waters of the Little Calumet River on land that once

housed the Mineral Springs waters thought to possess

the powers of health and renewal the Spa has a long

history of bringing merriment and mirth to those who

stepped inside Kis says he hopes to rekindle those

memories nearly two decades after the doors to the

Spa were shuttered so they have spent countless

hours replacing walls beam by beam removing

materials destroyed from the elements reforming

foundations remodeling dated interior deacutecor and

renewing this magnificent structure to its former

glory Perhaps then the spirits can return

ldquoWe want to start the new memoriesrdquo Kis and Hoyle

say of their intentions ldquoEveryone tells us something

that they remember from when they were here before

It was a special place to go for prom birthdays to

get engaged for bar mitzvahs for company parties

We hear so many stories from people We want to

bring it all backrdquo they say Those efforts have not

been easy ldquoWe knew when you take over an old

building itrsquos hard And it has sat vacant for 12 years

when it was owned by the bank But when we heard

that the bank wanted to bulldoze the building we just

couldnrsquot let that history gordquo Kis says

The history of the Spa goes back to the late 1920s

when it first opened its doors Shortly after came the

Depression and Prohibition ldquoAt that time most of

the booze was coming out of Canadardquo Kis says ldquoThey

didnrsquot have Prohibition so the booze went from

Canada through Milwaukee and into Chicago then

over here But it became too costly for the alcohol to

come here by truck because in every town theyrsquod have

to pay off the mayors and the police chief so Al Capone

started moving his illegal booze by boat out of Chicago

into the Little Calumet River There is actually a dock

on our property where they could bring the alcohol

into the basement of this building The gangsters and

politicians and lawyers the few who were making

money vacationed and partied in Beverly Shores

Odgen Dunes Long Beach and Porter and so Capone

and these guys ate and drank here at the Spa In the

mid-1950s and 1960s there was a casino here It was

a gambling den and there was an illegal race track

nearby that was shut down by the state militia twice

so it was fairly lawless in those daysrdquo

Kis has a vision to bring a little of this history back

to life by renewing the Speakeasy at the Spa and by

tapping into that prohibition history He is just the

guy to do it too Kis was raised in a family that worked

in the restaurant industry His father was owner of

the Lighthouse Restaurants in Lake County Indiana

Ed and his two brothers Skip and Bob spent their

childhood peeling potatoes in the basement of that

family restaurant on 5th Street and Van Buren in

Gary and then in a variety of other jobs in the

subsequent family restaurants Ed opened his own

restaurant and bar in downtown Crown Point the

popular SOBs (which stands for Sons of the Boss)

and I want to recreate that history that has been here

at the Spa for 90 yearsrdquo he says

As general manager of Top Dog and Great Lakes

Catering in Michigan City Ed hasnrsquot slowed his roll

for one second and he admits thatrsquos a good thing

Restoring the Spa to a version of its previous

incarnation has been a challenge since Jeanne took

ownership two years ago ldquoIt will be a lot of fun but

it sure has been a lot of work We recently took down

a wall and tree nuts came out like we had won a jackpot

and have been face to face with raccoons We had to

redo the roof because it was like a swimming pool up

there There are 14000 square feet of space here and

so far we have about 5000 finished and are hosting

banquets We know it will be a Speakeasy restaurant

eventually and just want to make sure we take our

time to do it rightrdquo Kis says

Walking throughout the facility Kis has a definite

vision of what the restaurant will look like including

keeping many of the original features the same ldquoStaff

used to put stale bread on feeders in the trees so that

guests could watch the raccoons come and eat We

will do that again but we will have no televisions here

Thatrsquos one thing that will be different We have a

Seaburg jukebox that we will restore and a 1920s Art

Deco bar that is from a Chicago saloon Wersquoll have a

glass chandelier over the dance floor casino tables

with glass tops and a DJ booth for after-hour events

The baby grand piano is from the original restaurant

and will be part of our piano bar We have a pianist

who will perform with a chanteuse There will be more

entertainment in this lounge than virtually any

other place in Northwest Indianardquo he says

Each room or nook will have a personality and

function all its own ldquoWersquoll have an old-fashioned deli

counter with a salad bar meatballs and Vienna beef

Chicago Dogs over hererdquo Kis says pointing to one

area of the restaurant And this is the knotty pine

Lodge Room themed like the Wisconsin lodge where

Dillinger went after he broke out of the Lake County

Jail Wersquoll have the actual original judgersquos bench from

the criminal court building where Dillinger was

arraigned and we have this hidden room that we will

call the Chairman of the Board Room that will be

dedicated to Frank Sinatra and can be used for a

birthday party or a private business meeting

ldquoWe plan on being open in the springrdquo Kis says

unsure of an exact date of opening of The Speakeasy

at the Spa However the Spa Special Event Center is

currently open for banquet events and can serve

groups as large as 250 in a warm event space that

houses two fireplaces and overlooks a spectacular

view of the woods and Little Calumet River ldquoFor

decades this was the place to go and we just want to

bring that back We will do our best to make people

happy There will be unique fun from the minute you

come in the doorrdquo

BEVERLy SHORES may start with the Buckrsquon Good Bloody Mary made

with a perfectly balanced house mix with a touch of horseradish packed full

of treats along with their house venison stick but then it all continues a la

carte with selections like a breakfast reuben an open faced sandwich

consisting of layers of marble rye Bartlettrsquos own kraut with apples and

caramelized onions thick slice warm corned beef finished with two eggs

over easy with a drizzle of Hollandaise served with freshly grated hash

Bartlettrsquos is the creation of husband and wife team Nicole Bissonnette and

Gary Sander who have a long history in the culinary arts Gary says he grew

up in south suburbs worked as a bus boy for many years in a country club

and ended up in the kitchen He worked as an apprentice under renowned

chef Carolyn Buster at The Cottage in Calumet City Illinois before buying

and running Miller Bakery amp Cafeacute for 20 years Nicole is a graduate of the

prestigious Cordon Bleu in Paris and she trained with the world-famous

chef Michel Troisgros They have won numerous awards made television

appearances and been featured in magazines Gary has cooked for such

notables as Peter Jennings Martha Stewart and Donald Trump yet he

explains why they call Beverly Shores home for their family and their

restaurant ldquoIrsquove always liked being a big fish in a little pond and I appreciate

the loyalty of Northwest Indiana supporting my careerrdquo

Bartlettrsquos Gourmet Grill amp Tavern began on December 5th in 2008 and since

then they have brought locals and visitors what Gary calls ldquosimple food done

wellrdquo Such simple food includes the tuna Nicoise salad which features rare

seared fresh ahi sushi-grade tuna with a Provence crust ldquoIt is a draw on my

days in France where I studied for five years and so this is quintessential

from that erardquo says Nicole ldquoThe olive is a Nicoise olive oil cured from the

oreganordquo The flavors are unmistakable yet

subtle enough that the flavor of the tuna comes

through the perfect accent light and tasty

The Duck Confit amp Pork Belly Filled Wontons

feature shredded duck pork belly herbs and

spices in a light wonton wrapper served crispy

with an Asian hoisin ginger and soy reduction

with a carrot-diakon radish slaw ldquoThe confit is

an old French technique and we combine that

with a homemade Asian sauce in a wonton

wrapper that we form and fry The duck is

traditionally Asian and this is just a little twist

on a fun bar snack We sell a lot of thoserdquo says

Nicole The combination is perfectmdashsweet

succulent moist and substantial Other favorites

in the menu include the winter lamb shank with

gnocchi and root vegetables and sauteacuteed kale

as well as the turkey club on sourdough with a

house made apricot jam granny smith apple

and thick cut bacon Nicole says ldquoItrsquos our number

one selling sandwich because itrsquos the tasty

combination of savory sweet and smokerdquo Also

make sure to try the venison chili which is

available throughout the winter

In the warmer months Bartlettrsquos features an

outdoor deck with a childrenrsquos playhouse so kids

can run around while parents are enjoying their

dinner and a glass of wine A screened-in porch

is great for private parties and there are events

throughout the year such as comedy night beer

fest music fest and oyster fest as well as plenty

of weeknight specials

IT MIGHT BE DIFFICULT TO SELECT AN APPETIzER AT OCTAVE GRILL

SINCE ALL OF THE OFFERINGS ARE THE PERFECT WAy TO BEGIN A

GREAT MEAL The buffalo fries are always a favorite fresh cut and tossed

in buffalo sauce made from scratch with bleu cheese crumbles and just the

right amount of heat The perch cakes topped with a tart and creamy dill

caper tartar and ancho-chile sauce with greens and lemon are something

not found on any run-of-the-mill menu Taco tots are always fun with the

house guacamole or the goat cheese fondue with warm pita crackers apple

and zucchini for dipping But the fried pickles are also a favorite The panko

breading provides just the right amount of crunch and is never soggy

The tabasco aioli is a savory complement to the tang of the generous wedges

of dill pickle

Then therersquos the rest of the menu With a cozy creative interior choosing

what to devour is hard but enjoying the selection is easy at Octave Grill Itrsquos

the perfect place to take onersquos time making conversation over a substantial

burger made with Bill Kurtisrsquos Tallgrass Beef which may not mean anything

to readers but will mean much to their taste buds Casey Petro co-owner

with wife Sylvia opened the restaurant in July 2010 and since then their

gastronomic pleasures have been the pride of Duneland Casey had previously

worked for years at another restaurant in the area and then pursued a career

by attending culinary school at Ivy Tech After he worked for a number of

years in hotel restaurants around the country he began to design a restaurant

of his own ldquoPrior to moving back here Sylvia and I had moved around for

four years and saw that the burger and craft beer restaurant was working

elsewhere so we wanted to bring it here We wanted a restaurant where we

would eat We wanted to offer quality ingredients and we wanted items that

were really unique like the grass fed beef We had enough of our own ideas

that we thought we could do it We had a spot picked out and it just fell into

placerdquo he says

The menu includes such tantalizing dishes as the Cuban a pulled pork

sandwich with ham Fair Oaks Farm Swiss cheese grilled onions pickles

key lime aioli whole-grain mustard greens and tomato on a French roll

or the roasted squash salad with organic greens capriole goat cheese roasted

butternut squash sliced almonds pickled red onion and creamy white wine

I think itrsquos because our burgers and all of our

LEROy FLORES IS SO INVOLVED IN THE COMMUNITy A generous man

with a warm heart Leroy believes in supporting the causes that make the

Duneland community more of a family From helping to establish Porterrsquos

Perfect Pint the annual beer festival held each October in Hawthorne Park

that benefits the Porter Parks Department and the Porter Volunteer Fire

Department to appearances at virtually every event around the county

including the Porter County Fair and giving to causes for individuals and

organizations Leroyrsquos Hot Stuff is more than a restaurantmdashit is an icon in

the community

Flores opened his doors in Porter on Highway 20 in 1990 With delicious

breakfasts such as huevos rancheros steak and eggs or huevos con chorizo

lunches like sopes tamales or burritos and dinners such as steak fajitas

chicken mole or carne asada itrsquos no wonder that Leroyrsquos is always packed

with guests enjoying delicious homemade Mexican food Flores says that he

has both a love for his community and a love for serving the finest quality

food ldquoI had worked in the restaurant business for five years and got tired of

working for other people and wanted to do work of my own I grew up in

Hammond and moved here to Porter to take advantage of the school system

for my family It has been a wonderful place to raise a family and establish

a businessrdquo Flores says

Starting with fresh chips and salsa not too salty and just the right kick of

heat with fresh cilantro any meal is going to make the family happy But

due to smoking laws that went into effect on July 1 2012 Leroyrsquos is no longer

able to allow minors into the restaurant although the full menu including

alcohol (excluding Sundays of course) is available for carryout Make sure

to try the cheese enchiladasmdashwhite corn tortillas filled with melted white

queso with creamy savory beans and tangy rice on the side Fish tacos are

also a specialty either broiled or fried and especially affordable on Taco

Tuesday There are also American food selections like Italian beef burgers

wraps and sandwiches Leroyrsquos also caters for events such as office parties

Diana Twyman co-owner of Miller Bakery amp Cafeacute

with her son Jack Strode says they opened the

restaurant on May 2 2013 and have established

a business known for its steaks salads and special

events ldquoWe do a lot of non-profit work and

fundraisers for groups such as Save the Dunes

Charter School of the Dunes Discovery Charter

School and the Miller Arts and Creative District

Wersquove done collaborative dinners with 3 Floydrsquos

Brewery in Munster and 18th Street Brewery here

in Miller which have been very popular eventsrdquo

she says

ldquoWe have also done a farm to table dinner with

Green Sense Farm in Portage and wersquove done

cocktail dinners that are themed such as Mad

Men where people came in costume and it was a

lot of fun We look to reprise all of these events

because people really love the specialty dinners

We always have specials on our menu every night

and every first Friday we have oysters flown

in for our champagne and oysters specialrdquo

says Twyman

Miller Bakery amp Cafeacute

in Mexican cuisine but are capable of preparing

just about anything guests would like and beer

and alcohol catering is available as well with

fully licensed and insured staff They also have

a banquet facility live entertainment karaoke

and they are open seven days a week Breakfast

is served from 7 am until noon

Leroy says that bringing his community the food

he and his staff prepare every day is a labor of

love ldquoThe recipes were my momrsquos We make

our soups from scratch every day We also do a

lot of catering and have been doing it for a while

We do a lot of office lunches at the mills and

we do a lot of festivals We prepare food for all

of the Cruisinrsquo events at the Harley-Davidson

shop in Valpo which is a great way to come by

and try us There are always 300 to 400 cars out

there and we set up every Friday from 5 pm to

9 pm from Memorial Day to Labor Day We

have been doing the Porter County Fair for over

10 years now and wersquore down by the grandstand

We stay pretty busy out there because we arenrsquot

using a fryer out theremdashwe specialize in Mexican

food and thatrsquos what we dordquo he says

ldquoWhen we moved here in the lsquo90s there was nowhere to eat At that time

there were only diners and pizza places We were frustrated and my husband

has always wanted to own a restaurant We felt a white linen restaurant

wasnrsquot the way to go We wanted to be a little more casual since itrsquos close to

the beach with superior food excellence service and we wanted it more of

a cafeacute trattoria We wanted people to be able to walk in either dressed to the

nines or in flip flops from the beach and be able to have a wonderful dining

experience Outdoor dining is very important to us as wellrdquo Nada Karas says

much easier to purchase our ingredients locally from

the European Market and other suppliers In the

winter things change for us Itrsquos not so easy and we

have to deal with buying from purveyors in the

Chicagoland area with whom wersquove had a great working

relationship smaller boutique vendors that like to

provide us with some artesian wares Wersquore constantly

going to food shows to see whatrsquos new and exciting I

have a lot of allergies so Irsquom very picky on how we

buy We donrsquot buy things that are processed nothing

with additives so itrsquos important for us to buy

exceptional quality ingredients We have a menu that

doesnrsquot change much but we tweak it twice a year and

thatrsquos why we have the chalkboards because we instill

creativity with our culinary staff so they can provide

items that are seasonal and exciting and differentrdquo

ldquoOne thing wersquore very proud of is that we buy our

salmon directly from the fisherman He is a friend of

ours a commercial fisherman in Kodiak Alaska and

so in season that salmon is coming directly from

Kodiak on Alaska Air cargo picked up by my husband

at OrsquoHare so itrsquos phenomenal Everyone who has had

it raves about it We make everything from scratch

including our desserts We are old school and Chef

Alfredo Anguiano has been with us from day one and

he makes desserts twice a week from scratch After

being here 16 years I hope wersquove been able to open

the door for other restaurants to come in We had a

vision and wersquove kept it the same wayrdquo Karas says

The Craft House opened in September of 2014 The owners decided that

Chesterton was missing a place to go to eat a good meal and drink a good

beer with great service says Dana Malone owner and manager ldquoCraft House

has 17 craft beers on tap and over 50 craft bottles The menu has something

for everyone and it is all prepared in houserdquo she says One of those items on

the menu is the popular shrimp and crab which features sauteacuteed shrimp over

a delicious garlic cream sauce and a bed of rice topped with a house made

With a mission dedicated to enhancing the quality of

life in our community through prevention treatment

education and research Porter-Starke Services has

transformed lives throughout Northwest Indiana The

not-for-profit organization continues to provide

outpatient mental health and addiction services for

adults children and families Additionally

partnerships extend their circle of care to the

community to include prevention services including

screening for depression anxiety and substance abuse

at local hospitals and clinics The organization also

provides addiction treatment to inmates at the Porter

County Jail and counseling at local school

corporations among many others Porter-Starke

Services developed these programs in response to

unique needs in the community

Mental health services have changed as have our

attitudes toward them ldquoHistorically individuals with

mental health issues werenrsquot treated very well in our

country but society has seen this shift for the better

in the past 40 yearsrdquo said Elliott Miller Director of

Marketing amp Development Schiralli added ldquoIt has

improved but we still have a long way to go That

applies to any population that is stigmatized not just

mental health and addiction but any group that has

been subject to discrimination And this stigma is

something we continually strive to eliminaterdquo

Timeline of major milesTones Porter-starke services is a compassionate and dedicated organization committed to the health and well-being of our community a major impetus for change began in 1953 when the mental Health association of Porter County was established which later provided seed money to build the first Porter-Starke services facility in 1967 laPorte-Porter-starke services was formed by 36 volunteers with a budget of $2000 to develop local community partnerships secure funding and ultimately lay the groundwork for what would later become Porter-starke services in 1974 start-up funding was secured state funds were granted to Porter-starke services to provide inpatient hospitalization partial hospitalization outpatient emergency consultation and education services in 1975 Porter-starke services opened with a 14-bed inpatient psychiatric hospital The main office was staffed with just one employee space was leased to provide outpatient services in Knox One year later the Portage office opened in 1990 residential services expanded into Valparaiso and in 1992 the Valparaiso Campus added an outpatient facility To grow and enhance therapeutic services Porter-starke services purchased the building at 601 Wall street services and facilities continued to expand over the years By 2013 Porter-starke services served a record 11000 people

In the early 1950s Mental Health America issues a call to asylums across the country to remove and

send in their discarded chains and shackles On April 13 1956 at the McShane Bell Foundry in

a mental illness or addiction but sometimes individuals

donrsquot feel they have a reason to care unless they are

personally connected to the issuerdquo said Miller Schiralli

continues ldquoWe would like to see a community that

truly cares for mental health and is aware of its

importance Why should mental illness be any different

than diabetes heart disease or cancerrdquo

In addition to greater acceptance Miller says he hopes

mental health services will continue to evolve in the

future ldquoOur compassionate dedicated staff of 220

employees as well as our volunteers and partners

will continue to serve the community day in and day

out and drive positive changerdquo Schiralli agrees ldquoI

envision Porter-Starke Services as the best place to

work and the best place to receive care Thatrsquos the

expectation we set Wersquove invested a great deal of our

time effort and resources into achieving these goals

with our employees and clients Wersquove been recognized

for some of these accomplishments but we always

challenge ourselves to improve We want to be

innovative ndash to implement best practices and initiatives

in our industry that the typical healthcare center may

not venture into Itrsquos the right thing to do because it

will best serve our community We continue to develop

local partnerships to provide the highest quality

healthcare Each day we work to inspire everyone to

advance health balance and hoperdquo

Duneland Exchange Club maKing a differenCe in the lives of area youth

tthe DuneLanD exchange cLub is a chapter of the nationaL exchange cLub an organization that works to Make our coMMunities better pLaces to Live

The National Exchange Club is the oldest service

organization in the country with more than 650 local

clubs throughout the US and Puerto Rico including

one right here in Duneland The National Exchange

Club was founded March 27 1911 in Detroit and today

the club has grown to include nearly 20000 members

Through the Programs of Service ndash Americanism

Community Service and youth Programs ndash members

support activities that benefit youth promote pride

in our country and honor military and public service

providers to name a few The prevention of child

abuse is Exchangersquos National Project

Pam Strudas past president of the Duneland Exchange

Club says that this cause of child abuse prevention

is critical to their work as members ldquoOur main focus

as a group is prevention of child abuse Most of our

efforts are fundraisers geared toward helping that

cause We donate to several different groups that

support that cause such as Dunebrook (a not-for-

profit organization in Michigan City and Valparaiso

that provides child prevention services

advocates for children and provides

positive family support and education)

We fund the Body Safety Program that

we have had in the Duneland Schools

for several years now This is an

empowerment program for children to

know their bodies what is not

appropriate for adults to do or touch

and to tell them it is NEVER their fault

and it IS okay to tell an adult they know

and trust It is a positive energetic

educational program for young children to learn the

awkward terms and things that parents and

teachers donrsquot like to talk aboutrdquo Strudas says

Although child abuse prevention is the main area of

focus for the club members are also dedicated to other

service projects as well ldquoThere are many groups we

donate to A lot of these groups come to us and request

money through grants and some we have just always

helped out in any way we can We recognize youth in

our community with the Duneland Exchange Club

youth of the Month This is given to a high school

senior identified through the guidance counselor We

also recognize our Citizen of the Month which is for

4th through 6th graders which are identified through

teacher recommendation We have an Americanism

Project called ldquoProudly We Hailrdquo This recognition is

given to a business or citizen who regularly displays

the American flag correctly We have an essayposter

contest for 7th and 8th graders called ldquoOne Nation

under Godrdquo where students write about what the

Pledge of Allegiance means to them We recognize

winners with a certificate and cash award There is

also a regional and national level that the students

can go on to compete inrdquo

There are a number of ways that the Duneland

Exchange Club raises funds for these important causes

says Strudas ldquoWe have our annual winetasting the

Frog Hunt and others throughout the yearrdquo she says

ldquoOne of our favorite projects for our community is our

talent show which we do in the spring for kindergarten

through 12th grade and anyone is eligible from public

school private school or homeschool as long as they


are in the Duneland district All of the money raised

goes to the Natural Helpers program who help to

coordinate the show We pack the place every year

and itrsquos held at the high school auditorium We raise

about $10000 on the wine tasting and all of that

money goes into our child abuse prevention funds so

the funds are given to these programs through grants

Only our dues go toward operation costs but the funds

we raise go to these programsrdquo

Supporting Duneland youth and prevention of child

abuse is vital to the work the members of the Duneland

Exchange Club perform ldquoThere is such a problem in

our country with child abuse and neglect and you

always want to do something to help and this is a real

concrete way to help out and make an impact There

is a wonderful satisfaction in being a part of the

community Itrsquos a loving wonderful town and you

really get to see the heart of the people We welcome

new members We meet the first and third Thursday

of each month at 7 am at Round the Clock in

Chesterton and anyone is welcome to come and see

what the club is all aboutrdquo Strudas says
