Huntly PeregrineWildwatch

The Forestry Commission award winning HuntlyPeregrine Wildwatch Centre (HPWW) gives awonderful opportunity to view one of our iconic andspectacular birds of prey close up and in theirnatural habitat. The site is an old quarry and is theresult of a volcanic magma chamber and is an Siteof Special Scientific Interest (SSSI) in its own right.Scottish Natural Heritage are now designing inter-pretation highlighting the geology of the quarry.

The centre has been open every season since2002 and has grown in stature every year, regularlybeing mentioned in local and national press andalso appearances on national TV. It has won several prestigious awards for tourism and customer care, including the highly acclaimed Scottish ThistleAward twice and the Northern Lights award.

The centre is open daily from March toSeptember, with all ability access and toilets. Theinterpretative centre and hide are staffed by knowl-edgeable and friendly Forestry Commissionwardens and volunteers, ensuring the visitorsʼ ex-perience is a memorable one.

We have excellent CCTV coverage giving closeup viewing of the nest site, peregrines, quarry andall its inhabitants. The fantastic viewing facilitieswithin the quarry offer the visitor a rare insight intoour wonderful NorthEast wildlife. Binoculars and tel-escopes are provided for visitors to use. Feeding

stations at the visitor centre and our top hide givevisitors the opportunity to observe up close the redsquirrels as well as a huge array of woodland birds, all literally inches away from the viewing windows.

The birds have also done well over the years.Sixteen young peregrines (eyasses) have success-fully fledged over the past 7 years and of theseeyasses, fifteen have been rung.

HPWW has so much to offer and not just for theserious bird watcher, it provides a great destinationfor a family outing and even a new experience forthose not having had the opportunity or knowledgeto enjoy our wonderful countryside.

We would love to hear from all school and nonschool groups wishing to visit the centre anddiscover what we can offer. Please contact us sowe can tailor your visit.

We also have a number of places for juniorvolunteer wardens aged 12-16, which has been avery successful venture with many young peoplereturning year on year.

We are always looking to encourage andinvolve more volunteers, both the young, and theyoung at heart. If interested please visit our websiteat www.forestry.gov.uk/huntlyperegrines

A series of events are run throughout theseason and information on these can be found atour website, through the Forestry Commissionevents leaflet or by contacting the Peregrine Centreon 01466 760790 (between March and September).www.forestry.gov.uk/scotland

Culbin is ideal for walking, with miles of paths and tracks to explore, winding among the pine covered dunes and coastline.

The Hill 99 Trail is an ideal walk for first-time visitors and takes about2-3 hours starting from the main car park at Wellhill. Along the way,you will find the dragonfly pond, a pretty pond where you canadmire brilliantly-coloured dragonflies during the summer.

More than just a shelter

While meditating in the smallest room inthe house, I have been reading a bookcalled "Adventures in Architecture". Thefirst chapeter is about visiting an areawhere there are still some of the mostbasic buildings ever invented - igloos.

The author writes - I tell Andreas that Ifeel lucky to have one of the town's fewigloo builders. He smiles. There is noone else, reveals Andreas ruefully. Hewas taught to build an igloo by hisgrandfather and father and he has notbeen able to pass the mystery on. Noone cares and the children don't want toknow.

At the end of the chapter, the authorspeaks about the igloo they've built. It'sstunning! The igloo is an admirablyfunctional object, but what strikes me isit's perfect beauty. The igloo's dome iscelestial, an image of the heavens, theInuit's symbol of the life-giving sun intheir icy world. Yes! the igloo is morethan just a shelter, more than architec-ture - it's a world in itself.

As I read this chapter, my mind relatedwhat I was reading to the faith by whichI live. Jesus has shown us a beliefsystem, a way of life which is "more thanjust a shelter". It is a shelter from thestormy blasts of life, strength in times ofweakness, comfort in times of sorrow. But it is so much more. It is functional

and it is beautiful. This world has neverknown a better basic law than thatdetailed in the bible. Be guided by thisand all relationships will be as theyshould be; And there is unbelievablebeauty in the image of one man layingdoen his life for the benefit of mankind.Throughout Lent and into Easter maywe think of these things, appreciate thefunctionality and the beauty of our faith, and resolve that, as far as we can, thiswill never be allowed to die out.

May God bless you.

®Donnie Darko’s favourite!

Rabbit Spring Rolls

page 14 - April 2010 SpotLight - Elgin, Lossie and District

Donnie Darko came to dinner and subsequently wecooked him a great spring time recipe! Rabbit is a verylean meat with virtually no fat on it and has a verydelicate flavour.

Get your local butcher to bone the rabbit and cubethe meat, which will make it much easier for you to use.

Anyone wondering who Donnie Darko is, he’s theteenage boy from the film of the same name who is‘guided’ by Frank, a demonic time travelling rabbit!

For the spring rolls450g rabbit - 1 cm cubed - this can be replaced with chicken50g bean sprouts5cm piece fresh root gingercut into matchsticks1 tbsp chopped fresh coriander, stems only1 red chilli, finely chopped1 egg12 sheets spring roll wrappers or filo pastryVegetable oil, for deep frying

For the dressing150g sugar200ml rice vinegar150 ml light soy sauce2 limes, juice onlyPinch star anise powder - optional1 clove garlic

For the salad½ red cabbage, finely shredded 1 apple peeled and grated2 red onions finely sliced

For the spring rollsMix together all of the spring roll ingredients, except

for the wrappers and egg, until well combined.

Lay a spring roll wrapper on the work surface andspoon some of the filling into the centre. Draw in the

sides of the wrapper, then roll upwards, sealing theends with the beaten egg. Repeat with the remainingspring roll wrappers and filling, until you have 12 springrolls.

Half fill a deep, heavy-based pan with vegetableoil and heat to 180°c. Deep-fry the spring rolls in smallbatches for 6-8 minutes, or until golden-brown and crisp.Remove with a slotted spoon and drain on kitchenpaper.

For the dressingBring the sugar and vinegar to the boil in a pan,

then simmer for 5-6 minutes, or until thickened andsyrupy. Take off the heat and add the remaining ingre-dients. Set aside to cool.

For the saladToss all of the salad ingredients together, then

drizzle over the dressing and mix well to coat evenly.

To serve, pile the salad onto serving plates andplace the spring rolls on top. Garnish with corianderleaves and lime wedges.

Cllr Russell advisedthat it had been discussed atCommittee and information regardingrefuse collections had been put in thepress and on the Moray Councilwebsite. He also advised that statis-tics showed that there was sufficientgarden waste being generated duringthe winter months to warrant thisservice.
