Summary:

“Missing Ingredient” written by Aylmer Given is about his culinary journey and how he

is exactly where he wants to be. Growing up with nine siblings Aylmer Given had seen his

mother cook everything enough to feed the entire family, everything except her chocolate fudge

sauce. The sauce was a Saturday night tradition in the house hold, with Aylmer Given learning

how to make it. Given decided that he enjoyed cooking so much that he attended the Culinary

Institute of America in New York. Upon graduating he got a job at a big hotel and continued to

travel to big hotels around the country. All the while he realized that something was missing in

his life, his family. While working in a new hotel, closer to home, he met a woman named

Cindy, which he later married and started a family with. As life went on and Aylmer Given spent

more time in the kitchen and less time with his family he thought about a place that he was able

to raise his two sons like he was. That’s when it hit him, and they made plans to move back to

his home town, Jaffrey. In no time they were able to find a place to live in, and a place where

they could start their own business with his mother’s chocolate sauce on the menu.

Reaction:

I found this article really interesting. At first it took me a while to find an article that I

was honestly interested in, but finally I came across this one. I chose this article because I would

like to graduate from college with a culinary degree and try out places like big hotels. I have

worked in a restaurant kitchen before, but I wouldn’t mind doing it again. Besides all that I plan

that once I have tried all that I wanted to and am ready to settle, I want to work in or own a small

restaurant here on Maui. With all that being said, it is easy to see why I chose this article. It

really surprised me that this article started off with him being raised with a big family and really

focusing on one specific family recipe. In the end the story did come full circle with Aylmer

Given returning to his home town.

Why this big city chef returned to this small town roots

I WAS DESTINED TO BE A CHEF. I learned from the best, growing up in the town of Jaffrey, New Hampshire, with my five sisters and four brothers. Mom was a kitchen genius, She could stretch food so there was always enough for all of us. But the one thing there was never enough of was her homemade chocolate fudge sauce.

Every Saturday night Mom pulled out the big two-quart heavy-bottomed pot from the cabinet and put it on the burner. I watched her pour in the sugar, cocoa and evaporated milk, and stir them together with a long wooden spoon. "Go 'round the edges," she'd say, putting the spoon in my hand, "then make a figure eight through the middle. That keeps everything moving." As the heat rose, each figure eight helped transform the powdery mix into a thick gooey sauce. I couldn't wait for the next step--ladling it into crystal cups of vanilla ice cream. If there was any left, my brothers and I would sneak into the kitchen later and spoon the concoction directly into our mouths.

I loved cooking so much I decided to make it my calling. At 18 I was accepted into the Culinary Institute of America in Hyde Park, New York, a top cooking school. Hyatt Hotels gave me a job right after graduation, and I went on to work at several big hotels around the country--Minneapolis, Fort Worth, Orlando, Chicago, Atlantic City. Places a lot different from Jaffrey. Even the kitchens were more crowded and faster. I cooked things like duck a l'orange and coq au vin for visiting celebrities, business leaders, even heads of state. The life of a chef was fun, glamorous--everything I'd hoped for. Except one thing.

I was at work one day and found a care package from Mom waiting for me--chocolate-chip cookies, a jar of fudge sauce and a note. "Enjoy. We're praying for you," the note read. "Love, Mom." It was cooking together with the family that I really missed.

I accepted a job at the Omni Biltmore Hotel in Providence, Rhode Island, a little closer to home. The catering director there was a woman named Cindy. We hit it off immediately. On our first date, we fantasized about opening a little inn together, complete with a restaurant, serving recipes I created. Less than a year later, we were married. Soon we added two boys, Joshua and Brandon.

But having kids didn't mean my life as a chef slowed down. I worked late. My schedule was unpredictable. Working as the executive chef for the National Gallery of Art in Washington, D.C., I barely spent lime with the boys anymore, and I had to cancel plans more than once with Cindy. One day she confronted me: "Where do you want to be?" The answer was simple. "With my family," I said. I couldn't be a big-time chef and a big-time husband and father.

I prayed to find the right job and the right place. Someplace where Cindy and I could raise our kids the way my parents had raised my siblings and me. Like Jaffrey. Wait…why not Jaffrey? We decided to make the move. I got a less time-consuming job, selling restaurant supplies. But every so often I'd go to a restaurant on a sales call and see the chefs at work, slicing, seasoning and searing, and feel a twinge of regret.

Then one day I was driving home and passed a restaurant that had just closed down. A "For Sale" sign hung in the window. So close to our house. Could I open a place here? Cindy went with me to see it. Pepto-Bismol-colored walls aside, we knew it had potential.

The first day we opened Aylmer's Grille, I got there early, went to the stove and placed a big two-quart pot on the burner. One recipe had to be on the menu--Mom's sauce. As I carefully stirred the sauce, tracing a figure eight in the ever-thickening chocolate, I felt transported back to that kitchen where Mom showed me how to cook. Cindy stood by my side, waiting to greet customers.

Our first crowd didn't include heads of state or celebrities--just some very important locals: my mom, my brothers and sisters, my kids. My friends and neighbors. I was home, cooking for my family again--where I needed to be all along.

Memere's Chocolate Fudge sauce

WE BEGAN SERVING THIS OVER CHOCOLATE WAFFLES WHEN THE RESTAURANT opened. Now we serve it on profiteroles with fresh strawberries. My kids eat it the way I used to, by spoonfuls straight out of the fridge.

½ cup cocoa powder 1 1/2 cups sugar 1 can (13.5 oz.) evaporated milk ¼ pound cold butter, cut into pieces 1 tablespoon vanilla

Start with a heavy-bottomed saucepan, at least 2 quarts because sauce doubles in size. Place sugar in pan with cocoa powder. Stir with wooden spoon until well-blended. Add evaporated milk. Continue to stir until blended well. Once it's mixed well, turn heat to medium. Stir constantly. Bring mixture to boil, about 5 minutes. Let it boil for another five minutes, stirring constantly. Make sure chocolate doesn't burn. Pull sauce off heat and add butter. Stir sauce until butter is completely melted. Add vanilla and serve over ice cream. Store sauce in refrigerator and reheat in microwave or water bath.

Andy West states in “Rev Up Your Future As An Automotive Mechanic”. That there is

an increase of jobs wanting automotive mechanics, from the huge amounts of mechanics entering

retirement. Anyone can get a job as a mechanic if they went to school. There is various jobs

offered to mechanics. Oil and tube technicians are responsible for changing car oil. Automotive

technicians are hired to do mount and dismounting tires, balance wheels, change brake pads, and

preform tune-ups. Mechanics does everything an automotive technician does but does more

complex repairs and replacements on cars. Master Mechanics is when a student graduates from

an automotive school and holds the highest degree, likely finding jobs in any dealership.

Some people also repair cars from the outside and they are referred to as Auto Body and

Paint specialist. They are responsible for repairing or changing external parts of the car. Part

salespeople are the stores selling parts for cars for those costumers that are daring enough to do it

themselves.

In order to fulfill this students that are interested in this field must find a good car repair school.

Research about this schools degree program and their reputation. Make sure the school offer an

ASE certification (Automotive standards of excellence) to show the employer what area you’re

an expert on. Students should make an appointment with the schools counselor and see if they

offer internship. Most importantly students must find out the cost of the program because good

automotive schools must also be affordable to anyone.

The author Andy West in his/her article “Rev Up Your Future As An Automotive

Mechanic” gave information helpful for not just me but people who seek a career in this field. I

learned that there is different jobs and titles mechanics hold. They range from oil and tube

specialist that deal with only changing oil, replacing fluids in a car; then to a master mechanic

that does everything that involves with cars, easy to complex repairs. The expenses automotive

schools charge, to research their programs and reputation; to see if they have what you desire.

In a 2009 analysis of thehighest-paying and most secureblue-collar careers, US News & WorldReport named auto mechanic as one ofthe top six occupations, citing strong demanddue to Americans’ need to maintain their vehicles andthe industry’s need to replace a large contingent of retiring technicians.

The automotive field is a huge industry thatprovides good job security and a wide variety ofpositions available to graduates of automotiveschool programs, as well as talented amateurswho find opportunities to learn on the job. Ascar ownership and usage continues to increasedramatically by the year, anyone with an auto-motive background is virtually assured a job.Some of the most common occupations include:

Oil and Lube Technicians – Cars require a lot ofregular maintenance, such as oil changes, a servicethat each car owner needs every three months orso. As a result, many oil and lube shops providethese services. The tight time schedule many ofthese shops adhere to ensures plenty of jobs fortechnicians who have the knowledge and experi-ence to perform these routine tasks quickly andeasily. Any graduate of an automotive school willbe able to easily outshine the competition forthese positions.

Automotive Technicians – Auto techs are oftenhired by shops that provide more services thanoil changes, filter replacements, and other simplemaintenance. Automotive technicians may be hiredto mount and dismount tires, balance wheels,change brake pads, and perform tune-ups, inaddition to changing fluids and filters.

Mechanics – They tend to have more responsi-bilities than technicians, therefore requiring moreeducation and experience. Mechanics may do allof the jobs often assigned to automotive techni-cians, but they also perform more complex repairs.Important components, such as shocks and struts,drive shafts, alternators, starters, etc, are usuallyreplaced by mechanics. More critical maintenancetasks, such as adjusting engine valve clearances,replacing timing belts, and other complicatedengine work, are also performed by mechanics.

Master Mechanics – The title of master mechanicis one any automotive school graduate would beproud to hold. Many schools include more ad-vanced degree programs, providing the educationand hands-on training necessary to become certi-fied at this level. Master mechanics can find jobsat almost any high quality automotive shop,garage, or dealership maintenance department.Naturally, the pay for a master mechanic positionis considerably higher than that of an automotivetechnician or mechanic.

Auto Body and Paint Specialists – With the in-creased number of accidents you see on the roadtoday, someone has to repair all of that damage.Auto body and paint specialists are therefore inquite high demand. Auto body technicians areresponsible for replacing exterior body parts andrepairing the damage caused in accidents. Painttechnicians restore the car’s finish once the dam-age has been repaired and the necessary partsreplaced.

Parts Salespeople – For the brave car ownerswho attempt to perform their own maintenanceand repairs, there are neighborhood parts storesand dealership parts departments to meet thatdemand in addition to servicing commercial repairshops.
