AMARILLO, TX -- The aroma of chili filled the Rex Baxter Building on the Tri-State Fairgrounds in Amarillo, Texas on Saturday, January 9, for the 33rd Tri-State Open Chili Championship benefiting Make-A-Wish North Texas. This event has become a large community affair and draws hundreds of spectators to taste the chilis offered by 105 cooks, buy raffle tickets, purchase items in the silent auction and support the Make-A-Wish Foundation. There were cooks from Arkansas, New Mexico, Oklahoma and Texas. Also attending their first chili cookoff where spectators from England, Germany, and Spain.

I sure hope everybody in CASI has completely recovered from a busy, happy and healthy holiday period.

There is a ton of CASI work going on right now, all aimed at getting ready for the big one, the 50th TICC. Between now and the 50th, the board will have the winter meeting, a summer meeting, and then the 37th Annual Great Pep-per’s Meeting, once again in Austin at Holiday Inn Midtown, September 9-10. The Pods of the Texas Hill Country will be the hosts this year and Renee Moore will be the GPM Committee Chairman, coordinating the event with the Board of Directors and Great Peppers.

One thing you might want to prepare for are the upcoming elections for director positions at the 2016 GP meeting. For all of you who are interested in or thinking about running for a position, please contact me by email or call me as soon as possible for an election schedule and instructions on what you need to get done. Five Director positions are opening in the 2016 election window.

I had a long conversation with Ken Rodd on the work being done by the CASI Membership/ Review Committee. The group is brainstorming any and all possible ways to energize recruiting new CASI members. It isn’t a surprise that CASI experts say the best, most effective way to bring in new members is by being completely friendly to everyone you meet at your local cookoffs. That means step-ping up and telling folks what CASI is all about. Invite them back to another cookoff and offer to help if they are willing to cook for the first time. In 2016, make it a mission to recruit new CASI members.

Don’t ever forget that this is all about “Chili, Charity and Fun.”

The Sons of the American Legion sponsored and American Legion Post 517 hosted a CASI-sanctioned chili cookoff on Saturday, December 26, 2015. Twenty-two cooks, including TICC 2015 champion James Burns, competed. Burns won first place Show-manship and second place Chili. His wife, Sherry, took first place Chili, and his granddaughter, Hannah Harrigan, won second place Chili as a first-time cook. All three live in Point, TX. Other Chili winners were 3rd, Laura Semmes, Dallas; 4th, Harvey

West, Telephone, TX; 5th, Reggie Graves, Shreveport, LA; 6th, George Bienfang, Dallas, TX; 7th, Paul Sea-strunk, Garland, TX; 8th, Jerry Hunt, Shreveport, LA; 9th Dwaine Williams, Waxahachie, TX; and 10th, Cathy Williams, Waxahachie, TX. To help you advertise your pod cookoff we allow each pod to place one quarter-page ad in the Terlingua Trails each year, free of charge. This ad should run the month before your cookoff occurs. Should you decide that you need an ad larger than a quarter-page, we will simply bill you for the difference in price. This ad should not be confused with the article advertising your cookoff in the "Cooking with CASI" section in the Terlingua Trails.
