That’s right, drive in

movies, double-and triple fea-tures and lots of cartoons andbig tubs of BUTTERCUP pop-corn and I was at the age whenthe giant picture in front of mewas of far more interest thanthe back seat – that wouldchange soon enough.

What a vehicle was mygrandfather’s Merc. Comparephotos of the Fords and Lin-colns of the time and the Merclooks more like the secondthan the first. Not just a“gussied-up” Ford, it was reallya “Junior Lincoln”.

There was quiet pride inGranddad’s eye when hewheeled that fine automobileslowly through the neighbor-hood – “Yes folks, take a goodlook, this may not be a Lincoln,but it sure isn’t a Ford.”

Other cars no longer withus – Saturn, Oldsmobile, Pon-tiac, Plymouth. All of them dis-continued in just the last fewyears. Go back further – theCorvair- the Desoto, fromChrysler- positioned to com-pete with Buick or Olds. Andthe Imperial, Chrysler’s topbrand to compete with Lincolnand the Caddy. Back even fur-ther – the Studebaker again,the company begun in the1850’s by a fellow who builtwheel barrels and then coveredwagons for miners and the mil-itary. Tucker, no more. Nash?There was one in our family, a huge upside-down-boat-shaped touring car – the seatsfolded down flat inside the mid-fifties vehicle, and you had onelarge plastic covered bed tocamp out in on long trips.There were the Kaisers andFrasers, really two differentdeluxe cars, built by the samecompany, as well as the econ-omy level Henry J. – kind oflooked like a mini 1948 Cadillacfast back with little tail fins.

Way back now – Howabout the air-cooled engineFranklin? Stutz/Bearcat, andthe incomparable Duesenberg.Remember the Oakland? Nei-ther do I. But Dad did. GM po-sitioned it just a notch abovethe Pontiac, and not quite anOlds, for several years back inthe teens and early 20s. Howabout the LaSalle? No? Madeby GM, and doggone near aCadillac, just above a Buick.Caddy started producing acouple of lower end entry-levelluxury choices, and Buick up-graded a model or two, andboom, that was the end ofLaSalle. My father’s fatheronce owned one. We’ll talkabout Vikings and Marquettesanother time.

I look in the mirror, and I’vechanged. Lots a miles on thischassis. The cars I recall andresearch have not aged a day.Immortal.

Rey andMargret Rey also used towrite several of the famouslittle chimp‘s adventures in acottage now dubbed “TheCurious George Cottage”.But, the story I’m about to tellyou has nothing to do withpoliticians or a mischievouschimp. However, it does haveto do with a creature that hasbeen reported to lurk aroundthe darkest corners of theWhite Mountain NationalForest.

Our story begins with aman who takes his wife anddaughter annually to a trip toWaterville Valley’s WhiteMountain National Forest.According to the reports, theonly problem the family hadwas not with the locals, butwith the locals bears. But, hewas in for a big surprise.

The man reports thatwhen everyone went tosleep, that’s usually his timeto build a fire. Fires aremeant to be enjoyable, butnot when you start to hearnoises such as this gentle-men did this one night in2001. But, the sound wasn’ta bear grunt, an owl, or adeer breaking a branch. Itwas “sneaky” as the camperput it. As if someone waswatching them and that feel-ing is never welcomedamong the masses. Heturned his flashlight to thesuspected noise.

“What I saw haunts meeven now”, the man said inhis report to About.com’sParanormal section.

Something was in thetrees as he flashes the lighton the face, he was startledby the sight of something.More like a living being. Thething was grey, naked, verymuscular, and huncheddown. It’s face was wide, if itwas to stand it would be five

maybe six feet tall. It’s skinwas human like, but withmore of a leather like feature,and it’s eyes were maybe thefreakiest part described inthis man’s sight. They werebig, but even with the light onthem, they were as black ascoal. Another feature was hislegs, which were muscular,but backwards like a birds.Whether or not the thing wasstartled by the flashlight isamong anyone’s guess as itjust looked at the camper.The creature then jumped offthe trees and was out of thesight.

The man went in andwoke up his wife, daughterand a friend who taggedalong. They, of course,thought he was crazy. Theyfell asleep while he decidedit was best to sleep in thevan. Can’t really blame him.

The man wasn’t lucky thenext year though. He did thesame routine as last year bymaking a fire and just enjoy-ing the great outdoors likeanyone can in New Hamp-shire. He then heard a noise,thinking it was a bear due toa bear problem in the area atthe time. He started to makenoise hoping it would goaway, but the sound just gotcloser. He shined his light inthe direction of the noise andthere was the creature again.It was around the tree line.The camper then disre-garded his light, letting thelantern shine upon him. Hewas afraid, but the mind won-ders sometimes, and he gotthe crazy idea to actually goover to the creature. Hestepped closer to him, mak-ing sure not to make anysudden movements that thecreature maybe think isthreatening. He got within 20feet of it, and the creature

jumped back and disap-peared in the night.

The man has stated thathe looks forward to goingnext year(which in this storysense would have been2003)to see the creatureagain. However, there is noupdate on the man or thecreature. I hope for his sake,the creature does exist, be-cause it seems like a crea-ture who means no harmand is just one of those crea-tures of the night who get cu-rious, like Big Foot(whobelieve it not has also beenspotted in the Granite State).

Let's begin with how anexorcism really gets started.That's exactly what The Rite,directed by Mikael Håfströmdoes. It begins with a youngmortician named MichaelKovak, played by Colin O'Donoghue, trying to find hisplace in the scheme of things.He decides to take the onlyother way out in his familyand become a priest. Soon,however, he realizes that hisfaith isn't really what it shouldbe for this line of work and be-gins to have doubts aboutwhat he really wants out oflife. But things don't always gothe way that you want themto. After submitting his resig-nation before his final vowshis mentor at the universityhas a little chat with his favorite pupil. He decides thatit's best for the faithless priestto go to Italy. There he will beentered in to a course for exorcism at the Vatican.

But here he is also amisswith the world around him.Being more interested in thepsychology of things he isquick to doubt his teacherand find alternative meansfor possession symptoms.Disappointed in his faithless-ness his newest teachersends him to the only personhe knows that could bringthe boy around, FatherLucas, played by AnthonyHopkins.

Now Father Lucas is any-thing but an orthodox priest

according to the Catholicfaith. On Kovak's first visit tosee Father Lucas he isthrown directly into an exor-cism of a young, pregnantgirl. But after seeing thedarker side of his religionKovak is still far from con-vinced of the existence ofanything other then himself.As time goes though, hefinds himself Father Lucas'constant companion, wit-nessing things that wouldmake any believer fall to theirknees and pray. Kovak staysdoubtful however until FatherLucas shows him that theage old saying 'you shouldbelieve in the devil, becausehe believes in you' is muchmore then just a saying.

Keeping with most tradi-tional possession symptoms(arched backs, throwing up,speaking in tongues) this filmgives you everything you expect of an exorcism film.However the spin on thestory line is something thatvery few have dared to dobefore. The Rite is a re-fresher from most of themovies in this genre thathave come out in the pastcouple of years. Addingsome new ideas to what's really happening in the worldof religion and leaving people thinking twice aboutwhat they really believe in.

I was struggling with anidea for this column and one ofthe 4-H alumnus that work inthe office said, “Why don’t youdo a column on public presen-tations?” When I pressed herfurther, she started talkingabout all the things kids learnwhen having to do a publicpresentation.

I got to thinking, she wasright.

I started rememberinghow I started in public presen-tations. I don’t remember thefirst time I was asked to talk infront of a group, but I do re-member a time at 4-H ClubCongress at Cornell when Iwas asked to introduce theguest speaker. There wereabout 1,000 of my peers in theaudience. I got up on stage,full of confidence, went to intro-duce him, and froze. Thehouse lights were up justenough that I could see all1,000 of my fellow Club Con-gress delegates. Out of mymouth came, “Wow. Theresure are a lot of you out there!”Everyone laughed, and so didI…and then I went on to intro-duce the man.

I know in my ten years asa 4-H member I did numerousdemonstrations and public pre-sentations that helped mebuild the skills needed to bethe person I am today. Wehope all 4-H members learnhow to present themselvesand their ideas in public.

Who would think that theyoung lady who is now a keypart of our Extension staff,once had to be convinced tostand up and give reasons at a4-H livestock judging event?

What about the young ladywith learning challenges, whoneeded quizzes at the horseshowing events read to her, buthad the courage to write andpresent a public speech on ahorse topic, earning her a tripto the National Eastern 4-HHorse Round Up in Louisville,Kentucky? And the mother ofthe same gal who called me upone morning to report, afterher daughter’s first collegepublic speaking presentation,that she earned the grade ofan A. Her daughter reported,“It was because of 4-H, Mom!”

What about the 8 year oldwho decided at the quilt weekpresentation to parents andfriends that someone needed

to show these folks how to op-erate a sewing machine? Byherself, with a little help from ahigh school age friend, sheprepared a 5 minute demon-stration on how to use asewing machine, and did it infront of 70 people.

I’ve been here longenough to remember a Clover-bud who did a Food Showpresentation, licking more ofher product off her fingers thanactually got on her plate, to seethe same 4-H’er win our SeniorCook Off contest, and go on toa national cooking competitionto represent her school…andher future career as a chef.

Or the 4-H alumus who justgot a promotion with a localbank. Did she learn how topresent her ideas and get herpoint across as a youth leaderduring her 4-H experiences?

Then there’s the younglady who interviewed for a 4-Hawards trip. The first year sheinterviewed, she was shy andreserved. The second year,she walked into the room,shook the judge’s hand andstated her name. When askedwhy she wanted to representNew Hampshire at this event,she eloquently spoke about herfamily’s farm, her passion forraising dairy cows and how we,as a county, a community anda state, needed to look at pro-tecting farm lands and ouragrarian roots to feed our pop-ulation, as well as preserve thelifestyle we’ve come to GraftonCounty to celebrate. She waslater asked for her input on animportant issue of land use byone of the county commission-ers, all because of her interviewand her experiences in 4-H.

A young person’s first pub-lic speaking adventure may bein 4-H where they learn tostate a position and researchinformation to support theirstand. One mom, when re-

cently asked, reported to meabout her son who took a po-sition about a group at hisschool that he felt was neededby the student body. Sheshared with me that he pre-pared well, presented his ideasto faculty and board membersand was lauded by one of histeachers for his eloquence andability to present the informa-tion in a non-controversialmanner. The group has beenestablished at his school.

Have you ever been to theNew England Building at East-ern States? Those young peo-ple doing demonstrations andaction exhibits are all 4-Hmembers. They started withtheir local clubs and countyevents, learning the skills ofmarketing an idea to the public.

There are so many morestories of confidence, courageand growth I could relate, butwhy not see for yourself? Thepublic is welcome to attendany of the 4-H events to seethese kids in action performingpublic speeches, doingdemonstrations, action ex-hibits, helping to present les-sons or whatever else theproject meeting or event re-quires. Town Meetings in Vermontand New Hampshire come atus very early this year. MostVermont towns will go to thepolls and face a list of warrantarticles on Tuesday, March 1.Please check with your localTown Clerk or other town offi-cial to get exact notification oftime and place. In New Hamp-shire another week will passbefore most towns have theirannual meeting. Tuesday,March 8 is the date.

Town meetings in thesmall towns in which we all liveoffer an opportunity that a ma-jority of the people of this worlddo not enjoy. Everyone hasseen the recent uproar inEgypt among the people want-ing a better say in their govern-ment. Though we are farahead of what appears to behappening there, if we do notcontinue to exercise our rights,then we are sure to begin los-ing them.

Town Meeting offers awonderful chance to stand upand speak. Town Moderatorsare your neighbors andfriends. They hold a positionthat is key to a good exchangeof thoughts at these meetings.It is the job of the moderator togive everyone who wishes tospeak that opportunity. It isalso their job to keep a senseof control. If you know ahead oftime that you wish to addressa particular article, take the

time to let the moderator know.It makes his job easier, and in-sures your chance to speak.

Though every town is dif-ferent, there are sure to bequestions regarding budgetsfor regular operating ex-penses, as well as donationsto various entities at most ofthese meetings. Be preparedas much as possible with infor-mation to make a good deci-sion. If you are not sure, don’tbe afraid to ask, someone elseprobably has the same ques-tion. Be sure you know whereyour town is going and how itplans to get there.

But above all, if at all pos-sible, attend your town meet-ing. Let your voice be heard.Let your vote be counted. Andbe respectful of those incharge. Their job is tough andthe thanksare rarely enough.

Now a note to all theelected officials. Please treatyour citizens with respect.Most voters do not know all thedetails of budgets as well asyou. That is just the way it is.But when asked to explain adecision, or comment on aproposal, remember, they arethe people paying the taxes.They are your neighbors andfriends. They are the ones whovoted you into office. They arenot the enemy.

With mutual respect fromboth sides of the table, townmeetings can be fruitful, rea-sonable, and in order.

raiser was held at theStonecliff Animal Clinic inBradford VT. Refreshments ofhot chocolate and cookieswere donated by HannafordMarket of Bradford, VT andthe employees of WoodsvilleGuaranty Savings Bank.Thank you to all the pet own-ers who purchased a light inmemory of their beloved pets.

Also a big thank you tothe Wells River SavingsBank for the donation ofmoney and pet food and toyscollected at their Christmasfund raiser in memory ofSeth Conrad.

All of these donationshelp to carry on the work ofTwin State Humane Societyin sheltering, rescuing andcaring for many grateful catsand kittens.

LITTLETON — The Board ofDirectors of the Arts Allianceof Northern New Hampshireis pleased to welcome DebraCottrell of Chocorua as theorganization’s new CreativeEconomy and Cultural Festi-val Coordinator.

Cottrell was hired by theArts Alliance to work on Cre-ative Economy activities andprograms focused on theWeeks Act Centennial. Thisyear marks the 100th an-niversary of the Weeks Act,important federal legislation— named after Lancasternative John Wingate Weeks— that allowed the ForestService to purchase privateland and turn it into publicforest, including the White

Mountain National Forest.The Centennial honors thetradition of conservation andpartnerships exemplified bythe act. Cottrell will be work-ing throughout 2011 withArts Alliance members andpartners on collaborativeprogramming celebrating theCentennial, including the“Eight Days of Weeks” WhiteMountains Cultural Festivalin August.

“This is a very importantyear for New Hampshire citi-zens. I am really excited tobe joining the team at theArts Alliance and to be work-ing on the Weeks Act cele-brations in the North Country.The region is full of beautifulforests with an incredibly rich

history, and we have manytraditions that were influ-enced by the woods aroundus,” says Cottrell. “The ArtsAlliance will be working to getas many people and organi-zations as possible directlyinvolved in the celebrationthroughout the year and par-ticularly during the culturalfestival during the four week-ends in August.”

Cottrell, a folklorist on theNew Hampshire State Coun-cil on the Arts TraditionalArtist roster, holds a Master’sDegree in Folklore from Indi-ana University, a SecondaryEducation Degree from theUniversity of South Florida,and a Bachelor’s Degree inTheatre from Florida State

University. For more than 14years she served as Directorof Education at the RemickCountry Doctor Museum andFarm in Tamworth. She alsoserved as a field researcherand presenter for the NewHampshire program at the1999 Smithsonian FolklifeFestival in Washington, D.C.and for the expanded re-creation of that program atthe “Celebrate New Hamp-shire Festival” in Hopkinton in2000.

“Deb is a perfect fit forthis position, with her strongbackground in both the artsand education and her dedi-cation to northern NewHampshire, our heritage andour future. Her experienceand skills will make a greatcontribution to the Weeks ActCentennial activities,” saysArts Alliance Executive Di-rector Frumie Selchen.

LITTLETON - The Arts Al-liance of Northern NewHampshire invites memberartists to submit up to threeimages for consideration forthe second in a series ofNorth Country note cards.The images should reflectthe artist’s interpretation ofthe Weeks Act Centennial.This year marks the 100thanniversary of the WeeksAct, important federal legisla-tion — named after Lan-caster native John WingateWeeks — that allowed theForest Service to purchaseprivate land and turn it intopublic forest, including theWhite Mountain National For-est. Throughout 2011 theArts Alliance will be workingwith its members and with

partners around the state oncollaborative programmingcelebrating the Weeks ActCentennial. The WeeksAct note cards will be usedfor a variety of Arts Alliancecommunications. We all that there is directrelationship between thequantity of fat we consumeand the quality of health wecan expect. During this cen-tury, Americans have in-creased their intake of fatcalories by over 33%. Thelink between high salt and fatintake has also becomeclear. Excess salt inhibits thebody’s capacity to clear fatfrom the bloodstream. Warn-ings and discussions aboutfat have filled the media inAmerica for decades. Butmuch of the information iscontradictory and inaccurate.I hope this article simplifiesthe confusion, especially asit relates to choices made fora healing diet.

SATURATED &UNSATURATED FATS:

All foods contain satu-rated and unsaturated fats invarious proportions, (the dif-ference is in molecular struc-ture) with animal foodshigher in saturated fat, andexcept for palm and coconutoil, vegetable foods higher inunsaturated fat. Saturatedfats are solid at room tem-perature, as in butter or meatfat. They are the culprits thatclog the arteries, and lead toheart and degenerative dis-ease. Unsaturated fat, (monoor polyunsaturated) is liquidat room temperature, as invegetable or nut oils. Al-though research supportsunsaturates as helping to re-duce serum cholesterol, justswitching to unsaturated fatswithout increasing dietaryfiber will not bring about im-provement. In fact, consum-ing moderate amounts ofboth kinds of fats, coupledwith a high fiber diet, willbenefit most people.

HYDROGENATED FATS:Hydrogenation is the

process of taking poly-unsat-urated oil and bubbling hy-drogen through it to causereconstruction of the chemi-cal bonds and delay rancid-ity. It unsaturated fats suchas corn oil into saturated fatssuch as margarine. Muchtesting has shown that thesealtered fats are comparableto animal fats in terms of sat-uration and poor utilizationby the body. A good alterna-tive to margarine or shorten-ing, much lower in saturatedfat, is a combination of equalamounts of warm butter withvegetable oil.

OMEGA 3 & OMEGA 6FATTY ACIDS:

Omega 3 oils are a familyof fatty acids high in EPA(eicosapentaenoic acid),DHA (dihomogammali-nolenic acid), and GLA(gamma linleic acid). They in-clude cold water fish oils,walnut oil, canola oil, wheatgerm oil, evening primroseoil and flax oil. Research hasindicated that treatments forPMS, high blood pressureand rheumatoid arthritis ben-efit from the use of thesefatty acids. Omega 3 oils arealso a specific for the 30% ofthe population trying to keepserum cholesterol levels low.Omega 6 oils are the groupof fatty acids high in linoleicand arachidonic acids, andinclude sesame, sunflower,safflower and corn oil. BothOmega 3 and Omega 6 fattyacids stimulate the formationof prostaglandins.

Prostaglandins are pro-duced by every cell in thebody, and control such thingsas reproduction and fertility,inflammation, immunity andcommunication between

cells. They also inhibit theover-production of thrombox-ane, a substance in the bodythat promotes clotting.Therefore, because bloodtends to clot in narrowed ar-teries, (the major cause ofheart attacks prostaglandinsare essential to health.

LIPIDS: CHOLESTEROL &TRIGLYCERIDES:

Lipid is an inclusive termfor a group of fats and fat-likesubstances essential tohuman health. Lipids arefound in every cell, and areintegral to membrane, bloodand tissue structure, hor-mone/prostaglandin produc-tion, and nervous systemfunctions. Triglycerides aredietary fats and oils, used asfuel by the body, and as anenergy source for metabo-lism. Phospholipids are fatssuch as lecithin, and choles-terol, vital to cell membranes,nerve fibers and bile saltsand a necessary precursorfor sex hormones.

HDLS & LDLS (HIGH AND LOW DENSITYLIPO-PROTEINS):

Lipoproteins are water-soluble, protein-covered bun-dles, that transportcholesterol through thebloodstream, and are syn-thesized in the liver and in-testinal tract. “Badcholesterol”, (low densitylipo-proteins) carries choles-terol through the blood-stream for cell-buildingneeds, but leaves behind anyexcess on artery walls and intissues. “Good cholesterol”,HDLs (high density lipo-pro-teins) helps prevent narrow-ing of the artery walls byremoving the excess choles-terol and transporting it tothe liver for excretion as bile.

MONO & POLYUNSATURATED FATS:

Olive oil is a mono-unsat-urated fat that reduces theamount of LDL in the bloodstream. Research shows thatit is even more effective inthis process than a low fatdiet. Another oil high inmono-unsaturated fats iscanola or rapeseed oil.

Poly-unsaturated veg-etable oils are the chiefsource for the “essential fattyacids” (linoleic, linolenic andarachidonic) necessary toproper cell membrane func-tion, balanced prostaglandinproduction and many othermetabolic processes. Goodpoly-unsaturates includesunflower, safflower, sesameoil, and flax oil, one of thebest sources of essentialfatty acids.

VEGETABLE OILS:All vegetable oils are free

of cholesterol, but some con-tain synthetic preservativesand are heavily refined,bleached and deodorizedwith chemical solvents. Oth-ers are simply mechanicallypressed , filtered and bottled.The highest quality freshvegetable oils are rich inOmega fatty acids and es-sential to health in their abil-ity to stimulate prostaglandinlevels.

Unrefined oils that areexpelled or mechanicallypressed go through the leastprocessing and are the mostnatural. (Cold pressing ap-plies only to olive oil.) theyare dark with some sedi-ment, and a taste and odorof the raw material used.

Solvent extracted oil is asecond pressing from thefirst pressing residue.Hexane is generally used to

enable the most efficient ex-traction, and is then burnedoff at about 300 degrees toevaporate the Hexane. Eventhough small amounts of thispetroleum chemical remain,it is still considered an unre-fined oil.

Refined oils go throughseveral other processingstages, such as degumming,which keeps the oil fromgoing rancid quickly, but alsoremoves many nutrients, in-cluding vitamin E. Refinedoils are de-pigmentedthrough charcoal or clay,clarified through deodorizingunder high temperatures,and chemically preservedwith additives. Refinementmeans that the oil is clear,odorless and almost totallydevoid of nutrients.

**Remember that natu-ral, unrefined oils are fragileand become rancid quickly.They should be stored in adark cupboard or in the re-frigerator. Purchase smallbottles if you don’t use muchoil in your cooking.

WHITEFIELD — ShortyBoulet is well-knownthroughout the region as anoutstanding bones player.Put the bones – or spoons –in Shorty’s hands and watchout! The incredibly gifted mu-

sician, who turned 90 onDec. 27, has played with nu-merous fiddlers and countryand blue grass bands, con-tributing his special flair withthe bones to hundreds ofmusical numbers.

Recently, declininghealth forced Shorty to giveup the bones and move fromhis Whitefield home to theMorrison nursing home andassisted living facility. Hisstrong ties with the musicalcommunity remain, though,and on Sunday, January 9, agroup of musicians gatheredat the Morrison where theyentertained Shorty, otherresidents, staff and familymembers in a two-hourshow.

The afternoon event wasorganized by Shorty’s long-time friend Alan Astle andMorrison’s activities directorMelissa Belisle. “I was in-spired by the Back Shedgroup,” says Alan. “Theyplayed once at his house andonce at the Morrison. It in-spired me to get people to-gether who he played withover the years.”

On January 9, more than40 people gathered in theMorrison’s dining room to lis-ten to old musical standardsand fast fiddle tunes servedup by Shorty’s musician

friends. Among the groupwere Lt. Col. Dave Bradleyon the stand-up bass; hisbrother Lester Bradley onguitar; Joanne Osgood onfiddle; Ken Osgood on sev-eral differently pitched har-monicas; Hannah Hill onfiddle; Bernard Merrill ondobro; Clyde Cassidy on gui-tar and singing; Ron Howard,on right-handed guitar andleft-handed mandolin; KimLaDuke on guitar; and ErnieDuffy on bones.

Shorty moved to White-field over 30 years ago, andfollowing his retirement fromBrown Street Furniture heworked for several years forAlan when Astle’s was still inoperation in Kings Square.The two have remainedfriends every since, and itwas obvious during the con-cert that Shorty was pleasedwith the musical gig Alan hadarranged. Shorty sat right upfront, and the smile on hisface conveyed the delight hefelt in listening to the greatmusic being played. With alittle encouragement, Shorty

also took a turn on thebones, accompanied by fel-low bones player, ErnieDuffy, with the duo demon-strating the wonderful rhyth-mic sounds that can beproduced by the simple in-strument.

“We believe it is eventssuch as these that help makeMorrison a home for both theresidents and their families,”said Executive DirectorRoxie Severance. “We are al-ways looking for opportuni-ties to invite communitymembers to visit Morrison,whether it’s for individual vis-its or for events like this con-cert.”

The following came via emailfrom a reader. It will certainlygive you pause.

The War in Vietnam wasnot nearly as tough as it waslong. Very long. Many died –around 58,000 I am told. Butthere was another war thatwas going on before, superim-posed upon, and continuedafter the shooting war in IndoChina. It was seldom men-tioned and less frequently re-ported. Make no mistakeabout it - the real heavy liftingwas done in that one. It lastedeven longer than Vietnam’seleven years. No bombs weredropped in this one, and noshots fired. A good thing too,because it was a Table Stakeswar. You didn’t hear about itbecause neither player calledeach other’s hand. The betwas too high. So high that thewinner would also lose. Andwe/you are alive today be-cause that hand was notcalled. And so no one reallymentions that war. Since it didnot bleed, it did not lead.

We won that war in 1989.The other side just quit – wentsilently in the night. And noone noticed. And very fewappreciated that the threadholding the sword of Damo-cles had not broken.

The attached pictures arejust one very small piece ofthat war. It is one of about onehundred such aircraft in Eu-rope, Italy, Turkey, Germany,England, Okinawa, SouthKorea, and Taiwan that sat nu-clear alert every day, all day,

all night, and all the days ofthe year, and all the years ofthat 55 year war.

All routes, times, andaltitudes committed to mem-ory. There on the hard standsthe fighter awaits the fighterpilot, the deadly catalyst re-quired to produce the ultimateArmageddon.

The attached picture cap-tures all. The F-105 with theend of civilization in her belly,the pilot’s helmet and para-chute neatly placed in theempty cockpit, the desolatehardstand whose only com-panion is the Air Policemanwith orders to shoot to kill ifany unauthorized intrusion isdetected. And the words in-side the sealed plastic en-velop on the top of theinstrument panel. Waiting.

The claxon sounds.Fighter and bomber pilots andcrew chief (always dressedand ready) race to their plane.The chief pulls the gear safety

pins and completes a dozencritical checks as the pilotraces up the ladder you seelaying on the ground. Thecanopy is already unlocked. Islip into the cockpit, my handsautomatically turning on thebattery while I click on thecockpit lights, slip into thechute, fasten my helmet strap.With a glance at my chief'snodding approval, I depressthe start button. The engineclimbs through her octaves toidle. I close the canopy andcheck in with the commandpost. I receive the words. Iopen the envelope knowingthat in two more minutes I willeither be on my takeoff rollwith afterburner’s flame accel-erating us towards a Sovietmissile site in Siberia ensuringthe end of the known world, orin the alert shack trying to getback to sleep.

And I live in this alert padten days each and everymonth. Ready. Prepared. Nodoubts. I am 23 years old.Married. One child. For this Ireceive $525 each month.That, and the trust and confi-dence of my country and thelife long companionship of true

warriors. I was never youngagain.

By the way most our tar-gets were one way mis-sions….. why you ask?Because we knew that our

home bases weren’t going tobe there “if” we got back. Iguess it sort of explains whywe did so much partying in ouroff time.

The Way It Was - Fifty years Ago
