Dr. Jeff Bodycomb from HORIBA Scientific presents information about measuring the size and zeta potential of emulsions. Emulsion behavior is often determined by droplet size. Evaluation of droplet size by laser scattering is a time-tested method for checking product quality or performance. In addition, surface charge is often a factor in predicting emulsion stability. And that can be measured by scattering as well. What is an emulsion

“Mixture” of two immiscible liquids such as oil in water.

Also need an emulsifier!
