    1. Line three baking sheets with baking paper and set aside.

    2. Follow the basic recipe (see page 6) to make the cookie dough. Gather it into a ball with your hands, wrap it in clingfilm and chill in the refrigerator for at least 10 minutes.

    3. Place the dough between two sheets of baking paper. Roll out to a thickness of about 8 mm/3/8 inch. Press out 12 cookies using an 8 cm/31/4 inch round cutter, re-rolling the dough as necessary.

    4. Transfer the cookies to the prepared baking sheets, leaving room for the lollipop sticks. Dip one end of a lollipop stick in water and then carefully insert it into the centre of the bottom of a cookie round, pushing it about halfway into the cookie. Repeat with the remaining lollipop sticks and cookies. Chill in the refrigerator for 10 minutes. Meanwhile, preheat the oven to 180C/350F/Gas Mark 4.

    5. Bake the cookies in the preheated oven for 1518 minutes or until golden. Remove from the oven and cool the cookies on the baking sheets for a few minutes, then transfer them to wire racks and leave to cool completely.

    Preheat the grill to hot and line the grill pan with foil. Arrange the sea bass flesh side-up on the foil, sprinkle with the lime rind and juice and season.     For the griddled chicken, put the lemon juice, olive oil, tomato pure and crushed peppercorns in a clean plastic bag, twist and shake well. Add the chicken slices, seal well, then shake until the chicken is evenly coated in the mixture.

    Preheat a griddle pan or grill to hot. Cook the chicken, in batches if necessary, for 10 minutes, turning once or twice, until browned and cooked through. Arrange over the top of the salad and serve.

    1. Preheat the oven to 190C/375F/Gas Mark 5. Line two baking sheets with baking paper.

    2. Put the butter and sugar into a bowl and mix well with a wooden spoon, then beat in the egg yolk and orange extract. Sift the flour and salt into the mixture, add the chocolate chips and stir until thoroughly combined.

    3. For the cinnamon coating, mix together the caster sugar and cinnamon in a shallow dish.

    4. Scoop up tablespoons of the cookie dough and roll them into balls, then roll them in the cinnamon mixture to coat. Put them on the prepared baking sheets, spaced well apart.

    5. Bake in the preheated oven for 1215 minutes. Leave to cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

    Pecan Brownie Cookies

    1. Preheat the oven to 190C/375F/Gas Mark 5. Line two large baking sheets with baking paper.

    2. Place the chocolate in a heatproof bowl set over a saucepan of gently simmering water and stir until melted. Remove from the heat and leave to cool for 10 minutes.

    3. Place the butter and sugar in a large bowl and beat together until pale and creamy. Gradually beat in the eggs, then stir in the vanilla extract and cooled melted chocolate.

    4. Sift in the flour and baking powder and add 55 g/2 oz of the chopped pecans. Stir until thoroughly combined.

    5. Drop 18 heaped dessertspoonfuls of the mixture onto the prepared baking sheets, spaced well apart. Flatten each one slightly with the back of the spoon and top with the remaining chopped pecans.

    6. Bake for 1112 minutes, or until just firm to the touch. Leave to cool on the baking sheets for a few minutes, then transfer to wire racks to cool completely.

    Always follow the recipe instructions about preparing tins. With most cupcake recipes, you will line the bun/muf n tins with paper cupcake

    cases, so there is no need to grease the tins before use.

    If, however, you are not using paper cupcake cases (perhaps you would like smooth-sided cupcakes instead of pleated ones, for a change), grease bun/muf n tins with melted or softened butter (preferably unsalted) or a avourless vegetable oil. Spray vegetable oils are also useful for greasing tins. Alternatively, a bun/muf n tin can be greased and oured before use.

    3. Gradually beat in the eggs. Add about 1 tablespoonful at a time and beat thoroughly after each addition. Beat in the vanilla extract.

    4. Using a large metal sieve, sift the our into the bowl. Using a metal spoon, gently fold the our into the mixture until thoroughly incorporated.

    5. Add the milk and fold gently into the batter. The cupcake batter should have a smooth consistency and drop easily from the spoon if tapped on the side of the bowl.

    6. Carefully spoon the batter into the paper cases, dividing it evenly and taking care not to over- ll them.

    115 g/4 oz butter, softened

    140 g/5 oz caster sugar

    4 tbsp Greek-style yogurt

    1 tbsp chopped pistachio nuts,to decorate

    2 tbsp lime juice cordial

    green food colouring (optional)

    200 g/7 oz icing sugar

    1. Preheat the oven to 180C/350F/Gas Mark 4. Put 16 paper cases in bun trays.

    2. Put the pistachio nuts in a food processor or blender and process for a few seconds until finely ground. Transfer the ground nuts to a large bowl and add the butter, caster sugar, flour, eggs and yogurt. Using an electric mixer, beat everything together until smooth.

    3. Spoon the mixture into the paper cases. Bake in the preheated oven for 2025 minutes, or until risen, golden and firm to the touch. Transfer to a wire rack and leave to cool.

    4. To make the frosting, put the butter, lime cordial and a little green food colouring, if using, in a bowl and beat until fluffy. Sift in the icing sugar and beat until smooth. Spoon the frosting into a piping bag fitted with a large star nozzle. Pipe a swirl of frosting on top of each cupcake and decorate with the chopped pistachio nuts.

    2 dried red chillies, broken into pieces

    Spiced Yogurt Soup

    3 Stir the spiced oil into the yogurt mixture in the saucepan. Ladle into warmed bowls, scatter over the coriander and serve hot.

    1 Mix the water, yogurt and gram fl our together in a large saucepan until smooth. Add the green chillies, ginger, palm sugar, turmeric and salt. Bring the mixture to the boil, then immediately reduce the heat to low and cook, stirring frequently, for about 810 minutes.

    2 large potatoes, peeled, boiled and roughly mashed

    5 tbsp sweet chilli sauce

    5 tbsp coriander chutney

    1 small red onion, very fi nely diced

    4 tbsp fi nely chopped fresh coriander

    4 tbsp sev

    2 tbsp pomegranate seeds

    Chickpeas with Potato & Spiced Yogurt

    4 Place about 1 tablespoon of potato on top of each panipuri. Divide the chickpeas over the top and drizzle over the spiced yogurt. Spoon the sweet chilli sauce and coriander chutney on top. Scatter over the red onion, chopped coriander and sev. Finally, scatter over the pomegranate seeds and serve immediately.

    1 Soak the chickpeas in a bowl of cold water for 68 hours. Drain, thenplace the chickpeas in a saucepan of cold water and bring to the boil. Cook for 2530 minutes, or until tender. Drain well and set aside

    2 Whisk the yogurt in a bowl until smooth, then stir in the ginger, chilli powder, ground cumin, ground coriander, salt and pepper. Set aside.

    3 Break each panipuri gently with a fork to create a tiny opening on the top. Arrange the panipuris in a single layer on a large serving platter.

    This sweet, savoury and slightly spicy dish can be found all over India. The base is a store-bought, crispy-fried

    puffed cracker called panipuri, which is available from Asian grocery stores. If you cannot get hold of them,

    you can use any thin, wheat crackers you can fi nd. Sev are thin, crispy strands of spiced, fried chickpea fl our.

He has published titles on military history for adults and children alike, as well as scholarly texts on medieval Germanic heroic traditions. Originally from Baltimore, Maryland, he now lives in Cambridge, England.
