Unsaltedbutter8 garliccloves,chopped¼cup parsley,chopped Juicefrom2lemons SaltandfreshlygroundpepperPuffPastry1 sheetofpuffpastry(12”x16”)¼cup flourfordusting3 eggyolk,foreggwash1-cup microgreenmix12 smallcherrytomatoessplitinhalfServes: 24smallpuffpastryormini“Volauvent”Preparation: EscargotsStartpreppingtheescargots.Usingamediumsizesaucepot,overmediumhighheat,sweatthevegetablesinoliveoilfor5minutes.Addtheescargotsandsweatforanother5minutes,addthePernod,whitewineandbasil.Simmerfor5minutes.Addthevegetablestock,saltandpepper,coverandsimmergentlyfor15to20minutes.Removethesaucepotfromtheheat.Fishouttheescargotsfromthebroth.Transfertheminasmallbowl,coverupwithplasticwrap.PageOneofTwoHubertKeller

GarlicButterUsingastandmixer,rsmallfoodprocessor,processthebutter,saltandpepperforacoupleofminutes,untilsmoothandfluffy.Addthegarlic,parsley,andlemonjuiceandmixwell.Transferthegarlicbutterontoasheetofplasticwarp;rolluptoformacylindershape.Twistbothendstightandkeepitintherefrigerator.PuffPastryShells:Preheattheovenat375°F.Laythepuffpastrysheetonaworkingsurface,dustedwithflour.Takeaflutedpastrycutter(1½“indiameter)andcut24puffpastrydiscs,placethemonabakingtraylinedwithparchmentpaper,orasiliconlinedbakingtray.Takethesamesizeflutedpastrycutterandcut24identicalsizediscs,thentakeaslightlysmallerroundcutterandcutaholeinthemiddleofthepastrydisc.Makeasmalleggyolkwashandbrushthemixtureoverthebasecutpastry.Placetheothercutpastrywiththeholeinthemiddle,ontopofthebasetomakeabaseandtop,andthenbrushwiththeeggwash.Letrestfor20minutes.Bakeintheovenforaround20minutes.Removefromtheovenandletcool.ReadytoServe:Byusingasmallpairingknife,cutoutthesmalldiscsinsidethepuffpastryshells,inordertocreateasmallcavity.Safethelids.Filleachcavitywith2escargots,add½tablespoonofgarlicbutter.Placethestuffedpuffpastryshellsfor10minutesintheoven.Removefromtheovenandgarnisheachonewithasplitcherrytomato.Placeeachlidnexttoit.Sprinklewiththemicrogreens.Transferonaservingplatterandserveimmediately.HubertKellerChef/OwnerFleurbyHK/BurgerBarsPageTwoofTwoHubertKeller
