Dear Reader,

Koushik Seetharaman and Eric Bertoft are preparing a series of articles in the form of essays

in the present tense, to describe the historical development of an understanding of starch

structure and properties. This article represents the first in the series.

The topics that will be covered in the series are:

(1) Linkages in starch

(2) Story of diastase

(3) Confusion due to terminology

(4) Granule architecture

(5) Amylopectin structure

(6) Reflections on the process and progress in science

Although the articles are not in a ‘typical’ Review format, the style reflects the authors’

desire to show what the researchers were thinking at the time they made their discoveries

and publications. I hope you find this article and subsequent ones to be informative.
