Life is like a square dance. With every do-si-
do we meet or leave a friend.
While returning from enjoying lunch with
two friends at the Otesaga Hotel in
Cooperstown, my wife and I were feeling like
the weather, a little gloomy.
We enjoyed a delightful lunch which ended
with hugs and handshakes as we were
saying, “So long for now.” Our feeling could
be expressed in words by the famous song,
“So long, it’s been good to know you,” while
absolutely believing we would see them
again someday.
It’s both strange and yet wonderful how
God brings friends into a person’s life – for
a time – then like changing seasons,
causes life with its friends to change.
Similar to seasonal change, friendships
last forever. Friends will forever be in our
hearts and minds.
As we drove north out of the village along
Glimmerglass Lake, our feelings were
brightened by the beautiful fall colors. A
swirling breeze was chasing the leaves
across the fields and a gray squirrel with
his furry tail standing as a mast
scrambled across the road. It could be
wondered, “Why did he cross the road?”
Possibly like the hen – “Just to get to the
other side.”
While writing this “Hello Again” I am sitting
in our motor home next to the Mohawk
River. A stiff breeze is filling the air with a
quilt-like pattern of colorful leaves. I would
like to suggest to the Lord that he slow
down the breeze as I’m not in a hurry to see
the fall colors disappear. On the other
hand, do you think he needs my opinion? –
Probably not.
Remember – a couple of weeks ago we were
chatting about pondering. Sometimes I
enjoy wandering off by myself for a quiet
time of pondering. I cannot remember ever
solving any national problems but one day I
did wonder about George Washington, who
is thought to be the father of this country,
is he not? If he practiced same-sex
marriage, what would he be called? “A man
without a country?”
Every year we enjoy hearing the honking of
Canadian geese flying over our valleys.
Usually they form a large “V” but on
occasion form a straight line. I wonder why
– or what – is the difference. So far this
year, no geese, and again I wonder why. If
they have changed their flyway, that will be
our loss.
Fall to most is Indian corn, colorful gourds,
corn harvesting, potato digging, apple
picking, drinking sweet cider, church
dinners, turnips, pumpkins, and Jack-O-
Lanterns, while looking forward to the
Great American tradition of Thanksgiving.
Wouldn’t it be great if we could invite an
American Indian family to enjoy
Thanksgiving dinner with our family? Our
kids would talk about it forever. What a
memory. Possibly topped off with a musket
shoot.
Tidbits to Ponder:
• One night the bank janitor answered the
phone and said, “Hello?” The caller said,
“Please tell me what the Federal Reserve
discount rate is, the rate of prime paper,
and what the interest of government
bonds is?” “Mister,” said the janitor, “when
I said ‘Hello’ I was telling you all I know
about the banking business.”
• It appears that our president is
advocating bigger government paid for by
higher taxes. Does that mean that
through higher government spending which
demands higher taxes, we will all be equally
broke? Then we can attempt to borrow
from each other.
• The pastor was asked to cut the morning
services to less than an hour. During his
next sermon, he said, “I was thinking about
the request to make cuts while I was
shaving and I cut my face.” An older deacon
suggested he pay more attention to his
face and cut his sermon.
• A soul winner asked, “Wouldn’t you like to
spend eternity in heaven with the saints?”
“I sure would,” was the quick reply, “but
sometimes it is difficult to live with them
here on earth.”
One hundred and seventeen weeks ago the
Original Valley Pennysaver carried the first,
“Hello Again.”
Since then we have chatted – around the
chunk stove – in Charlie Hearn’s store
sharing a handsome portion of Irish
blarney – funny stories, and jokes. World,
United States, and New York State
problems have been hashed over and you
and I are still here. The world has kept on
turning and we haven’t fallen off yet.
Sometimes it is easier to sit back while
watching the parade of life go by, choosing
not to get involved.
However, we have all been given a great gift
of thought. As part of God’s creation,
should we not talk with him while
attempting to live, learn from teaching as
presented in his words in the Bible? As
citizens of this country, the great United
States, do we not owe it to our families,
friends, and future generations to study,
learn and understand about what and
where and how Messrs Obama and Romney
intend to lead this country and, without
fail, vote this November?
Soon the little red Can Am Spyder will be in
storage for the winter months – we will
miss seeing you and wonder how the winter
season is treating you. As the old parson
said, “If you travel this life with God and his
written word, the Holy Bible, you need no
other road map.”

The word geek original-ly referred to a computerexpert. Today, almostanyone can be a geekabout something. I referto myself as a food safetygeek. I follow food-borneillness outbreaks andfood recalls. I read barf-blog.com on a regular ba-sis to understand the sci-ence as well as the mis-takes in handling foodand how it is reported.And, I use a food ther-mometer when I am cook-ing meals.
Why did I become so in-terested in food safety?As a new Extension Edu-cator I listened to womentalk about some of thefood practices of theirelderly parents. Peopleleft food cooling on thecounter for hours. Thekitchen sink was used tothaw foods. No one knewthe temperature of theirfridge, and didn’t evenhave a thermometer tocheck temps. Meat wasconsidered done if thejuices ran clear. Withthose things in mind, Istarted teaching the ba-sics of food safety. Theyboiled down to “Keep HotFood Hot, Keep ColdsFoods Cold, Keep Every-thing Clean, and When inDoubt, Throw it Out!” Ad-vice that’s still good to-day.
Another part of my job
expected me to under-stand the science andprocess of home foodpreservation so that Icould answer consumerquestions. To say that itwas “on the job training”would be an understate-ment. I can now field foodpreservations questions,answer consumer ques-tions about safe foodhandling and for morethan a decade I’ve taughtfood safety classes forfood service providers.
The cornerstone of myfood safety education ef-forts is the ServSafe®course. This program us-ing the latest science andresearch around safefood handling was devel-oped by the EducationFoundation of the Nation-al Restaurant Associationand is recognized as anexcellent training oppor-tunity for food servicestaff and managers. Par-ticipants are expected toknow among otherthings: the minimumtemperature for cookingpork; what is the Temper-ature Danger Zone forfood and how long foodcan stay in that range;how to clean and sanitizefood contact surfaces;when an employee shouldbe restricted or excludedfrom an operation andwhat temperature eggsshould be at when deliv-ered.
After an intensive one-
day class, successfulcompletion of a 90 ques-tion multiple choice examwill give the participant afive-year food safety cer-tificate. Since June of2000 I’ve taught over 90classes and reached morethan 1100 people. Almost90 percent of those tak-ing the test have passed. Ilike to think that I’vedone my part to see thatfood is safely preparedand served in many partsof New Hampshire.
As a customer, how doyou know if the restau-rants you frequent havestaff that know and applyfood safety principles?For starters, ask them ifsomeone is ServSafe®certified. Many placeshang their certificates sothat customers can seethem. Watch the staff. Dothey wash their handsregularly? Many restau-rants are set up so thatyou can see this happen-ing. The same applies towhether you purchasefood at a “Mom and Pop”store, have sandwichesmade to order or pur-
chase meat slices at thedeli counter of your fa-vorite grocery store. Arethe restrooms clean? Howabout the table you sitdown at? Is the fork youpick up covered withdried food? Are the staffaprons clean? Is foodsafety a priority at yourfavorite establishment?
Encourage owners andmanagers to make surethat food safety is as im-portant to them as it is toyou. Almost 48,000,000people in the UnitedStates get sick from foodeach year. About 125,000people are hospitalizeddue to complicationsfrom food-borne illness-es. And of those, threethousand people die fromfood-borne illness. Wehave a safe food supply,and with the right knowl-edge about food safetyrestaurants and con-sumers can make it evensafer.
As a consumer, doeverything you can tomake sure that the foodyour purchase, bringhome, store and prepare
is safe for you and yourfamily. Check out the be-foodsafe.org website tolearn how the four easylessons of “Clean, Sepa-rate, Cook and Chill” canhelp you prevent harmfulbacterial from makingyour family sick. Buy athermometer and use itto check the tempera-tures of your fridge andfreezer. Check the tem-peratures of the food youcook to make sure it iscooked enough to be safe.When purchasing home-made food, look for labelsand handling directions.Bring leftovers home andput them in the fridge,right away.
There is no guaranteethat you won’t be sickfrom the food you eat, butlearn how to control whatyou can. There’s no harmin being a food safetygeek like me.
So, to answer some ba-sic food safety questions:Pork should be cooked to
a minimum temperatureof 145°F — and yes itmay be pink. Your fridgeshould be at 40°F andyour freezer should be at0°F. For consumers, foodshould stay no longerthan two hours at roomtemperature, then itshould be put in thefridge — and don’t worry,your fridge can handlehot foods. Eggs should bestored in the fridge, in thecarton they come in. It isnot necessary to washyour raw chicken, youmight be spreading morebacteria than you arerinsing away. Herkimer County HealthNet announces Incentive Awards forHerkimer County Municipalities
Eating an apple a day might in fact help keep thecardiologist away, new research suggests.
In a study of healthy, middle-aged adults, consump-tion of one apple a day for four weeks lowered by 40percent blood levels of a substance linked to harden-ing of the arteries.
Taking capsules containing polyphenols, a type ofantioxidant found in apples, had a similar, but not aslarge, effect.
The study, funded by an apple industry group,found that the apples lowered blood levels of oxidizedLDL — low-density lipoprotein, the “bad” cholesterol.When LDL cholesterol interacts with free radicals tobecome oxidized, the cholesterol is more likely to pro-mote inflammation and can cause tissue damage.
“When LDL becomes oxidized, it takes on a formthat begins atherosclerosis, or hardening of the arter-ies,” said lead researcher Robert DiSilvestro, professorof human nutrition at Ohio State University and a re-searcher at the university’s Ohio Agricultural Re-search and Development Center. “We got a tremen-dous effect against LDL being oxidized with just oneapple a day for four weeks.”
The difference was similar to that found betweenpeople with normal coronary arteries versus thosewith coronary artery disease, he said.
The study is published online in the Journal ofFunctional Foods and will appear in a future print edi-tion.
DiSilvestro described daily apple consumption assignificantly more effective at lowering oxidized LDLthan other antioxidants he has studied, including thespice-based compound curcumin, green tea andtomato extract.
“Not all antioxidants are created equal when itcomes to this particular effect,” he said.
DiSilvestro first became interested in studying thehealth effects of eating an apple a day after reading aTurkish study that found such a regimen increased
the amount of a specific antioxidant enzyme in thebody.
In the end, his team didn’t find the same effect onthe enzyme, but was surprised at the considerable in-fluence the apples had on oxidized LDL.
For the study, the researchers recruited nonsmok-ing healthy adults between the ages of 40 and 60 whohad a history of eating apples less than twice a monthand who didn’t take supplements containing polyphe-nols or other plant-based concentrates.
In all, 16 participants ate a large Red or Golden De-licious apple purchased at a Columbus-area grocerystore daily for four weeks; 17 took capsules containing194 milligrams of polyphenols a day for four weeks;and 18 took a placebo containing no polyphenols. Theresearchers found no effect on oxidized LDLs in thosetaking the placebo.
“We think the polyphenols account for a lot of the ef-fect from apples, but we did try to isolate just thepolyphenols, using about what you’d get from an ap-ple a day,” DiSilvestro said. “We found the polyphenolextract did register a measurable effect, but not asstrong as the straight apple. That could either be be-cause there are other things in the apple that couldcontribute to the effect, or, in some cases, these bioac-tive compounds seem to get absorbed better whenthey’re consumed in foods.”
Still, DiSilvestro said polyphenol extracts could beuseful in some situations, “perhaps in higher dosesthan we used in the study, or for people who just nev-er eat apples.”
The study also found eating apples had some effectson antioxidants in saliva, which has implications fordental health, DiSilvestro said. He hopes to follow upon that finding in a future study.
The study was conducted as a Master’s thesis bygraduate student Shi Zhao, and was funded by a grantfrom the U.S. Apple Association/Apple Product Re-search and Education Council and a donation fromFutureceuticals Inc. of Momence, Ill.
Also involved in the study were associate professorJoshua Bomser and research associate ElizabethJoseph, both in the Department of Human Nutrition,which is housed in the university’s College of Educa-tion and Human Ecology.

A: College financingcan be complex and thedecisions overwhelming.Helping your son realizethe implications of takingon too much debt couldbe one of the most impor-tant lessons he learns.
More and more peopleare concerned about thelevel of student debt,which has topped $1 tril-lion in the United States.According to the Instituteof College Access andSuccess, two-thirds ofcollege seniors graduatedwith loans in 2010, carry-ing an average of $25,250in debt, with some reach-ing $55,000. And thatdoesn’t count graduate orprofessional school.
According to the FinAidwebsite, which offersgreat guidance (www.fi-naid.org), financial advis-ers recommend studentslimit total student loansto less than what they ex-pect to earn as theirstarting salary after theygraduate. That meansthose studying to beteachers or artists, for ex-ample, should be muchmore cautious than thosestudying engineering orcomputer science.
There are several typesof loans available to fi-nance a college educa-tion. Federally backedneed-based loans — theFederal Perkins Loan andthe subsidized StaffordLoan — generally offerthe best terms. Non-sub-sidized federal loans - theunsubsidized StaffordLoan or the Parent PLUSloan (made to parents,not students) have higherinterest rates but aremore widely available.Private loans — fromfoundations, banks orother financial institu-tions — generally havehigher interest.
Different types of loanshave different repaymentoptions. Some loans allowstretching repayment peri-ods to up to 25 years. Someallow monthly payments tobe based on income.
Your son’s college fi-nancial aid office canhelp sort through the de-tails. But to prepare, thenonprofit College Boardhas useful information athttp://bigfuture.college-board.org/pay-for -col-lege/loans. A good placeto start is “8 Tips for Tak-ing Out Student Loans.”
Also, the information atwww.cashcourse.org/osucan help. Go to the web-site, backed by the Na-tional Endowment for Fi-nancial Education, andclick on “Paying for Col-lege.” There’s a lot of in-formation there, but it’spresented in easily di-gestible pieces. Just startat the beginning, andyou’ll learn a lot.
Beyond that, encourageyour son to apply for asmany scholarships andgrants as he can. This“free money” does nothave to be repaid, and ifhe finds enough, he mightbe able to graduate debt-free. It takes effort, butthe time and energy spenton applying for scholar-ships could pay off bigand allow your son tostart his post-college lifein a much more comfort-able financial position.

State Education Com-missioner John King Jr.on Oct. 1 appointed aBoard of Canvass anddesignated a place of can-vass for the Oct. 18 merg-er vote involving theHerkimer, Ilion and Mo-hawk school districts.
King also released a no-tice of special meeting,which sets the mergervote for noon to 8 p.m. onThursday, Oct. 18, at theHerkimer, Ilion and Mo-hawk school districts.Herkimer-Fulton-Hamil-
ton-Otsego BOCES Dis-trict SuperintendentMark Vivacqua has beendesignated as in charge ofthe operation of the elec-tion.
Polling will be conduct-ed using electronic votingmachines, and absenteeballots are available atthe central office of eachschool district.
The 27-member Boardof Canvass is comprisedof nine residents fromeach school district. Acomplete list of the board
members can be foundonline at www.herkimer-boces.org.
The Board of Canvasswill act as a board of elec-tions at the central votingsite at the Ilion CentralSchool District.
For the voting site atthe Herkimer CentralSchool District, theHerkimer Board of Edu-cation will act as theboard of elections, andfor the voting site at theMohawk Central SchoolDistrict, the Mohawk
Board of Education willperform the duties of aboard of elections.
These boards of elec-tions will inspect the vot-ing machines and pollbooks before the votingbegins and supervise theconduct of the voting —including acceptance ofchallenges at each votingsite.
After the polls areclosed at each site, thechairpersons of theboards of elections atHerkimer and Mohawk
will deliver the sealed vot-ing machine results andsealed poll books to theBoard of Canvass at thecentral voting site in Ilion.
The Board of Canvasswill then canvass the voteon Proposition No. 1,which is the vote onwhether the three schoolsshould merge. The re-sults for each district willbe canvassed separately,including absentee bal-lots.
If Proposition No. 1 isapproved by each district,the machine results fromPropositions No. 2 and 3from each district will beintermingled and countedin aggregate, including
absentee ballots.Propositions No. 2 and
3 would only go into ef-fect if Proposition No. 1 isapproved. Proposition No.2 asks voters to decidewhether the new schooldistrict would have five,seven or nine Board ofEducation members.
Proposition No. 3 asksvoters to decide whetherthe Board of Educationmembers’ terms would befor three, four or fiveyears.
After the results for thepropositions are deter-mined, the Board of Can-vass will certify the re-sults to the state educa-tion commissioner.

State outlines plans for three-school merger vote
It may have beenColumbus Day and schoolwas not in session, but
the Ilion Cub Scout Troop#9 was very busy workingwith the registrants and
staff at Folts Homes AdultDay Health Services(ADHS) in Herkimer.
Their community serv-ice project for the day wasto be creative and havefun working together tobuild hanging bird feed-ers and birdhouses out ofwood. Using precut woodpieces, the group learnedthe steps needed to as-semble them, and how tocarefully hammer in nailsand add hinges to the lid.Painting the houses willbe the final personaltouch, and everyone islooking forward to entic-ing a variety of birds totheir backyards.

Celebrating bountiful fall apple crops is an Ameri-can tradition we can pass on to our children in livelyand creative ways. Share your childhood memorieswith your kids while you enjoy these old-fashioned ap-ple activities updated with a twist.
Apple taste-testingHave your family taste-test several varieties of ap-
ples, including specialties from your area. First, sortthem by color and name, such as Granny Smith, RedDelicious, McIntosh, etc. Help your children pro-nounce and identify them correctly. Which are sweet-est, tartest and juiciest? Which would taste yummydipped in a caramel sauce or baked in a pie?
Edible apple artAt mealtime, eat your apple art. For each serving,
make an edible apple bowl by cutting the top 1/4 offan apple and scooping out the fruit and core with agrapefruit-style knife. Make sure there is a 1/4-inch-thick apple shell remaining. For extra fun, etch a fun-ny face or wacky design on the outside using jack-o’-lantern carving tools or a butter knife. Fill with apple-sauce topped with a sprinkling of cinnamon, or a Wal-dorf salad composed of apple chunks from thescooped-out fruit, seedless grapes, diced celery, wal-nuts, a little mayonnaise or vanilla yogurt and a fewsqueezes of lemon juice.
Glowing apple centerpiece Carefully scoop out the top center portion of an ap-
ple, leaving enough space for tucking a tea-light can-dle firmly in place. Arrange several pressed, colorfulfall leaves that your children have collected in themiddle of the table. Set the apple and its candle on theleaf arrangement. Light the candle at dinnertime.

(NAPSA) — Safety on the road is no accident. For ex-ample, when a warning light illuminates on a car’sdashboard, it is alerting you to a situation that re-quires your attention.
While not all warning lights are a sign that disasteris imminent, no warning indicator should ever be ig-nored.
To help, the experts from AAA offer the followingtips:
Oil Pressure LightThe oil pressure light is usually an oilcan symbol or
the word “OIL.” It comes on when there is a drop in en-gine oil pressure. Of all the warning lights, the oilpressure light indicates the greatest potential for seri-ous mechanical damage.
If the oil pressure warning light comes on and stayson, pull off the road at the earliest safe opportunity,shut off the engine and call for assistance.
Engine Temperature LightThe engine temperature light is usually a ther-
mometer symbol or the word “TEMP.” It comes onwhen the engine temperature is unsafe for your vehi-cle. Unless the engine temperature is quickly brought
under control, major damage may occur.If there are any signs of a cooling system leak, pull
off the road at the earliest safe opportunity, shut offthe engine and call for assistance.
Be careful when opening the hood in the presence ofsteam, and never remove the radiator cap when theengine is hot.
Charging System LightThe charging system light is usually a battery sym-
bol or the word “ALT” or “GEN.” It comes on when thevehicle electrical system is no longer being suppliedpower by the alternator.
If this light comes on, shut down all unnecessaryelectrical loads such as the radio, heater or air-condi-tioning, then drive the vehicle to a repair facility im-mediately for further inspection.
Check Engine LightThe check engine light comes on when there is a
problem affecting the vehicle’s exhaust emissions.If the light comes on and stays on, make an appoint-
ment with an auto repair shop to have the problemchecked in the near future.
However, if the check engine light begins flashing re-peatedly, the catalytic converter is over-heating.Should this occur, drive the vehicle to a repair shopimmediately for further diagnosis.
Disregarding a flashing check engine light couldstart a fire, destroy the catalytic converter and resultin necessary repairs thatcould easily exceed $1,000.
