Dear Dukeshill CustomerWelcome to Christmas with Dukeshill. We are busily stocking up our
larders with hams and all manner of fine foods for you, your family, your friends and, if they are lucky, your colleagues. In my experience, even the hardest to please amongst us - and I recognise the type in the mirror every morning - is delighted to receive a gift of food. Just think, all your Christmas present problems could be solved in the following eighty or so pages.
Before you get down to the serious business of Christmas shopping, please let me mention a couple of things to help smooth the way:
Firstly, if you are ordering a ham and other long-life products, please consider accepting delivery nice and early. It will be better for your ham to be in your refrigerator than ours and will last well through the New Year and beyond.
Secondly, if you want to enjoy some of the shorter shelf life products we offer over the Christmas festivities, please be prepared to pop them in the freezer on receipt and get them out the day before you need them. This way you'll be eating them as fresh as they can be. Bear in mind that we send out fresh not frozen food so it is fine for you to freeze it.
To close, you'll find all of your favourites in the pages that follow, plus quite a few new foods that we hope you'll like just as much. The Dukeshill Boxing Day HamCOOKED, GLAZED AND READY TO EAT
Wonderful Wiltshire cured ham glazed with lashings of
oranges and cloves, this is our newest Christmas Ham
and quite possibly our tastiest. Cured by immersion in
brine for several days, which gives it a wonderfully moist
(but never wet!) texture. The addition of unrefined brown
sugar to the recipe adds a subtle sweetness to this mild
and delicious ham. We've removed the bone for easier
carving and will carefully select hams that are just the
right size for a family celebration.

depend upon appetite, age group and, of course, the leftovers required for Boxing Day.
What will you receive?Your turkey will be delivered to you fresh, not frozen, in a sturdy carton with insulation to keep your turkey
cool. Inside the box, the oven-ready turkey is wrapped in greaseproof paper with a sprig of rosemary, vacuum
packed giblets (not with Breast Roasts), a recipe leaflet with full, detailed cooking instructions. Everything you
need to cook your turkey perfectly on Christmas Day!

Traditional free range Bronze Turkeys delivered to your door on Tuesday 23rd December.Copas free range Bronze Turkeys roam in cherry orchards and grass meadows. Each night at dusk, border collie turkey dogs herd them into their sheds for overnight shelter and protection from local foxes. They are raised on a balanced cereal diet, rich in oats, with no growth promoting additives. Once they reach full adult maturity, the turkeys are dry-plucked by hand and game-hung for two weeks to ensure the dense succulent meat has a full traditional flavour. Fresh from the farm with nothing added.

Don Cristbal 1492 Malbec, Mendoza 2013This Argentinian gem has been
a tremendous find. A perfect
combination of ripe red fruit
character and spice, enhanced by
subtle use of French oak barrels.
The palate is rich, beefy and almost
savoury with lovely length.

SauternesThe vineyard source for this wine is a closely guarded secret, but
suffice to say it has a very fine pedigree! Full, rich and complex,
it has honeyed flavours and good freshness to maintain balance.

Chteau du Tariquet VSOP, Bas ArmagnacHailing from France's oldest brandy producing region, this
Armagnac is amber in appearance, with pronounced aromas
of prune, baked bread,and gingerbread and candied fruits.

oak and vanilla and stone fruits on the finish. A well-regarded
and traditional estate where every variety is distilled separately
and then kept in oak barrels of the local oak for three years.

Oldfields Orchard Worcestershire CiderHobsons' quaffing ciders are placed perfectly on either
side of medium. The Medium Sweet is not sickly sweet
and neither is the Medium Dry over dry. Both are clear,
bright and golden.
Medium Sweet is full of natural fruit enhanced by the
addition of a little sugar. It has a fresh appley acidity with hints of tannin on the finish so
you can enjoy every sip.
Medium Dry combines natural apple juice sweetness, pleasant zingy acidity and light
tannins from the apple skins and pips giving a slightly dry finish.

one of the shining stars in the culinary tradition of Europe.
It is an all natural product, steeped in tradition, and used in
a wide range of modern cuisine.
By law only hams produced and cured in the hills around
Parma in Italy may become Parma Hams; the unique
conditions of this region make it possible to produce a very
special ham that has been appreciated since Roman times.
Not only that but the pigs used in production must have
been bred in ten northern and central Italian regions. The
fine Parma Ham we are offering here is made from only four
ingredients, pork, salt, air and time.

How we produce Dukeshill York Ham - the quintessential English Ham.We select only the finest legs of British pork and after trimming them, we apply a measure of saltpetre to the cut face of the leg.
Next, we cover the ham with a generous layer of sea salt. We do this by hand because every ham is a little different and we adjust the amount of salt used accordingly.
We re-apply the salt several times then hang the hams for three months or more to give Mother Nature time to do her wonderful work of dry-curing.

Dry cured and matured over a period of three months, it

The Shropshire Black Ham StoryThis most flavoursome of hams is the direct descendant of the historic Bradenham Ham. The Bradenham didnt begin its life in Shropshire, or Wiltshire for that matter; it was invented by Lord Bradenham in 1781, and migrated from Bradenham Manor in Buckinghamshire in the 19th Century. The story is that the butler there fell out with his employer, moved to Wiltshire and took the recipe with him. He set up the Bradenham Ham Company in 1781, and continued to manufacture on that site for almost 100 years.
Sadly, the unstoppable march of big business took its toll, acquisition after acquisition took place, and before long the manufacture of so-called Bradenhams was a very unimportant part of a big corporation. Eventually, the management decided to stop production.
Fortunately we were able to recreate the recipe and this wonderful ham lives on as our Shropshire Black.

Like the York, this is a dry cured ham. What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper and spices. The hams are left to mature for three months, during which time they develop their distinctive, salty, sweet flavour. A Gold medal winner at the Great Taste Awards.

How many will your ham feed? As a rule of thumb, we normally suggest that a large whole ham
will give sixty to seventy slices, a half ham about thirty. For a big
occasion, its often best to over-cater slightly, as nobody likes to run
out, and whatever is left will give you some wonderful meals for
several days afterwards!
Glazing your ham Most of our hams are delivered unglazed and the traditional way to
dress an unglazed ham is with breadcrumbs - ready-made are fine but
home-produced are even better. This is the preferred way to dress a York
Ham as we do not recommend oven-glazing a York. If you prefer to glaze
a Wiltshire ham, the easiest way is to use our Ham Glaze but there are
several other ways you can do it.
You can glaze the cooked hams from hot or from cold. There are no strict
rules about what you should use - try mixing wholegrain mustard with
some honey or Demerara sugar, or even coat it in marmalade or chutney
as long as it contains something sugary which will caramelise to a rich
golden colour. You may also choose to score a diamond pattern into the
fat, and decorate the diamonds with cloves.
The hams can be successfully glazed in any type of oven, preheated to
at least 200C or 400F or the Roasting Oven of an Aga. The key is
vigilance it will probably take between 10 and 15 minutes, but a few
minutes can make all the difference between golden and charred!
Keeping your hamOn receipt of your ham, remove it from the box and store in the fridge.
Leave the vacuum pack intact until you are ready to use it. Once open,
keep the ham covered, either in one of our ham storage bags (see page
8), or with greaseproof paper to prevent the cut surface from drying out
between carvings.
Never cover your ham with polythene or cling film, as this will encourage
the development of mould.
Reheating a cooked hamAll of our cooked hams can be reheated to produce an excellent hot meal.
Put the ham in a roasting tray with a little liquid (stock, cider, wine or
even water) to keep it moist, and seal tightly with a tent of foil. The ham
needs to be heated in a hot steamy atmosphere.
Getting the very bestfrom your Dukeshill ham.
Bake at approximately 180C or 350F until heated sufficiently. Allow
two hours for a whole ham to be heated all the way through.
Freezing your ham All our hams and bacon freeze well for up to three months. Ensure they
are tightly sealed in an airtight bag to eliminate air. Defrost thoroughly in
a refrigerator before use.
Carving your hamIf you have a boneless ham or joint then carving is as easy as slicing a
loaf of bread. For bone-in ham carving need not be a worry as long as
you remember a few basic rules!
First and foremost, for safety, always ensure that the ham is held securely
when carving, and use a good, sharp carving knife.
The carvers aim is to cut the ham into attractive slices, giving an even
distribution of fat and lean. It is a good idea to take slices from the
shank end (a), cutting down perpendicular to the bone, and from the
flank (bottom of the cushion end) of the ham.
The shank slice (a) is very lean, the flank (b & d) gives a fattier slice.
Continue cutting alternate slices from each and finish on the middle
section of the ham (c), the crown.

Boiled Ham HocksCOOKED AND READY TO EAT OR REHEAT
Each British hock makes a delicious meal for two or a feast for one. Best
served warmed through with salad or roasted for a comforting hot meal. We
now steam cook these lightly-cured hocks for twelve hours to bring out the
flavour and tenderness. You will receive two hocks.

Pata Negra Jamn Ibrico de BellotaBLACK LABEL, 30-32 MONTHS CURED
This is the finest of Spanish hams - Pata Negra from
a gold-medal winning supplier from Guijuelo near
Salamanca. The characteristic black-foot pigs the pigs
roam freely in oak forests feeding on the acorns that have
dropped from the trees. The ham is dry cured for 30-32
months. It is this combination that gives this wonderful
gourmet treat its nutty flavour and melt-in-the-mouth
quality. Order on its own or together with a traditional
jamonero ham stand and flexible ham knife.

Hand Sliced Ibrico HamIbrico or Pata Negra (Black Foot) pigs are descended from wild Iberian boar
and roam the great oak forests of the Dehesas in southwest Spain. Its the
acorns in their diet that gives the meat its characteristically nutty flavour and
melt-in-the-mouth quality. "Cortado a mano" - hand sliced - very thin for us in
Salamanca, Spain. A wonderful taste sensation.

The front leg of a fully acorn fed pig. Selected at birth and reared on farms in
Salamanca, Extremadura and Andalucia. The preparation and care in the age-
old artisan curing and air drying process ensure the unique flavour and aroma.
All the wonderful flavours of a Pata Negra Jamon with a firmer texture, more
dark meat and somewhat less marbling.

At Dukeshill we love to make life easy for you. However we are well
aware that for some of you a ham isnt a ham unless youve cooked
it yourself! All our main types of ham are available uncooked. Please
remember that the York and Shropshire Black are dry-cured and will
need to be soaked for 24-48 hours prior to cooking.
Before ordering a whole ham, do please make sure that you have
something big enough to cook it in! If not, please ask for a free
cooking bag. All our uncooked hams come with cooking instructions.

Extra trimmed! We take off as much fat as we can and
select joints with little marbling especially for those of you
who prefer a very low-fat joint. This goes against the grain
somewhat because we usually prefer our gammon a little on

Old-Fashioned Middle Cut BaconOur rindless Old-Fashioned bacon is dry cured by
hand using salt combined with brown sugar and is full
of traditional bacon flavour. It is sliced a little thicker
and it tends to have a good layer of fat. And all the
better for that, I say.

Shropshire Black Back BaconMaster Bacon Curer, Nick Trott spent a year developing
rind-on Shropshire Black Back Bacon. We reckon hes
used just the right amount of molasses and juniper in
the marinade to produce the perfect balance of robust
flavours. It is a little costlier than our traditional dry-
cured bacon but it takes much longer to produce. Go
ahead and try it, you might love it.

Wiltshire Cured Back BaconOur award-winning traditional Wiltshire Cure recipe dates
back to the 1840s and is a "wet-cure" which means that
the bacon is immersed in a liquid brine (a salt and saltpetre
solution containing useful salt tolerant bacteria) for 3 to 4
days. This is a much milder form of curing than dry cure
and does not require so much salt. We do not pump liquid
into the bacon to speed up the process as happens with so
many modern bacons, rather we take our time - as with
everything we produce - and the result is a delight; naturally
moist, tender and packed with flavour. Rindless.
