Chapati with a modern twist (Serves 4)

• 2 cups all purpose wheat flour• 6 tablespoons cooking oil• 1 bunch chopped dhania• Salt to taste • Warm water or milk (about 3/4 – 1 cup)

2. Roll out your dough into one big flat chapati and apply oil on it, then fold it spirally and roll out again. Cut the flat dough into 2 inch circular balls which you will leave to rest for 30 minutes.3. When ready to cook, light your Envirofit SuperSaver Charcoal jiko using a ½ tin of charcoal.4. Now heat a pan on medium high and start rolling your dough balls into fine medium circles and put on the pan. Once browned, add the oil to the pan and brown the chapati evenly. Repeat the same to the other side and continue with the process till you finish all the dough balls.5. Keep your cooked chapatis in a warm plate and serve with beef stew.

1. In a bowl mix the flour with salt, make a well, add in 3 tablespoons of cooking oil and rub in with the flour. Add in the dhania and add the warm water slowly while kneading till you make a soft dough.

Kienyeji chicken with a modern twist (Serves 4)

• 1kg chicken, cut into pieces• 2 tablespoons masala spice• 1 chopped onion• 3 tablespoons cooking oil• 1 fresh chili (optional)• 1 chicken stock cube• 3 garlic cloves, crushed• 3 tomatoes, grated or pureed• 100ml yoghurt• Salt to taste

1. Mix the chicken with half the spice and salt and half the yoghurt. Refrigerate for 1 hour to marinate.

3. Add cooking oil in a pan. Add onions and cook till soft. Add the chopped garlic and cook till fragrant.4. Cut the chili into 2 and add to the pan.5. Add the tomato puree and the remaining spices and yoghurt and cook till mushy.6. Add the marinated chicken and cook at low heat, if chicken sticks to pan add 2 cups water. Add salt to taste.

8. Serve with mashed potatoes or rice.

• 2 cups beans• 2 cups maize• 1 tablespoon crushed ginger• 2 cloves garlic, minced• 1 beef stock cube for flavour• 3 carrots cubed• 3 tomatoes, grated or pureed• Salt to taste• 3 tablespoons cooking oil

Preparation Method

1. Heat oil in a separate pot and add the chopped onions, cook till soft2. Add in the ginger and garlic, cook till fragrant3. Add in the tomato puree and beef stock cube, cook till mushy

6. Check seasoning and serve hot with a slice of avocado

4. Add the carrots and the maize and beans, cook stirring for 4 minutes 5. Add 2 cups water and simmer for 20 minutes

Light your Envirofit SuperSaver Charcoal using a ½ tin of charcoal. Once it is properly lit, put 2 cups maize and 2 cups beans in a pot with enough water. Boil until soft. Drain.

• 2 cups peas• 3 tablespoons cooking oil• 2 onions, chopped• 1/2 cup coconut milk• 2 tablespoon ground coriander• 1 tablespoon turmeric• 250gm potatoes

3. In a pot heat oil and add the chopped onions, cook till soft4. Add the turmeric and ground coriander, cook till fragrant5. Add the coconut milk, stirring to avoid sticking; add the pre boiled peas and the potatoes then simmer for 15 minutes6. Check the seasoning and serve hot with either boiled rice or the coriander chapati
