the field of laboratory analyses, with increasingly advanced methods of investigation, and in the world of good manufacturing practices, with the creation of guidelines and supporting documentation to ad-dress the problem with method. Besides the question of NIAS, the issue of mineral oils arouses much attention, where once again we find an almost total lack of legislation. The mineral oils that are the subject of attention are hydrocarbon molecules, a very heterogeneous group of substances that inclu-de saturated or unsaturated compounds, with linear, branched, cyclic, aromatic structure. Mineral oils belong to two different ca-tegories: MOSH - both linear and branched saturated hydrocar-bons, and MOAH - aromatic hydrocarbons, consisting of one or more benzene rings.The contribution of research and analysis centers, together with the activities of industrial groups interested, has also been instrumental, in establishing safety protocols, also regarding mineral oils. It should be said that for mineral oils, there is imminent hope of regulation due to the efforts being made by some national legislations to provide standard rulings on the matter. The “general principles” underlying the art. 3 of Regulation 1935/04/EC assign to the business operator the task and obligation to conduct appropriate assessments of the risks and hazards of NIAS and mineral oils. The Munich Conference stands as an opportunity information, training and exchange at international level, including business operators and all operators involved in the food packaging chain. Here are the main themes of the Conference:· Legislation: future regulatory predictions;· Research and development on the current competencies in the field of analysis and evaluation of substances;· Industry best practices for what can be considered the action to be taken to counter the dangers of NIAS and mineral oils, mainly in a production environment and use of materials and articles intended for food contact.

The speeches made by speakers from various backgrounds, are desi-gnated to provide a scientific, technical but aboveall practical contri-bution for the proper RISK ASSESSMENT management, particularly for NIAS and mineral oils, this within the Food Contact Supply Chain.
