ZigarrenZigarren

gin ist ein branntwein der meist aus getreide hergestellt wird und sein Aroma vorwiegend durch wacholderbeeren und andere Zutaten erhält. Der name ist eine Abkürzung des wortes genever, das eine Abwandlung entweder des französischen genièvre oder des holländischen junever ist und jeweils wacholder bezeichnet. Die wichtigsten sorten sind die britischen, im allgemeinen als london Dry gin bekannt und die holländischen, die unter dem namen genever vertrieben werden. Dry gin wird aus dem Alkohol von kornbranntwein hergestellt, der stufenweise destilliert wurde. Er wird mit wacholderbeeren und anderen Aromen (botanicals) versetzt (darunter je nach Hersteller z.b. koriander, ingwer, Muskat, orangen) nochmals destilliert und auf einen Alkoholgehalt von 40 bis 45 volumenprozent verdünnt. genever wird ähnlich wie Dry gin hergestellt, mit dem Unterschied, daß der branntwein nicht so oft destilliert wird und so mehr vom geschmack des kornes erhalten bleibt. Manchmal wird abschließend um den geschmack abzurunden noch etwas Zuckersirup hinzugefügt. sloe gin, einer der bekanntesten gins, wird mit den Früchten des schwarzdorns aromatisiert.

wörtlich übersetzt heißt wodka soviel wie „wässerchen“. Der tat- sächliche Ursprung vom wodka hat über Jahrhunderte hinweg die gemüter erhitzt. Russland und Polen führten eine stetige Auseinan-dersetzung, und jeder behauptete, das Ursprungsland zu sein. im grunde ist der wodka seiner Zusammenstellung nach eine Form des branntweins, jedoch um vielfaches reiner. Hergestellt aus den Rohstoffen wasser, weizen (insbesondere in nordamerika – sehr neu-tral und rein im geschmack), kartoffeln (früher problematisch, da chemisch nur schwer aufspaltbar – im geschmack nach wie vor schwer und markant) oder Melasse. Daher unterscheidet man traditionell in „Eastern“ und „western style“ wodka. Eastern style wodka hat einen höheren Eigengeschmack & stärkere Aromen mit süßlichen Tendenzen, während western style wodkas eher mild und neutral im geschmack sind und eher eine junge Zielgruppe ansprechen die Drinks „ohne“ Alkoholgeschmack bevorzugt.

Der Teufel hat den schnaps gemacht, den Tequila aber die götter, erzählt eine mexikanische legende. Tequila ist ein Destillat das ausschließlich aus der blauen weber Agave hergestellt werden darf, und zwar in fünf dafür ausgewiesenen Regionen: Jalisco, nayarit, Tamaulipas, Michoacán und guanajuato.Destillate, die nach dem gleichen verfahren außerhalb der zugelassenen Regionen hergestellt werden, müssen sich Mezcal nennen, entsprechend dem oberbegriff für die gesamten Agavendestillate.Die blaue Agave benötigt ca. 8 – 12 Jahre bis sie zu ihrer vollen größe gewachsen ist. Die Pflanze wird ausgegraben und von den blättern befreit. Die übrig bleibenden Herzen (Pinas), die noch ca. 170 Pfund wiegen, werden zerkleinert und in Ziegelöfen zwischen 24 und 36 stunden gegart. Dabei geben die Herzen das sogenannte Honigwas-ser ab. wenn der Agave durch anschließendes Auspressen der gesamte Aqua miel entzogen worden ist, kann der darin enthaltene Zucker zu destillierbaren Alkohol vergoren werden. Jetzt kommt auch der Zeit-punkt wo entschieden wird, ob ein reiner Tequila aus 100% blauer Agave oder ein Mixto hergestellt wird. Für den reinen Tequila wird nur der Agavensaft und natürliche gär-hefe verwendet. beim Mixto darf jetzt zu den 51% Agavensaft anderer Fremdzucker zugegeben werden. nach der gärung wird die Flüssigkeit, die nun Mosto genannt wird, destilliert. Ein Premium Tequila aus 100% Agave dagegen muss in Mexiko abgefüllt werden. Tequilas, die als Repo-sado (bis zu 11 Monate) oder Anejó (bis zu vier Jahre oder länger) ver-marktet werden, kommen zum Reifen in Holzfässer in denen oft schon bourbon oder anderes gelagert wurde.

whisky (schottische und kanadische schreibweise) bzw. whiskey (irische & amerikanische schreibweise) ist ein Destillat aus wasser, getreide, Hefe & Malz, wobei für die unterschiedlichen Typen & Arten des whisk(e)ys wahlweise gerste, weizen, Mais, Roggen oder auch Reis verwendet werden, in der Regel jedoch keine Aromastoffe (außer bei einigen canadians). beim scotch, einem Destillat aus gemälzter gerste, unterschei-det man zwischen “single Malt” (unverschnitten und aus einer De-stillerie), “vatted Malt” (verschnitt verschiedener single Malts verschiedener Destillerien) und dem “blended scotch” (mit kornwhis-ky verschnittener Malt).Der American whiskey teilt sich auf in “straight whiskey” (unver-schnitten), “blended straight whiskey (gemischt aus verschiedenen straights) und “blended American whiskey” (straight verschnitten mit neutralspirit).Die teilweise gravierenden Unterschiede der jeweiligen Typen aus den Haupterzeugerländern schottland, UsA, kanada und irland resul-tieren aus Art & verarbeitung des verwendeten getreides, den verschie-denen Methoden der Destillation, unterschiedlichen lagerungsmetho-den und den differenzierten Arten des verschneidens. beim irischen whiskey wird die gerste beispielsweise nicht über Torffeuer gedarrt, weshalb ihm das scotch typische Raucharoma fehlt. Der canadian whisky ist aufgrund seines hohen Anteils an neutralspririt in der Regel körperleicht und längst nicht so wuchtig wie andere sorten.Der amerikanische bourbon wiederum zeichnet sich aufgrund der Reifung in Eichenholzfässern und deren spezieller behandlung mit einer dezenten vanillenote und süße aus, die Tennessee whiskeys noch mit einer auffallenden Milde.

cognac ist ein zweifach gebrannter Traubenmost, der wenigstens 24 Monate in Eichenfässern gelagert wurde und vom brennprozess ständig unter der kontrolle der bnic (bureau national interprofessionnel du cognac) stand. cognac gibt es ausschließlich aus einer begrenzten Region im westen Frankreichs um die kleine stadt cognac herum. Die einzigen Trauben-sorten aus denen cognac hergestellt werden darf sind: Folle blanche, collombard und Ugni blanc. Ausschlaggebend für die qualität des cognacs ist sein Alter. Rum und sein „Zwillingsbruder“, Zuckerrohrschnaps (am bekann- testen ist cachaca) werden aus Zucker und wasser hergestellt. Der Zucker wird aus Zuckerrohr gewonnen, anschließend wird frischer (oder auch konzentrierter) Zuckerrohrsaft oder Melasse vergoren. Me-lasse ist der süße, klebrige Rückstand, der verbleibt, wenn Zuckerrohrsaft gekocht wird und die Zuckerkristalle abgeschöpft werden. Meist wird Rum aus Melasse hergestellt. Melasse besteht zu mehr als 50% aus Zucker, enthält aber auch zahlreiche Mineralien, die letztlich den geschmack des Rums beeinflussen. Rums aus frischem Zuckerrohrsaft, meistens aus Haiti und Martinique, haben einen natürlichen, feinen geschmack nach frischem Zuckerrohr. Abhängig vom Rezept der jeweiligen Destil-lerie wird der Zuckerrohrsaft bzw. ein gemisch aus Melasse und wasser unter beigabe von Hefe vergoren, wobei die gärungsperiode zwischen 24 stunden (für leichte Rums) und mehreren wochen (für schwerere, komplexe Rums) dauern kann. Die Auswahl der Destille (verwendet werden die älteren, blasenförmigen „Pot stills“ und die jüngeren, ho-hen und schlanken „continous stills“) beeinflusst entscheidend den späteren charakter des Rums. wenn der Rum die Destille verlässt, ist er klar und farblos. seine spätere Farbe erhält er durch die Alterung in Ei-chenfässern und durch die Menge des karamells, das beigemengt wird. Da karamell gebrannter Zucker ist, kann zu Recht gesagt werden, dass Rum nur natürliche Farbstoffe enthält.

Der Markenname „Fever-Tree“, deutsch: Fieberbaum, ist das umgangs-sprachliche wort für den chinarindenbaum, aus dessen Rinde chinin – der entscheidende bitterstoff im Tonic – gewonnen wird. lange Recher-chen führten zu einer Plantage im kongo, auf der die reinste Form von chinin, die weltweit erhältlich ist, produziert wird. Der calvados ist ein Apfelbranntwein aus Frankreich, seine Heimat sind die normandie und die bretagne. Für den calvados sind die äpfel der normandie das, was für den cognac die weine der charente bedeuten. äpfel gab es in den beiden Regionen in Hülle und Fülle. schon früh pressten die bauern saft aus ihren äpfeln und ließen ihn zu wein vergären. calvados heißt der Apfelbranntwein erst seit dem 19. Jahrhundert; es ist der name des Departements, aus dem ein Teil der calvados-Produktion kommt. Entsprechend einem gesetz von 1942 dürfen sich nur die Apfelbrände calvados nennen, die aus einem genau abgegrenzten gebiet der normandie stammen und nach ganz bestimmten Destilliermethoden gebrannt wor-den sind.beim calvados sind zwei Arten zu unterscheiden: 1. Der calvados mit gesetzlich geregelter Herkunftsbezeichnung (Appellation réglementée) kommt aus den gebieten calvados, cotentin, Avranchin, Mortainais, Domfrontais, vallée de l‘orne, Pays du Merlerault, Pays de la Risle, Pays de bray und Perche. 2. Der calvados mit kontrollierter Ursprungsbezeichnung (Appel-lation contrôlée) ist der bekanntere Apfelbranntwein. Er kommt aus dem Pays d‘Auge, einem kleinen gebiet im Herzen von cal- vados, und unterliegt besonders strengen kontrollen. Er darf nur aus Apfelweinen gebrannt werden, die aus dem geographischen gebiet des Pays d‘Auge stammen, und muss im Pays d‘Auge selbst destilliert werden. Reife, zerkleinerte Früchte liefern den Most, aus dem die calvados-brantweine gemacht werden. Der Most gärt mindestens einen Monat lang auf natürliche weise und lagert dann in Riesenfässern seiner weiteren verwendung ent-gegen. gute calvados-Hersteller verwenden meist ein bis zwei Jahre alte Apfelweine in ganz bestimmten Mischungen. gebrannt wird auf zwei verschiedene Arten, die Methode richtet sich nach der Art des calvados. im Pays d‘Auge ist die Destillation nach der charente-Methode vorgeschrieben, das heißt, es wird in kleinen brennblasen in zwei Phasen destilliert. Zuerst wird das „kleine Destillat“ und daraus dann der branntwein gewonnen. Außerhalb des Pays d‘Auge, also für calvados mit Appellation réglementée, wird wie beim Armagnac in kontinuierlichen brennanlagen destil- liert. natürlich hat auch hier der gesetzgeber seine qualitäts- auflagen gemacht. bei beiden Methoden erhält man nach dem brennen eine was-serhelle Flüssigkeit mit hohem Alkoholgehalt (68 bis 72 vol. Prozent), die noch weit entfernt von dem ist, was einen richtigen calvados ausmacht. charakter bekommt der calvados durch die lagerung in Eichenholzfässern. im laufe der Jahre wird das Destillat bernsteinfarben und verliert an Alkohol. nach einiger lagerzeit wird der calvados verfeinert: gut aufeinender abge-stimmte Destillate verschiedenen Alters werden nach uralten, überlieferten Rezepten miteinander vermischt. Erst diese cuvées garantieren über Jahre hinweg ein gleichmäßiges qualitäts-produkt. Für calvados ist eine einjährige lagerzeit im Eichen-holzfass gesetzlich vorgeschrieben, ein guter calvados hat aber mindesten drei Jahre im Fass verbracht. Für die Altersangabe auf der Flasche ist immer das jüngste verwendete Destillat entscheidend.
