Dining Services encourages students, faculty and sta to live healthy by providing Health and Wellness options across campus.

Rich Roldan and Timothy Wright of Dining Services chose to take advantage of the resources oered by Dining Services to live a healthier lifestyle. They said their family and future motivates them to get through diicult times and temptations of unhealthy foods.

“The older you get the harder it is to maintain your level of health,” Rich Roldan, the Director of Dining Services said. “Having a better lifestyle (influenced me to take healthy steps). Being able to have a healthy lifestyle for me, my family, my kids and be able to enjoy life in the future.”

Timothy Wright, Executive Chef said working around food makes it diicult to stick to his diet, but keeping his end goal in mind keeps him on task.

“It’s hard for me here, in the environment as a campus chef because we taste things all the time,” Wright said. “Sometimes (tasting) spills over into ‘I tasted a piece of pizza now I have to have a piece instead of just a taste’. I guess it’s monitoring portion control.”

Wright said eating Mindful, an approach that focuses on nutritional ingredients, delicious food and satisfying portions, allows him to eat great food while staying on track of his eating habits.

Mindful logos can be found around campus at dierent dining locations and markets. There are six logos to identify the Mindful options including Gluten Free, Vegan, Vegetarian, Local, Organic and Mindful. The labels make eating healthy convenient and creates awareness of how abundant healthy choices are across campus.

“You don’t have to think about it,” Wright said. “You already know it’s lower in calories, salt, sugar and fat because it’s under the Mindful criteria.”

Dining Services also motivates students to use the online calorie counter, MyFitnessPal. On menus, at various dining locations, are barcodes which can be used to scan the menu item and gather details about the nutritional values of the meal. MyFitnessPal can be downloaded on mobile devices. The application also has the option to create diet plans tailored to the user’s body type.

Roldan said he uses MyFitnessPal in correlation with finding information and recipes on campus.

“I’ve been utilizing a lot of our recipes,” Roldan said. “If you get into the right habits early on you won’t struggle.”

Thanks for leading the way!
